Pantanal: Char-broiled meats and other Brazilian specialties By Jananne Abel

A

lmost four years ago, two Irishmen, Richard Cuddy and his son of the same name, took over a Brazilian restaurant that had been operating in Port Chester for eight years and have kept it going. Pantanal Restaurant, located at 29 North Main St., was started by Brazilianborn Selma and Jimmy Reis. When they decided to give it up, landlord Richard Cuddy, Sr. of Port Chester expected to get someone else to take over the space but instead his son assumed its management and “four years later we’re still here,” said the younger Cuddy. They changed the décor, wait and bar staff but kept the kitchen help. “Everybody here basically is trilingual,” said Cuddy, Jr., reflecting the diverse group of people who frequent the restaurant—some who speak Portuguese, others Spanish and others English. About 75% of the staff is Brazilian. Cuddy, 42, who grew up in Port Chester but now lives in Rye, said he also created a more casual atmosphere. “It’s fun, the music’s lively, everybody likes to have fun,” he said. The décor is pretty, food is high quality and not ordinary, portions are large, service is efficient, and while the prices for some of the dishes are a tad high, generally you

get good value for your money. Pantanal still serves up traditional Brazilian specialties like Rodizio, continuous skewers of homemade sausage and nine other meats, and Feijoada ($19.95), a world famous Brazilian stew prepared with black beans, dried beef, homemade sausage, bacon and pork, as well as 32 varieties of Brazilian pizza; chicken, short rib and beef kabobs; a bunch of grilled steaks, pork loin and chops; pasta, seafood and chicken dishes. The restaurant also has a huge salad bar that is included with all the char-broiled dishes, can be added to any entrée for $7 or can be purchased alone for $13.95. From my experience it is worth getting the

On both of my recent visits Tania Azevedo, who came to the United States from Brazil five years ago, was our waitress. She speaks English perfectly, is friendly and efficient. We later learned that she and Cuddy, Jr. are to be married in August 2006. Azevedo recommends the Frango a Moda da Casa ($19.95), sautéed chicken breast served with vegetables, rice and beans, and Cuddy says people come in especially for the Bacalhau (dried codfish), prepared either with a chickpea, sweet pepper and onion sauce with rice and beans or sautéed with potatoes, olives, eggs and tomatoes, both $21.95. As far as pizza, they both suggest the Portuguese variety, topped with mozzarella, ham, hard boiled egg, onion, hearts of palm and peas. The thin crusted pizzas are priced at $10, $12 and $15 based on size. used on pizzas in Italy. Several are topped with Brazilian catupiry, which has the consistency of cream cheese. There’s even a dessert pizza topped with condensed milk, banana and cinnamon sugar. I sampled the anchovy, mozzarella and tomato variety and found it thick with cheese and yummy (if you like anchovies). Another in our party would have preferred more anchovies. The hearts of palm, mozzarella and gorgonzola or mozzarella, smoked turkey, hearts of palm, bacon and mushroom options sound especially appetizing. Brazilian cuisine is influenced by Italy, said Cuddy, and therefore the pasta on the menu—spaghetti with clams ($16.95), Spaghetti a Alhoe e Oleo (spaghetti with garlic and oil at $12.95) and spaghetti or cheese ravioli with marinara sauce ($12.95).

Tropical decor

Pantanal is named for the wetlands region of Brazil, the largest wetlands in the world, said Cuddy, full of tropical plants and birds. And thus the décor of the restaurant reflects the name, from the plethora of tropical plants in the front windows facing Main Street, to the fountain with painted tropical background just inside the entryway, fake windows with shutters and views of tropical scenes on the walls of the large dining room, painted leaves and fruits on the walls around the salad bar and painted ceiling tiles of birds and buildings. Various shaped mirrors hang on the yellow walls along both sides of the dining room and dark wood cabinets separate the dining room from the bar. The brightly lit restaurant is now decorated for Christmas with wreaths on the cabinets and red velvet bows on the mirrors and above the salad bar. The busy lounge, with low lighting, features round tables and a long bar with stools. Next door a new room was added this month— the space formerly occupied by Commuter Cleaners--which has two video games, two pool tables, dart boards and a juke box. It can also accommodate overflow crowds from the dining room and private parties up to 100. A large deck seating 60 was constructed on the Abendroth Avenue side of the restaurant which opened in the spring of 2004 and carries the tropical theme outside. Please turn to page 10R

