Patrias brings taste of Spain to downtown Port Chester A

lthough Patrias Restaurant opened in September 2005, I only discovered it by chance as what I would call a find about three months ago. It appeared in our list of Port Chester and Rye Brook restaurants under the Peruvian category, but little did I know that it actually features largely Spanish cuisine, something I knew little about. Nor did I know that this dining establishment is a step above many of the other more casual eateries serving South and Central American cuisine that dot Port Chester’s North and South Main streets. Always open to new taste sensations and food preparations, I find Patrias a welcome addition to the ever-growing and changing Port Chester restaurant picture. Yes, it does offer some Peruvian dishes to give it wider appeal, said chef and co-owner Mariano Aznar, but 80% of the items on the menu are Spanish. Since there are many other Peruvian restaurants in Port Chester and no others preparing Spanish food, Patrias indeed stands out from the crowd. Nonetheless, the name Patrias, which means “countries” in Spanish, reflects that the restaurant offers the cuisine of more than one country.

The bustling candlelit urban atmosphere makes you think you could be in New York City. However, although the décor exudes an upscale feel, prices are pretty reasonable and, as far as dress, almost anything goes. Chef Aznar, a Barcelona native who began his culinary journey as an apprentice at the Barcelona Princess Sophia Hotel and then attended the Culinary Arts School in Girona, came to the United States in 1990. He started as executive chef at Paradise Barcelona in Manhattan, five years later signed as sous chef at Solera Restaurant in Manhattan and then went on his own with a partner at Alcala

Patrias brings taste of Spain to downtown Port Chester toes. Pimenton is used in 90% of Spanish dishes, Aznar said. The octopus was slightly chewy, and the blend of everything including the potatoes was different from anything I’d tasted and extremely satisfying. I could definitely see going back for more! We also experienced the Mejillones al Romesco ($10), mussel stew, Catalan style. The mussels are meaty and each is propped up in the serving dish so the collection makes a nice presentation. The delicious light sauce they are cooked in is sofrito—onions, garlic, tomato, red and green bell peppers, pimenton, parsley and fish stock. It gives the mussels a wonderful flavor and is delightful for dipping pieces of crispy hot rolls that come with your meal. On the Peruvian side of the menu, you can choose from among five appetizers, including two ceviches and another raw fish preparation; the traditional Papa a la Huancaina ($7), boiled potato topped with a mild cream sauce made with Peruvian yellow pepper, fresh cheese and milk; and Chupe de Camarones (shrimp chowder at $10). Main dishes are all traditional Peruvian favorites like Lomo Saltado (chunks of beef sautéed with red onions and tomato served with French fries and white rice at $12), Saltado de Pollo (the same dish made with chicken at $12), Bisteck a lo Pobre (Hungry Joe steak served with two fried eggs, fried sweet plantains, rice and French fries at $14) and Filete de Pescado Frito (fried fish filet seasoned with a special chef’s recipe served with white rice, fried yucca and a side of Peruvian salad at $14) as well as Pescado a lo Macho (fish filet, shrimp, calamari, sea snails, octopus, New Zealand mussels covered with a special housemade yellow pepper sauce served with a side of white rice. To use seasonal meats, fish and vegetables, Aznar relies on the Chef’s Special menu, which changes weekly. During the winter he plans to offer venison and stews, for instance.

drink. The bar is decorated for the holidays by two trees made of colorful Christmas balls. A framed poster advertising a bullfight hangs behind the bar. A large black spoon and fork create a striking contrast hanging on one of two oak cabinets at the back of the restaurant. Walls are painted olive green on one side of the eatery, bright orange on the other, to match some of the colors in the large abstract paintings that hang on them. Plates and glassware are worthy of note--from extra large wine glasses to misshapen glasses for soda and varied shapes of white dinnerware and serving pieces. I particularly like the ceramic cow that holds the warm milk for the coffee. When filled, Patrias can get noisy, but I didn’t find it bothersome or have a need to shout.

