Misti Restaurant: Rotisserie chicken and much more By Jananne Abel

I

t’s been three years since the husband and wife team of Liborio and Rosa Castillo opened their first eatery in Port Chester, a small corner place at 100 North Main St. called Misti Restaurant. And now, after two years of hard work and aggravation, they have finally opened a much larger restaurant by the same name just down the street. While Misti, now located at 110 North Main St., features a variety of Peruvian cuisine, there’s no question what their specialty is. Pollo a la brasa—rotisserie chicken— appeared in large letters on the sign at their former location and also screams out in red letters on the front of their new one, positioned even before the name of the restaurant. “They have the best pollo,” said regular customer George Chau of Norwalk, Ct. “I come all the way from Norwalk to here.” I am by no means a professional critic of this popular Peruvian dish, but I know a good chicken when I taste one. Misti’s pollo a la brasa is moist and tasty with a crispy skin, and you can’t beat the price. One-quarter of a chicken, served with French fries and salad, is plenty for the average person and costs only $5. If you’re really hungry or have a large appetite, you can get half a chicken with salad and fries for $6.50. A whole chicken with the sides is $13. Rosa wouldn’t divulge the recipe for the chicken or tell us

what gives it such extraordinary flavor. “This is a kitchen secret,” she said. Besides the pollo a la brasa, Rosa, 47, also recommends all the tallarin or Peruvian spaghetti dishes on the menu ($7.50 to $11.50), all the seafood dishes on the menu ($9 to $11.50 except the Jalea or assorted deep fried seafood at $22), the Pollo Saltado (chicken chunks sautéed with onions, tomatoes, and green peppers served over French fries) at $8, and the Cau Cau (beef tripe stew served with rice) at $6. Her favorite dish is the Pescado en Salsa de Camarones (fish with delicate shrimp sauce served with rice) at $12 followed by the Pescado Sudado (steamed fish seasoned with Peruvian spices, onions, tomatoes and peppers) at $9.50. All fish dishes are made with pollock, a member of the cod family found in the North Atlantic. It is white, firm and has a delicate, slightly sweet flavor. The Lomo Saltado (Peruvian style pepper steak with tomatoes and onions over French fries and served with rice) is also popular at $8. For those with a big appetite, Rosa recommends the Bistek a lo Pobre (a large piece of fried steak served with rice, French fries, fried plantains, a fried egg and bacon) at $11. The kitchen is overseen by Peruvian chef Juan De la Torre of Port Chester and Rosa’s husband,

Rosa, originally from Guatemala, manages the restaurant and is president of the company. Her husband, however, writes the checks, she said. She greets her patrons and knows many on a first name basis. She also has a good command of English and makes non-Spanish-speaking customers feel comfortable in her restaurant. “I am so happy at this location because everybody likes it,” she said about her new restaurant, which opened on Oct. 28. She admits she needs to hire a server or two who speaks English for the times when she is not on the premises or is too busy to help out if she wants to attract a wider audience. Although each dish on the menu is clearly translated into English, there may still be some communication problems with a server who speaks little or no English. Prices are reasonable, and Rosa wants to keep them that way to please her customers. “I don’t put high prices,” she said.

Misti Restaurant’s previous abode. The new place seats 101 in a spacious green and off-white dining room broken up by an attractive wooden divider in the center of the room topped with large potted plants. There are mirrors on the back wall, a lovely ceramic tile floor in green and beige and green topped light wood tables with matching chairs. Green and white light fixtures hang from the ceiling and other fixtures are fastened to the walls. Not surprisingly, everything is spanking new and clean. Chickens are visible spinning on rotisseries behind glass to your right as you enter the dining room. The roaster can accommodate 40 chickens at a time, said Rosa, as opposed to the 16 chickens they could cook simultaneously at their old place. “To have a chicken, you had to call an hour and a half before coming into my old place,” said Rosa, because that’s how long they take to cook. At the new place, there’s no waiting. A sizeable rectangular area with a counter and a pottery tiled roof toward the back of the restaurant currently dispenses nonalcoholic beverages but will serve as a bar once the restaurant’s liquor license comes through—in about three months. There’s a mural of a snow-covered mountain and beautiful greenery in front of it as you enter

The painting is of Misti, a volcano in Arequipa, Peru for which the restaurant was named. “All my customers responded to this place,” said Rosa of her new restaurant. “They waited for me two years. I do this because the customers asked for something big. If they didn’t ask, I think I would have stayed there. ‘This is too small,’” they said of the old place. When the Castillos opened their first restaurant on Oct. 18, 1999, their current space was vacant and available either for rent or sale. They kept their eyes on it and talked to the real estate people handling it, eventually negotiating a lease. However, said Rosa, “this place has a long story. The contractors took my money and never came to work.” Eventually they had to hire new contractors to get the work completed. She and her husband invested at least $300,000 to transform the space from offices to this lovely restaurant, said Rosa. The plans changed three times, she said, and once they thought they were ready to open, the village came to inspect and found other things that needed to be done for the eating place to become code compliant. Customers kept asking when they were opening, she said. “I think everybody don’t believe me. I say, ‘one day. Wait for me.’” And they did. Please turn to page 6R

Misti Restaurant: Rotisserie chicken and much more Dinner for four I must admit I never ate at Misti Restaurant when it was located on North Main, corner of Adee Street. When we visited the new location on a recent Sunday night, it was busy and they were out of all of the Peruvian spaghetti dishes—Peruvian style beef or chicken with spaghetti, spaghetti with shrimp, spaghetti with seafood, and spaghetti with pesto sauce. Everything is made to order, said Rosa, but the kitchen only plans orders for so many people in a day and sometimes runs out. With a much larger restaurant than they had been used to, it will take the Castillos some time to get used to the new volume

and iron out the bugs. Of course, pollo a la brasa was our first choice, and we weren’t disappointed, choosing to go for half a chicken ($6.50). Even the French fries and salad— shredded lettuce, onions, tomato and cucumber with a tasty dressing—that came with it were excellent. Because our waitress was inexperienced, she brought this dish well before any of the others at our table, even the appetizers, and everyone was devouring it while waiting for the rest of the food. There were still leftovers, however. The Ceviche Mixto ($11) is an appetizer but was enough for a meal. This cold seafood cocktail is among four varieties on the menu. This one includes

shrimp, calamari, octopus and two large mussels marinated in lime juice, cilantro and spices with onions—very tart but succulent. According to the menu, it comes with a side serving of potato and corn on the cob which we did not receive. Those sides would have definitely made it a meal. Pescado Frito ($9) was a good choice for the non-meat-eater in our midst. This fried filet of Pollock seasoned with spices and served with salad and rice or French fries was nicely cooked, tender and moist. Picante de Camarones ($11) brought about 12 medium-sized shrimp in a creamy seafood sauce. From the menu description, I expected it to be spicy, although Rosa said it’s not intended to be, and I found it rather bland. I didn’t think of it at the time, but perhaps a few dabs of the green jalapeno sauce brought to each table for just that purpose would have livened it up. I tried the jugo de tamarindo (tamarind juice) for the first time, and discovered a sweet, pleasing nectar. I recommend the Papa Rellena ($4.50), also an appetizer. This stuffed potato is an interesting mixture of potato, ground beef, onions, egg and olives. Dessert is limited at this point, with only Peruvian butter cook-
