Edo Japanese Steak House a hot new Port Chester addition By Jananne Abel

I

n May Edo Japanese Steak House opened in Port Chester in the location of the former Diamond Club, a controversial topless club turned nude juice bar at 140 Midland Ave. “The whole community wanted to get rid of it,” said Derek Hunt of New York City, a restaurant consultant for Edo’s two locations—the other in Pelham—and a third Japanese restaurant owned by Ken Higuchi in Norwalk, Conn. called Kazu. It is ironic, he said, that Edo, which took the Diamond Club’s place, very much caters to families. Edo is a welcome addition to the community, something Port Chester, with its wide variety and large number of restaurants, didn’t already have. What’s more, it opened at about the same time the Japanese steakhouse Maya of Japan closed in Greenwich when the owner chose to retire after many years in business on Lewis Street. Edo, of course, has all the hibachi meat, seafood, and combination dinners prepared with all the flair and theatrics you find at other Japanese steakhouses. And the prices are reasonable. It’s an especially fun place to go to celebrate a birthday, anniversary or other special occasion. In fact, an easel set up in the entryway announces all those celebrating special occasions at the restaurant that day. For a $6 fee, you get dessert— either cheesecake or pineapple—for everyone in your party brought to the table on a tray with a Buddha statue and candle, all of the hibachi chefs gather round to sing a rousing traditional Japanese song and a photograph is taken to capture the moment. Edo does not carry sushi. Higuchi’s Norwalk restaurant is known for its sushi. But Edo does have a variety of interesting appetizers—summer rolls, salads, house made dumplings and other selections. So if you have a group of three or more, you can sample some of these and order one or more hibachi dinners as well to make for a delightful combination of flavors. For lunch, besides hibachi dinners and the appetizers available for dinner, you can try a Bento Box. It is a rectangular plastic box with five compartments in which are placed your choice of entrée from among six, two appetizers, white rice and miso soup or salad, all for $10.25. For the sum-

It was painted by Joseph Jakino of Pelham who has done murals in all of Higuchi’s restaurants, including two striking paintings of bamboo in the bar at the Port Chester Edo. You may be asked to wait for a table or for the rest of your party in the spacious lounge which features an elbow-shaped bar with 10 comfortable red stools as well as tables and chairs, the bamboo paintings and bamboo and rice paper decorating the common wall you can see as you enter the restaurant. Hibachi chefs at Edo and other Japanese steakhouses learn their art through experience. An apprentice must start as a prep cook or dishwasher, then spend some time making cold appetizers and soups, then advance to hot appetizers and sauces. Once they’ve reached the last level, at the end of each night they cook for the staff to practice their art and must satisfy the chef before they are allowed to cook for customers. “Otherwise you get tough steak and overdone chicken,” said Hunt. By the time they’re ready to cook and perform for customers, they know how long to cook the meats and seafood and how much seasoning to use on the foods. They use salt, pepper, sesame seeds, butter, lemons, soy sauce, sake and vodka in their preparations. Each chef develops his own show, interjecting some of his own personality, and chooses his own hat and pants. At Edo in Port Chester, we coincidentally had the same chef on both visits. His show included flipping shrimp tails into his pocket and the top of his tall chef’s hat, flipping the spatula and tapping it repeatedly on the hibachi grill for sound effect, creating a dramatic fire on the grill with oil resulting in smoke coming out from inside a tower of sliced onions to create a volcano and professionally rattling the salt and pepper shakers to make cool noises. On our second visit when there were six at our table and only four hibachi dinners prepared, I was amazed at how quickly the cooking was completed. It took just over an hour from shrimp appetizer to main course.

