Pacifico four years later:
Presentation less flashy, Latin seafood just as nice

t’s been four years since Pacifico opened at 316 Boston Post Rd. in Port Chester, the former site of Ruffalo’s Pizzeria and Italian Restaurant. Still “a casual seafood house with a Latin flair,” there have been some noticeable changes since the early days. Everything is nicely presented, but the theatrics I experienced when the restaurant first opened—the dry ice to create a smoky effect, for instance--have been done away with. No matter. I think customers would rather have consistently good food and service than theatrics. While there’s still a raw bar, sushi has been replaced by Yellow Fin Tuna Tartare and Salsa Fresca Napolean, sushi grade tuna garnished with avocado, onion and tomato salsa fresca ($11.50). Also, originally the wait staff was dressed casually in jeans and three-button white shirts whereas now they are dressed in more classy fashion wearing black pants, blue dress shirts and identical multi-colored ties. The bus boys wear white dress shirts and ties. And the tables, which have tops bearing a nautical design, are now covered with white cloths. “It became a little more refined, according to what the customers expect,” said Shafiq Jan, the restaurant’s new general manager. “Customers have become more sophisticated.” But patrons are still welcome in jeans, of course, or whatever they would like to wear. Jan, who started in June at Palomino in Old Greenwich as a waiter and expediter, moved over to Pacifico a few weeks ago. Palomino, which features American market cuisine, is the latest pairing of chef/ proprietor Raphael Palomino, who hails from Colombia, and Egyptian-born Moe Gad. The two started with a restaurant in Manhattan and then brought their culinary and managerial skills to Port Chester when they opened Sonora in 2001. With that Nuevo Latino restaurant proving to be a successful venture, they chose to develop a second eatery in the village. Pacifico opened Sept. 29, 2003. Since then Palomino, who now lives in Bedford, and Gad opened another restaurant by the same name in New Haven a few years ago, closed their New
York City venue and opened Palomino on April 21 of this year. “My biggest challenge is to get to know the regulars,” said Jan. “We have customers who are Palomino fans and go to all the restaurants.” Palomino is the head chef at Pacifico, aided by an executive chef and a chef de cuisine. He develops the recipes at all his restaurants and the cooks under him generally execute them. However, said Jan, “he’s one of the few owner-chefs who is a kitchen worker.” As I said four years ago, nothing is ordinary at Pacifico where, besides serving excellent seafood with a Latin flair, presentation is part of the package. While there’s no longer dry ice, there are still towers of seafood, fish beautifully draped over enchiladas and cheesecake surrounded by a starburst design. Prices on the a la carte menu are on the high side but comparable to other restaurants in the same fine dining category. Service on the busy Saturday night we recently visited was adequate but far from perfect. Wait staff abounded and a number of other service people were around to lend a hand, but our waiter was difficult to understand and asked if we wanted dessert before we had received the main course. Not surprisingly, service was far better on a quiet Monday. Jan said the longevity of the staff is one of the strong points at Pacifico, but he is looking to fine-tune the details.

Presentation less flashy, Latin seafood just as nice Continued from page 5R The Maryland Crab Cake—a sautéed jumbo lump crab cake--was disappointingly heavy but was redeemed with an ample portion of frisée, mango and avocado salad served with it ($12.95). This dish can be had as a main course for $21.95. The Shrimp and Crawfish Ravioli ($19.95) was superb. The large, rectangular pasta was buried in a thick and slightly spicy roasted garlic basil sauce loaded with spinach, cherry tomatoes, corn and two large shrimp. The Grilled Washington State Salmon ($22.95) came with a perfect mound of corn mashed potatoes with plantain chips sticking out of it, red onion and tomato relish, and the fish was smothered in crispy onion rings. I didn’t try it myself, but the presentation was beautiful and I was told it was wonderful. The Blue Corn Rigatoni ($19.95) with seared sea scallops and shrimp in a honey chipotle chardonnay sauce pleased the person in our party who ordered it, but I prefer savory rather than sweet sauces. With no room left for dessert, I ordered the Tropical Fruit Salsa and Coconut Yogurt Parfait. This refreshing number consists of a scoop of coconut sorbet swimming in a tropical fruit mélange (fruits change according to the season) served in a martini glass garnished with a large blackberry and a sprig of mint. Three buttery oatmeal and dulce de leche cookies accompany this dessert, priced at $8 along with all the others. As mentioned above, our service left something to be desired. Our tab totaled $156.15.
