Meet Our

Local & Regional Home Brewers

Central Oregon Homebrewers Organization (COHO) was founded in 2005 as a means for people to educate themselves and others about the joys of homebrewing. Some call this a hobby, others call it an obsession, but we are all in it to associate ourselves with like-minded individuals who have the knowledge and an appetite for an enjoyable time. Most of us are from Bend and the surrounding communities. COHO is open to the public, and people who have an interest in the science of fermentation are encouraged to join. COHO meets the third Wednesday of each month. Go to www.cohomebrewers.org for complete details. Cheers from COHO — we drink like fish!

2011 COHO projects include:

• A barrel beer project, brewing 70 gallons of foreign export stout on seven 10-gallon brew systems, then aging in a bourbon barrel donated by Deschutes Brewery. • Working with the Oregon Homebrewers Alliance to host the 2011 COHO Spring Fling with 198 entries and 19 judged categories, one of the largest homebrew competitions east of the Cascades. • Brewing the Best of Show from the Spring Fling with Silver Moon Brewing as the official beer of the 2011 Bend Brewfest. James Adams, COHO Vice-President, gets the credit for the win and creation of Oregon Export Lager.

• Freshly-Roasted, Sustainable Coffees • Support Your Favorite Non-Profits • 2 Convenient Locations

DEFINING ABV

ABV stands for “alcohol by volume.” It is a standard measure of how much alcohol (ethanol) is contained in an alcoholic beverage, like beer.

DEFINING IBU

IBU stands for “International Bittering Units.” This is a measurement of the actual bitterness of a beer as contributed by the alpha acid from hops. Generally speaking, beers with IBUs of less than 20 have little to no apparent hops presence, IBUs from 20-45 offer a mild to pronounced hops presence, and IBUs greater than 45 — while still considered mild by many Northwest brewers’ standards — offer a more pronounced hops flavor and bitterness. with their India Session Ale and Apocalypse IPA. “This year we will be focusing on reinventing the brewing wheel,” said Chris Cox, partner at the 10 Barrel Brewing Company. 10 Barrel Brewing Company was born in Bend in 2006 and has been “brewing what they like to drink”ever since. With an emphasis on innovation and creativity, the brewery’s team strives to “have fun while making the most creative beer in the northwest,” stated Cox. “We take an industry leading approach to designing and brewing our beers,” he said. “We never settle at our brewery and take pride in pushing the industry.”

One such creative move is the new Solera Project which involves three barrels, one for each of their brewers, that are never completely emptied before new types of beers are brewed in them. With this project, they hope to create a “living beer” that evolves over time. “Our Brewers have a total of 40-plus years of experience with the largest craft lager brewer and fifth largest craft brewer in the U.S.” said Cox. “To sum it up, we hire solely on creativity and attention to detail.” With their attitude and approach to brewing, 10 Barrel Brewing Company is sure to make waves again this year at the Bend Brewfest. I’m a Hop-Head — I enjoy big American IPAs, the hoppier the better. Give me lots of IBUs (international bittering units) and a high ABV (alcohol by volume). Fortunately, I live in Bend, a mini-mecca of great craft beer located close to some of the best hop-growing regions in the country. Here is my list of favorite IPAs available at the 2011 Bend Brewfest with the top three rated “must try”: 1 - Bend Brewing Company Hop Head Imperial IPA 2 - Firestone-Walker Union Jack IPA 3 - Anderson Valley Hop Ottin IPA 4 - Alameda El Torero IPA 5 - Oakshire Watershed IPA

Old Mill District Presents

THE CYCLE PUB

Bend residents love beer and bicycles! The combination of these two pastimes is a multi-person bike riding and beer friendly Cycle Pub presented by the Old Mill District. Look for Cycle Pub in the Old Mill District, around town making stops at local breweries or at the Les Schwab Amphitheater during a summer concert. This 16-person cycle will get you around to all the hot spots in Bend, simply through the pedaling power of the riders. Cycle Pub has a twin-tap beer tower, beautifully finished wooden bar, convertible top, built-in ice chest and great lighting. A rocking sound system and an iPod docking station on board the Cycle Pub adds to the fun. Local resident James Watts poured his heart into this unique project to bring Cycle Pub to Bend. The Cycle Pub can be booked for two or three hour pre-set tours for special events or private parties as well as specific routes or an entire day. Cycle Pub fits up to 16 people and riders can bring their own beer, wine, coffee or snacks aboard to fuel the crew. Tours can be customized to accommodate families and non-beer drinkers (gasp!) as well.