On a recent Saturday night at 8:30 p.m., Patrias was packed and patrons without reservations even opted to eat at the bar. We had a reservation but still had to wait about 15 minutes. That gave our party of three time to study the menu. Despite the crowd, once we were seated, service was prompt and courteous. We ordered a glass of the homemade sangria ($7), delicious as noted above, and a glass of Vina Tabernero Blanc de Blanc 2003, a blend of chardonnay, chenin blanc and sauvignon blanc. The latter is dry, yes, but not as smooth as it could be, and the flavor is more citrusy than I like. Warm, crispy rolls come to the table in a basket with a small dish of fresh garlic, olive oil and parsley with a tiny wooden spoon for scooping. You use this spread to make your very own yummy garlic bread. For dinner we decided on four tapas/appetizers and two main dishes which was more than enough for the three of us. The Gambas al Ajillo ($10) brought a good number (I forgot to count!) of medium-sized shrimp cooked in the same sauce that you spread on your bread. While it’s potent on the bread, it is relatively mild and not overpowering when cooked with the shrimp. A Latina friend had recommended the Pimientos del Piquillo Rellenos de Salmon y Queso de Cabra ($9), Spanish piquillo peppers stuffed with salmon mousse and goat cheese. It is served on a square white plate in a piquidillo sauce made with black and green olives, pickles and vinaigrette, giving the dish an interesting mélange of flavors. It’s at the same time fishy, cheesy and tart. The Ensalada de Aguacate con Gambas en Vinagreta de Gazpacho ($10), Avocado and shrimp salad with gazpacho vinaigrette ($10), a special of the week, was pretty in its presentation. Slices of avocado were lined up in a row accompanied by shrimp swimming in tomato vinaigrette with bits of red and green pepper. The delicate flavors of the shrimp and avocado were enhanced but not overcome by the dressing. I can’t wait to go back to try some more of these intriguing treats.

The Ceviche de Pescado ($13) was our sole Portuguese appetizer. A healthy portion of fine raw fish marinated in fresh lemon juice was served with a piece of cold sweet potato, lettuce and two types of Peruvian corn--cancha which is toasted and choclo which is boiled. Once again this appetizer conjured up a number of flavors and textures—from tart to sweet to crunchy. The Peruvian Milanesa de Pollo ($12), two large breaded chicken breast filets fried and served with white rice and house salad, pleased my 13-year-old and provided enough for a sandwich the next school day. The chicken was extraordinarily tender and the breading light, making it stand out from the same entrée I’ve eaten elsewhere. The typical Peruvian salad is made with julienne of romaine lettuce, radishes and carrots to create a type of slaw enhanced by a special vinaigrette dressing. Having previously eaten the traditional Paella de Mariscos, this time I chose the Fideua de Mariscos ($21), made with traditional Spanish saffron noodles combined with a generous sampling of shrimp, mussels in the shell, scallops and calamari. This entrée is equally delicious and at the same time less filling than the rice version and therefore I like it even better. Aznar said the secret to successful paella is good stock and good sofrito which requires cooking for 3-4 hours to give it a nice concentration of flavors. His paella definitely has both. On this occasion, since it was a rather late hour, Patrias was out of the desserts we ordered and therefore another was substituted at no cost. This way we were able to try the Flan de Lucuma ($5), special flan made with a Peruvian fruit that looks like a mango, turning it a light orange color. Mild in flavor, this flan is served with four dollops of whipped cream. Desserts are homemade, from the Crema Catalana or Spanish style crème brulée, which is sweeter and has a thinner hard sugar topping than the French version; to Crema Volteada ($5), Peruvian style caramel custard; to Cappuccino Mousse Cake with Caramel Crème ($5.50); to Cheesecake with Raspberry Coulis ($5). I’m not sure if the Alfajores ($1.60), the buttery Peruvian cookie filled with dulce de leche, is made on the premises. You can also choose from an assortment of Spanish cheeses ($10), ice cream ($4) and lemon sorbet ($4) to end your meal. We enjoyed a double espresso ($2) and a cappuccino ($3.50) with dessert. Our bill totaled $108.80.

Hours, parking, etc.

For the winter, hours are Sunday through Thursday from 12 noon to 9 or 9:30 p.m., Friday and Saturday from noon to 10 or 10:30 p.m. Patrias will be open later during the summer months. The restaurant is closed Wednesday. Parking is on the street. Chef-owner Aznar said the restaurant has had “crazy weekends and weekdays a little slower, but thank God we are doing okay.” He said they could use more business during the week. Reservations are definitely recommended on Friday and Saturday nights unless you want to eat before 7:00 or after 8:30.

t’s finally time to sit down and enjoy a special Christmas dinner starring beef tenderloin seasoned with a distinctive smoky paprika rub and accompanied by a trio of roasted root vegetables. A fabulous cranberry and orange snowflake-shaped cake makes a spectacular finale for the eyes and the palate.

