Sandy Shares a Popular Recipe from Texas
1015 Onion Casserole

South Texas loves the 1015 sweet onion! After all, it was conceived right here in the RGV and is enjoyed all over the state. It’s said the name comes from the fact that the onions are planted October 15 of each year for the spring harvest. They can be huge, are mild and sweet, and can be used both raw and cooked in so many ways.

4 medium sweet onions
¾ cup milk, not skim
½ cup real butter (no margarine, please)
2 large eggs, beaten
15 round buttery crackers, crushed
1 cup shredded sharp cheddar
1 can cream of mushroom soup
Salt and pepper to taste
Peel the onions and slice into ¼ -inch rings. Melt the butter in a heavy skillet and sauté the onions until clear but not browned. Reserve 3 tablespoons of the cracker crumbs and set aside. Place the rest of the crumbs in the bottom of a buttered 2-quart casserole dish. Remove the onions from the skillet with a slotted spoon. Mix the mushroom soup with ¼ cup of the milk, combining until smooth.
Put ½ the onions into the casserole and top with ½ of the soup mixture. Repeat to make a second layer.
In a small bowl, combine the eggs with the remaining milk, mixing well. Pour this over the onions. Spread the shredded cheese evenly on top and finish with the reserved crumbs, sprinkling evenly. Bake for 25-30 minutes. Add salt and pepper, as desired. This is a good side dish with grilled meat or chicken.
