1 tablespoon olive oil 2 cups onion, diced 4 medium carrots, sliced 3 celery stalks, chopped 8 ounces mushrooms, sliced 6 to 10 cloves of garlic, minced 1 tablespoon fresh grated ginger (or 1 teaspoon powdered ginger) 8 cups (64 ounces) chicken bone broth or low sodium chicken broth 1 teaspoon ground turmeric 1/2 teaspoon kosher salt

3 pounds chicken leg quarters, skin removed Freshly ground black pepper Big pinch red pepper flakes 1 cup frozen peas 1 small bunch kale, stems removed, chopped Heat the oil in a large soup pot, set on medium heat. Add the onion, carrot and celery, and saute for about 5 minutes, stirring frequently. Add the mushrooms, garlic and ginger, and stir to combine. Ahhhh, the aroma! Add the chicken broth, turmeric and salt and give it another stir. Place the chicken pieces in the soup and bring to a boil. Once boiling, reduce heat to LOW and let simmer for 40 minutes. Now, fish out the chicken pieces and set aside to cool. Add the peas and kale. Once the chicken is cool enough to handle, shred the chicken and add it back to the soup. Reserve the bones to make bone broth! Why is this chicken soup so effective? 2.5 lbs russet or yellow potatoes 1 Cup parmesan, grated (plus extra to serve) 6 garlic cloves, unpeeled 1/4 Cup extra virgin olive oil 6 thyme sprigs, leaves picked 3 green shallots, thinly sliced (plus extra to serve) 7 oz sour cream

In a large skillet, cook and crumble the beef over medium heat until no longer pink, 5-7 minutes; drain. In a greased 2-1/2-qt. baking dish, layer a third of the spaghetti sauce, half of the ravioli, half the beef and 1/2 cup cheese; repeat layers. Top with remaining sauce and cheese. Cover and bake at 400° for 40-45 minutes or until heated through. If desired, sprinkle with chopped fresh basil.

Core out middle of apples, leave closed at bottom. Mix together oatmeal packet with melted butter and layer this mixture with caramel bits until you reach the top of the apple.

Preheat oven to 395 degrees. Slice potatoes about 2cm thick. Place in a 9x13 baking dish with the parmesan, garlic, oil and thyme. Season generously and toss to coat. roast for 40 minutes or until golden brown and tender. Remove from oven. Squeeze garlic cloves from their skins back into the dish Add shallots, stock powder and 4 cups of boiling water. Add sour cream, stirring until well combined, then bake for another 20 minutes. Remove a 8 potato slices or so from the dish for garnish, then puree the remaining mixture to a smooth consistency (add a little more boiling water if you prefer a thinner soup). Season to taste and divide among bowls. Top with extra sour cream, reserved roasted potatoes, extra shallots, and extra parmesan cheese to serve.

A: David McCallum died of natural causes at the age of 90 this past September. He had a very long career in Hollywood, having been nominated for three Primetime Emmy Awards, including twice for his role in “The Man From U.N.C.L.E.” He went on to guest star in many classic shows like “Marcus Welby, M.D.,” “The Invisible Man” and “Murder, She Wrote.” Twenty years ago, he landed the biggest role of his career as medicalexaminer-turned-historian Dr. Donald “Ducky” Mallard on the CBS hit series “NCIS.” The show plans to honor him on Feb. 19 in the new season’s second episode. Clarkson and Jennifer Hudson, Fantasia Barrino hasn’t had as famed of a career as those other three “American Idol” contestants, but her 15 minutes has gradually increased. The wait is worth it, however, as she’s finally showcasing her incredible voice in the new version of “The Color Purple,” this time a musical, just like the Broadway play, which released on the big screen this past Christmas. Barrino played the role of Celie on Broadway as well and earned rave reviews for it. She’s garnering critical acclaim for the new film version as well. Perhaps, like Hudson did in 2007 for “Dreamgirls,” Barrino will win an Oscar this coming awards season.

However, his love of acting hasn’t fizzled.
