Laboratory Tested All ingredients, mixes and recipes are subjected to stringent laboratory testing to ensure the best possible result for the professional baker.

Freeze, Thaw Stable Recognizing the industry need to be able to batch bake and freeze, all mixes and flour blends are specifically designed to maintain finished product integrity when taken out of the freezer.

Technical Support and Trouble-Shooting Baking support and technical assistance is provided both online and by phone.

Dedicated Factory Bakers can have peace of mind knowing that Well and Good has a dedicated facility free from gluten, dairy, nuts, wheat, eggs and soy. In addition all products are laboratory analysed prior to release.

My dream in 2004 was to make Gluten free products which were delicious and indulgent, that everyone could enjoy together. Over the years we have worked with many industry partners to improve the quality, taste, texture and functionality of Gluten Free products. We have revolutionised Bread with our crusty bread mix and recently improved results in gluten free pies, with our Gluten Free Pastry and Pasta Flour. We have also developed a unique instant custard powder which is dairy and egg free.

In the future I see gluten free breads, cakes and pastries being on every food menu in Australia. I am passionate about developing new products and recipes and love being a part of this exciting, challenging and growing industry. Cup Cakes Gluten, Dairy & Nut Free You will need: 1 kg Sponge/Cupcake Mix 300 ml Water 300g Egg 80g Cake Margarine

Method: 1. Pre-heat oven to 180°C fan forced oven (195°C convection) 2. In a bowl, mix all ingredients on medium speed for 3 minutes. 3. Spoon or deposit the batter into prepared patty pans or muffin tins. 4. Bake for 21 - 25 minutes (Note: Baking time may vary depending on oven.) 5. Tip out to cool on a wire rack. 6. Suitable for freezing when completely cooled.

Dark Continental Bread (Rye-Less Rye Bread) Gluten, Dairy, Wheat, Egg & Nut Free You will need: 1 kg Dark Continental Bread Mix 950 ml Water (ambient) 50 ml Oil

Method: 1. Preheat oven to 185°C (200°C fan forced) 2. Mix all ingredients on medium speed (2). 3. Scrape down bowl after 30 seconds. 4. Fill tin and allow to stand for 10 – 15 minutes. 5. Bake for 40 to 45 minutes 6. Suitable for freezing when completely cooled.

TIPS *For savoury breads add about 10-15% of flour weight (eg. tomato, onions, olives (washed thoroughly prior to baking.) *High Tin: Add 25g of dry yeast per mix pre-blended with the water. Add 50g soy flour pre-blended with the continental bread mix

Packaging Formats Well and Good products are available in a cost effective 15 kg bag developed to accommodate the needs of businesses from medium sized bakeries/cafés to large scale commercial kitchens. A limited range is also available in 4 x 1 kg portion controlled bags, designed for smaller café’s or hotel kitchens, giving our smaller customers the opportunity to create their own unique gluten free offering.

Today’s bakeries, unlike the facilities of thirty years ago, are more hygiene conscious; are better educated in food handling and food safety; hence offering Gluten Free alternatives has now become a viable option.

Best practise methods for Gluten Free baking. 1. Schedule the manufacture of Gluten Free products first thing in the morning and separately to other products. 2. Totally clean down the kitchen the night

before production and clean down immediately before production.

3. Small bakeries can use a dedicated bowl and wooden spoon.

4. Larger volumes or wholesale bakeries may need to use a dedicated mixing bowl and beaters, paddle or hook.

5. A dedicated set of tins is ideal; alternatively

bake in fancy baking paper or a foil to avoid cross contamination.

6. If you are baking Gluten Free items with

other products, place Gluten Free on the top rack of the oven to avoid falling crumbs.

7. Validation via laboratory testing will

provide in-house and consumer confidence in your business.

The growing demand for a gluten free offering is undeniable. Businesses of all sizes are now adding a few gluten free alternatives to their menus. St Kilda café owner Sanjay Premkumar introduced gluten free into his café Kotch Lane three years ago. ‘Introducing gluten free into our café was easier than expected. We added gluten free products to the menu because of the high customer demand. It means we are more approachable and versatile as a business and for people with specific dietary requirements that’s an important factor, and it reinforces the overall welcoming nature of our café. To avoid cross contamination, we wash and sterilise all equipment before use, we store the gluten free products separately and we schedule GF production separately. We bake all our own gluten free bread, and on baking days we sell whole loaves to our regulars, which increases our turnover. Using Well and Good products means we are working with professional foodservice ingredients, the flours and recipes are tried and tested and technical advice is there if you need it. The service and support from the team is second to none. The flours are functional and easy to use in any recipe.’