3. Place roast on rack in shallow roasting pan. Insert ovenproof meat thermometer so tip is centered in thickest part of beef, not resting in fat. Do not add water or cover. Roast in 425°F oven 35 to 40 minutes for medium rare; 45 to 50 minutes for medium doneness.

4. Meanwhile, combine remaining seasoning mixture, red potatoes, sweet potatoes and cipollini in large bowl; toss to coat. Transfer vegetables to metal baking pan. Place in oven with beef roast. Roast 35 to 45 minutes or until vegetables are tender and lightly browned. Sprinkle with 1 tablespoon parsley and salt, as desired.

During this busy season, it’s a good idea to order your beef roast in advance. A tenderloin yields four 3-ounce cooked servings per pound. To ensure perfectly roasted beef, use a thermometer to determine doneness. And don’t forget to let beef stand 15 to 20 minutes for easier carving. Smoky Paprika Beef Tenderloin with Roasted Root Vegetables

Total preparation and cooking time: 1 to 1-1/4 hours Makes 6 to 8 servings 1 well-trimmed center-cut beef tenderloin roast (2 to 3 pounds) 1-1/2 pounds baby red potatoes, cut in half 1-1/2 pounds sweet potatoes, peeled, cut into 1-1/2 x 1-inch pieces 1 pound cipollini onions, trimmed and peeled 2 tablespoons chopped parsley Salt Seasoning 1 cup tightly packed parsley leaves 4 teaspoons smoked paprika 2 large cloves garlic, minced 1/2 teaspoon ground red pepper 1/2 teaspoon salt 1/4 cup olive oil

1. Heat oven to 425°F. Place seasoning ingredients except olive oil in food processor; cover and process until parsley is chopped, stopping and scraping side of container as needed. With the motor running, slowly add oil through the opening in cover, processing just until combined. 2. Press 3 tablespoons seasoning mixture evenly onto all surfaces of beef roast. Reserve remaining seasoning mixture.

5. Remove roast when meat thermometer registers 135°F for medium rare; 150°F for medium. Transfer roast to carving board and immediately sprinkle with remaining 1 tablespoon parsley. Tent loosely with aluminum foil. Let stand 15 to 20 minutes. (Temperature will continue to rise about 10°F to reach 145°F for medium rare; 160°F for medium.) 6. Carve roast into slices; season with salt as desired. Serve with vegetables.

Cran-Orange Snowflake Cake

Total preparation and cooking time: 1-1/2 to 1-3/4 hours Makes 12 servings 2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1 cup (2 sticks) butter or margarine, softened 1-1/2 cups granulated sugar 4 eggs 1 tablespoon grated orange zest 1 teaspoon vanilla extract 1 cup sour cream 1-1/2 cups fresh or frozen cranberries, coarsely chopped 3/4 cup finely chopped pecans, toasted Confectioners’ sugar

1. Preheat oven to 325°F. Spray snowflake pan with vegetable pan spray; set aside. 2. Combine flour, baking powder and salt in medium bowl; set aside. Cream butter and sugar in large mixing bowl with electric mixer. Add eggs, one at a time, beating thoroughly after each addition. Add orange zest and vanilla extract. Add flour mixture alternately with sour cream; mix well. Gently stir in cranberries and pecans. Spoon batter evenly into prepared pan. 3. Bake 55 to 60 minutes or until cake tester inserted in center comes out clean. Cool in pan 8 to 10 minutes. Carefully invert cake onto cooling rack. Cool completely. 4. Go to the above address and select the newspaper (Port Chester or Rye Brook) you subscribe to. Then click on the words “Free Online Access Print Subscribers Register Here” in the upper left hand corner of your screen. This will take you to the registration form. Make sure you enter your first and last name the same as on your mailing label. For your account number, enter the 4-digit number that follows the “#” sign located just above your name off your mailing label or subscription bill. You will then enter your e-mail address and create a password you will use from then on to log into the site. You only need your account number this one time.