Dinner for four On our most recent visit to Edo with four people, we started our meal with a Maui Mama ($6), chosen from among the house cocktails. It’s made with rum, amaretto, cream de noyaux and fruit juice. We also a large hot sake or rice wine ($6.75), which is kept warm by setting the container on the grill, and a chardonnay wine ($7). There are also sake cocktails (the Edo Sake Margarita sounded good), cold sake, Japanese beer and other wines by the glass. We ordered two combination hibachi dinners—chicken and lobster ($25.25) and filet mignon and shrimp ($23.25). Hunt said the filet mignon hibachi dinner is by far the most popular dish and because of the volume they do, Edo is able to charge such a reasonable price ($19.75). We split the two dinners among four and then went with three appetizers which we also divided all around for a change of pace, and everyone still went home with their bellies full. On a previous visit, we had all ordered a hibachi dinner and we wanted to sample some of the other offerings. There’s no room for an appetizer if you’re having a hibachi dinner because of the amount of food you get. The Shrimp Dumpling ($4.75) brought four crispy, tasty balls made of shrimp, ginger and scallions with a gyoza sauce combining soy sauce, mustard powder and chili oil. The Crab Salad ($5.50) brought slices of crab, cucumber, onion, seaweed and kinwari, a dikon radish sprout with a taste similar to cilantro. The salad, in a marinade of chili, soy sauce, salt, pepper and sugar, combines some interesting flavors. It is served in an edible radicchio bowl. The Spicy Sesame Beef Summer Roll ($5.25) is made with beef, scallions, chili sauce, lettuce and bean sprouts wrapped in rice paper skin. All hibachi dinners start with miso soup, a beef broth with scallions, and a green salad with yummy ginger dressing. Next the chef ladles out mustard and ginger sauces into little dishes for each of the guests at his table. He then begins cooking the shrimp appetizer and you get four grilled shrimp followed by sliced grilled onions, mushrooms, zucchini and eggplant seasoned with salt and pepper and sesame seed. Next comes the main course of meat or seafood—whichever you have ordered. In our case we each sampled some of the four items in the two combinations. The chef knew when to put each food item on the grill so it would be perfectly cooked. The steak, ordered medium rare, was cooked to perfection, tender and almost melted in your mouth. I found the chicken the least desirable and a little dry. Everything was seasoned perfectly, and although I love dipping everything—including the vegetables—into the sauces (both were equally good), it really wasn’t necessary. Because of the expert cooking and seasoning, the food on its own was scrumptious, even without the sauces. Meals come with white rice, which is brought to your table in a bowl, or, for an extra $1.95, you can get fried rice instead. To make the fried rice, the chef flipped up a raw egg and caught it on the same spatula without breaking it a few times and then dropped it on purpose (saying “egg drop”) to break it. He then proceeded to scramble the egg on the grill, plopped out a big ball of white rice, added cooking oil, sesame seed and soy sauce and mixed it into a delicious concoction. It’s definitely worth getting the fried rice over white rice for the taste and just to watch it being prepared. Last but not least, the chef cooked up bean sprouts for everyone and divided them up among those at the table. fore long. Also, you have to be careful not to touch the grill in front of you because it’s very hot and you can easily get burned. Hibachi meals come with your choice of chocolate, vanilla, cherry pistachio, red bean, or green tea ice cream or rainbow sherbet for dessert. Our check for four totaled $92.02.

Specials and other menu items

With the hibachi filet mignon being the biggest selling entrée at Edo, Hunt said the most popular appetizers are the Twice Cooked Dumplings ($5.75) made with shrimp, pork, cabbage and scallions and the Spicy Peanut Chicken Summer Roll ($4.50) which wraps chicken, bean spouts, lettuce, peanuts and avocado into rice paper skin. Edo offers fish specials such as Hibachi Halibut with tamarind sauce ($18.00) or, on our recent visit a seared tuna appetizer ($8) and a Tuna Steak Sesame with ponzu wasabi dipping sauce entrée. For those who don’t eat meat, Edo is also the perfect place to dine because you can get the vegetarian hibachi dinner ($11) which includes a vegetable tempura appetizer instead of shrimp, salad and all the vegetables included with the other dinners. “Edo is very much a family concept,” said Hunt. As stated on the menu, children under 12 can get hibachi chicken for $9.75, hibachi Sukiyaki (thinly cut strips of sirloin sautéed with teriyaki sauce) for $10.75 or hibachi shrimp for $11.25. They’re just smaller portions of the adult dinners.

Hours and parking Edo Japanese Steak House is open for lunch Monday through Friday from 12 noon to 2 p.m. and for dinner on Sunday from 4-9 p.m., Monday through Thursday from 5:30 to 10 p.m., Friday from 5:30 to 11 p.m. and Saturday from 5 to 11 p.m. Reservations are recommended on the weekends or if you’re celebrating a special occasion. Parking is in a lot adjacent to the restaurant. The best place to find that perfect dining experience.
