P.C. native opens Byram deli; realizes childhood dream By Jananne Abel

rom a young age, Port Chester native Kevin Allmashy had an interest and a flair for cooking. Ever since childhood, it has been his dream to own his own food establishment. After 15 years working in the food service industry, that dream was finally realized in early November when he took over the deli at the corner of Mill and Henry streets in the Byram section of Greenwich and made it his own. Executive Corner Deli & Catering at 229 Mill St. celebrated its grand opening on Nov. 7 following a soft opening a few days before. The name incorporates that of the previous establishment at this location— The Corner Deli--as well as Allmashy’s experience as an executive chef. “I started early and through the years I knew this was my forté,” said the proud new business owner. After having worked at a local deli in the catering department starting at age 15, he moved on to work at hotels such as the Greenwich Hyatt Regency, Doral Arrowwood in Rye Brook and Stouffer’s in Harrison while in high school. He was also involved in the now-defunct culinary arts program at Port Chester High School. After graduating from PCHS in 1984, he went on to Johnson & Wales University in Providence, R.I. where he earned an associate’s degree in Culinary Arts followed by a bachelor’s degree in Food Service Management. Upon graduation, he worked for The Chart House Restaurant in Dobbs Ferry, Simsbury, Conn. and in Pennsylvania before becoming general manager/executive

be the traits of a good restaurateur. And he is pouring his heart and soul into the business. At his grand opening he talked about the satisfaction of the customer and the “care and heart you put into it,” noting that “the rewards are there in the end.” His mother, Lorraine Allmashy, a Port Chester resident, and other relatives were there to share in his happiness. After having been a pastry chef, sauciere, grill chef and executive chef, Allmashy, now 30, is thrilled to have his own place where he can put together his own menus using his own recipes. The experienced chef is getting his feet wet in a small space at first offering just breakfast and lunch although he is just now expanding his hours to include dinner. Allmashy put a lot of work into sprucing up the 620-square-foot deli before its opening. Business is mostly takeout although the eatery does have a small counter with stools facing Mill Street. Executive Corner Deli slices only Boar’s Head meats for sandwiches and by the pound. Sandwiches, priced in the $4.50 to $5.50 range, can be made on a variety of fresh breads: hearty white, wheat, rye, multi-grain, hard roll, Portuguese roll, pita, croissant or English muffin. Sandwiches made on a wedge or croissant cost $1 extra.
Most sandwiches can also be made as a wrap using a whole wheat, plain, tomato, spinach or low carb tortilla. Hot sandwiches include veggie burgers ($3), 5-ounce angus burgers ($3), hot dogs ($1.75), tuna melts ($5), Reubens ($5.95), hot pastrami within onions ($5.95), meatball ($4.50), eggplant parmesan ($4.75) and sausage and peppers ($4.75). Executive specialty sandwiches, priced from $4.75 to $6.95, are posted inside a plastic frame in front of the ordering counter. They have original names like The Mush Man (Allmashy’s nickname), consisting of chicken cutlet with ham, Swiss and honey mustard. Others are The Full House, chicken cutlet with provolone, roasted red peppers, lettuce, tomato and balsamic vinaigrette, and The Lethal Weapon, Philly cheese steak with your choice of cheese and hot or sweet peppers. The most popular of the bunch is The Turn, grilled pesto chicken with fresh mozzarella, plum tomatoes and balsamic vinaigrette on a crunchy focaccia panini ($6.25). I can attest to the fact that this is a yummy sandwich. The chicken cutlet sandwich with chili was deliciously hot. RESTAURANT REVIEW P.C. native opens Byram deli; realizes childhood dream sandwiches ($3.75 to $5.25), good-tasting macaroni salad, as well as Greek, Cobb, Caesar, gorgonzola, fruit and chef salads ($4.75 to $5.95). There is also a nice salad bar with an assortment of lettuce, meats, cheeses and plenty of toppings priced at $.40 per ounce. Two homemade soups are offered daily. I tried the chicken noodle which was especially savory and anything but ordinary. As a regular special, you can get any two of soup, side salad or half a sandwich for $5.95. Daily specials—including soups, entrées, salads and sandwiches—are printed on a weekly calendar available at the deli. Examples are the Taco Bowl
(beef or chicken) in a homemade tortilla bowl with toppings, turkey burger with jalapeno cheese and fries ($5.95), roasted turkey with mashed potatoes, candied yams and cranberry, pasta primavera, fish and chips and Mousakka (Greek lasagna made with eggplant, ground beef and feta cheese), all priced at $5.95. The breakfast crowd can get hot oatmeal every morning, the Mill Street Special consisting of a buttered roll and coffee for $1.25, Byram Special of egg and cheese on a roll with coffee for $1.75, pancakes plain or with chocolate chips, bananas, blueberries, strawberries or nuts, any type of egg, omelets, French toast ($1.25), corned beef hash ($3), hash browns, grits, bagels, muffins, croissants, crumb cake, yogurt or granola and sides of

As far as catering goes, Allmashy and his staff can make all types and varieties of sandwich platters, 6-foot wedges, antipasto platters, crudités, sushi, salads, fruit baskets, chicken, pork, beef or fish dishes as well as pasta and vegetarian selections. Free delivery is available with a $20 minimum charge. The experienced chef likes to try new things and cater to everyone’s needs. In that vein, although Executive Corner Deli was originally open Monday through Saturday, Allmashy is extending his days to seven starting this Sunday, Jan. 29, when the eatery will be open from 7 a.m. to 3 p.m. for the first time. He said
customers have asked for it and he aims to please. He has also expanded the hours so his deli and catering establishment is now open from 5:30 a.m. to 6 p.m. Monday through Friday and Saturday from 6:30 a.m. to 4 p.m. In the future Allmashy, who said he’s too busy to be anything but single at this point in his life, also plans to offer private cooking lessons. Parking is convenient and easy on Henry Street but is also handy on Mill Street or in the nearby municipal lot off Mill. Executive Corner Deli & Catering is just the beginning for Allmashy, who plans to manage his first venture correctly and eventually move on to open his own restaurant.
