Panera offers bread and more in comfortable surroundings By Jananne Abel

T

he first of four planned restaurants opened along lower Westchester Avenue in the Waterfront at Port Chester development on Dec. 17, 2005, joining Marshall’s, Super Stop & Shop, Loews Cineplex, Bed Bath & Beyond and Michaels Arts & Crafts. Opening in the dead of winter hasn’t helped business, said Panera Bread General Manager Charles Lederer. However, as the weather gets better and local people spread the word, the number of customers has been increasing every day. Although Panera Bread is a chain, it’s not fast food like MacDonald’s or Burger King. In fact, I find the bakery-café, known for its fresh baked bread, bagels and pastries, soups, salads and sandwiches, a welcome addition to the local restaurant scene. Port Chester’s Panera Bread café, located at 10 Westchester Ave., corner of Waterfront Place, is the first in Westchester. Before the Port Chester location opened, you would have had to travel to Nanuet in Rockland County to find Panera Bread. That café is part of the same franchise known as Take Home the Bread. With four stores currently in the franchise, Take Home the Bread plans to expand to 22 (imagine that!) by 2009. Lederer, 48, who has been with Take Home the Bread almost a year, said the franchisee is looking to get into up and coming areas like the Waterfront mall in Port Chester. Since the café is not situated on the main street, he said, the management expected it would take some time to catch on. Panera Bread started in 1981 in St. Louis, Missouri as the St. Louis Bread Company, which the bakery-cafés are still called in that neck of the woods where the company is headquartered. There are now 825 spread across the country in 35 states. More than 200 are owned by the company while the others are franchises. I had visited the one in Fayetteville, N.Y. near Syracuse last May when I was visiting in that area and got an idea of what to expect in Port Chester. I have observed that Panera, which is open for breakfast, lunch

and dinner, is crowded in the morning for breakfast (last Sunday there was a line out the door) and at lunchtime while at other times, especially on weekends, I have seen people there with their computers studying, working or just hanging out. Lederer, a certified master chef who lives in Eastchester, said hanging out is encouraged. He called Panera “an everyday oasis” and said “we want you to sit next to the fireplace and feel right at home here.” In fact, he said, no one is discouraged from staying all day. In one café a gentleman does all his business there, including conducting interviews. Free high-speed internet access is available at Panera. A brochure available in the café called “The How of Wi-Fi” explains what is needed and how to go about hooking up. Panera attracts people from all walks of life—laborers, teachers, principals, students, shopkeepers, mothers with children and businesspeople. I’ve seen Port Chester people there as well as out-of-towners. Panera’s slogan is “a loaf of bread in every arm” and the restaurant prides itself on customer service, never saying no to a customer’s request, said Lederer. I have noticed that employees are friendly, cheerful and knowledgeable about the menu and have seen a marked increase in the speed with which orders are filled since the café opened. Panera currently employs about 45 associates and management plans to hire more as it gets busier, said Lederer. Many are Port Chester High School students. “I try to

Bread baked fresh every day

Bread, bagels and bakery goods are made with no preservatives and baked fresh every day. The bakers come in at 10 p.m. each day and work until 6 a.m. the next morning. Breads range from country, to multigrain, to three cheese (parmesan, romano and asiago), to ciabatta, to pumpkin seed (lowcarb), to sourdough, asiago cheese, tomato basil and cinnamon raisin, all of which are on display behind the front counter of the bakery-café for all to see. Prices range from $.59 for a sour dough bread roll to $5.99 for a miche (large loaf used to make sandwiches). Bagel varieties include asiago cheese (similar to parmesan and my favorite), everything, sesame (lots of seeds), blueberry, whole grain, French toast, Dutch apple and raisin, and plain. The current featured banana pecan, which has been a big seller, and mocha chip will be replaced next month with two new flavors. Panera’s bagels are less doughy than others I’ve tasted but are nonetheless good. They are priced at $.69 for one bagel, $6.99 for a baker’s dozen and $8.99 for 18. For a bagel with any spread (plain, reduced fat and several flavors of cream cheese), the price is $1.79.

