Frank’s Steaks at Rye Brook:
Succulent steaks and sushi in a striking setting

enovation of the former Eclisse into Frank’s Steaks at Rye Brook took longer than expected but was well worth the wait. The rich, attractive décor, delicious food and friendly service put Frank’s on the top of the charts as far as local restaurants go. Prices for the succulent steaks for which Frank’s is known as well as racks, roasts and chops are on the high side, and the menu is a la carte, but portions are large and the meat is of the highest quality. Not only that, but it is cooked to perfection. Chicken and seafood entrées, which I haven’t yet sampled, are more reasonably priced. To please a spouse or family member who may not like steak or anyone who just prefers a lighter meal, Frank’s has a full sushi bar featuring traditional rolls, special rolls, sashimi and fusion rolls, the latter combining basic rolls with other tastes to produce a Rye Brook roll, for instance (shrimp tempura, smoked eel and avocado with creamy yuzu and oba sisho oil at $13). Sushi chef Ruby Fnu, who comes from Nobu in Manhattan, one of the premier sushi restaurants in America, recommends the Rye Brook roll as well as the three flavors of sashimi currently being offered as a special for $15: tuna with mango salsa and orange compote garnished with Japanese bayberry, yellowtail with a bleu cheese jalapeno and salmon with an olive salsa and wasabi green tea vinaigrette. Other suggestions: Yellowtail or Scottish salmon with jalapeno ($13) and the pink lobster roll (steamed lobster, avocado,
crispy rice squid, mango salsa and sesame peanut sauce at $14). Nicholas Drossos of Levittown, L.I. and Kenneth DeNicola of Rockville Centre, two of the five owners, said they thought it was a trend in the industry, or at least on Long Island, to combine steak and sushi. Plus, said Drossos, sushi goes well with steak. So far, they said, reviews from customers have been good. These two men are on the premises most often along with Dennis Krane, an owner as well as head chef and kitchen manager. He graduated from the Culinary Institute of America. Other partners are Rocco Trotta of Lattingtown, L.I. and Richard E. Gerzof of Upper Brookville, L.I. Drossos has been in the restaurant business 30 years, DeNicola and Krane 25 years and Trotta 40 years. So they’re experienced restaurateurs who know the customer is king. “We try to treat everyone in here like family,” DeNicola said. “Every request is met with a ‘no problem’ attitude. We try to accommodate the boss and the boss is the customer.” Frank’s Steaks at Rye Brook, which opened on Mar. 12 in the Washington Park Plaza at 275 South Ridge St., is the third in a small chain, the first of which opened in Jericho 20 years ago

