Restaurant review
Summer or winter, f.i.s.h. provides a pleasurable dining experience By Jananne Abel
I
always draw attention to the Fox Island Seafood House—f.i.s.h. for short—in the summertime when I write about the many places in Port Chester and Rye Brook where you can eat outside. And it’s true that f.i.s.h. has one of the loveliest views of any of them. But you don’t go to any restaurant strictly for the ambience or the view. It’s primarily the food that keeps you coming back. That’s what makes f.i.s.h. exceptional—it provides both a waterfront setting overlooking the Byram River and first-class Mediterranean seafood to be enjoyed all year round. Nothing is ordinary here, and chef-owner William “Billy” Rosenberg, a homegrown Port Chester boy who still lives in the village, “tries to give people value for what they’re getting.” As is stated on the menu, he also uses organic produce, meats free from hormones and antibiotics and ecologically sustainable seafood whenever possible. Rosenberg was recently forced to take halibut off the menu for the first time in six years because his cost for the popular fish “went through the roof” and he couldn’t offer it to customers at a reasonable price. Located off the beaten track at
the foot of Fox Island Road—past the county-run sewage treatment plant, the Port Chester Department of Public Works yard and the Port Chester Yacht Club, f.i.s.h. has been amazingly successful since it opened in September 2002. “We’re putting out a good product and for a fish house, we’re moderately priced,” said Rosenberg in attributing that success. He said the menu is diverse enough that it doesn’t only appeal to seafood lovers. In fact, their super thin, wood-fired pizza was voted the best in Westchester by the readers of Westchester magazine. In addition, said the owner, the staff is friendly and “knowledgeable in

