Jimenez said that unlike many Mexican women today, she had grown up learning to make tortillas. Now she has taught all her employees, about half of whom are Hispanic. She said all of the employees have got it down now.
She had never made a tres leches cake, a popular Mexican style cake which consists of a sponge cake seeped in a milk sauce.
She took the basic idea and played with it to make her own unique ver sion. This includes four types of milk flavored with cinnamon and cloves poured over the basic sponge cake and allowed to sit for 12 hours.
“It’s been a hit,” Jimenez said. Jimenez said she is experimenting with some other traditional Mexican pastries and desserts to be intro duced this winter.
Since purchasing the bakery, Jimenez has been working very hard, often six days a week, 10 hours a day.
Yet she said this is nothing new, since she has been working hard all her life. She is the first in her family to own her own business, and fam ily members are very proud of her for what she has accomplished. Her father especially. He is 73 and still doing orchard work, and always taught his children the importance of hard work.
Jimenez said that her children, now 17, 15 and 8 sometimes help her at the bakery, and her husband has been very good about taking care of the house and getting meals on the table when she is busy. Her older sister

The early part of spring was a very stressful time for Jimenez as she saw sales plummet. In May busi ness started to pick up again, but she had to keep up with all the state requirements to stay open. She said she is grateful that her customers understand the need for the required precautions.
Since May business has picked up, and in fact the bakery has been even busier than last summer.
Lake Chelan Artisan Bakery is located at 246 W. Manson Highway, Suites 3 and 4 in Chelan. It has some indoor and outdoor seating, but is currently offering only takeout. The bakery is open from 7 a.m. to 3 p.m. seven days a week.