Romanian Skirt Steak ($27), marinated in Frank’s secret sauce with garlic, duck sauce, soy, Worcestershire and seasonings, is the restaurant’s signature dish and the most popular entrée at both of the restaurant’s other locations. I can vouch for its exceptional flavor and tenderness. DeNicola, general manager of the restaurants, also recommended the 24-ounce Cowboy Garlic Rib Steak rubbed with a mixture of fresh garlic, ground black pepper and a touch of virgin olive oil ($37); the King Henry filet mignon, a 12-ounce filet topped with crisp bacon, sautéed mushrooms and béarnaise sauce ($37); as well as the New York prime strip steak ($38), a 16-ounce, dry-aged piece of meat I can attest is unsurpassed in flavor if you’re a steak lover. He also suggested the Porterhouse for Two, a 42-ounce center cut, dry-aged piece of meat for two to split ($89). The Petite Filet Mignon is a good value. The 8-ounce filet is served with béarnaise sauce, mashed potatoes and creamed spinach for $28, the only dish that is not a la carte. I recommend ordering this meat cooked at least medium rare to get the full flavor and avoid any dryness. I can honestly say that during my three visits to Frank’s, I have not had anything I didn’t think was tasty, unique or worth raving about. The service, however, still needs some work. DeNicola mentioned the Double Gorgonzola Bread ($6), two small loaves of homemade bread infused with béchamel sauce (a white sauce) and gorgonzola cheese, as a unique appetizer as well as the Cajun Calamari with Remoulade Sauce ($12). Instead of being coated with breading, a good
portion of calamari is cooked in a flavorsome, mayonnaise-based sauce to which ketchup, horseradish, mustard, Worcestershire sauce, capers and paprika are added. I had tried both of these appetizers on a late night visit when the kitchen had closed but the bar menu was available and found them worthy of repeating and recommendation.
Search for the perfect location
Drossos and DeNicola had been scouting for a location to open a third Frank’s Steaks for three years. They must have looked at 30 places before the one in Rye Brook which, DeNicola said, as soon as he saw it, he knew was the perfect spot. It had all the right ingredients, Drossos said: footprint, demographics, access and parking. Renovations to return this space to its previous carnation as a steakhouse (it was originally Par’s Steakhouse when the shopping center opened) began last June with the intent of opening before the December holidays. However, “in the quest for getting things done the right way, we didn’t want to cut corners,” DeNicola said. “People notice the little details.” Along the way, many changes were made to the original plans created by Michael Starr of Arttech Restaurant Design Inc., including adding the paving stones at the entrance to the building, Westchester stone on the outside of the building and rebuilding the fireplace using Westchester stone. The entire project cost $2.5 million. “This was the first time we had the opportunity to do a complete redesign of a restaurant,” said Drossos. “It was our most ambitious project to date, a great learn-
ing experience.” He added that it was a monumental task involving so many details.
Rich, striking décor
The owners paid attention to every detail in creating a beautiful new restaurant where one had previously been, the previous establishment having itself been known for its striking décor. They saved some of the artistic pieces from Eclisse including the bas-relief inside the door from the J.P. Morgan estate and crown moldings and paneling which were removed and reworked and now decorate the gorgeous VIP room between the sushi room and the main dining room. The large restaurant seats a total of 300 people. The VIP Room, with its tin ceiling offset by a framed canvas depicting a grape arbor, seats 12-20 at a long table. A second private room downstairs, decorated with arch-shaped mirrors, orange sponge-painted walls, beautiful orange and yellow fabric chair seats and coordinated carpeting, can accommodate 30-60 people. The main dining room, which features four reddish brown booths which come together at the center of the space, can be used for private parties of 80-150 Saturday and Sunday afternoons. The booths are on wheels and can be moved to reveal a wooden dance floor. Ornate wood carving decorates the men’s and ladies’ room doors and the molding around the coat room as you enter. The bar is straight ahead as it was before, horseshoe shaped with a wood laminate top, wide wood border, glasses hanging above and a waterfall behind the liquor bottles at the back of the room. Frank’s menu isn’t large but affords plenty of options between the unique appetizers (besides what I’ve mentioned, try the Baked Little Neck Clams, priced at $10, which are crunchy and appetizing), seafood and chicken entrées, 2- and 3-pound steamed whole Maine lobsters (priced according to market), steaks mentioned previously, Frank’s Surf & Turf Classic (8-ounce Brazilian lobster tail paired with a 12-ounce
filet mignon at $45), sushi and sides. Besides mashed potatoes, sides include French fried onions, Frank’s creamed spinach, steak fries, sautéed mushrooms, roasted garlic potato puffs, sautéed spinach and a vegetable medley, most priced at $7. The Seaweed Salad with orange sesame dressing ($7) sounds fascinating and I’m dying to try the French onion soup ($6). There are now specials emerging—a soup, appetizer, entrée and dessert--although there weren’t any on my most recent visit. Examples: homemade seafood bisque, black bean soup and tomato soup; beef carpaccio (raw sliced filet mignon appetizer) and a 26-ounce T-bone steak. Desserts (most are $7) are huge and are all made on the premises. Some samples: Frank’s deep dish cheese cake served in a large cup, carrot cake, Oreo cheese cake, chocolate mountain cake, tiramisu and classic angel food cake topped with a fresh fruit compote of blueberries and raspberries. Apple raisin cobbler is the most popular. The wine list includes a good number of California, Italian, Australian and French red, white and blush wines and Champagnes in varied prices ranging from $28 to $350. There are also half bottles and sake, both cold and hot. Many flavors of martinis, served in a cool misty glass with a thick stem, and cocktails are also listed within the Frank’s Steaks menu. The restaurant is billed as a “beverage consultant” because it offers many signature cocktails and accents to drinks such as bleu cheese and jalapeno stuffed olives and colored sugar around the rim of the glass for specific drinks. The bar includes a state-ofthe-art beer tap system and a nice variety of tap beers including micro-brews. The luncheon menu features many of the same appetizers and salads in addition to salad entrées such as Seafood Salad Platter ($10) and Sliced Skirt Steak over Caesar Salad ($15), sushi, sandwich platters in the $9 (Prime Sirloin Hamburger Platter) to $21 (Sliced Filet Mignon Sandwich with melted mozzarella cheese) range as well as steaks, chicken and seafood entrées and two pasta entrées not offered at dinner. A bar menu is now available until midnight Thursday through Saturday which includes such things as burgers and skirt steak sandwiches, chicken wings and tenders, Little Neck clams and Caesar salad.

Frank’s would be an excellent choice for Mother’s Day, May 13. The regular menu will be offered beginning at 1 p.m. with seating at any time you choose. Reservations, of course, are required. “People like the basics—simple, fresh and good,” said General Manager DeNicola. Regular hours are 11:30 a.m. to 3:30 p.m. for lunch Monday through Friday; 3:30-10 p.m. for dinner Sunday through Thursday and 3:30 till 11 p.m. Friday and Saturday. Free parking is available in the shopping center lot. Optional valet parking is offered Wednesday through Sunday as a courtesy.
