Lolita Cocina & Tequila Bar: A fun find just over the border By Jananne Abel
M
oving slightly outside our territory, just across the Mill Street Bridge into Byram, the former That Little Italian Restaurant has been sold and transformed into Lolita Cocina & Tequila Bar. The floor plan remains much the same, but everything else has changed. Looking somewhat incognito on the outside, it’s a fun place with a lot of energy built upon a solid foundation of first-class Mexican food.
And all of that is by intention. “We laid all the cool stuff on a serious commitment to food,” said principal owner Jody Pennette of Old Greenwich, who also owns cb5, a company that creates restaurants around the world for specialty clients—from the initial concept through the design, execution and all the little details. The company even hires the staff and often operates the restaurant for a period of time to get it off the ground. Pennette’s company has created 127 restaurants, and “we have never duplicated one,” he said. “Every one is one of a kind.” Lolita Cocina & Tequila Bar, however, he developed for himself with the help of the rest of his team, including chef Lynn Saathoff, a longtime culinary director for cb5. Executive Chef Juan Manuel Reyes, who is in the kitchen, comes to Lolita by way of Mexico City. He has also worked at such prestigious establishments as Chow Bar, El Teddy’s and Diablo Royale Restaurant in Manhattan. Pennette, a native of Greenwich, went through the development/creative management program at NYU and has been in the business of creating restaurants for more than 30 years. He has owned cb5 for more than 10. “My passion is for creative development,” he said. “I liken it to a movie. I get to be the writer/director.” Pennette took over the lease at 230 Mill St. on May 1 and had completed the conversion to Lolita in time to open two months later on July 2. The most striking change was the creation of a brand new bar where a narrow dining room had been. It has a separate entrance, 10 rust-colored stools pulled up to a bar with a shiny
black top, a front obviously created from a rusty old tin ceiling and lots of funky bottles displayed on glass shelves with mirrors behind them. Two large white lights hang from chains above the bar. The floor is unpolished wood. Either here, at the tequila bar up a level or at a table, you can order from among 146 sipping tequilas—every single one available in the state of Connecticut, according to Pennette. But there is no José Cuervo, for instance. The entire restaurant, which seats 86 inside plus 20 on the patio, has been designed to look old and worn— from the round and rectangular rustic wooden tables in the main dining room with matching chairs and red seats, to the three large antique mirrors on the walls, to the light fixtures that were once underground to light the railroad tunnels. The communal table on the upper level is a heavy wood variety topped with two tall wrought iron candelabras. Chairs around it are black with worn red velvet seats. There is another communal table in the main dining room. The walls are a combination of brick and cement. A wrought iron fence lines the way from the front door up to the second level. Old industrial movie lights hang from the ceiling and light up the tequila bar. Two black and three red hand blown Murano glass chandeliers from Italy complete the lighting. A few brightly-colored, worn woven rugs cover an otherwise barren floor. Besides some old pieces of furniture, including a hutch holding glassware and a marble-topped table displaying a glass decanter dispensing prickly pear or mango lemonade into vintage glasses for guests who

may be waiting for a table, there are two large black booths for large parties or additional communal dining on the upper level. You can’t make a reservation at Lolita except for parties of six or more, so there could be some waiting involved at peak hours and especially on weekends. Except for the bar, the restaurant is now entered through the garden and not before passing through two impressive rusted iron gates. Be sure to hit the head where you’ll find it decorated like a blackboard with large pieces of colored chalk provided for leaving messages. So much for the bathroom graffiti problem!

The only menu change up to this point has been the red sangria. It is now a sweeter version filled with cherries and fresh citrus because customers were not happy with the original authentic Spanish recipe. That one was rich and robust. Aside from the exceptional food, it’s the whole experience that makes Lolita a place you’ll want to revisit—from the rolling margarita carts manned by gorgeous girls in black dresses who make your drinks fresh close at hand, to the little surprises throughout your meal, to the friendly wait staff who make every effort to connect with the patrons. If you want to order a snack at the bar, there’s a special menu that continues the Mexican street food theme: chili al fuego ($7), chiles rellenos cameron (crispy fried pickled jalapenos stuffed with shrimp and chihuahua cheese), queso frito ($7) (griddled crispy cheese taco shells stuffed with poblano chiles, onions and chihuahua cheese), chicharrones ($7), chile con velveeta vergonzoso ($8), velveeta cheese dip with sausage, green chiles and fire roasted salsa and flautas de oro ($8) (crisp corn tortillas filled with crema, avocado, salsa and pulled chicken).