what we do.” Just more than a year ago—on Jan. 1, 2007, Rosenberg, 40, took over sole ownership of the restaurant he had started with partner Denis Ossorio. Ossorio helped him get started and was his mentor. “I was cooking with Denis 16 years before we did this,” he said. A Culinary Institute of America graduate, Rosenberg previously worked for Ossorio, now retired, at Two Moons in Port Chester (now Sonora), Dome in Greenwich and Barcelona Wine Bar in South Norwalk. Rosenberg and his wife Gina have three children—Hannah, 11, Joseph, 6, and Joshua, 16 months. The two older ones attend Park Avenue School. Probably because of its location, f.i.s.h. is much busier in the summer than the winter. “In the summer it is like a three-ring circus,” said Rosenberg, “but people forget us in the winter,” although “in the winter we’re not doing anything different.” While business may be slow during the week in the winter, Friday and Saturday night reservations at peak hours must be made at least a week ahead. Summer or winter, I’ve never had a bad meal at f.i.s.h., where prices are reasonable for the quality of food you are getting. If you order a salad or appetizer as well as an entrée, obviously that can bump up the price. Service is friendly and efficient, the colorful
nautical décor is inviting, and even on a busy Saturday night, although it was noisy, that noise was not distracting when we sat in the second dining room. Although I haven’t experienced it myself, I understand the noise in the main dining room can become offensive, something that might be improved by silencing the music. Rosenberg said he is aware of the need to soften the sound in the restaurant and is working on the best way to do it without ruining the unique decor. F.i.s.h. would be an ideal location for Valentine’s Day when the regular menu will be offered as well as valentine type specials such as ceviche, lobster ravioli, a whole roasted chicken for two and surf and turf. Soft lighting from colorful fish on the walls and candles on the tables provide an intimate atmosphere after dark.
Specialties Rosenberg named the new cod dish on the menu (crab and cracker crusted Boston cod at $26) as a specialty for its nice flavor combination, and I can attest to that. A good-sized piece of cod, a flaky white fish, is topped with a crabmeat and cracker mixture and sits atop fingerling potatoes surrounded by four Maine mussels in a spicy combination of tomatoes, white wine, parsley and red piri-piri peppers from Portugal offset by slices of spicy chorizo (Mexican sausage).
Cioppino (shrimp, mussels and calamari steamed in a spicy tomato-lobster broth), an appetizer priced at $10, is a house specialty as is the white clam pizza (chopped garlic, apple-wood smoked bacon, mozzarella, parmesan cheese, parsley and chile flakes), priced at $14. Rosenberg also cited the spicy tuna flatbread appetizer ($14), spicy tuna rolls spread on lavash (like matzoh) with pickled ginger and ponzu sauce, Frenchcut free range chicken scarpariello over roasted potatoes ($22) and the f.i.s.h. paella a la Valencia ($25) which the chef-owner said “we move through like nobody’s business.”
Dinner for four Arriving for a 6:15 p.m. reservation on a Saturday night, our party of four took advantage of f.i.s.h.’s special offer of a free bottle of wine for orders placed by 6:30. We chose the Villa Borgo pinot grigio, a smooth, flavorful wine, and followed that with a bottle of Sonoma Cutrer Russian River chardonnay from California ($36), also smooth but more buttery. A French merlot and the Salmon Creek chardonnay are the other two free wine choices for those arriving early for dinner. Restaurant review
Summer or winter, f.i.s.h. provides a pleasurable dining experience the $32 to $190 price range, with several priced from $30 to $50. There are also wines by the glass ($7-10), specialty cocktails for $12 including multiple margaritas and martinis, and a selection of beers on tap and in bottles. Meals begin with ciabatta bread and homemade focaccia served with a dish of roasted garlic in olive oil for dipping. It’s difficult not to fill up on this yummy combination. The f.i.s.h. style crab cake ($12) brought a light, crunchy crabmeat patty surrounded by a delicious celery root, apple and carrot remoulade, baby greens and a whole grain mustard aioli (sauce of garlic and oil). The Caesar salad ($10) consisted of a generous portion of romaine lettuce mixed with creamy garlic dressing, black pepper croutons and parmesan cheese topped with two house marinated white anchovies—less fishy than most anchovies. The sweet and sour beet salad ($11) was equally fresh and provided an interesting combination of flavors—cubed beets, orange jewels, roasted walnuts, Sonoma goat cheese and baby arugula with an aged sherry vinaigrette. I loved the beet salad, but the consensus at our table was that the f.i.s.h salad ($10) stood out. You get a huge amount of mixed greens, seasonal vegetables like tomatoes, parsley, onions and celery which is topped with a fine coating of gorgonzola cheese. It’s simply refreshing and definitely enough for two. The beef barley soup of the day ($7) went over well as it was thick and hearty and you could eat it with a fork. While it may seem like an ordinary dish, the linguine with white clam sauce ($18) was also a hit, with the person in our party who ordered it declaring it was the best she had ever had. The garlicky, appetizing sauce, made with fresh chopped clams, toasted garlic, chile flakes, parsley and extra virgin olive oil, permeated the thin linguine, she said. It was served in a large bowl with manila clams in the shell on top. Rosenberg later said this, too, is a signature dish. Two lobster and crab risotto ($23 each) specials completed our entrées. This savory seafood mixture made with a short grain rice from Italy, sofrito (onions, olive oil and butter), tomatoes, basil and saffron, was topped with a chick lobster claw in the shell. Very filling, I enjoyed this dish more the next day.
Rosenberg uses 1-pound Canadian hard shell chick lobsters in his preparations because they are sweeter. If you wish to order a larger lobster as a meal, you need only give f.i.s.h. a day’s notice and they’ll be glad to have it ready for you. For dessert I ordered the chocolate tart ($7) and got two pieces on the plate with whipped cream and Longford’s (“We try to stay local whenever we can,” said Rosenberg) bourbon vanilla bean ice cream on the side which we all shared. It was good, but next time I’ll order the pecan tart instead at Rosenberg’s recommendation. Our waiter was both personable and knowledgeable, just as a server should be. The waiters wear white T-shirts bearing the f.i.s.h. logo on the front and the slogan “eat fish, love longer” on the back. With three coffees, our bill totaled $176.64.

Menu and specials While some restaurants maintain the same menu for years or maybe change it seasonally, Rosenberg said he redoes the one at f.i.s.h. “as often as I can.” He estimates that is 8-12 times per year. Signature dishes always remain. The chef-owner tries to change the specials daily to take advantage of what’s on the market and in season. “I try to do farm to plate driven things.” The special menu includes a drink, wines, as well as appetizers, soups, salads and entrées. There is always at least one meat dish, most recently black angus New York strip-loin au poivre ($32) with potato hash, broccoli rabe, garlic and oil, brandy jus and onion crisps. Other entrées were zuppe di pesce ($34), sweet Maine mussel risotto ($21), mountain gorgonzola salad made with strips of golden delicious apples, baby arugula, shaved fennel, shallots mixed with aged balsamic vinegar and extra virgin olive oil ($14), lobster fra diavolo, an appetizer priced at $16, sautéed organic chicken livers ($12) and raw oysters from Canada or Washington State (both $16). The mountain gorgonzola cheese from Italy, which came in wedges rather than crumbled, is stronger than traditional gorgonzola and made this salad unusual but still delicious. Oysters, clams, shrimp, lobster and crab cocktail as well as combinations of these in towers are available from the raw bar. Besides the cod, there’s a range of fish choices: wood-roasted whole fish which changes daily, pan fried skate Milanese ($27), crisped king salmon ($25), marinated cedar planked arctic char ($26) and rare Hawaiian big eye tuna au poivre ($28). Among the other entrées: marinated grilled shrimp with black beans and rice, guacamole, salsa cruda, cumin crema and corn chips ($23), monkfish cassoulet (cranberry beans, apple-wood smoked bacon, aromatic vegetables, roasted garlic cream, wilted green and ovendried tomato vinaigrette at $25), a grilled Basque marinated “durock red” pork chop ($27) and Wild Bill’s Vermont cheddar-bacon burger ($12).