Pantanal: Char-broiled meats and other Brazilian specialties Dinner for 4

On a recent visit with four people, two light eaters were delighted to find deep fried smelt ($8.99) on the menu and shared this appetizer which brought a total of 13 fish piled high on a plate. And while I’d never tried them before, they were indeed delicious. Smelt, a small fish, is double the size of a sardine and has no fishy taste. Mini cheese breads and a partial loaf of sliced Italian bread, both made on the premises, came in a basket to the table. We ordered a merlot to go with our meal and instead were brought the Casillero de Diablo Merlot 2004 ($20) which was recommended over our choice of Casa Rivas. Both are from Chile. We found this an excellent suggestion and that it lived up to its description—full bodied and smooth. The wine list features a good number of reasonably priced whites, rosés and reds from Italy, California, New York, Germany, New Zealand, Chile, Argentina, Portugal, Brazil, Spain and Australia. Of course I had to try Pantanal’s trademark dish—Rodizio ($29.95)—which filled me up long before I had even sampled all of the 10 meats. This is a great choice for those with large appetites because it is all you can eat, but even if you don’t finish all you’re served, you can’t bring it home for the dog. A meat passer comes around with skewers containing two different charcoal broiled meats to start

and then keeps coming back with different meats until you tell him to stop. In fact, there is a wooden piece on the table painted red on one side and green on the other and you’re supposed to turn the red side up when you’ve had enough. I don’t think the passer really pays attention to the wooden piece, however, but rather asks the customer whether or not he or she wants more. I started with beef rib and skirt steak, then came beef wrapped with bacon and sausage, then pork rib and chicken, then boneless pork loin and finally sirloin steak. I didn’t get around to the beef hearts or chicken wrapped with bacon. The meal comes with the salad bar, rice, beans, French fries and fried banana—more than anyone could eat. All of the meats are well cooked and flavorful; it depends upon your preference as to which ones you prefer. The rice is nice--sticky and not bland. Besides the usual lettuce, tomato, broccoli and olives, the salad bar contained an eggplant salad, two different carrot salads, artichoke hearts, asparagus, beets, a corn salad, a salad of sliced potatoes, sausage, scallions and hard-boiled eggs; tomatoes and fresh mozzarella, tuna salad, egg salad, chunks of turkey, and fresh fruit like watermelon, cantaloupe and pineapple. There are also Brazilian hors d’oeuvres, also made on the premises, in a warmer. Last Saturday night these included coxinha (chicken empanada), esfira (pastry dough with meat filling),

kibe (grain and meat), and risole (dough with beef filling). Another in my party selected the Espeto de Frango ($19.95), chicken kabob served with rice, beans, fried banana and French fries, which, as it turns out, is the same chicken served on a skewer as part of the Rodizio. Pantanal is also known for its rich, homemade desserts, mostly priced at a reasonable $5.00, and on this occasion we tried a few on the house. On a previous visit we had a very moist chocolate cake with coconut called Prestigo. This time we sampled Amendoa, a vanilla cake with walnuts and dulce de leche, and Brigadero, white cake with chocolate frosting, caramel in the middle and cherries on top. The cakes when viewed as a whole look like works of art and the pieces served to each customer are huge. We also tried some homemade soft Brazilian candies—one that was pure chocolate covered in sprinkles and another vanilla flavored with clove. Desserts, which change daily, are generally circulated by the servers on a tray. Besides the cakes, there is chocolate mouse, tiramisu and flan. Sonya Jacobs of Rye, who used to also work at Café Brazil down the street, which is now closed, is the pastry chef who whips up all the beautiful cakes and candies. Our check came to $97.71 which included a glass of chardonnay as well as coffees all around in addition to what I described above.

For lunch, you can get the buffet for $3.99 per pound or there is an a la carte menu with many of the same specialties as on the dinner menu at a lower price. The salad bar is also available for $7.99, but the offerings are not as extensive as at dinner. Examples are beef or chicken stragonoff ($9.95); Risotto de Frango, rice sautéed with chopped chicken breast, cheese and a drop of tomato sauce ($8.50); Camarao Grelhado ($12.95), grilled jumbo shrimp with garlic sauce served with vegetable, rice and beans; Tutu a Mineira ($10.95), pork chop served with country style pinto beans, a fried egg, rice and collard greens; and Picanha ($19.95), grilled top sirloin, the same sirloin served as one of the meats in the Rodizio. I had this dish from the dinner menu, then priced at $21.95 for a half portion, $32.95 for a full portion that serves two. The meat was mostly tender, juicy and flavorful and even the half portion was extremely generous.

Pantanal will be open Christmas Eve with its regular menu, closed Christmas Day and is offering a special New Year’s Eve celebration for $79 per person, $140 per couple with tax and tip included and a DJ all night. The celebration includes open bar from 10 p.m. to 3 a.m., hors d’oeuvres, choice of sirloin steak or salmon, salad bar, dessert, coffee and a champagne toast at midnight. Reservations are required with a 50% non-refundable deposit.

Hours at Pantanal are 11 a.m. to 10:30 p.m. seven days a week. Parking is on the street, in the restaurant’s small lot or in the marina parking lot, both off Abendroth Avenue. Cuddy, who said he usually works seven days and 90 hours a week, admitted that it’s at times challenging running a Brazilian restaurant when he’s not of that cultural background. “It’s challenging at times,” he said, “but it makes me more motivated to learn the language and the culture.”
