RK...An American Brasserie: Dining at its best By Jananne Abel he husband and wife team of Reza Khorshidi and Rebecca Kirhoffer— whose restaurant Rebeccas in Greenwich has been acclaimed by critics since it opened seven years ago—have teamed up on a second venture in Rye which opened Jan. 28. RK…An American Brasserie, named for both of them, is a modern American take on a classic brasserie, with straightforward cooking methods, fresh regional ingredients and professional service in a contemporary setting at 22 Elm Place. “At RK…An American Brasserie, we are creating a restaurant for 2005 and beyond,” said Khorshidi, executive chef and managing partner. “Borrowing from the classic brasseries of France but infused with American modernism in both the food and design, RK is a restaurant that will draw you in again and again.” A native of Azerbajan who grew up in Switzerland, Khorshidi trained in top kitchens in Europe, Los Angeles and New York before opening Rebeccas in 1997. He said he presents dishes simply, “coaxing the flavor out of the ingredients to allow food’s natural essence to shine.” Kirhoffer, a native of Greenwich, is educated both as a designer and as a chef, having managed the corporate dining program at Smith Barney starting in 1992. Designing a restaurant for the company’s top staffers, she hired La Goulue’s chef, Reza Khorshidi. In the course of the five years they worked together, they fell in love and married. I visited RK three weeks after its opening and found it to be a lovely restaurant with exquisite food and attentive service, a perfect place to celebrate Mother’s Day or any special occasion. “This being our first Mother’s Day, we will offer our usual menu and will charge menu prices,” said Khorshidi. “You make lots of new customers that way.” For those for whom price is no object, RK could become more than a place to dine on special occasions. The interesting menu is certainly one that will keep customers coming back for more. A selection of dishes, including fish, are spit-roasted on a rotisserie, a cooking method Khorshidi said ensures marvelous flavor. In addition, he is offering a selection of dishes familiar in concept but new in ingredients and flavors. Khorshidi and Kirhoffer believed a restaurant serving modern food needed a setting just as contemporary. They turned to noted architect Roger Ferris of Westport, Conn., who had designed Rebeccas, to create the desired effect. RK was created in a space that had been an abandoned warehouse on a busy side street off Purchase Street in the center of Rye. From the outside, RK, wrapped in a zinc alloy and look-

ing something like an office building, appears austere. But once inside you realize that although the décor is modern and very white, it isn’t cold. It is, in fact, quite appealing. A wall of windows fronts the street, and the main entrance sits off to the side where there is a small parking lot done in multi-colored brick pavers adjacent to the building. Inside is a large main dining area whose focal point is the large open kitchen sheathed in glass on three sides, allowing guests to watch the theatrics taking place within. A white and blue terrazzo floor curves from the entrance into the bar area, rising up to form the bar itself, a dramatic space lit from behind. Bamboo planks provide the flooring in the main dining area where square support columns are wrapped in sanded dot matrix glass, presenting a shiny appearance. Tall banquettes upholstered in dark blue velvet line the far wall, and projected screen art illustrates the white walls above. Sayings such as “It’s easier staying disconnected and distracted” provide subject matter in case the conversation lulls. White chairs, tablecloths and napkins are offset by pale blue glasses and white dishes bearing the RK logo in black. Plenty of light comes through the open, non-draped windows during the day, and after dark candles on the tables and tiny lights projecting from openings in the white ceiling provide indirect lighting. Moving up a step into the second of three dining areas, the exposed kitchen is on the left and raised banquettes against the right hand wall. Further back and raised a level is The Back Room at RK, which may also be reserved for private parties for up to 40 guests. A wall of wine is the focal point here. The entire restaurant seats 150.

Dinner for two On my recent visit, I was drawn to the half dozen mini lobster rolls ($18) among the raw and other seafood appetizers and was pleasantly rewarded with six miniature sandwiches consisting of delicate lobster salad between two tiny pieces of lightly toasted bread. The Maine Peeky toe crabmeat salad with celery root and roasted red pepper remoulade ($19) was also an appealing appetizer blending the tastes and textures of sweet fish, roasted peppers and the crisp vegetable underneath. For entrée, I selected the Blanquette de veau ($24), which brought me back to my college days when I spent my junior year in France living with a family and that dish was made strictly for special occasions. RK’s version, much like what I remember from 30 years ago, consists of chunks of veal, whole baby onions and mushrooms in a white cream sauce served over white rice.
Our other choice, spit-roasted Long Island duckling with celery root and a green peppercorn sauce ($26), brought a smaller portion than the veal. However, the preparation was particularly appetizing and a welcome change from the extra sweet sauces usually accompanying duck. The meat, not at all fatty, came with a piece of crunchy skin on top and green beans and raisins on the side. To complement our meal, we selected a bottle of Molnar Blaise 2003 Napa Valley Chardonnay ($48), an excellent dry white from the wine list created by Rebecca Kirhoffer. It focuses on American, French and Italian wines, many from small production vineyards. There is also an extensive list of wines by the glass. Dessert is also a treat at RK. I chose profiteroles filled with three varieties of homemade ice cream—vanilla, chocolate and pistachio—topped with hot chocolate sauce ($7), an absolute delight. My husband went with the plate of three cheeses ($9), your choice from among a list of five French and American varieties, accompanied by slices of apple, prunes and walnuts and pieces of lightly toasted white and multi-grain bread. The service was professional but not stuffy from a well-trained staff consisting of a wine steward, a roll server who went from table to table with three choices of bread, as well as our pleasant waiter. Our check came to $170 without tip.

Besides what we sampled, Khorshidi mentioned the Seared Duck Foie Gras a l’orange appetizer ($21) as a spin on the classic Duck a l’orange that focuses on the succulent liver and not the whole bird. Other appetizers include Root Vegetable Soup with seared salmon, salads including Baby Arugula with roasted golden beets, apples, walnut praline and warm goat cheese ($11), Raw Vegetable Slaw with a tarragon
vinaigrette ($9), and Nantucket Fluke Carpaccio with avocado and Jerusalem artichokes ($12). For pasta, Khorshidi recommends the Short Ribs Ravioli with ginger and soy ($20) and Lobster Macaroni and Cheese ($34). Suggested meat dishes include Hungarian Lamb Spare Ribs with braised root vegetables ($26) and Grilled Veal Porterhouse Chop topped with a potato gratin and béarnaise sauce ($30). For seafood dishes, try Pompano or Hamachi grilled with citrus and broccoli rabe ($26), Grilled Jumbo Sea Scallops with a balsamic risotto ($26) or King Salmon grilled with roasted red and yellow peppers, tomato and basil ($24). Besides the duck we attested to, other meats roasted on the spit include Chicken with a Wild Mushroom Ragout and rosemary garlic mashed potatoes ($24) and Suckling Pig with snow peas, baby carrots and a rum and raisin sauce ($24). A list of potato and vegetable sides fall in the $7-8 range.
Desserts Besides the profiteroles mentioned above, homemade sorbets and ice creams ($7), homemade cookies by the half and full dozen ($6 and $12), silver dollar doughnuts ($6 for six), banana splits made with your choice of ice cream and cocoa almond brittle ($8), Lemon Icebox Cake ($7) and Sandcastle Cake with a tangerine compote and buttermilk ice cream ($8) are among the sweet mouth-watering offerings to end your meal.
Hours and parking RK is open seven days with dinner served Sunday to Thursday from 5:30 to 9:30 p.m. and Friday and Saturday from 5:30 to 10:30 p.m. It is expected to be opening for lunch soon. Parking is in the small lot adjacent to the restaurant, on the street in front of it or behind the dining establishment at the Rye municipal lot.