Desserts are rattled off rather than being printed on a menu. Besides the tarts, there’s homemade raspberry crème brulée, sticky toffee pudding from England and homemade chocolate cake with chocolate oozing from the center. The latter is served with whipped cream and ice cream

Lunch includes an ahi tuna melt ($12), grilled marinated chicken sandwich ($14), a f.i.s.h. seafood salad blt made with shrimp, blue crab and scallops tossed with herb, lemon-pepper aioli, applewood bacon, lettuce and tomato on black bread ($15) and a grilled Vermont cheddar cheese sandwich on country toast ($10) or $12 with bacon. All sandwiches come with fries or salad. For brunch, the regular menu is offered as well as brunch items such as a blue crab, sour cream and chive omelet ($12), king salmon hash and poached eggs ($14), grilled sausage Benedict ($14), house-cured lox, eggs and onions ($12), out late night grilled cheese with apple-wood smoked bacon, cheddar, tomato, poached eggs and hollandaise, and lobster fra diavolo and eggs in purgatory ($21). All are served with black pepper home fries.
Specialty dinners From time to time f.i.s.h. offers specialty dinners during the week for no more than 30 people. The last one was a five-course game dinner with a variety of wines. The next one will pair game fish from Hawaii with various wines. A dinner last year had a tapas theme and a winery representative explained how to pair wine with the food. “It was different, a little more uppity,” said Rosenberg. “We tend to have a really good time.” The Fish Club dinners are

Original nautical decor Rosenberg and his original partner Denis Ossorio spent a year and a good deal of money renovating the former restaurant at this location called The Pearl. The colorful décor is pretty but not pretentious. There are no tablecloths, for instance. To create a warmer atmosphere, deep red drapes have been added since the restaurant opened at the large windows which provide lots of natural light and wonderful views of the Byram River. Artist Rick Molina of Norwalk used the effects of faux painting to create a piece of nautical art where there is no differentiation between the ceiling and walls. Bright blue walls with a swirling effect to look like the ocean greet you in the entryway. As you’re walking through the hallway to get to the dining rooms, which seat 77, you pass through sheets of steel and glass to give the effect of being on a big ocean liner. Then there’s a huge fish eye painted on the wall to your left in bright blue, red, orange and yellow. Once in the main dining room, large canvas tie-dyed sails in blue, orange and yellow hang from the ceiling which is painted to give the effect of water. The nautical theme is carried throughout. Note the neat colorful tropical fish fixtures on the spongepainted orange walls in the dining room and the green and blue rocks decorating the clear glass candle holders. The bar, enclosed in glass, resembles a fish bowl decorated with twinkling lights. Walls are sponge-painted blue and orange. Interesting bright blue lights hang above the bar, made from a huge piece of highly shellacked Douglas fir which cured for three years. Stools are modern with yellow seats and red metal backs and legs to match the chairs in the dining room. Light wood tables that can withstand being outdoors and modern chairs matching the bar stools were imported from Italy as was the wood-burning oven in which pizzas, whole fish and pasta specials are cooked to order. A deck that seats 30 wraps around the back of the restaurant for outdoor eating in warm weather. It’s a tranquil, beautiful spot with lovely homes across the way and boats pulling in and out. The restaurant has docks adjacent to it so customers can reach it by boat. After almost six years, Rosenberg has plans to move the hostess station, repaint and extend the deck. “It’s amazing the beating things take,” he said.
Hours and parking Dinner is served Tuesday through Thursday from 5:30 to 10 p.m., Friday and Saturday until 11 p.m. and Sunday until 9 p.m. Parking is in the lot around the restaurant, with valet parking offered on Friday and Saturday nights.
