Seafood with a Latin flair, flashy presentation at Pacifico By Jananne Abel

T

he opening of a new restaurant on Port Chester’s Boston Post Road has long been awaited by locals who pass this visible location on a regular basis and have watched its progress. About 11 months in the making, Pacifico took shape in the space at #316 which had been Ruffalo’s Pizzeria and Italian Restaurant. Described as a “casual seafood house with a Latin flair,” Pacifico represents a third pairing of chef/ co-owner Raphael Palomino, who hails from Colombia, and Egyptian-born Moe Gad of New York City.

Palomino, who now lives in Bedford, and Gad brought their culinary and managerial skills from Manhattan to Port Chester when they opened Sonora back in 2001. With that Nuevo Latino restaurant proving a successful venture, they chose to develop a second eatery in the village. It opened on Sept. 29. “It’s a great town, the town has excellent access from I-287 and I95 and has all the very nice towns around it that enjoy good food and don’t want to go into the City,” said Palomino. Palomino, who also owns a restaurant called Il Signo at 39th Street between 2nd and 3rd avenues in Manhattan, is the head chef at Pacifico aided by two chefs de cuisine. He has developed the recipes and flew to Vancouver shortly before opening to research the oysters and collect ideas. He insists that Pacifico is very different from Sonora, that it is a seafood place. However, when I wrote up Sonora in May 2002, I said that seafood has top billing at that restaurant as well. There is more variety, however, on the Sonora menu whereas you wouldn’t go to Pacifico if you didn’t like seafood because there is only one dish that is not made with food from the sea. Palomino does admit that since the two restaurants have the same chef/owner, they offer similar tastes, but the dishes are all different. Even the ceviche is not the same. Nothing is ordinary at Pacifico where, besides serving excellent seafood with a Latin flair, presentation is part of the package. Towers of seafood, apparently smoking ceviche produced with the effects of dry ice and salmon filet draped over a round crispy potato ring on top of a heap of mashed potatoes are among the theatrics. Prices on the a la carte menu are on the high side but comparable with other restaurants in the same fine dining category. Service on the one occasion we visited, after Pacifico had been open only five days, was attentive but not yet perfect. Waiters dressed in jeans and 3-button white shirts abounded and a number of other service people were around to lend a hand. Since the restaurant is new and I was only able to visit once, I am limited in saying that the food was wonderful on that occasion. However, with Palomino’s culinary expertise behind it, there’s a good

bet that the food and its preparation will remain top-notch while the service will only improve over time.

Modern nautical decor More than half a million dollars was poured into renovating the building that is now Pacifico. Only the stone accents on the inside and outside of the structure remain from its prior incarnation. The exterior siding is beige with reddish rust trim and stone decoration. Three large wooden fish hang in the front windows. The sign out front is of a yellow fish in mosaic tile on a blue background with red lettering. Colorful glass fish that reflect the light hang in three windows inside the entrance. Greenery below gives the effect that they are swimming in the sea. Once inside, the main dining room is to the right, a striking long bar to the left and another more private dining room seating about 20 is up a few steps on the other side of the bar. The décor is nautical while at the same time modern. Walls are yellow gold with trim around the windows in reddish rust. The ceiling is blue like the sea with swirls of black and white and is accented by exposed ventilation pipes. Tables have a rust border, white center with a rust and green/ blue fish and water design and are accented by resin chairs in rust, yellow and blue. Comfortable booths figure in each corner of the main dining room. Backs are covered in beige fabric with a rust and green shell design while seats are magenta. A striking polished wood floor completes the picture. Besides the two dining rooms, there is a strip of tables for two as you enter Pacifico. The entire restaurant, which is brightly lit, will seat 120 when the new upstairs room opens in a few weeks. It will be used for dining on weekends and for private parties of up to 40 people.

