Wings are hot—or not— at Port Chester’s newest eatery By Jananne Abel
T
he third restaurant has opened in The Waterfront at Port Chester development, this one the extension of a franchise that has only recently moved into the New York metropolitan area. Buffalo Wild Wings Grill & Bar, with its headquarters in Minneapolis, Minn., has 396 restaurants in 36 states. The 44 Westchester Ave. location, which opened June 5, is #395. Another has opened since. Buffalo Wild Wings, started in 1982 in Kent, Ohio by two transplanted men from Buffalo, New York, is a happening sports bar that specializes in authentic Buffalostyle chicken wings. Their theme is “Wings. Beer. Sports. All the Essentials.” And while their menu has expanded beyond wings to other bar food, sandwiches, salads and ribs, with a definite concentration on chicken, I’d say stick with the wings and you can’t go wrong. The wings are meaty and moist, with just the right amount of sauce so they’re tasty but not dripping or terribly messy. With 14 different sauces to choose from, there’s something for everybody. They range from Mild to Blazin’ with many others in between. Whether you like sweet, spicy or a combination of both, you’ll find a sauce to please your palate. I was surprised to learn that there’s an extra charge for bleu cheese or ranch dressing and celery (only 40 cents), items I have always considered staples with wings, but these are actually delicious without them. Unless, of course, you choose a hot sauce, in which case the celery and dressing act as coolants. Wings cost $3.99 for six, $7.69 for 12, $10.99 for 18, $13.99 for 24, $27.49 for 50 and $49.99 for 100. On Tuesdays the price of wings drops to 35 cents each which is a bargain over the normal price of 66 cents a wing for an order of six or 50 cents a wing for an order of 100. Not having tried all 14 sauces yet, I’m not sure which is my favorite, but I surely do like the spicy garlic. Parmesan Garlic and Caribbean Jerk are yet untried varieties that sound interesting. A good option to sample several sauces is the Dynamic Sauce Trio where you can try three Buffalo Wild Wings signature sauces with Boneless Wings ($9.49), Chicken Tenders ($8.49), Naked Ten-
ders ($8.49) or Popcorn Shrimp ($9.49). You can also purchase any 12-ounce bottle of sauce for $3.99 to take home. I don’t recommend the burgers. Or the Grilled Chicken Sandwich. I ordered a Black & Bleu Burger ($6.49) to take out. It came in a nice plastic foam container and was open-faced, with fresh lettuce, tomato and red onions on one side, the burger, seasoned with Cajun spices and topped with bleu cheese dressing on the other. However, it’s only a 1/3 of a pound burger, not ½ pound like you get at many other restaurants, and it was fairly thin and too well done. I ordered it medium, and I found it to be well done, with no juice at all. The menu does state that burgers are prepared medium-well, so I guess you don’t have a choice. The piece of chicken you get on the Grilled Chicken Sandwich is small compared to the bun.
New franchisees choose Port Chester
James Bitzonis, president and chief executive officer of Four M Capital, LLC, the franchise owner, said his favorite item on the menu is wings with Mango Habanero sauce which he considers the perfect combination of sweet and spicy. He also stressed that the wings are always fresh—never frozen. The restaurant has a huge walk-in cooler just for chicken wings, he said. Bitzonis, 41, and his partners Dennis Mehiel, his father-in-law, and Michael Mehiel, his brotherin-law, opened their first Buffalo Wild Wings at New Roc City in New Rochelle in December and their second in Milford, Conn., the restaurant’s first Connecticut location, in March. They have plans to open 36 stores over 10 years in the New York-New Jersey-Connecticut area. The next will be at

