Piero’s: Fine Italian food in cozy, bustling environs By Jananne Abel

T

he man for whom the restaurant is named is still very much in charge at Piero’s Italian Restaurant in Port Chester. But now that his two sons have joined the business, he has relinquished many of the day-to-day operations of this popular Washington Park eatery to them. Piero Rosaspina’s caricature no longer appears on the menu, but the 33-year Greenwich, Conn. resident still cooks on Friday and Saturday nights and regularly circulates among the customers, many of them regulars who have come to know his Italian hospitality. While Piero is the only pureblooded Italian on the staff, his sons and other longtime employees have helped to make the 44 South Regent St. restaurant the cozy, friendly, consistently fine dining spot it has become during its nine years on the block. It opened in December 1994 in a white stucco self-standing building which has been a neighborhood restaurant of some sort for as long as I can remember. Piero’s wife, Didder, who is Danish, does the bookkeep-

ing. Sons André, 30, and Peter, 34, share management responsibilities and coverage hours. Peter said he is the front manager, serving as maitre d’ and bartender, while André does some of the ordering and manages the back. Both have waited tables. Peter said he also sometimes does prep work in the kitchen and Piero said he is teaching both sons to cook. “If you don’t know how to cook, it gets you like this,” said Piero, holding his hand up to his throat. When his head chef, Ecuadorian-born Manuel Lliguichuzca, who has been with him for 25 years, was out sick for over a year, he had to be able to take over in the kitchen. Or if anyone doesn’t show up, he has to step in. Second chef Jackson Alvarado,

Before opening in Port Chester, Piero, 66, owned a much larger restaurant in Greenwich Village called Livorno for 22 years and these two worked for him there. Having grown up in the restaurant business, Peter knows how important it is to treat customers well. “It’s a tough business, but you make

it fun,” he said, “a party for everyone, not just yourselves. You’re people pleasers.” Piero’s is a small bustling restaurant serving marvelous Italian pasta, chicken, veal and seafood specialties. I’ve never been disappointed with any of the food I’ve ordered there—everything made to order with the freshest ingredients. And if you don’t find what you want on the menu or offered as a special that day, Piero and his kitchen staff will be glad to make whatever you please. Piero continues to make a weekly trek into New York City to the fish market or for fresh pasta and vegetables, sometimes at 2:00 in the morning.

Looking for a larger space

Piero’s is located in a small, white, self-standing stucco building at 44 South Regent St.

After entering Piero’s through a magenta curtain, there’s a small bar to your left, but the rest of the room is filled with tables. They are draped with white cloths covering dark green under cloths and accented with matching green napkins. Dishes, white with green trim, are nothing fancy. Magenta and green floral print curtains with a cream

background cover much of the front wall of the restaurant. Mirrors on the other walls make the space look larger than it is. Pretty photographs of Italian scenes fill the remaining wall space. Carpeting is worn and could stand replacing. The Rosaspinas say it would be nice to have five to 10 more tables in their restaurant, which seats 55, to meet customer demand. In fact, after nine years at their current location, they are now looking for a bigger space in Port Chester. They would like to find a place that has parking and would be able to accommodate parties. Parking at their present locale is only available on the neighborhood streets around the restaurant which can get tight. Sometimes you have to circle the block a few times to find a spot.

Dinner for three On a recent visit to Piero’s, our party of three opted to forego the appetizer, knowing that entrée, salad and dessert would be plenty. Piero’s: Fine Italian food in cozy, bustling environs mento served with a cup of homemade Italian vinaigrette dressing on the side so you could use the amount desired. We also shared a nice but unremarkable Caesar Salad ($7) of romaine lettuce and croutons with homemade Caesar dressing. A basket of Terranova brick oven bread from the Bronx accompanies all meals and we were only disappointed that the butter was hard and difficult to spread. Our request for a dish of olive oil to dip it in was accommodated without question. For our meal, we chose the salmon special ($22.95), a good-sized piece of salmon filet stuffed with shrimp, crabmeat, onions, celery and mayonnaise and topped with a marinara sauce. Scrumptious! It was served with choice of vegetable or pasta. Piero said the restaurant also serves sole prepared with the same stuffing. Penne Genovese ($17.95) was also delicious. It consists of large pieces of shrimp, arugula and artichoke hearts in a light red sauce over penne pasta. The fact that the shrimp was cut up made it easier to eat than if the dish had been made with whole crustaceans. My 10-year-old was perfectly pleased with delicately flavored ricotta cheese ravioli ($13.95) topped with marinara sauce, an ample portion which was more than she could eat alone. Other choices she had were meat ravioli, meat sauce, vodka sauce or tomato sauce. To complement our meal, we chose the Gavi di Gavi 2002 ($23), a dry white Italian wine which I wouldn’t rave about but was to our liking. This was among the dozen Italian and domestic whites on the wine list. The selection also includes a white zinfandel, a sparkling wine and 19 red wines from Italy, Chile, Australia, California, France and Spain. Prices go from $19 to $94, with many in the $20 to $30 range. House wine is also available by the glass. For dessert, I was ecstatic to find that amaretto cake, which I had enjoyed on another occasion and remembered fondly, was on the menu. While not made on the premises, this light, creamy, almond-flavored cake is to die for. Creamy New York cheesecake topped with fresh whipped cream was also delectable. A complimentary cordial was offered to both adults. Our check came to $116.45 without tip. Piero’s is brightly lit and there were no candles or fresh flowers on the tables as there were the last time I reviewed

the restaurant in 1996. Service, all male at the present time, was superb, very attentive and coming from every direction. While we could have felt rushed on a Saturday night since other parties were waiting for tables, one of our waiters was extremely friendly,

