A Festive Slice of Joy BY PATTI DIAMOND s the holidays approach, there’s nothing quite like the aroma of a freshly baked Cranberry Orange Christmas Cake wafting through the air. This sweet and tart treat is a crowd-pleaser, balancing the burst of fresh cranberries with a rich, buttery cake containing the perfect amount of sugar for a perfectly balanced flavor. This recipe is a holiday must-have with my family. I usually make this cake at least twice. First is for dividing the batter into mini loaves for gifting. The second is a whole cake to devour shamelessly right out of the cake pan – oops! – I mean, to serve elegantly with coffee Christmas morning. Fresh cranberries, a staple in my kitchen, can be easily frozen for yearround use. Toss them right in the freezer in the bag they came in, and you’ll have these ruby gems ready whenever the craving strikes. Keep your eyes open for cranberries on clearance after the holidays. Last year I found fresh cranberries for 25 cents a bag. You can believe I stocked up and enjoyed them all year. The beauty of this recipe lies not only in its simplicity, but also in its versatility. If your secret stockpile of cranberries runs out, you can also make this cake by swapping blueberries or frozen mixed berries for the cranberries.

In a departure from the norm, this recipe skips the baking soda or baking powder. Instead, the eggs take center stage, providing the leavening needed for the perfect rise. You’ll see that this batter will resemble luxurious cookie dough. This thick concoction, a result of extended egg beating, requires a little extra effort but is the secret to the cake’s exquisite texture. Don’t skimp on beating time; let those eggs work their magic until the batter forms a ribbon off the beaters. For an extra burst of flavor that sets this recipe apart from the rest, we’re adding orange zest to the mix and an orange icing drizzle to finish the cake. It elevates the cake, adding a citrusy note that complements the cranberries beautifully. Diva Tip: The cold from frozen cranberries may thicken the batter, making it difficult to spread in the pan. Allowing the cranberries to thaw on the counter as you prepare the cake will make the stirring process a breeze.

CRANBERRY ORANGE CHRISTMAS CAKE For the cake: 3 eggs 2 cups sugar 3/4 cup softened butter 2 teaspoons vanilla Zest of one large orange 2 cups all-purpose flour 12 ounces fresh or frozen cranberries 1 cup pecans, chopped, optional

For the orange icing: 3/4 cup powdered sugar 2 1/2 tablespoons fresh orange juice Preheat your oven to 350 degrees. Butter or spray a 9 by 13 pan; set aside. Beat eggs with sugar until thickened, are doubled in size and lemon-colored (approximately 5-7 minutes). Add butter, vanilla and orange zest; mix for an additional two minutes. Stir in flour until just combined. Add cranberries and pecans, ensuring an even distribution. Spread the batter in a buttered 9x13 pan. Bake for 40-50 minutes, or until lightly browned and a toothpick comes out clean. Let the cake cool completely. Make the icing by stirring together the powdered sugar with juice from the orange we zested. Drizzle the cake with icing before cutting it into small slices. Serve alone, with vanilla ice cream or whipped cream.

Rolling sugar: 6 Tablespoons sugar 1 1/2 teaspoons nutmeg Glaze: 2 Cups powder sugar 1/4 Cup eggnog 1/2 teaspoon nutmeg

4 Cups flour 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon cream of tartar 1 teaspoon nutmeg 1 Cup butter 3/4 Cup granulated sugar 1 Cup brown sugar 2 eggs 1/2 Cup eggnog 1 teaspoon vanilla

Sift together dry ingredients. In separate bowl, cream butter & sugar. Add eggs, eggnog, and vanilla. Stir in dry ingredients until combined. Cover and chill for 1 hour. Preheat oven to 350. Form dough into 1” balls. Mix nutmeg and sugar in small bowl, roll ball in sugar to coat. Place on greased baking sheet and bake 8-9 minutes. Cool on pan for 10 minutes before transferring to rack. Combine glaze ingredients and drizzle over cookies.

