The Hilton’s Tulip Tree worth a Valentine visit

e’re lucky to have a Hilton hotel in our midst, but when going out to eat, local residents don’t often think of it as a destination. While the Hilton Rye Town no longer has an upscale eatery, The Tulip Tree, which has been the main restaurant at the hotel since it opened in Rye Brook in 1973, is still a viable and pleasant option for breakfast, lunch or dinner. I’ve stayed at the Hilton Rye Town, located at 699 Westchester Ave., on a few occasions, once when I won an overnight stay at a silent auction run by the Kennedy Magnet School PTA years ago and again for my 20th wedding anniversary when my husband and I didn’t have time to go away but wanted to do something special. Both times were memorable, especially the latter at the end of May when we were able to take advantage of the hotel’s lovely outdoor pool and grounds.

Valentine’s Day specials

The Tulip Tree, dubbed an American bistro, came to mind as a place for a superb Valentine’s Day dinner, and I found that the Hilton is indeed offering an attractive Valentine’s Package which includes an overnight stay on Saturday night, Feb. 14, for $175. The rate includes deluxe accommodations for two, champagne and strawberries upon arrival, special three-course dinner for two and a hot chocolate and rum nightcap that night in The Tulip Tree or via room service. With this package, you can stay additional nights on Thursday, Friday or Sunday for an extra $99 per night. If you prefer to just have dinner at The Tulip Tree on Valentine’s Day, there will be a special three-course prix fixe menu for $40, or you can order off the a la carte menu. The special menu includes a sparkling toast, lobster bisque with crème fraiche or poached pear and field greens salad with honeyed walnuts and champagne vinaigrette, surf and turf of grilled filet mignon with green peppercorn sauce, pan seared shrimp with lemon brandy cream sauce, Dauphinoise potato, roast acorn squash, red beets and steamed asparagus, a chocolate heart of raspberry and chocolate mousse and seasonal berries and a selection of teas or coffee. Reservations for the package and dinner are required.

Dinner, wine and dessert menus

The dinner menu, which has recently changed, is modest in size and not cheap, but this is a Hilton, after all, and you can be sure the quality is first rate. It features six meat and poultry dishes, three fish and seafood entrées, two soups and a number of appetizers and salads. Soups are $10 and $11; appetizers range in price from $12 for a chicken quesadilla with guacamole, sour cream and pico de gallo to $16 for chilled grilled shrimp with roasted tomato and ginger cocktail sauce and salads go for from $10 for a wedge salad (iceberg, cherry tomatoes, cucumbers, red onion and champagne vinaigrette) to $23 for a peppered tuna and cucumber fennel salad with micro greens and sherry yogurt sauce. For entrée, the chef, William Miller, who was at the Hilton in Washington, D.C. before coming to Rye Brook 18 months ago, recommends the pan seared crab cakes with garlic mashed potatoes and white corn with a tomato and citrus basil drizzle ($35). For this hefty price, you get two large cakes of lump crabmeat with only a tiny bit of filler to bind them together. Miller also recommended the cocoa butter seared scallops as they are dredged in fine powdered cocoa butter to give them a “neat flavor.” They are accompanied by harissa (hot red pepper paste) and sausage risotto, saffron and red pepper rouille ($32) This is also one of the most popular dishes on the menu, said John Sheedy, the Hilton Rye Town’s personable Irishborn Director of Food and Beverage. Miller also loves the veal meatloaf ($25) made with veal, pork and bacon, wild mushrooms and herbs “to give it a great consistency as well as a nice flavor.” Other choices include an American Kobe hamburger ($16), flank steak with white balsamic marinade served