Lolita Cocina & Tequila Bar: A fun find just over the border What I like about Lolita is that just about everything on the menu sounds interesting and worthy of trying. Nothing is bland or boring—from the food, to the décor, to the staff.
No lunch, only brunch The restaurant “will never, ever open for lunch,” said Pennette. It’s just not that kind of place. There is a Sunday “School” brunch, however, served from 11 a.m. to 3 p.m. On the menu are 8-inch pancakes in cinnamon crisp, white chocolatecoconut or hot and wild blueberry flavors ($12); chilequiles ($13), fried eggs with corn tortillas, salsa verde and pulled chicken gratin; or chili al fuego ($7), fiery beef and bean chili topped with crema, pico de gallo and jack cheese; or smoked salmon brunch ($13) of smoked salmon, toasted brioche, crème fraiche, sliced avocado and roasted tomato salsa, to name a few of the specialties.
Our experience While I’ve only experienced the former firsthand and observed the latter, it seems that dining outside is completely different from eating inside. Outside is tranquil, inside is pulsating with music and energy. The food and drink, however, is the same. On the patio, you’re surrounded by white flowers of all types in large white pots and sitting on the wrought iron fence that encloses it. Tables are an eclectic mix. Ours was covered a white tablecloth while two others were round, made of stone and had matching benches, and another was a round glass variety with metal chairs. A square vase on the table containing fresh red roses provided a nice touch. As it got dark, small candles on the table were lit and more added so we weren’t eating in the dark. Movies without sound were projected onto the wall of the building for effect. To start, out came a smoking pink grapefruit and mint granita for effect and to whet your palette, the smoking effect produced by dry ice. This icy treat can be laced with tequila if everyone in your party is 21. Next came homemade chips with three homemade salsas—chipotle cream, tomatillo and fire-roasted tomato. Later a red corked bottle of homemade fiery mango salsa appeared that was to be used to accompany entrées as desired. For our party of six, our drink order started with a Lolita margarita ($12) made to order by an attractive young lady stationed at a cart outside. Made with Sauza 100 years tequila, cointreau, fresh lime, cane syrup and a squeeze of grapefruit served on ice with salt on the rim at my request, it was especially refreshing. Another in our party tried one of the 146 varieties of tequila which came with a thick slice of orange dipped in red sugar ($9, although they range from $7 to $100). A third guest went with a beer ($6) prepared michelada style at no extra charge (with salt, fresh lime, Worcestershire and Lolita hot sauce in the bottom of a tall glass into which the beer was poured). Interesting if
you don’t mind your beer less than ice cold. From the three non-alcoholic juice beverages, my 16-year-old was especially pleased with the refreshing lime coco of fresh lime and coconut laced with mint and blueberries served in a tall glass topped with slices of orange and lime ($8). Later another tequila, a sangrita ($12) (Grand Centenario tequila, grand marnier, tomato juice, fresh orange and lime) and a moreno ($13) (brown sugar, muddled with fresh lime, a splash of sprite and Corzo Blanca tequila) completed our drink order. An order of crispy masa oysters ($9) was shared. These five lightly fried East Coast oysters were dusted with red chile masa flour and chipotle crema to give them the perfect amount of spiciness and served in the shells on a bed of uncooked black beans. The jicama salad ($10) produced a blend of watercress, oranges, avocado and long slices of jicama—a crunchy cross between an apple and a potato—tossed with an ancho chile vinaigrette for an intriguing flavor blend. Spicy Caesar salad ($9) was a bit disappointing. It brought a few large bunches of romaine, some corn masa croutons and shaved manchego cheese tossed in a classic and surprisingly mild Caesar dressing spiced with chiles. The three entrées were all hits, especially the shrimp ajillo ($23). Five jumbo shrimp were seared in butter, garlic and chipotle to give them a wonderful, slightly spicy flavor. They were placed in a circle around a cool mixture of fresh lime, avocado, radishes and watercress. Equally good was the pollo asado ($18), almost half a chicken marinated and garlic roasted with habanero vinegar (made with habanero chiles sliced and boiled with vinegar to produce a strong flavor) and sweet peppers. This dish was extremely flavorful yet not too spicy. The chile rubbed pork chop ($20) brought a large chop with a sauce that was both sweet and spicy. Rather than sweet potato fries, my daughter ordered verde rice (with cilantro crema and jack cheese) as a side. The rice was yummy but served al dente. Two in our party shared the garlic lime chicken ($16), grilled chicken breast with roasted corn/red onion salsa and matchstick potatoes. Flavorsome without being spicy, this was the perfect dish for someone who can’t tolerate hot food. For dessert, the fried ice cream bar ($8 like all the desserts) was scrumptious—coconut ice cream with a corn flake crust on a stick with chocolate sauce for dipping—as was the quatro leches cake (fluffy white buttermilk cake soaked in coconut milk with whipped cream and candied almond frosting, creamy cajeta-caramel sauce, vanilla ice cream and sliced strawberries. Because it was a warm night, we passed on the coffee, but even before we made that decision, we were presented with a container filled with Mexican brown sugar cubes, abelito chocolate powder with a little cinnamon in it, cinnamon sticks and Equal to flavor the coffee as desired. An unnecessary but nice touch was the cotton candy (our flavor was strawberry, but it’s usually sour apple with cherry pop rocks), a signature of all cb5 restaurants, which came right before our check. It totaled $240.62. We also got temporary tattoos to go. My daughter, a student of Spanish, was critical of the wait staff who did not know how to pronounce some of the Spanish words. And that was about our only complaint—aside from darkness setting in and a few hungry mosquitoes. Our waiter, Christian Orlando, who lives in Port Chester, was a few times scarce since he was also serving tables inside, but he was knowledgeable about the menu, enthusiastic and fun. Others
filled in for him as needed.
Hours, parking, the future Lolita Cocina & Tequila Bar, which only has a small sign outside besides another stenciled on the window of the bar, serves dinner from 6 p.m. to midnight Tuesday through Sunday. It is instead recognized by the seven silver bull horns placed high up on the building. Parking is on the street or in the municipal lot behind the restaurant. Valet parking will probably be offered in the future. Pennette chose Byram because of its neighborhood character, accessibility to parking and its proximity to New York City. He said Tarry Lodge in Port Chester “awakened this corridor and that made this interesting for me. The idea of a neighborhood restaurant seemed very in tune with the time.” With the success of his first restaurant in Byram, Pennette does not rule out opening another in the future.
