Freezer-Friendly Feast:

Big Batch Bolognese Sauce for Less-Stress Holidays 2 tablespoons Italian seasoning

BIG BATCH BOLOGNESE SAUCE

After the last batch of beef, return the veggies and cooked beef to the pot. Add the Italian seasoning and tomato paste, stirring to coat every morsel with tomato goodness. Let it cook, stirring occasionally, for at least 5 minutes to caramelize the tomato paste. This step adds tremendous depth of flavor.

Yield: 18-20 (1 cup) servings Total Time: 4 hours 3 tablespoons olive oil 5 cups chopped onions 2 cups chopped carrots 1 1/2 cups chopped celery 3 tablespoons butter 6 cloves garlic, chopped Salt and pepper to taste 5 pounds ground beef

1 (15 ounce) can tomato paste 2 cups red or white wine (or beef broth) 2 (28 ounce) cans Italian-style diced tomatoes 2 cups whole milk 3 bay leaves 1 cup grated Parmesan cheese In a large Dutch oven or stock pot, over medium heat, saute onions, carrots and celery until they’re softened and begin to caramelize. Then add the butter and garlic, and saute until fragrant. Lightly season with salt and pepper. We’re adding Parmesan later, so go easy on the salt for now. Remove the veggies and keep them warm. In the same pot, turn up the heat to medium-high. Brown the beef in three to four batches, breaking it into small pieces and seasoning lightly. After each batch, use a slotted spoon to remove the cooked beef, and drain as much fat as possible. You want the beef to brown and hopefully leave behind some browned bits (fond) in the pan.

Don’t forget to top it with more Parmesan. And if you have some of that wine left from the recipe, enjoy it with your meal. Now let’s talk about how to make the most of this sauce. To freeze it, the most crucial step is to cool it completely to refrigerator temperature before preparing it for freezing. Portion it into zip-top freezer bags. For the best flavor, use it within three months, but it’s safe to eat for a year.

This week, I’m sharing my recipe for Big Batch Bolognese Sauce. It’s a slow-cooked, rich, meaty and versatile sauce that’s delicious. It’s made with ground beef, veggies, tomatoes, wine and milk. Yes, milk. Milk gives Bolognese its distinctive creaminess. Bolognese freezes beautifully and can be divided and used to make many different dishes. Bolognese goes in pasta, lasagna, deep dish pizzas, baked potatoes and my favorite -- served over spaghetti squash.

2 Cups brussels sprouts, halved 2 Cups butternut squash, coarsely chopped 1 red bell pepper, cut into 3/4 inch pieces 1 red onion, cut into 3/4 inch pieces 4 Tablespoons olive oil, divided 1/2 teaspoon salt 1/2 teaspoon black pepper 1 Tablespoon red wine vinegar 1 Tablespoon fresh herbs (parsely, chives, etc), chopped 1 garlic clove, minced 1 teaspoon Dijon mustard 2 Tablespoons pepitas, toasted

Vegetables: Preheat oven to 425 F. Line a large baking sheet with foil. Spread brussels sprouts, squash, bell pepper, and red onion onto prepared baking sheet. Drizzle with 2 Tablespoons oil. Sprinkle with salt and pepper; toss to coat. Roast veggies in the preheated oven until browned and tender, about 20 minutes. Stir halfway through. Let cool for 10 minutes. Vinaigrette: Whisk together vinegar, herbs, garlic, and mustard in a large bowl. Slowly pour in remaining 2 Tablespoons oil, whisking until the dressing is smooth and creamy. Add vegetables to bowl with the vinaigrette and toss. Let cool to room temp (or chill, covered). Sprinkle salad with pepitas before serving.

TUSCAN CHICKEN SKILLET

Bring a large pot of salted water to a boil. Cook the fettuccine according to directions on package; drain. Meanwhile, cook bacon in a large skillet over medium-high heat until crispy- about 8 minutes. Serves 4 Transfer to a plate. Sprinkle the chicken lightly with salt and pepper Salt and add to the skillet. Let cook, undisturbed, until Pepper golden brown on the underside- 2 to 3 minutes. 12 oz fettuccine Continue to cook, stirring occasionally for about 4 4 slices bacon, chopped 1 pound chicken tenders, cut into 1-inch pieces minutes more, or until cooked through. Transfer to the plate with the bacon. 1 cup heavy cream Reduce heat to medium and add the garlic, stirring 2 cloves garlic, minced until fragrant- about 30 seconds. Add the tomatoes 4 plum tomatoes, chopped and cream and bring to a simmer, then add the 3/4 Cup parmesan, grated spinach and stir until just wilted. Add the bacon, 3 Tablespoons fresh basil, chopped chicken, fettuccine, and parmesan and toss with tongs until well coated; season with salt and pepper. Garnish with basil and serve.

CARAMEL APPLE DUMP CAKE Serves 12

5 large gala apples, peeled, cored, and cut into 1/4-inch thick slices 1/2 Cup packed brown sugar 1 1/2 teaspoons apple pie spice 1/2 teaspoon salt 1/4 teaspoon ground nutmeg 1 Cup caramel candies, halved 1 yellow cake mix (such as Duncan Hines) 1 Cup butter, cut into 1/8-inch thick slices

Preheat oven to 350 F. Lightly coat a 9x13” pan with cooking spray; set aside. Combine apples, brown sugar, apple pie spice, salt, and nutmeg in a large bowl and toss until evenly coated. Transfer the apple mixture to prepared pan, spreading into an even layer. Evenly top with caramel candies. Sprinkle dry cake mix evenly over the apple mixture. Place butter slices evenly over the dry cake mix, making sure that the majority of it is covered. Bake until golden brown and an inserted toothpick in the center of the cake comes out clean- 50-55 minutes. Cool cake in baking pan on a wire rack for at least 10 minutes. Store covered, at room temperature for up to three days.

HOLLYWOOD BY TONY RIZZO HOLLYWOOD — “Australia” director Baz Luhrmann, who scored big with “Elvis” ($85 million cost, $288.7 million gross), must have been stuck on what to do next. Instead of moving forward, he went backward, reimagining his 2008 epic “Australia” ($130 million cost, $211.3 million gross) as a limited six-part series called “Faraway Downs.” Luhrmann must have planned back in 2008 to revisit “Australia,” having filmed three different endings at that time. It will once again feature Nicole Kidman and Hugh Jackman in their original roles and drops on Nov. 26 on Hulu. The ever-busy Kidman has “Aquaman and the Lost Kingdom” coming up on Dec. 20; the Netflix rom-com “A Family Affair” with Zac Efron and Kathy Bates; and “Holland, Michigan,” with Gael Garcia Bernal and Emmy winner Matthew Macfayden (for “Criminal Justice” and “Succession”). Meanwhile, Jackman is once again playing “Wolverine” in “Deadpool 3,” due May 3. *** Ellen Burstyn, Oscar winner for “Alice Doesn’t Live Here Anymore” (1974), turns 91 on Dec. 7, but admitted that she’s been busier than ever lately. When asked why the roles are piling up, she told the Hollywood Reporter: “Everybody else who could play those parts has already died.” Everyone also wondered why she chose to do “The Exorcist: Believer.” What made her override her previous stance to do it?
