Freshly roasted coffee sets new shop apart By Mike Delano
aterfront Roasters, a new coffee shop at 106 Purdy Ave., has only been open for business for the past two months, but its calling card has been floating around for years. The smell of freshly roasted coffee has been a fixture for anyone traveling through the southern part of the village since 1994, when the company began roasting coffee at its location on the corner of Purdy Avenue and Don Bosco Place. Beans come in from a host of countries including Mexico, Kenya and Peru and are roasted in a process which allows the company to create small, carefully monitored batches. The attention to detail extends all the way to a testing lab where samples of newly imported beans are ground for taste testing and quality assurance.

Customers enjoy beverages in the spacious surroundings of Waterfront Roasters in downtown Port Chester. According to Todd Good, one of the four owners of Waterfront Roasters, the desire to create a coffee shop at the location has been present ever since the company’s inception over a decade ago. “But until the downtown development came along, there was no reason to do it,” he said. “The business wasn’t here.” Good, who lives in Norwalk, Conn., owns the establishment with partners Adam and Steve Dunefsky and Bob Ricter. The long-delayed $100 million Waterfront at Port Chester retail project is expected to revitalize the village’s downtown business district. The complex began its life in earnest after the opening of Costco Wholesale in 2002, but numerous roadblocks, from property ownership lawsuits to construction setbacks, have delayed the opening of other businesses. At the end of last month the second phase of the development began opening, with Marshalls taking the lead followed by Washington Mutual bank. Super Stop & Shop, DSW Shoe Warehouse, Michaels Arts & Crafts Store and Bed Bath and Beyond are scheduled for a late July opening, while a Loews Cineplex is slated to open in August. Opening dates have not been set for Petco, the pet supplier which will be located in the area of the development closest to Waterfront Roasters, or a commuter parking lot directly across from the coffee shop. “Right now we tell people we’re right across from the mound of dirt,” Good said of the space sched-
uled to be the Petco location. He expects business to increase by roughly 80 percent once the entire project is completed. Based on the success of this location, Waterfront Roasters may expand to other locations locally and in Florida. The current staff of seven is expected to grow to 10 after completion of the Waterfront project. Plans to move forward with the creation of the coffee shop really

The company knew it would be able to distinguish itself immediately from the local competition, such as Dunkin’ Donuts and Starbucks, by offering freshly roasted coffee on site. “Starbucks coffee was roasted in Seattle or somewhere else, and

The sisters were active in the creative process of designing the look of the store, which has a warm, inviting atmosphere that is noticeably heightened by the ample space at the location. Customers can sit at the handful of tables in the center of the space and more by the window, in the leather furni-
ture at the rear of the space with coffee tables and magazines or at a family-size wooden table. “We wanted something bright and inviting,” Linette said. Lisette said aspects of the design were meant to appeal to the perennial coffee drinker, the college student. Contemporary music is played throughout the store and the location offers wireless internet connection for outfitted laptops, or a cabled connection for users without wireless capability. A 10% discount is offered to anyone showing a student ID. Large windows provide plenty of natural light to the yellow ceilings, orange walls and lavender carpeting. Across from the entrance, a wide selection of whole coffee bean varieties are available for purchase, as well as bagged, ground varieties. Coffee-making devices are available in the corner of the shop as well, in addition to coffee recipe books, mugs and coffee filters. “It’s big enough to feel like you have your own private area,” Good said, adding the company has considered using the large amount of open space at the location to showcase comedians or musicians in the future. Good said the corner of the store currently displaying coffee machines will be reconfigured and a glass panel installed to allow customers to see through to roasting taking place behind the scenes. “You can’t do that elsewhere,” he said. Small candies are available at the checkout counter of the custom-made bar, which has separate areas for cashiers and order pick-
ups. The equipment is all top-ofthe-line, Good said, including two fully automated espresso machines which he said provide convenience above the manually-operated models as well as the guarantee every shot will taste the same regardless of how the barista operates the machine. The menu created for the shop is similar to Starbucks offerings, from a wide variety of coffees to pastries and cold drinks, but also incorporates some of the Rodriguezes’ personal touches, including specialty iced tea “teasers” and “fruithies,” which are fresh fruit-based smoothie mixtures Lynette said was the result of constant requests from customers at their former job. Waterfront Roasters brews Harvey & Sons tea from Millerton, N.Y. “We think it’s the best tea out there,” Good said. “That’s why we’re using it.” The coffees of the day range in price from $1.40 to $1.70, with iced coffees beginning at $1.75 for a small. A Misto, or coffee/ steamed milk mixture, begins at $1.50. Espresso drinks begin at $2.55 for a small cappuccino or latte and $2.85 for a mocha. The Americana beverage, a mixture of espresso and water, begins at $1.75. Single shots of espresso are $1.25 and a triple shot is $1.85. Several flavor shots such as vanilla, hazelnut and cinnamon can be added to any beverage for 35 cents.
