Hakata soon to become Sea Bali Japanese and Asian fusion with a focus on sushi By Jananne Abel

T

he name is the same, but everything else is different at Hakata, which was taken over by new owners in May. In fact, just so customers know the Port Chester restaurant isn’t the same as it used to be, they plan to change the name to Sea Bali within the next month. The new name will reflect the greater variety of dishes offered at the 163 North Main St. restaurant—not only Japanese but Asian fusion as well. Owner Farmin Halim, “Lim” for short, who was born in Indonesia but grew up in Singapore, said that while the previous owners prepared only traditional sushi, “now we are doing a new modern style of sushi and Asian fusion,” blending dishes from several countries—Hong Kong, Indonesia, China, Malaysia, Singapore, Thailand, Vietnam and Japan. I didn’t know that sushi is not strictly a Japanese food but an Asian one, made the same in Indonesia as in Japan, according to Halim. Halim also has a partner, Sento So, who comes from his hometown in Singapore. The menu is still evolving. It’s filled with a variety of sushi, sashimi (raw fish) and maki (interesting combination rolls) prepared by the restaurant’s three sushi chefs—all from Singapore--as well as a lesser number of salads, soups and entrées cooked in the kitchen by Halim. He’s also got several new dishes ready which aren’t yet listed on the menu. All of the entrées come with miso soup, Hakata house salad with a tasty ginger dressing and white rice. And everything is served piping hot, which I really appreciate. The miso soup is better than most I’ve had, not watery but with an obvious consistency created by the soy bean powder made on the premises mixed with the broth to give it body and a delicious flavor. Since the traditional soup otherwise only contains small chunks of bean curd and scallions, the consistency of the liquid makes all the difference. I’ve tried a handful of the entrées, a few of the sushi selections,

a Port Chester roll and was even introduced to a couple sashimi appetizers I never expected to like and found everything fresh and inviting. Halim, 30, lives in New York City and goes to the Fulton Fish Market every morning where he said he buys just enough fish for the day to assure that it is as fresh as possible. Halim’s wife Henny, 29, who hails from Malaysia, runs the business with him, sometimes acting as hostess and cashier and often as waitress. She is sweet, polite and efficient. There are no utensils—only chopsticks—on the tables at Hakata, which I found refreshing. I suppose you could get them if you asked, but on my visits, no one in our party ever did.

Décor

Under the new owners a wall was taken down to open up the space at Hakata. As you enter to the right is still the sushi bar which seats eight. It is bright and inviting, decorated with some Japanese artwork and Samurai swords. The rest of the seating is mostly at attractive booths at the other side of the restaurant—some with green seats and backs and dark green tables accented with light green around the edges. Other booths have salmon-colored seats and backs in a salmon and beige design on one side and chairs with salmon seats and black backs on the other with the same green tables. There are also some tables with navy cloths draped over white ones and a few others with no cloths. The entire restaurant seats about 60. Halim pointed out that the at-

Small lights in red, yellow and blue hang down from the open ceiling to provide sufficient ambient light. A striking mirror with an etching of New York City hangs on one wall while Japanese paintings—one of a lady, another of a sea scene, decorate others. A strange dead space exists between the sushi bar and the middle of the room where there are tables but no booths and none of the pretty colored lights.

Recommendations

Henny Halim, who operates the restaurant with her husband Farmin, serves customers Joyce Domingues of Port Chester and Inka Mellon of Norwalk, Conn.

One of Hakata’s specialties, according to Halim, is the Sashimi Martini ($8) consisting of chopped fish--a mixture of yellowtail, salmon and tuna—with red tabiko (fish eggs), mayonnaise, wasabi (the Japanese version of horseradish made from an Asian plant), seaweed salad and dried black seaweed on top. Served in a cocktail glass, it is amazingly tasty and crunchy. Rice crackers account for the crunchiness, he said. Halim also recommends the Hakata Sandwich ($13) in which sushi rice is fashioned to look like four triangular shaped pieces of sandwich filled with spicy tuna, eel, masago (red fish eggs), avocado and topped with dried black seaweed. It is served on a plate beautifully decorated by

the sushi chef and, as do all sushi dishes, comes with fresh ginger and wasabi as optional condiments and soy sauce for dipping. A homemade shrimp cracker is served with this colorful masterpiece sticking out of a mound of green wasabi. Then there’s the Sashimi Pizza ($18) made with all kinds of sashimi fish, fish eggs and special sauces on a platform of rice crackers. If you think you could never eat raw fish (that was me), try the Ti Radito ($8) appetizer, your choice of tuna, yellowtail, salmon, white fish or any combination. You get three pieces of fish prepared with black truffle oil, yuzu (Japanese citrus fruit juice) sea salt and garlic. The preparation is delicious and the fish melts in your mouth. “People who like French food will like this,” said Halim. If you’re squeamish about raw fish, even disguised within the rice and other trappings of a sushi roll, the shrimp cucumber roll ($5), made with cooked shrimp, is a good bet. Here it is served sliced in six pieces, plenty for two to share as an appetizer. Chicken Ayam Panggang (Indonesian barbecue chicken) hasn’t yet made it to the menu but will be offered at $11-13 as will Beef Bullolac, a Thai dish of beef cooked medium well with special sauces served on top of lettuce with onions and steak sauce. Halim also rec-