The menu at Panera changes four times a year with some items being removed and new ones added. In fact, Panera is getting ready to introduce its new menu soon. The chicken, bacon and Dijon mustard panini, not on the current menu but always available, and all the other hot panini sandwiches are among the biggest sellers at Panera, said Lederer. Made on homemade three-cheese bread or

focaccia (rosemary and onion or basil pesto) and grilled to meld the bread and ingredients, all are priced at $6.49. The asiago roast beef sandwich (oven-roasted beef, smoked cheddar, lettuce, tomatoes, red onions and creamy horseradish sauce on asiago cheese bread at $6.49) is the most popular cold sandwich, broccoli cheddar and French onion are the biggest-selling soups and cinnamon crunch is Panera’s signature bagel, said Lederer. The Chicken Olivada sandwich ($6.59), which I thoroughly enjoyed, has been featured as a special sandwich during the current quarter and will be replaced with something new. It might be brought back at a later date, said Lederer. This concoction is made on toasted whole grain bread and consists of all-natural Bell & Evans pepper-mustard chicken, field greens, tomatoes, onions, feta cheese, pesto aioli and olive tapanade. The unusual sandwiches and variety of choices is what draws me to Panera. Plus there will always be new ones to look forward to. From my observation the “You Pick Two” option for $6.49, which allows customers to select two of the following: any bowl of soup, any half sandwich or any half salad, is the most popular. It’s the one I usually choose. Of the soups, I happen not to like the onion because there’s not enough cheese and it’s a little sweet. I have enjoyed the low fat chicken noodle, garden vegetable, roasted red pepper, and tomato garlic. The last two were specials, not available on a regular basis. The Italian Combo on ciabatta ($6.49) is a favorite of mine and my 12-year-old daughter’s. It consists of roast beef, smoked turkey, ham, salami, Swiss cheese, peperoncini, lettuce, tomatoes, red onions and special sauce on a soft ciabatta roll. Delicious! I can also recommend the Pepperblue Steak sandwich ($6.39), made with seasoned

steak fillets, lettuce, tomatoes, red onions and gorgonzola roasted red pepper sauce served on toasted ciabatta. The Asian Sesame Chicken Salad ($6.99) is also yummy, mostly because of the tangy reduced–sugar Asian sesame vinaigrette dressing and crispy wonton strips which give it pizzazz. Other ingredients are all-natural Bell & Evans citrus-herb chicken, romaine lettuce, fresh cilantro, sliced almonds and sesame seeds. Fandango (mixed field greens, romaine lettuce, walnuts, gorgonzola cheese, mandarin oranges and fat-free raspberry dressing at $5.49) also sounds good although I haven’t yet tried that salad selection. A bowl of soup is also available separately for $3.39 or soup can be had in a sourdough bread bowl for $4.79. Salads, soups, sandwiches and “You Pick Two” come with your choice of side: a portion of French baguette, a portion of whole grain baguette, an apple or a bag of kettle cooked crunchy potato chips. The pastries all look delicious (examples are fresh strawberries and cream, cinnamon rolls and pecan rolls, all at $1.99). I can recommend the bear claw, which is filled with almond paste ($1.69). The chocolate croissant ($1.99) is more doughy than it should be. Both the chocolate chip ($1.39), chocolate chip walnut and shortbread ($1.29) cookies are large and scrumptious.

Service

There is no table service at Panera. For the foods and drinks made to order like soups, sandwiches and salads, you place your order at the counter with one person and pay, then sit down if you’re eating in or stand in line if you’re taking out and wait for your first name to be called. One of a handful of dining areas within the Panera Bread café in Port Chester. This one features a fireplace. with what looks like heavy parchment paper--are Decor suspended from the ceiling.