Francisco Sanchez of Port Chester, who has been waiting tables at the Hilton Rye Town for 30 years, previously at Penfield’s, waits on customers in The Tulip Tree American bistro. with toasted orzo risotto ($28) and fennel crusted chicken with spinach, mushrooms, wilted basil and tomato sauce ($21). Although our waiter didn’t mention it when I recently visited for dinner, Miller said there is an entrée special each evening emphasizing freshness and what’s available seasonally. Some examples are surf and turf, special chicken dishes, Thai, French and Italian specialties. Miller specifically mentioned Char Shu Duck which is sautéed and then oven roasted in a sweet char shu sauce and served with jasmine fried rice. The plan starting in the spring is to change the menu four times a year with the seasons “to be able to give better value when people are eating foods in season,” said Sheedy, and to take advantage of locally grown produce, for instance. He said this concept has already been fully implemented in the hotel’s banquet department. The good-sized wine list offers a wide variety of reds, whites, Champagne and sparkling wine by the glass as well as the bottle and a handful of half bottles. Wines come from California, Long Island, Italy, Australia, France, New Zealand, Spain, Greece, Argentina, Chile, Israel, Lebanon and South Africa and range in price from $8 to $15 for a glass, $30 to $150 for a bottle with many reasonably-priced vintages. Desserts are $8 except After 8 Torte which costs $9. Lemon crème brulée, decadent flourless chocolate cake, vanilla bean cheesecake, a boiler ice cream sundae with chocolate mint sauce and sugar free mousse with seasonal mixed berries, something I’ve never before seen on a menu, are among the selections. All are made on the premises by pastry chef Kerri Aubel. I was treated to a piece of the scrumptious After 8 Torte, a chocolate covered mint and chocolate mousse cake with a crunchy peppermint bark crust covered with a ganache and garnished with a white chocolate stick and circle and a fresh strawberry. I would go back just to taste this delicacy again.

This menu is also available in the bar, called The Den, where some tables have been set up with white cloths for diners. A bar menu of pizza, wings and burgers can also be had there. Dinner is served from 5 to 10:30 p.m. every day.

Décor

The Tulip Tree is located up three steps off the lobby of the hotel surrounded by what looks like a white picket fence set with planters filled with flowers. The large dining room seats 140 with space for another 40 in a private room. It is broken up with creamcolored booths with gold vinyl seats and plaid fabric backs. Oak tables have beige Formica tops. Brightcolored framed paintings hang over booths along the wall. Between the booths planters are filled with lush green plants. Besides booths, there are square tables with matching oak chairs featuring spoke backs and pads tied to the seats as well as round oak tables with larger chairs featuring rust fabric seats. Some tables are set with thin tightly woven placemats in beige, brown and rust. Others are draped with white cloths. The room has some stone accents and two hutches add to the rustic décor. Rust carpeting with a yellow and green leaf pattern covers the floor. A permanent buffet is set up in the middle and toward the back of the room. More rustic wooden tables fill the back of the room where metal sculptures of a sailboat, train and horse and wagon hang on the wall on one side of a hutch, wind vanes of a cherub bugler and a pheasant on the other.

Lunch

The Tulip Tree used to have a lunch buffet which our office staff enjoyed a few times over the years as we bid employees farewell. Now there’s a fairly pricey menu of soups, salads, sandwiches and a few entrées for lunch. Some highlights include lobster bisque ($11), chilled grilled shrimp with roasted tomato and ginger cocktail sauce ($15), Caesar salad

($9), a Whole Wheat Hippie Wrap (sun-dried tomato hummus, eggplant, pasta and black bean salad for $13), an American Kobe hamburger ($15) and Farfalle Pasta with sweet sausage, chicken, goat cheese, spinach and pepper sauce ($22). Lunch is served daily from 11 a.m. to 5 p.m.

Breakfast

The Hilton abandoned its Sunday brunch, a large buffet priced at $38, in February of last year but will be initiating a new a la carte one starting in May. A delightful breakfast buffet is offered every day from 6:30 to 11 a.m. at $21 for the full buffet and $14 for the so-called continental breakfast buffet which comprises only the cold items. In addition, a breakfast menu includes a three-egg omelet, strawberry French toast, eggs Benedict and smoked salmon platter, all priced at $15, or a market fruit salad with honey and ginger drizzle ($8), among other choices. The extensive breakfast buffet, which my husband and I experienced on a recent visit, includes fluffy light Belgian waffles made to order on which you can pour warm syrup or which you can top with fresh strawberries and whipped cream, an omelet station, plain oatmeal with brown sugar, walnuts, apples and raisins to add, scrambled eggs, bacon, sausage links, crunchy breakfast potatoes, corned beef hash, buttery grits (where else can you get these around here?), delicious apple blintzes I had to have two of and cinnamon buns which had been warming too long and were inedible by the time we got to them at about 10:00. There’s also a fruit bar with fresh fruit, juices, hard-boiled eggs, cheese slices and yogurt. Another section contains cold cereals, bagels, muffins, croissants and cheese Danish. Large mugs in which your choice of coffee or tea are served say “breakfast” on one side with a sun on the other. Please turn to page 5R

