Cooking like a pro, mastering spaghetti squash

Whether you wish to lose weight, improve digestive health, eat more veggies, lower your carbohydrates, go paleo or gluten free, or just love delicious food, you’ll want to say hello to my little friend -- spaghetti squash.

This squash is cooked into long tender strands like, well ... spaghetti. I’m not going to tell you it tastes exactly like pasta, because it doesn’t. But it’s delicious! The taste is sweet and mild, so this guilt free spaghetti alternative is a perfect substitute in your favorite pasta dishes.

The health benefits are significant with this nutrient-dense squash. You’ll get vitamins, antioxidants, fatty acids, minerals and fiber. One cup of cooked spaghetti squash has 31 calories and 5.5 grams of net carbs, compared to 221 calories and 43 grams of carbs in one cup of cooked pasta. And can we be honest? Does anyone eat just one cup of pasta?

Spaghetti squash is easy, inexpensive and versatile. Stock up when it’s on sale, because it keeps for a month stored in a cool dry place and up to three months in the fridge.

This big yellow squash can look intimidating, but I promise it’s easy to prepare. Like all hardshell squash, the rind is hard to cut. To make this easier, pierce the squash

LEMON BUTTER SPAGHETTI SQUASH

Yield: 4 servings

Time: 60 minutes

1 (2 pound) spaghetti squash

1 teaspoon olive oil

Pinch of salt

1/4 teaspoon black pepper

2 tablespoons butter

1 garlic clove, finely minced

1 lemon, juice and zest

2 tablespoons chopped fresh parsley or basil

2 tablespoons sliced almonds, optional

Preheat the oven to 400 degrees. Line a baking sheet with parchment or foil.

Slice the spaghetti squash in half lengthwise, scrape out the seeds. Brush all sides lightly with olive oil and sprinkle with salt and pepper. Place it cut side down on the prepared baking sheet. Roast for 45 to 55 minutes, or until easily pierced with a knife.

About 5 minutes before the squash is finished roasting, heat a small saucepan over medium-low heat and melt the butter. Stir in the garlic and cook for 1 minute. Stir in the lemon juice, zest and a sprinkle of salt and pepper. Bring mixture to a simmer, then remove from heat.

Scrape the squash strands into a serving bowl or platter. Toss, gently, with the lemon butter mixture. Top with parsley and almonds. Enjoy!

with a knife and cook in the microwave for 3-4 minutes to soften before cutting.

The easiest preparation is to roast the squash in halves. Use a sharp knife to cut lengthwise and scoop out the seeds. Place it cut side down in a roasting pan. You can add a little water and cover with foil if you like, but it’s not necessary. Bake at 400 degrees for 40 to 55 minutes depending on size. It’s done when it’s easily pierced with a knife.

You can also microwave spaghetti squash. Slice lengthwise and remove the seeds. Place squash cut sides down in a 9x13 glass baking dish.

Add an inch of water and cover tightly with plastic wrap. Microwave the squash on high for 15 minutes; check to see if the squash is thoroughly cooked. If not, microwave for 5 more minutes. Carefully remove the squash from the microwave and let stand until cool.

After the squash is cooked, scrape the squash with a fork to remove the spaghetti-like strands. As an entree, try it with marinara, pesto or Alfredo sauce.

2 pounds boneless and skinless chicken breasts or thigh, cut into 1.5-inch thick cubes

1 teaspoon salt (or to taste)

½ teaspoon ground black pepper (or to taste)

? cup balsamic vinegar

2 tablespoons honey

1 tablespoon olive oil

1 teaspoon Italian seasoning

½ teaspoon garlic powder

2 medium red bell peppers, cut into

1-inch pieces

1 medium red onion, cut into

1-inch pieces

2 medium zucchini, cut into ½-inch slices

Marinate the chicken. Cut the chicken breasts into 1.5-inch thick cubes and evenly season with salt and pepper.

Set aside in a large bowl or Ziploc bag.

Combine balsamic vinegar, honey, olive oil, Italian seasoning, and garlic powder in a medium mixing bowl. Mix well until smooth. Reserve 3 tablespoons of the sauce mixture and add the rest to the bowl of chicken. Toss well to coat all the chicken. Cover the bowl with plastic

Place cucumbers in a colander over a bowl; sprinkle with salt and toss. Let stand 15 minutes. Squeeze and blot dry with paper towels. In a large bowl, combine the remaining ingredients; stir in cucumbers. Refrigerate, covered, at least 1 hour. This salad tastes best if eaten within 2 days of making.

Skewer the chicken. Thread 4 cubed chicken breasts onto each skewer, alternating with a piece of red bell pepper, red onion, and zucchini. Season all over with a little bit of salt and pepper, to taste.

Grill the skewers. Preheat grill over medium high to 450F, about 6-8 minutes. Place the balsamic chicken skewers spaced evenly apart on the grill and grill for 5 minutes on each side or until the internal temperature for the chicken reaches 165 F as read on a meat thermometer. Do not overlap the skewers at any time to ensure even cooking for all the skewers. Add sauce. Brush the reserved sauce over the skewers on both sides and grill for another 1-2 minutes until nicely charred, flipping once during grilling.