Dinner for two
Arriving at 6:00 on Veterans’ Day Monday to catch the early bird special, my party of two had the dining room to ourselves. Our service was pleasant and impeccable, and we enjoyed an exceptional dining experience. I ordered a Caipirosa cocktail ($10)—fresh strawberries, vodka, muddled limes and sugar— and liked it much more than the mojito. It’s a little less tart and lacks the mint. My husband had a Pacifico beer ($5) from Mexico—on the light side with a sweet aftertaste. We later shared a Martini de Caffe Expreso ($9), made with espresso coffee and Van Gogh Espresso Vodka. Three coffee beans in the center of the martini glass gave the drink a nice touch. It tasted much like a White Russian, only better. The 3-course prix fixe menu ($25.95) offers four choices of appetizer and main course and two choices of dessert. These are all items listed on the regular menu as well. The Mesclun Lettuce, Apples and Caramelized Pecans with Wisconsin gorgonzola cheese and caramelized pearl onion vinaigrette provided the perfect combination of tastes and textures. It was also fresh, pleasing to the eye and a generous portion. The South Beach Shrimp Ceviche brought six shrimp in a sweet thick mango sauce of citrus juices, red onions, mango and jalapeno peppers. Long, thin plantain chips protruded from this refreshing appetizer, served in a martini glass and eaten with a long-handled spoon. Plantain Crusted Tilapia was delicate in flavor. The fish filet was draped over two shrimp enchiladas in a slightly spicy green tomatillo sauce with corn and chopped tomatoes. This dish afforded a delightful panoply of colors, textures and flavors. The Grilled Skirt Steak was tender, succulent and delicious. Although it was already precut into pieces, a large knife made further cutting into bite-size chunks a breeze. The skirt steak comes in a savory saffron lime mojito sauce colored with chunks of tomato. There was some spinach in the middle of the plate and then a number of large yucca fries piled up like Lincoln Logs. They have an interesting taste, but I still prefer potatoes.
For dessert, we had one of each: Dulce de Leche Cheesecake and Assorted Sorbets. The cheesecake, I learned, is a Palomino trademark served in all of his restaurants. It is creamy, amazingly light for cheesecake, and comes on a plate decorated in the kitchen with a beautiful starburst. A scoop each of coconut, mango and blackberry sorbet decorated with a sprig of mint was served in a martini glass with two oatmeal dulce de leche cookies on the plate below. Coffee is served with warm milk in the Colombian tradition which makes so much sense. Our bill came to $83.75.
Menu and specials
When a party orders the Pacifico Seafood Plateau ($39.95), two tiers of chilled fresh shellfish (6 oysters, 6 clams, 6 jumbo shrimp and Rhode Island mussels served with Nuevo Latino cocktail sauce, champagne mignonette and aji Amarillo sauce) at Pacifico, three other parties want it, said Jan, the general manager. It’s among the raw bar selections which also include South Beach Shrimp Ceviche ($9.95) and ceviche of the day. Ceviche from around the world pairs seafood with fruit and its juices--watermelon, coconut, straight lime or lime and orange juice. “Any fruit can be used,” said Jan. Besides the two soups we sampled, Colombian shrimp and potato chowder ($7.50) is also on the dinner menu. Besides the Cobb Shrimp and Mesclun, Apples and Pecans we tried ($7.95), there’s Shrimp and Linguini Thai Salad ($8.95) and Pacifico Seafood Caesar Salad ($8.50, $11.50 with pan seared sea scallops) as well as an arugula variety. Appetizers range from Shrimp Tacos ($8.95) to Pacifico Crispy Calamari ($10.50), to Southern Baby Back Ribs with Pomegranate BBQ Sauce ($10.95). In addition to the ones described above, main courses range from New Orleans Pan Seared Gulf Shrimp Jambalaya ($23.95) to Crispy Whole Mediterranean Black Sea Bass ($24.95). For those who don’t like seafood, besides the skirt steak, you can get Grilled Free Range Boneless Chicken Breast ($19.95) with broccoli rabe, artichoke hearts and tomatoes in a roasted garlic broth and sun-dried tomato pesto. Every day there are 1-5 specials, usually one appetizer and two or three entrées. A lobster special always figures in the mix. An example of a recent one: claws sautéed in butter and the tail grilled and served in a lime mojito sauce with grilled shrimp and scallops accompanied by corn mashed potatoes ($29.95). Appetizer specials of late have included Tiraditos (shrimp with red onions, red peppers, cilantro and lime juice), a cross between salsa and ceviche. For lunch, appetizers are $1 cheaper, salads the same price, and there is also a Nicoise Salad of yellow fin tuna over mixed greens with potato, hard boiled egg, tomato and nicoise olives ($13.95). Among the other choices are burgers ($9.95), a yellow fin tuna sandwich ($13.95), fish and chips ($14.95), seared tilapia ($14.95) and Grilled Chilean Salmon ($15.95) as well as skirt steak and yucca fries ($16.95). A price-fixed meal is available for lunch for $17.95. Sunday brunch costs $16.95 for breakfast foods such as Nuevo Latino Frittata, Vermont Pancakes or eggs, bacon, sausage and home fries and a mojito, mimosa or Bloody Mary. Other foods can also be ordered a la carte.
Hours and parking
Lunch is served from noon to 3 p.m. Monday through Saturday, brunch 12-4 on Sunday. Dinner runs from 5 to 10 p.m. Sunday through Wednesday and 5 to 11 p.m. Thursday through Saturday. Pricefixed meals, priced at $25.95, are served Sunday through Friday from 5 to 6:30 p.m. Parking is available in the private lot surrounding the restaurant with valet parking provided on Friday and Saturday nights.