The upcoming a la carte Sunday brunch will be served indoors and outdoors starting in May inside and outside the currently vacant space where the Hilton’s higher end restaurant used to be. “We did a survey last year to find out what the best places were serving for brunch and we said ‘we can do better than all of them,’” said Food and Beverage Director Sheedy. “Brunches aren’t what they used to be,” said Chef Miller. “You start taking more and more away. We didn’t want to do that so we are opting for a la carte instead. You can put a lot of energy into it and make it right.” The menu is still in the works and Sheedy said it will be competitively priced without giving a number. “It will be seasonal as well using food from the Hudson Valley,” said Miller. “Why fly it in from other places when you have great food right here locally grown? We want to offer the best value to our guests.”

Dinner for two

Besides breakfast, we also went into The Tulip Tree for dinner on a Friday night and had a positive experience. We started with a crock of baked French onion soup ($11) covered with lots of parmesan and provolone cheese to make for a good pull. The broth was savory, not too salty, and it had the requisite amount of bread slices to make it authentic. Although it’s no longer on the menu, we were able to order a crab cake appetizer ($10) of one crab cake with corn relish on top and greens underneath. It was thick, packed with crabmeat and delicious. Crab cakes are sautéed in a lemon butter sauce and served with a tangy fresh squeezed citrus fruit reduction. As mentioned earlier, you can get a crab cake dinner with two cakes, corn relish and garlic mashed potatoes for $35, a price that seemed steep until we saw the finished product. Asian wings brought six chicken wings for $9 (the other choice was nine for $12) glazed in a sweet General Tso’s sauce, sprinkled with sesame seeds and served with carrot and celery sticks and Chinese mustard dipping sauce seasoned with honey. This appetizer was an appetizing variation on traditional chicken wings The 12-ounce certified Angus New York strip steak ($34) was ordered medium rare and came very pink and tender topped with a delectable roast shallot demi glaze and thin onion rings. It was accompanied by creamy, yummy garlic mashed potatoes and

Continued from page 4R broccoli and carrots cooked al dente. For dessert, we selected the blueberry almond cake with toasted almond ice cream ($8). Served warm, it looked like a muffin but tasted much better—fluffy with almond flavoring. It came with a delicate, flower-shaped butter cookie, dollops of yellow cream and a fresh blueberry. Hot tea ($4) brought a large silver pot of hot water with two teabags, keeping it warm and allowing for more than one cup. Our waiter was pleasant, knowledgeable and helpful. The check, in which the tea and coffee were on the house as a nice gesture, came to $77.31.

Changing with the times

To survive, hotels must be prepared to change with the times. And so it was that Penfield’s, the Hilton’s upscale restaurant which had been a mainstay at the hotel from the beginning, closed in 2002. It was the first place I, as a young woman, had a Caesar salad prepared tableside, and I was shocked to learn of its closing. I was equally surprised to find out in 2007 that Provare, Doral Arrowwood’s fine Italian restaurant, had closed almost a year before. I had reviewed that restaurant for the second time in 2000 when it was celebrating a decade of success. Six years later it was gone and not replaced. The Hilton rolled out Med 15˚ 35˚ in the space where Penfield’s had been in August 2006. Although the American restaurant with Mediterranean influences from many different countries received great reviews, “unfortunately the business wasn’t there,” said Sheedy. So it closed after a year and a half in April 2008. The Hilton Rye Town’s guest rooms and ballrooms are currently under renovation with completion expected around the middle of the year. A second phase, said Sheedy, will include remodeling the restaurants. “But to what extent and how I can’t tell you,” he added.
