The recent one, neuropathy, mainly targeted my toes. The daily pain was excruciating. At times it was unbearable. Frankly, I didn’t know how long I could withstand the pain. DIVAS ON A DIME

Homemade copycat crackers: A savvy saver’s delight BY PATTI DIAMOND re you a fan of those fancy, flavorful (and expensive!) crisps you find in gourmet markets? You know, the first to disappear from charcuterie boards everywhere? The ones where there’s rain on the coast (wink, wink!). Well, I’ve got great news for you just in time for the holidays. You can make your own, and it’s not only cost-effective, but surprisingly easy. These crisps closely resemble their high-end counterparts. Here’s the real magic -- one batch yields a whopping 100 crackers for around $5. For reference, they sell for an average of $7.50 for a box of 30 online. No need for a fancy kitchen setup here. Mix all the ingredients easily by hand in a single bowl, divide the batter between four small loaf pans, bake, cool, slice thin, and bake again. Simple as that. These homemade crackers are a treat for the taste buds. They’re essential on charcuterie boards, paired with soups, salads or a simple smear of almond butter. You can customize the ingredients to your liking. You mix and match seeds, fruits and nuts. The possibilities are endless. Seed ideas: golden flax seeds, pepitas, chia seeds, millet, sesame seeds, sunflower seeds.

Dried fruit ideas: cranberries, apricots, raisins, dates, figs, cherries, blueberries, currants. Nut ideas: almonds, walnuts, pistachios, cashews, pecans, hazelnuts, macadamia nuts. Additional ideas: fresh thyme, rosemary, olives, grated firm cheeses, ginger, pumpkin spice. No buttermilk? No problem! You can easily create your own by combining 2 cups of milk with 2 tablespoons of lemon juice or vinegar. Let rest for 15 minutes, and it’s ready. Alternatively, plain yogurt is a suitable replacement.

IMPOSTER-COAST CRISPS Yield: 100 crackers

Freeze Time: 3 hours Cook Time: 1 hour, divided 2 cups whole wheat flour 2 teaspoons baking soda 1 teaspoon kosher salt 1 cup assorted seeds 1 cup assorted dried fruit, chopped 1 cup assorted nuts, chopped 2 cups buttermilk 1/4 cup honey or pure maple syrup Preheat oven to 350 degrees. Lightly grease four mini loaf pans (3 inches by 6 inches). In a large mixing bowl, combine the flour, baking soda and salt. Stir to combine. Add the seeds, fruit and nuts, and mix. Add the buttermilk and honey, and stir until everything is mixed and the fruit and nuts are evenly distributed. Evenly fill your loaf pans. Bake for 30 minutes, or until golden on top and a toothpick inserted

in the center comes out clean. Let cool for 10 minutes in the pans before turning out onto a rack to cool completely. It’s important that the loaves are completely cool before freezing. Wrap the cooled loaves in plastic and put in the freezer for 3 hours, or until firm. The loaves can be made in advance and frozen for up to a month before slicing. Preheat the oven to 300 degrees. Using a serrated bread knife, slice the frozen loaves as thinly as you possibly can. You should get around 25 slices from each loaf. Place slices in a single layer on an ungreased baking sheet and bake for 15 minutes on one side, then flip them over and bake for another 15 minutes. Your crackers could take a little more or less time depending on their thickness. Watch carefully so they don’t burn. If your crackers aren’t as crisp as you’d like, it’s possible they were sliced a bit thick. Simply reheat the oven to 250F degrees, place the crackers on a sheet pan, and turn the oven off.

Leave them in the warm oven for 30 minutes, and they’ll crisp up nicely. Happy snacking! The Filling: 1/2 stick (1/4 Cup) butter, melted/cooled 2/3 Cup granulated sugar 4 teaspoons ground cinnamon

For the dough: Heat the milk in a small saucepan over medium heat to between 110° and 115° on an instant read thermometer, about 3 minutes. Remove the pan from heat and whisk in 1 tablespoon of sugar. Sprinkle the yeast over the milk and whisk to combine. Let the milk rest for 5 minutes until it’s foamy. Whisk the eggs and the cooled melted butter into the milk. Combine the flour, salt, and the remaining 5 tablespoons of sugar in the bowl of a stand mixer fitted with a dough hook attachment. Add the milk mixture to the bowl and stir with a spatula to combine into a messy clump. Mix the dough on medium-low speed, until it is smooth and pulling away from the sides of the bowl, 5 to 7 minutes. Cover the bowl with plastic wrap and place it in a warm, draft-free place for 45 minutes to 1 hour, until the dough has doubled in size.