THE BEST OATMEAL COOKIES 3 eggs, well beaten 1 Cup raisins 1 teaspoon vanilla extract 1 Cup butter 1 Cup brown sugar 1 Cup white sugar 2 1/2 Cups flour

1 teaspoon salt 1 teaspoon ground cinnamon 2 teaspoons baking soda 2 cup oatmeal 3/4 Cup pecans, chopped Combine eggs, raisins, and vanilla and let stand for one hour, covered in plastic wrap. Cream together butter and sugars. Add flour, salt, cinnamon, and soda to sugar mixture. Mix well. Blend in egg-raisin mixture, oatmeal, and chopped nuts. Dough will be stiff. Drop by heaping teaspoons onto ungreased cookie sheet or roll in small balls and flatten slightly on cookie sheet. Bake at 350 for 10-12 minutes or until lightly browned.

8 Cups puffcorn (like Old Dutch) 2 Cups pretzels (like Snyders) 1-1/2 Cups peanuts 12oz bag white chocolate chips 1 Tablespoon coconut or vegetable oil 11oz bag Holiday M&Ms Holiday sprinkles Spread a couple sheets of parchment paper or wax paper on the countertop then set aside. Add puffcorn, pretzels, and peanuts to a very large bowl

- if you don’t have an XL bowl, use two large bowls - then set aside. Add chocolate chips and coconut oil to a medium-sized, microwave-safe bowl then microwave for 40 seconds and stir. Microwave for 30 seconds then stir. If chocolate chips aren’t completely smooth, continue microwaving in 10 seconds increments, stirring between increments, until completely melted. Drizzle chocolate over puffcorn mixture then gently fold with a spatula until everything is evenly coated. Spread mixture out onto prepared surface then sprinkle with M&Ms (may not use whole bag) and press gently so they adhere to the warm chocolate. Add sprinkles then let cool completely. Transfer to treat bags or an airtight container.

A: Tatum O’Neal wrote in her 2004 autobiography, “A Paper Life,” that she and her father did not speak for two decades. According to Entertainment Weekly, they started to repair their relationship in the months before his longtime love, Farrah Fawcett, died after her cancer battle in 2009. The father and daughter duo, who starred in the classic film “Paper Moon,” reunited on-screen in 2011 for their own reality show, “Ryan & Tatum: The O’Neals.” Their bond continued to grow until his passing on Dec. 8 at the age of 82. In a statement to People magazine, Tatum stated that her dad “meant the world to me. ... I’ll miss him forever, and I feel very lucky that we ended on such good terms.” *** Q: I know most of the

HOLLYWOOD BY TONY RIZZO HOLLYWOOD — Legendary actor and director Clint Eastwood (93 years young) is directing his 41st film, “Juror No. 2,” which is about a murder trial juror realizing that he’s at fault for the victim’s death. It stars Nicholas Hoult, Toni Collette, Kiefer Sutherland, Leslie Bibb and Chris Messina. I first met Clint at a CBS press reveal for his show “Rawhide” in 1959. In 1964, I ran into him at his New York hotel, and he was worried that a Western he’d just made in Italy would flop here because he didn’t utter one word of dialogue. Collectors know that the line between artistic and utilitarian objects is not always clearly drawn. This large, glazed earthenware plate with two stylized faces in profile sold at a Rago auction for $3,120. At that price, it’s more likely to go on display than on the dinner table! The plate was designed by Viktor Schreckengost for Cowan Pottery in Rocky River, Ohio. Schreckengost worked for Cowan in 1930 until the pottery closed in 1931. He designed Cowan’s famous Jazz Bowl with blue and black art deco designs that create a stylized New York cityscape. The Jazz Bowl is an art piece, but Schreckengost created plenty of practical and utilitarian items, too. He designed dinnerware for Limoges China Company, Salem China Company, Onondaga Pottery and others. Beyond ceramics, he designed chairs, vehicles, toy pedal cars, oscillating fans, radar for pilots and more. *** Q: I have my late grandfather’s old trumpet. It’s engraved “Emperor, Made by Boosey & Hawkes, London, Made in England.” Where can I get someone to tell me what it is worth? A: Boosey & Hawkes started in 1930 when Boosey & Company and

Hawkes & Son merged. Both companies made musical instruments and were music publishers. Boosey & Hawkes made musical instruments until 2003, when it sold that part of its business to The Music Group. The company still publishes music. The value of the trumpet depends on the desirability of the instrument, the type of metal, tone quality and condition. Take the trumpet to a music store that sells used musical instruments to see if they can give you a value. If you intend to sell the trumpet, it’s a good idea to take it to more than one music store to get the value.
