Chavin Restaurant Peruvian in historic surroundings

here are several Peruvian restaurants in Port Chester— eight strictly Peruvian, one Peruvian seafood and one Peruvian and Uruguayan. But only one of them is located in an historic building at the center of town. That’s Chavin Restaurant which recently took the place of La Tia Gladys, another Peruvian eatery, in the attractive Mutual Trust Company building at 16 North Main St., right in the heart of Liberty Square. Chavin Peruvian Restaurant is located in the historic Mutual Trust Company building at 16 North Main St. in the heart of Port Chester’s Liberty Square.

The food at Chavin is similar to that at other Peruvian restaurants in town, but the space it occupies is unique. And the owners, David and Edison Bayona and their three brothers, have made the most of the old bank building with its high ceiling and huge arched windows which let in loads of light. Two historic

murals remain high up on the walls at each end of the building—one of the Bush Homestead in Lyon Park and another of Native Americans which reads “Where Port Chester now stands, the white man traded with the Indians.” The Bayonas have filled the walls of the large dining room, which seats 86 to 88 people,

with the works of local artists. The abstract and realistic paintings and other artwork of Wilmar Pabon—including a chair prominently perched on a table with a colorful covering—is currently on display. The third exhibit at Chavin since it opened in August 2003, Wilmar Pabon’s work will soon be replaced by a showing of photographs entitled “Port Chester Yesterday and Today” which opens April 20 with a reception from 7-9 p.m. open to the public. “That’s our idea—to change the décor on a regular basis,” said David Bayona, who manages the restaurant. And that’s an ingenious way to keep customers returning to not only check out the new look but also enjoy the reasonably priced Peruvian food. Curtains at the many windows are linen look—beige with fibers running through the fabric. Dark green tablecloths cover beige ones underneath. Walls are spongepainted yellowish gold. At night the ambience is created by track lighting as well as lights above each piece of artwork hung on the walls. A lovely wooden piece topped with plants serves as a divider between the dining room and the service bar. Two tables for two fit cozily on either side of it. A hutch filled with Peruvian knick-knacks

and other treasures in the same vicinity also separates the entranceway from the dining room. Soothing Peruvian folk music emanates from speakers in the four corners of the room. Edison Bayona is the chef and at age 59 has cooked for 47 years, said brother David, 55. Both of them, who hail from the Department of Ancash, north of Lima, in Peru, now live in Stamford, Conn. Their other three brothers, whom David chose not to name, are silent partners. The family owned what David called concessions but Americans would know as cafeterias in Peru. In addition, Edison worked as a chef for the Navy and for Congress in his native country. David came to the United States in 1980 while his brother followed six years ago. For three years the Bayonas had a small restaurant in Port Chester, also called Chavin, at the corner of North Main and Adee streets which closed four years ago. They still own and operate a deli in Byram called Deli Plus which sells Peruvian food as well as Peruvian and American sandwiches. At the urging of their customers, they were looking for a bigger space. “Luckily we came on this place,” said David. Chavin is named after an agricultural society that was

located in Peru—in the Ancash or Chavin Region, which developed around 900 B.C.

Specialties and menu

Although I haven’t tried them all yet, Chavin does a fine job of preparing the Peruvian specialties such as Lomo Saltado (stir-fried beef sautéed with onions and tomatoes served over French fries), Tallarin Saltado de Carne (Peruvian stir-fried beef with spaghetti) and Pollo a la Brasa (Peruvian style rotisserie chicken). It’s clear that Peruvian cooking has been influenced by that of China, Japan, Greece and Italy. In addition, I learned that Peru was the pioneer in potato production, long before France, and thus what we call French fries are common ingredients in or accompaniments to Peruvian dishes. The Peruvian purple corn drink Chicha Morada and dessert called Mazamorra Morada made from the same corn are also specialties here. And I highly recommend the fruit shakes, which come in a variety of flavors made with either a milk or water base.