Pairing

D O O F & R E E B

Readers of The Bulletin, Bend’s daily newspaper, know me as a restaurant critic and weekly travel columnist. Not so many of them know that I love good beer.

As a freelance writer and photographer who has lived and worked around the world, I have had occasion to sample the craftsmanship of many brewers from many countries. And I have learned that beers can be paired with food with every bit as much success as a good wine. These are some of the pairings that I look forward to trying at the Bend Brewfest:

Eel River Brewing’s Avatar Jaspine IPA with

green curry from Spork. Everyone is making a good India Pale Ale these days, but what better to match with Asian-style curry than an avatar? In Hindi, an avatar is a deity who has descended to earth. I’m sure it’s absolutely god-like.

Steelhead Brewing’s Raging Red Rhino Ale with a

slice of pie from The Pizza Cart. It’s no secret that beer pairs well with pizza, especially — in my experience — a good amber lager. And a rampaging rhinoceros appeals to my sense of the dramatic.

Caldera Vienna Lager with

a bratwurst from King Weenie. A malty, Austrian-style beer, Vienna lager would seem to be a good match for a German-style sausage.

Seven Brides Weezin-ator Doppelbach with barbecued meats

from Cameron’s Smokeshack. This is a strong, toasty beer with a lingering sweetness in the finish that no doubt stands up well to the smoky flavors of barbecue.

Little Sumpin’ Sumpin’ Ale, by Lagunitas Brewing, with Soupçon

Fire Mountain Steam-Fired Stout with toasted hazelnuts from Nut Love. I considered an oatmeal stout, but this particular brew makes me think of chocolate-covered nuts.

& Sancho Street Food. I am always pleasantly surprised by the soups and other surprises prepared by chefs Steven Draheim and Joel Cordes. The brewer’s description of this ale sounds equally eclectic: “sneaky smooth with a touch of wheatly-esque-ishness.”

Lompoc Sour Cherry Wheat with Cuppa Yo yogurt. If I can’t

Jabberwocky strong ale

dispenses. I have no idea what kind of food I’ll get, but I know that a blonde in a bikini goes with absolutely anything!

from Walkabout Brewing with a gyro and baklava from Demetri’s Greek Cusina. I could explain that this rich, creamy, Britishstyle pub ale matches well with Hellenic flavors, when in fact … it’s all Greek to me!

get a cherry yogurt, I may fall back on Lost Coast Tangerine Wheat.

Maui Brewing’s Bikini Blond with whatever Kent Koolers

BOASTING ONE OF THE N’WEST’S LEADING FERMENTATION SCIENCE PROGRAMS Maybe it’s the water. Or the hops. Or the numerous links people here have to a European ancestry. Whatever the cause, the Pacific Northwest has a reputation as the microbrew capital of the world. Oregon State University has played no small part in building this image, thanks to the hard work and talents of graduates of its fermentation science program in the Department of Food Science and Technology. With one of the nation’s only teaching breweries, OSU offers students the opportunity to develop new brews while they learn subtle chemistry of taste and the innovations of business.

Thomas H. Shellhammer Nor’Wester Professor of Fermentation Science, Oregon State University

Cheers to the Bend Brewfest breweries who count graduates of Oregon State University’s Fermentation Science program within their ranks: Boneyard Beer, Bridgeport, Cascade Lakes, Deschutes, Double Mountain, Fire Mountain, Full Sail, Hopworks Urban, McMenamin’s, Ninkasi, Pelican Pub, Redhook and Widmer Brothers.

