Extraordinary Mediterranean fare at Hilton’s elegant new restaurant

enfield’s, the upscale contemporary American restaurant at the Hilton Rye Town, quietly closed about two years ago. Now the space has been redecorated and revived to create a beautiful new restaurant serving American cuisine with Mediterranean influences from many different countries. Med 15˚ 35˚, the more pricey of the Hilton’s two restaurants, is a welcome addition to the local dining scene because it offers dishes you won’t find elsewhere in the area, interesting preparations that are at the same time healthy. Chef de Cuisine Dominick Mancino has come up with a great menu representing Spain, Portugal, Greece, Turkey, France and Italy, the best and healthiest food in the world, said John Sheedy, food and beverage director at the Hilton Rye Town, located at 699 Westchester Ave. in Rye Brook. “It’s great to be able to offer our guests dishes that are not laden down with heavy sauces and saturated fats.” “I tried to incorporate the entire rim of the Mediterranean and not just 1-2 countries,” Mancino, who was born in Italy and trained at the French Culinary Institute in New York City, said. His offerings include Moroccan tagine cookery in a clay pot and Middle Eastern cuisine as well as dishes from the European countries that surround this deep blue sea. The name Med 15˚ 35˚ represents the lines of longitude and latitude, situating it “smack in the middle of the Mediterranean Sea,” Mancino said, “a crossroads to the flavors of the Mediterranean.” The restaurant’s logo, projected
on a screen outside its entrance, with the two degree readings intersecting and arrows pointing west to represent latitude and north to represent longitude, manifests that crossroads. Complementing the menu is a list of wines from Spain, Sardinia, Israel and Lebanon that you can’t necessarily get elsewhere, “wines off the beaten path,” as Sheedy put it. There are also others from France, Italy, Australia, New Zealand, Chile, California and even Long Island. Prices range from $24 to $220 a bottle, with many in the $30-40 range. A limited number of half bottles are also available as well as wines by the glass, of course. “The general manager and the ownership of the hotel wanted to open a restaurant in Westchester that would best represent the hotel,” Sheedy said. “They felt there was a sparsity of Mediterranean restaurants and Dominick was a great option for us.” The chef de cuisine had come from the muchheralded, 4 star Skyline Bar and Grill at the Hilton Americas in

Houston, Texas which featured his Mediterranean cuisine. As it turns out, he and Sheedy had worked together at the Four Seasons Hotel in New York City 8-9 years ago. Mancino’s other prestigious culinary posts were at New York’s Waldorf=Astoria and St. Regis hotels. At these hotels he prepared meals for international heads of state and celebrities such as former Presidents Bill Clinton and George Bush, Nelson Mandela and Oprah Winfrey. To make sure everything was just right before its debut, Med 15˚ 35˚ had a soft opening in August and did a lot of staff training by preparing and serving meals for invited guests before opening to the public the first week of September, still with little fanfare and no advertising until very recently. A grand opening for invited guests will take place Nov. 29. From my experience, the staff and restaurant are ready to meet the public, although on my recent Saturday night visit it was not yet busy and so not an indication of how they would handle a crowd. Our group of three dined leisurely, thoroughly enjoying the lovely surroundings and the food that was first class, artfully presented and anything but ordinary. Although the restaurant is expensive, it was clear that the finest ingredients were used in every dish, the cooking and service were extraordinary, and I felt we got our money’s worth.

During a chat the week after our meal, the chef didn’t point to any particular items on the menu as specialties, recommending all of them and saying he loved
the variety. The hotel’s food and beverage director, however, highlighted the Kefalotiri cheese appetizer ($12), Fresh Portuguese Sardines ($16), also an appetizer, and the Pork Osso Buco Tagine ($28), calling the latter “a phenomenal dish.” I had the privilege of sampling the two appetizers and give them both an enthusiastic thumbs up. In fact, you could make a meal of the two and go straight to dessert. To the cow’s milk cheese from Greece, which can be heated without melting, virgin olive oil, fresh lemon juice and cracked hot pepper are added. Triangular wedges of warm cheese are served on grilled zataar (a blend of spices) pita bread. On either side of the plate comes a deliciously tart Mediterranean pesto made with roasted red pepper, tomato, almonds and vinegar for dipping. This filling appetizer provides an enticing combination of flavors to please the palate. For the other appetizer, two large, meaty sardines are served with a warm coriander marinade for a sweet and sour effect. A side of fingerling potato hash serves to cut the spice so it does not overwhelm. The pork entrée employs Moroccan tagine cooking where the meat is cooked in a clay pot with a conical top for hours until it falls off the bone. The pot keeps the moisture in so the meat doesn’t dry out. The pork is flavored with quince, a fruit related to apples and pears, and apple broth and served with baby turnips and carrots. This type of cooking is also used for the Prince Edward Mussels ($16), an appetizer, and the Seafood Montage ($38), a medley
of shellfish with risotto and a lobster pepperoncini broth.
Menu
The menu at Med 15˚ 35˚, which will change seasonally, currently lists eight appetizers and 10 entrées. Besides the seafood and pork dishes mentioned above and two entrées I will describe later, Moroccan Muscovy Duck ($27), Chicken Arugula ($24) and Veal Loin ($36) figure among the others. In the future Chef Mancino plans to offer a prix fixe menu on a daily basis with two appetizers and two entrées in addition to the regular menu. He also expects to do a tasting menu featuring a 6- or 7-course meal with foods he wishes to highlight from the different parts of the Mediterranean region. It will present petite portions to allow patrons to sample “a little of this and that.” This menu, which sounds right up my alley, might include specialty items or dishes incorporating ingredients that are in season. “It’s a fun way of showcasing items,” Mancino said.
Décor
Although the configuration of the dining room is the same as it was as Penfield’s, new banquettes, furniture, carpeting, draperies and wall hangings have been installed to accent the deep wood tone and brick surroundings. The décor exudes elegance, and everything coordinates including the blousy orange tops worn by the servers. plate were gorgonzola vinaigrette in the middle, a tiny raw quail egg on a focaccia crouton around the rim, anchovies and grilled radicchio, providing all the ingredients for a classic Caesar salad to whip up yourself. Except for the grilled radicchio (yuck!), we enjoyed every minute of the experience, both preparation and eating, although it took a few minutes to figure out what to do. The latter highlighted house-cured salmon sliced thin and served on four lemon ricotta blinis (little pancakes) with tahini yogurt sauce decorating the plate in artful squiggles. The entire package provided a successful blending of various fine flavors. The Colorado Lamb Chops ($36) brought one good-sized chop served with the bone sticking up draped with three baby carrots over a circular mound of horseradish whipped potatoes. The meat came in a lamb jus with a mint coulis to freshen the palate on the side. Before cooking, the lamb is marinated in cardamom and yogurt, popular in Greece, which acts as a tenderizer and takes away the gamey taste of the meat, the chef said.