Rest and serve. Remove the chicken skewers off the grill and let rest for 5 minutes. Serve warm on it’s own or with a side of rice or pita bread, if desired.

*If you don’t have a grill, you can also bake the balsamic chicken kebabs in a 450F preheated oven for 16-18 minutes until the chicken is fully cooked through. Baste the skewer with reserved sauce and broil on high for 2-3 minutes until nicely charred on the edges. STRAWBERRY

In a large bowl, beat cream cheese and yogurt. Add the milk, dry pudding mix and lemon zest; beat until smooth. In a blender, process 1/2 cup strawberries and grape juice until blended. Tear cake into 1-in. cubes; place a third in a trifle bowl or 3-qt. serving bowl. Top with a third of the pudding mixture and half of the remaining strawberries. Drizzle with half of the strawberry sauce. Repeat all layers. Top with remaining cake and pudding mixture. If desired, garnish with whipped topping and additional strawberries. Cover and refrigerate for at least 2 hours.

Q: Is Taylor Kinney ever returning to “Chicago Fire”? He’s my favorite actor, and I’ve enjoyed watching him since the show began. But I read a rumor that he’s gone for good. - L.G.

A: It’s not looking too promising that Taylor Kinney will resume playing Lt. Kelly Severide on the long-running NBC hit show “Chicago Fire.” The actor took a leave of absence this past January with no specific return date mentioned. A source told Deadline.com that the decision seemed somewhat last-minute,

with writers having to rework scripts to explain his character’s absence.

In April, NBC renewed “Chicago Fire” for another season, its 12th, but announced that there would be budget cuts. Some have speculated that if Kinney returns, it could be well into the upcoming season so that NBC doesn’t have to pay him as much. Apparently, most of the cast will take turns sitting out for a few episodes to free up the budget.

Kinney did issue a statement following the untimely death of actor Treat Williams in June. Williams played Kinney’s father on “Chicago Fire” between 2013-2018. Kinney told People magazine that Williams was like a father figure to everyone on set. “I’ll always relish our conversations and his uncanny ability

to light up a room,” he stated. “We all send love; he will be missed.”

Q: I saw a commercial for a new movie or TV series called “Haunted Mansion,” which is obviously based on the Disney ride of the same name. But didn’t they already make a movie about this a few years ago? -- D.E.

A: “Haunted Mansion,” starring Owen Wilson and Rosario Dawson, is a new film that’s loosely based on the popular ride at the Disney theme parks. It’ll probably shock you to learn that the first film adaptation was released 20 years ago. It starred Eddie Murphy and Jennifer Tilly, and had a bit of a longer title - “The Haunted Mansion.” The original film was panned by critics, and while it

wasn’t exactly a financial flop, it wasn’t as big of a hit as “Pirates of the Caribbean,” another ride-to-motion-picture adaptation.

Based in Otter Tail County,

one of Minnesota’s oldest bands started in 1894

CARLISLE, Minn. —

They have played on through two world wars and marched in countless parades over the years, and for decades they have welcomed new musicians and watched as fellow trumpet and trombone players retired or passed away.

Long before the concert started Tuesday, July 18, fans of the Carlisle Band got their prime seats. One by one, members of the band started rolling in carrying their trombones, euphoniums, trumpets and clarinets. Then, in front of a packed crowd on the front lawn of a century-old courthouse in Fergus Falls, one of Minnesota’s oldest bands started yet another show.

There were two bands in that area back in the early 1900s. One was the Carlisle Band, the other was a Temperance Band

in favor of Prohibition.

As a result, Carlisle Band became known fondly as “The Beer Band.”

Back in 1894, Grover Cleveland was president and the Carlisle Band from Otter Tail County was formed. They’ve never stopped playing.

Some band members, like 85-year-old Gordy Fjestad, started young.

“I started when I was 16,” Fjestad said.

His ancestors started the band, which bears the name of a small town about 10 miles northwest of Fergus Falls.

“We have a good reputation around town,” Fjestad said. “I like the camaraderie, and it is so fun to play the march music, and that is cool.”

Now, the Carlisle Band plays at parades

and festivals in Otter Tail County most of the summer, but they’ve also traveled abroad, to Norway.

“We marched in two parades and played several concerts,” Fjestad said.

Band member Kris Lein started even younger. He, too, comes from a long line of relatives who, over the past 130 years, played in Otter Tail County’s pride and joy, the Carlisle Band.

“Many of the members, the Fjestads, the Leins, there are a lot of us that have been a big part of that five generations ago. It is family connections,” Lein said.

Sure, some are short of air, with a few creative notes here and there, but the two-dozen members from teenagers to golden oldies are a dedicated bunch.

They’ve never forgotten who started it all, and they vow to keep the tradition going.

Reuters SHANGHAI — Hengheng’s friends could tell he was enjoying his birthday party in the pricey, healthconscious restaurant in downtown Shanghai by the way he licked his food off the plate.

the birthday by clapping and taking pictures of the dog and his paw-shaped cake.

“I can see from his reaction and the way he was eating everything so fast that he was actually really happy.”

China’s pet economy was worth $69 billion last year, a 25% increase on the previous year, according to data from research firm iiMedia Research. It is expected to reach 811.4 billion yuan by 2025.