RAISE A PINT!

Cheers to the Old Mill District Glass & Poster Designs The tradition of the Old Mill District limited edition posters and pint glasses continue with new designs this year. For the fourth year in a row, shoppers and concert-goers can add to their collections by redeeming receipts to receive a FREE signature poster or pint glass. Visitors can bring a Les Schwab Amphitheater concert ticket, along with $50 in receipts from any of the Old Mill District shops, restaurants, galleries or cinemas to qualify. Didn’t go to a concert? How sad. A cool free pint glass or poster can still be yours by bringing in receipts totaling $100 or more to the Ticket Mill or the Oregon Duck Store. Go home happy! Great designs of the past two years

have included a new colorful Old Mill District design, Smith Rock, Nordeen Nordic Ski Shelter and the Deschutes River graced the shelves of patrons. Last year’s glasses celebrated the Cascades, the Badlands, Sparks Lake and Cyclocross racing. Paul Leighton at Steller Design has done it again in 2011, with more nods to area — Tam McArthur ridge, Phil’s Trail, Bend Summer Concerts at Les Schwab Amphitheater, and of course a new design dedicated to the Old Mill District, this one focusing on stand-up paddling the Deschutes River. Posters and glasses can be purchased at the Ticket Mill, The Duck Store and Visit Bend.

We are our getting gnomish taste buds in a fury by checking out the beers at the Bend Brewfest. Sometimes we like big beers, sometimes we like small beers, sometimes only hoppy ones will do. By the time September rolls around, we like the oaken cask barrel aged beers. Here is our list of beers we like to kick it with under a mushroom in August. Enjoy the Bend Brewfest, and we look forward to seeing your fine self down at The Little Woody Barrel Aged Brew Festival Friday-Saturday, Sept. 2-3 on the Des Chutes Historical Lawn.

VOLUNTEER SPOTLIGHT: ART & MARIE WIRTZ WHAT INSPIRED YOU TO BECOME REGULAR VOLUNTEERS?

We heard about it several years ago and joined a couple of friends as we thought it might be educational. After about 15 minutes we were hooked.

WHAT IS YOUR FAVORITE PART OF VOLUNTEERING? The beer culture includes all kinds of people. There’s a camaraderie about the experience that is hard to explain unless you’re there. Pouring beer is a very important job and it requires skill!

TELL US ABOUT YOUR BUSINESS; WHAT MAKES THE GARAGE UNIQUE? Our business is based on the

relationships we have with our clients. Unless we are in meeting, they can expect to have one of us answer the phone whenever they call during business hours.

IF YOU HAD TO PICK ONE PLACE IN YOUR HOME TOWN TO TAKE A TOURIST WHERE WOULD IT BE?

WHERE HAVE WE SEEN YOUR WORK? We work with many local businesses supplying advertising, collateral and interactive support for clients like Bennington Properties, Hayden Homes, Mount Bachelor Village Resort and Entre-prises, the international climbing wall company. We support nonprofits like OMEA and ArtsCentralOregon.org We recently updated the BendBrewfest. com website to allow folks to “volunteer online,” and you may have seen the new site for the Les

Schwab Amphitheater (BendConcerts. com).

HOW DO YOU RECRUIT YOUR FRIENDS TO VOLUNTEER WITH YOU? We were psyched about our previous experience, and I think our friends could tell it was definitely a “must do.” Its an easy sell: beer, beer people, and free beer. Done.

I’d say cruise up the Cascade Lakes highway, spend the day out on Sparks lake in the kayaks or maybe a bike ride out through the farms in Tumalo. There’s something for everyone so if we want to keep it simple, we’ll just ride the river through the Old Mill.

The Deschutes Brewery Twilight 5K run/walk will take place on Wednesday, Aug. 17 at 7 p.m. The race starts and finishes at the Deschutes Brewery off Shevlin-Hixon Drive in the Old Mill District. Proceeds from this event will benefit the Ronald McDonald House of Central Oregon. This is a worthwhile charity to support here in our fine community.