There are also three soups—Pasta Fagioli (pasta and beans), Tortellini in Brodo (meat tortellini in homemade chicken broth) and Stracciatella alla Romana (eggdrop and spinach), all priced at $6.50, and two other salads in the $6.50 to $7 range.

sautéed in white wine, lemon and butter, and end with Veal Rollatine, three medallions stuffed with prosciutto and mozzarella cheese sautéed with marsala wine and mushrooms. Piero recommends the latter. The veal chop ($27.95) is

sorbet served inside the fruit and tartuffo, tortoni and spumoni. They range in price from $2.50 to $6. The lunch menu includes many of the same Italian specialties as for dinner except at lower prices. Appetizers are $7.50 to $8.95, soups $5.50, salads $5.50 for the house salad to $13.95 for Grilled Shrimp Caesar Salad with four jumbo shrimp, pastas from $11.50 to $13 and other entrées from $13 to $17.50.

Hours Hours are 12 noon to 2:30 p.m. Tuesday through Friday for lunch and from 5 to 9:30 p.m. for dinner Tuesday through Thursday and Sunday. Piero’s stays open until 10:30 p.m. Friday and Saturday. For Valentine’s Day, a Saturday, Piero’s will be open for dinner from 5 to 10:30 p.m. and be offering its regular menu as well as specials. Reservations are recommended, especially on the weekends.

Background

Peter Rosaspina, Piero’s older son, serves a freshly prepared dish to one of the tables. He and his brother André share management of the restaurant. asking us if we wanted more coffee, for instance, and making us feel that we could spend as long as we liked. I reflected in my last review that because of its small size, which my husband and I found cozy, Piero’s is not exactly a family restaurant. Tables are tight and there’s no place for little kids to move around when it’s busy. But Piero said he welcomes lots of families with children on Sundays. While there’s no children’s menu, a half order of pasta or one of the chicken dishes would certainly suit many kids.

Menu and specials Besides what we had for dinner, Piero’s good-sized a la carte menu includes several seafood and traditional Italian appetizers, such as Hot Antipasto (shrimp sautéed with garlic and oil, stuffed clams, stuffed mussels, stuffed zucchini and stuffed mushrooms at $10.95) which I can highly recommend, Clams Possilipo (sautéed in marinara and garlic sauce at $8.95) and Melon and Prociutto ($7.95).

Besides the ravioli and Penne Genovese, there are a number of other pasta dishes, ranging from homemade gnocci or potato dumplings at $13.95, to Rigatoni alla Vodka, an excellent version of the popular dish at $14.95, to Rigatoni alla Ruvo, boneless pieces of chicken and broccoli in red or white sauce at $15.95. Seafood entrées range from Calamari alla Luciana (squid sautéed in a white wine, garlic and onion sauce) at $18.95 to Caciucco alla Livornese, Piero’s own seafood combination at $22.95. Piero highly recommends the latter which consists of calamari, shrimp, mussels, clams and a piece of fish. Chicken dishes, all priced at $16.95 and $17.95, are the most popular, said Piero. I can recommend the Chicken Capricciosa, as delicious as the sound of its name. For this entrée, two good-sized chicken cutlets are sautéed in Marsala wine with mushrooms, pimentos and artichokes. Seven veal entrees are priced at $18.95 and $19.95. They begin with Scaloppine Piccata, veal medallions

huge. It is broiled and then sautéed with mushrooms and onions. Besides the regular menu, every day there are three appetizer specials and four or five entrée specials. The entrées include a chicken, a veal, a fish and a pasta. When we visited on a recent Saturday night, besides a fish special, there were three other types of fish—red snapper, Chilean sea bass and talapia— which could be prepared any way you wanted them. Piero said that is the norm. Halibut and striped bass are other fish the restaurant offers when they are available. Some well-liked chicken specials include Chicken Contadina, made with prosciutto, spinach and mozzarella, or others that substitute asparagus or eggplant for spinach. Besides the amaretto cake and New York cheesecake, for dessert Piero’s offers homemade Italian cheesecake and Tira Misu. The latter features Italian lady fingers, espresso, amaretto, custard and whipped cream. There’s also chocolate mousse cake, lemon, orange and pineapple

Born in Livorno in Tuscany, Northern Italy, Piero and his family left the country after World War II. They moved to Mendoza, near Chile, in South America, where his mother died in childbirth at the age of 32. In 1947, the family moved to Bleeker Street in New York City. When Piero first came to the United States, he was in construction, specializing in mosaic floors. Friends and associates convinced him to open his own restaurant. When he did, at first he hired trained chefs who came from Italy before learning to cook himself. “You don’t find chefs from Italy anymore,” he lamented. Piero has lost his ties to his native country but not his strong Italian accent. He has never been back to Italy for a visit and doesn’t plan to return. He prefers to travel elsewhere. Both of his sons grew up in Greenwich and have helped out in the family restaurant from a young age. Peter took time off to attend college and worked as a counselor in group homes in Greenwich for a while before returning to the family business. He said his father made him an offer he couldn’t refuse. André went to college for computers and now uses that expertise to design the menus. Both are married. Peter, who now lives in Floral Park, Long Island, has a son, 3, and a daughter, 2. André lives in Somers and has a 3-year-old son.