1 can cream of celery soup 1 teaspoon paprika 1 Can cheddar cheese 1 Can cream of potato Peel and chop potatoes into 1 inch pieces, rinse. Shred carrots, chop onions and garlic. Set aside. Add butter, onions, and garlic to a large pot on medium heat for 2-5 minutes to allow onions to become tender. Slowly sprinkle the flour over the ingredients in the pot and stir until smooth. Slowly pour in milk and whisk as you pour. Whisk until well blended. Add potatoes, broth, salt, pepper, paprika, bacon bits, carrot, and canned soups, stir well. Let cook for one hour with a lid, stirring occasionally. Make sure potatoes are soft. Serve with additional sour cream, bacon, cheddar cheese, and/ or chives. In a skillet, melt 3 tablespoons of the butter over medium heat. Add the garlic and cook for a couple of minutes. Crank up the heat a bit and throw in the spinach. Stir around and cook for a couple of minutes until the spinach wilts. Remove the spinach from the skillet and put it in a small strainer. Squeeze the excess juice back into the skillet. Set the spinach aside. Add the artichokes to the skillet and cook over medium-high heat for several minutes, until the liquid is cooked off and the artichokes start to get a little color. Remove the artichokes to a plate. In the same skillet, melt the remaining 3 tablespoons of butter and whisk in the flour until it makes a paste. Cook over medium-low heat for a minute or two, then pour in the milk. Stir and cook until slightly thickened; splash in more milk if needed. Add the cream cheese, feta, parmesan, pepper jack, and cayenne, and stir until the cheeses are melted and the sauce is smooth. Chop the artichokes and spinach and add them to the sauce. Stir to combine. Pour into a buttered baking dish. Top with extra grated pepper jack and bake at 375°F until the cheese is melted and bubbly, about 15 minutes. Serve with pita wedges, chips, or crackers! For the topping: Meanwhile, melt the butter in a small saucepan over medium heat. Whisk in the brown sugar, heavy cream, honey and vanilla extract. Simmer, whisking frequently, until the mixture is glossy and well combined, about 2 minutes. Reserve 1/2 cup of the topping and pour the remaining into 9-by-13-inch baking dish, buttered or sprayed with nonstick spray. Sprinkle the pecans evenly over top. Set aside to cool slightly. For the filling: In a small bowl, combine the sugar and cinnamon. With a spatula, scrape the dough out of the bowl onto a lightly floured surface. Sprinkle a small amount of flour over top of the dough and roll it into a rectangle, about 12 by 18 inches. Drizzle the melted butter evenly over the dough, spreading with your fingers or a pastry brush, leaving a 1/2 inch border along each edge. Sprinkle the cinnamon-sugar mixture evenly over the butter. Starting with a long end, roll the dough tightly towards the other long end, creating a log. Pinch the seam together and place seam side down on a cutting board. With a sharp knife, cut the roll into 12 buns, each about 1 1/2 inch thick. Place the rolls pinwheel side up, evenly spaced, over top of the pecan topping. Cover the pan with a clean kitchen towel or plastic wrap and let rise until the rolls are just touching each other, 45 minutes to 1 hour. Meanwhile, preheat the oven to 350°. Bake the rolls for 35 to 40 minutes until golden brown on top. Let the rolls cool for 5 minutes in the pan, then place a cooling rack over top. With oven mitts, hold the pan and rack together, then flip over. Carefully remove the pan (give it a few taps if the buns don’t seem to be releasing) and let it slide out onto the rack. Set over a large sheet tray or cutting board. (If any topping sticks in the pan, scrape it out while it’s hot and put it right back on the buns!) Drizzle with the reserved topping and serve immediately.