ommends the Chicken or Shrimp Pad Thai (Thai rice noodles with shredded egg and crushed peanuts on top at $12-14), the Lemongrass Hot and Sour Soup with shrimp ($4) and the Malaysian Red or Green Curry with chicken, beef or shrimp and scallops ($10-13). I can attest to the fact that the hot and sour soup is excellent, a delicious tangy broth filled with shrimp. We had the Malaysian red curry with chicken which is served boiling hot in a crock with red peppers, baby corn and green beans in a sauce made with coconut milk, lemongrass and curry. It was pleasing although milder than expected. The Tempura preparations of shrimp, chicken and vegetables are crunchy, not oily, and surprisingly light. There’s not too much batter and along with the chicken ($12) or shrimp ($15), you get zucchini, green beans and carrots, also prepared Tempura style. The pieces of chicken or shrimp are presented stacked on top of the vegetables so as to resemble a bonfire. When I asked Halim how they get the Tempura Shrimp to stay straight rather than curled, he explained a fairly complicated process. The Tempura dishes, which come with a slightly sweet dipping sauce, are great for kids. Hakata soon to become Sea Bali Continued from page 4R briefly fried to make it easy to roll, noted Halim. It is then stuffed with vegetables and deep fat fried. We also tried the broccoli salad with vinegar garlic sauce ($5) and were surprised that it came out hot. It was nonetheless delicious and something I’d definitely order again. My 12-year-old daughter and her friend enjoyed the Crispy Beef ($11), shredded crispy beef, carrots and scallions in a yummy brown sauce. The Glazed Chicken ($11), chunks of chicken sautéed in a sweet and spicy sauce, was meaty, slightly crispy with the perfect amount of zest. The portions are generous and the prices reasonable. There is no charge for green tea which is also served steaming hot so it’s not cold in five minutes. You come away from Hakata feeling like you’ve eaten a healthy meal.

Dinner for two

Although I returned with a large group of adults and children and again on my own where I sampled some of Hakata’s varied Asian cuisine mentioned above, my first visit to Hakata under its new ownership was a simple dinner for two. We started with a container of hot sake (Japanese rice wine) at $6.50, smoother than some I’ve had an always warming. For appetizer, we split the Port Chester Roll ($13), listed on the menu under “Remarkable Maki.” When presented on a plate, it looks something like a caterpillar. This

long roll is made with sushi rice filled with avocado, cucumber and crabmeat covered with spicy tuna and topped with crispy tempura flakes. It is cut in pieces for pulling from the decorative roll and served with fresh ginger, wasabi and soy sauce. For the spicy tuna, a good grade of raw tuna is chopped and mixed with masago (red fish eggs), spices and mayonnaise. We loved this delightful roll and surprisingly the preteens— some who had never been to a Japanese restaurant before-ordered it on our next visit and gobbled it up without any help from the adults. For our main course, we split the Crispy Shrimp ($13) which brought a dozen good-sized shrimp in a light batter made with a special flour, egg, cornstarch, spices and salt cooked with chopped jalapenos, garlic and oil. This dish was tasty, not overly spicy, but a little too salty. We managed to eat everything, but the quantity of food was more than enough to fill us up. For dessert, we were told that there were only choices of red bean, green tea, chocolate or vanilla ice cream ($3) and I selected the red bean. However, later in looking at the menu I noticed the Hakata doughnut, also $3. Halim said the large homemade doughnut is usually available and can be topped with chocolate, whipped cream, strawberry sauce or sugar. Our check came to a very reasonable $38.10.

Background

Farmin Halim graduated from the University of Cambridge in London with a degree in computer engineering. He worked for a while in the field for a large company in Korea but didn’t like the office environment. “I wanted a new adventure,” he said. So he came to the United States to help his friend who had a Chinese restaurant in Virginia. In high school he had worked for another friend in his restaurant in Singapore and over the years had developed his hobby of cooking. Before opening Hakata, Halim owned a Chinese takeout restaurant in Massachusetts where he did much of the cooking. “I like to make people happy,” said Halim. “If the food tastes good and people are happy, that makes me happy.”

Lunch, hours, parking

Lunch is priced at $7-9 for a variety of dishes from the kitchen served with rice, miso soup and salad. You can also get a sushi lunch for $8.50 to $10, with a choice of any two rolls for $8.50 or any three rolls for $10 including rice, soup and salad; broiled eel, sashimi or five pieces of sushi with California or tuna roll for $9-10; or you can order sushi rolls a la carte at $3.50 to $7.50.