Looking down onto the first floor of the new Buffalo Wild Wings Grill & Bar in Port Chester from the second floor. the Atlantic Terminal in Brooklyn, and they are currently looking for locations in New York City and Nassau County. “It’s very aggressive,” Bitzonis said. “We were looking for an operation that has scale.” So far, he said, they are ahead of schedule. A former assistant district attorney in the Bronx who then went into private practice in New Haven, Conn. for four years, Bitzonis was looking for a change and took over the running of a paper cup company his father-in-law and brother-in-law had bought in Kensington, Conn. for four years before they sold it to Sweetheart Cup Company. He started looking for a new business and stumbled upon this one. “I’m Greek so it’s kind of in the blood,” he said of the restaurant business. And his brother-in-law is an executive chef. Bitzonis, who now lives in Roxbury, Conn., grew up in Stamford and said he used to come to Port Chester when he was 19 to 21 to visit the entertainment spots. “It’s a great location so close to Greenwich and Stamford but really unknown and underserved,” he said. With the development of Costco and the movie theaters, he thought it would be a great idea to offer the residents a new concept that didn’t exist anywhere in the Tri-state area. Before his franchise formed, the closest Buffalo Wild Wings restaurants were in Delaware or Buffalo and the bulk of the places specializing in wings were mom and pop shops. Of the Waterfront at Port Chester development, he said: “It’s new, we’re new, it’s a good fit.” The partners also loved the 20foot ceilings in the Port Chester space which allowed them to install the extra special audio visual package. “They (the developers) delivered us an empty box and we built it,” he said about the impressive-looking restaurant.
Sports decor
Buffalo Wild Wings features 10 large screen TVs, 21 32” TVs, two 52” plasmas and two 42” plasmas which literally surround you on almost every wall for full-on sports viewing. The eatery seats a total of 235 people, 191 downstairs and 44 upstairs overlooking the activity below and still with a good view of the sports action. Sports pictures on rough hewn wood walls and a framed Yankee uniform behind glass add to the décor. Seating is at a variety of tables—round, rectangular, high and low—and booths with black or yellow tops. Chairs, booths and barstools are wooden with the chain’s buffalo logo carved into them. There’s seating at the long light wood bar or at high round tables in the bar area or other outlying tables. The booths are positioned in front of the windows along Westchester Avenue. The floor is hard wood in the bar, green slate outside of it. Stairs and the upstairs are carpeted in black and blue with rust and beige flowers. A bar with stools for eating is positioned along the railing upstairs with square and round tables on the inside of the room. The most intriguing tables are two triangular ones in corners—one upstairs and one down—that are like mini-bars with stools which can seat a family or any group of up to nine.
Lots of staff
Staff is plentiful and generally well trained. General Manager Stew MacAdam of Chester, N.Y. has four managers under him. There is always a manager on duty and usually two—one on the floor and one in the kitchen. They are the people walking around with headsets. Under them are hostesses, cashiers, bartenders, servers, cooks and, at high-volume time,
food runners. More than a handful of the workers are Port Chester college or high school students. “We’re a little overstaffed since we just opened,” Bitzonis said. The restaurant can function with 60-65 employees while now there are about 90 on staff, many of them part-time. Expected attrition will get the number down to the proper size.
Father’s Day
Crave It! Combos of ribs and shrimp, chicken and shrimp and ribs and chicken ($11.49) have been added to the menu and will probably become a permanent part of it. They’ll be available for Father’s Day as well as the 23 types of beer on draft and another 24 bottled beers. So if you’re not grilling, Buffalo Wild Wings is definitely a fun place to take Dad to eat, drink and watch sports on TV. Besides beer, there are good frozen drinks like margaritas, daiquiris and screwdrivers.
Big games
Bitzonis said Buffalo Wild Wings is a great place to be when there is a big game on TV. Regional Manager Joseph Lichwick of Valhalla said the Port Chester location was packed Monday and there was a great atmosphere when the U.S. vs. Czechoslovakia World Cup game was being televised. When there’s not a big game, music plays on the loud side at night and the TVs are only for watching.
Still to try
Salads, quesadillas and Chili Con Queso Dip (blend of melted cheeses, peppers and southwestern spices topped with chili and served with blue corn chips at $6.49) are among the menu items I plan to try on future visits. There’s also a children’s menu for kids 12 and under. Please turn to page 6R

Dinner for six
On a recent visit to Buffalo Wild Wings Grill & Bar with two adults and four teenagers, we started with a basket of popcorn shrimp with spicy garlic sauce for dipping ($8.49). These crispy shrimp are made with peppercorn garlic breading and are exceptionally tasty. We also had an order of onion rings ($4.29) with southwestern ranch dressing for dipping, whole onion slices dipped in batter and fried crispy which I heard were excellent but didn’t get a chance to taste before they were gone. The roasted garlic mushrooms, breaded, fried, whole-button mushrooms served with ranch or southwestern ranch dressing ($5.29), are also yummy. We also had three sodas and an unsweetened brewed iced tea ($1.89 each with free refills) served in plastic glasses emblazoned with the buffalo logo. We didn’t realize there were free refills on soda until after we had finished the meal, something our server probably should have mentioned. A frozen strawberry daiquiri ($7.00) was extremely fruity and flavorful and a frozen screwdriver ($7.00) was also refreshing but diluted quickly. Two beers (16-ounce Beach Bum at $5 and 23-ounce Pabst at $4.75) added to our tab. One in our party had the Chicken Tender Wrap ($7.99), chicken Buffalo Tenders, a blend of cheeses, lettuce, pico de gallo plus one of the Buffalo Wild Wings sauces wrapped up in a large flour tortilla. This excellent sandwich combination was served with blue corn chips and salsa. An order of six wings with Asian Zing sauce ($3.99), described as “sweet meets heat: a chili pepper, soy and ginger sauce, ” was sweet and zippy, but I still prefer Spicy Garlic. The Ribs and Chicken Tenders Combo plate ($11.49) with Sweet BBQ sauce and sour cream and chive potato wedges was a good choice, definitely more than enough for one person. The all-white-meat chicken Buffalo Tenders are lightly breaded and cooked till crispy. Ribs are meaty but not the best

Those who can handle the Blazin’ wing sauce can get a free T-shirt and their name on the Blazin’ Wall or Wall of Flame by eating 12 wings prepared with the spiciest concoction Buffalo Wild Wings has to offer in six minutes. That’s with no water, no napkins, no celery and no bleu cheese. The number of pictures on the Blazin’ Wall had reached 31 when I visited Tuesday.

Buffalo Wild Wings opens every day at 11 a.m. and closes at 1 a.m. Monday through Thursday, 2 a.m. Friday and Saturday and midnight Sunday. Parking is temporarily in the parking lot across the street (until a building is built there) as well as in the Marina Parking Lot on Abendroth Avenue, the near end of the Costco parking lot and the tiered parking structure off Waterfront Place.

I’ve ever tasted. The potatoes, recommended by our waitress over the Buffalo Chips, are interesting while the cole slaw had too much mayonnaise. I spoke earlier about the Grilled Chicken Sandwich ($6.49), ordered by one in our party, having too little meat and the burgers being too well done—we had one Honey BBQ Bacon Burger ($6.49) and one Classic Burger ($5.49). They come with lettuce, tomato and onion on a Kaiser roll with a pickle spear on the side. For dessert, the Deep Dish Apple Pie ($4.59), a slice of old-fashioned apple pie topped with streusel and caramel sauce served a la mode, was a real hit with the kids, enough so that we had to order three slices. The Chocolate Fudge Cake ($4.59), also served a la mode, is topped with chocolate sauce. While scrumptious, it’s rich and filling, definitely more than enough for one person. Our waitress, one of the Port Chester college students we mentioned earlier, was friendly, helpful and efficient. Our check came to $117.91 without tax.