Dinner for three Dinner starts with large pieces of sour dough bread delivered to each diner and a small plate of tomato chimichurri with olive oil dipping sauce brought to the table. The yummy sauce went fast and we had to keep asking for refills. The drinks at Pacifico are similar and some of them the same as at Sonora. I enjoy the Latin cocktails and mojitos. There is also Pacifico beer, of course, a light variety, as

We tried a Pacifico ($5) and a Mango Chipirihna ($10), a special drink of the day but a variation of the Caipirihna on the menu ($8). Brazil’s classic drink, it is made with Cachaca (sugar cane rum), muddled limes, sugar and freshly squeezed lime juice, garnished with a stick of sugar cane. Fresh mango is added for the variation. More casual than Sonora, though no less pricey, Pacifico also seems more welcoming to children. The children’s menu is reasonably priced at $5.95 for a hamburger, linguine with butter, chicken fingers with homemade French fries or cheese ravioli with tomato and basil sauce. My 10year-old was happy with the large hamburger and fries. The appetizers are interesting, and I could have easily gone for any of them. There are also ceviches and Nuevo Latino sushi as well as five different types of raw oysters with chipotle cocktail sauce and champagne mango mignonette ($11 per half dozen). For large parties you can get a Seafood Plateau for $42 or Royal Tower for $62. The first is two tiers of chilled fresh shellfish: oysters, clams, jumbo shrimp, Alaskan stone crabs and Rhode Island mussels served with the chipotle cocktail sauce and mango mignonette and chili jalapeno tartar sauce. Add a third tier for the Tower. I was enthralled by the spectacular presentation of the Yucatan Style Shrimp Ceviche ($9). It is served on a square bamboo platter dressed with a banana leaf and a piece of dry ice in water to give a smoking effect as it is brought to the table. Homemade chips come on the side. This delicious seafood cocktail is made with 4-5 shrimp, sweet onions, avocado, citruses and cilantro. Other options are Yellow Fin Tuna Ceviche or ceviche of the day.

Not adventurous enough to go for raw fish, I chose the Nuevo Latino Roll ($9.95), a type of sushi made with quinoa grain, roasted peppers, olives, avocado and frisee lettuce. Yellow fin tuna, Chilean salmon or a combination of the three sushis ($24.95) are also available. While the Nuevo Latino provided an interesting combination of flavors, I wasn’t crazy about the texture and might try one of the others next time around. The Chilean Seared Salmon ($19) was also dramatically presented. As mentioned above, the perfectly cooked salmon filet was draped over a round crispy potato ring balancing on top of a heap of delicious saffron lobster mashed potatoes. To enhance the flavor of the salmon, it was served with a roasted tomatillo and thyme sauce, a zingy relish of onions, corn, tomatoes, tomatillos, thyme and avocado. I highly recommend this dish which is not just your ordinary salmon. Besides the food and presentation, the plates themselves are pretty, one decorated with a fish and water, another with an abstract design. Water glasses are an eye-catching deep blue. For dessert, we shared a delectable banana and coconut crème brulee and buttery dulce de leche cookies, a perfect ending to a lovely meal. On the house we were treated to key lime and coconut tart with lime sorbet presented in a spun sugar nest, also worth raving about. All desserts cost $7.50. Coffee is served with warm milk in the Colombian tradition which makes so much sense. Our check came to $83.89.

Main courses go for from $17.50 for Pacifico Beer Batter Fish and Cumin Chips with chipotle tartar sauce to $24 for Whole Roasted Mediterranean Black Sea Bass with purple potatoes, baby string beans and tomato escabeche in saffron sweet pea sauce and market price for Grilled Maine Lobster and assorted market vegetables with roasted garlic and lemon mojito. For lunch, most of the appetizers are the same as at dinner, a few priced a dollar cheaper. Main courses range from $14.50 for the beer batter fish to $19.50 for Seared Chilean Sea Bass with plantain crust and crabmeat ravioli with black bean spicy shrimp broth. Grilled Skirt Steak au Poivre ($19) is the only dish for non-seafood eaters. Nuevo Latino sandwiches are another option. They cost from $7.50 for the Emparedado Cubano, a traditional Cuban sandwich of pork, ham, cheddar cheese, pickles and mustard served with cumin fries ($7.50) to $10.50 for Yellow Fin Tuna Burger on brioche bread with Cajun potato chips and Peruvian tarpenade or Nuevo Latino Po’ Boy consisting of Ipswitch clams with tartar sauce on a soft hero served with Cajun potato chips. The Pacifico hamburger ($8.95) and shrimp tacos ($11.50) are other choices. Pacifico is open seven days for lunch and dinner, from 12 noon to 3 p.m. each day for lunch except Sunday when a Latin brunch is available during those hours. Dinner is served from 5 to 10 p.m. Sunday through Wednesday and from 5-11:30 p.m. Thursday through Sunday. Parking is available in the private lot surrounding the restaurant with valet parking provided on the weekends.
