The best of South American cooking at Inca & Gaucho Restaurant By Jananne Abel
I
t’s been a year since Eduardo Campos of Port Chester, already an established restaurateur in the village, and his Uruguayan girlfriend, Tricia Fernandez of Greenwich, opened Inca & Gaucho Restaurant at 173 Westchester Ave. Port Chester and Rye Brook and surrounding communities in Westchester and Connecticut have responded well to the two-in-one eatery the two originated. It offers the best of South American cooking by combining the grilled meats and pasta of Uruguay, Argentina and Brazil with the seafood and Creole dishes of Peru and the other South American countries of the former Inca empire—Colombia, parts of Chile and Argentina, and Bolivia. “South Americans can relate to both,” said Campos. “There’s something for everyone.” The name Inca & Gaucho indicates the restaurant’s dichotomy—offering the seafood of the Inca empire and the beef tended by the gaucho or Latin cowboy for which other countries in South America are known. For Valentine’s Day, Inca & Gaucho will be offering a fixed price menu including wine, appetizer, entrée and dessert in addition to the regular menu, and there will be lots of decorations, said Campos. The price for this and exact menu hadn’t been determined as of press time. With its interesting seafood dishes, wonderful grilled meats and luscious desserts, the year-old restaurant is a good choice. A year before opening Inca & Gaucho on Feb. 13, 2000, Campos and Fernandez began looking for a place in Port Chester, settling on the former Neilsen’s Ice Cream Shop which had previously been converted to a Mexican restaurant before the
space became vacant. “It took a year to get it the way we wanted it,” said Campos. They tended to every detail and decorated the entire restaurant themselves. They had to expand the small kitchen to provide enough space for two types of cooking and cre-

The best of South American cooking at Inca & Gaucho Restaurant a good bet at $12. Fish such as red snapper is prepared filleted or whole, fried or steamed, the latter being a healthy dish since no oil is used ($15). There are also seafood plates made with sautéed onions, tomatoes, white wine and soy sauce ($11.25-$12.50). Note the Japanese, Chinese and Spanish influence in Peruvian cooking. Seven different “especiales” feature shrimp, fish or mixed seafood prepared with homemade seafood or garlic sauce ($12.50$15). Campos plans to incorporate some new dishes into the menu which have gone over well as specials. These include skirt steak and shrimp sautéed or deep fried and Chilean sea bass in white wine sauce. Both are currently available for the asking.
Dinner for four On a recent family visit to Inca & Gaucho, I chose the skirt steak ($15) to make sure it was as good as I had remembered it and wasn’t disappointed. The portion is large—two long, juicy pieces of medium thickness that span the length of the plate embellished with lettuce and pepperoncini. Salad consists of a big plate of leaf lettuce with tomatoes, grated carrots and red onions with Italian dressing. Pollo Saltado ($9.25), boneless pieces of chicken stir fried with onions, red peppers and tomatoes, was tasty. It is served with unexciting fries and a dome of white rice. Except for the meat, Bisteck Encebollado ($9.25), thin pieces of steak smothered with onions and tomatoes, tasted similar. It comes with a few roasted pota-

Inca & Gaucho has a beer and wine license and offers several South American selections of each. Cristal is an excellent Peruvian beer ($2.75) we tried along with a pitcher of Spanish sangria ($16), red wine flavored with pieces of chopped apple and pineapple as opposed to the Mexican variety spiked with citrus fruits. Besides the sangria, the restaurant carries wines from Uruguay and Chile, and Campos is experimenting with others from Spain and Argentina. Fruit shakes, made with milk ($2.75) or water ($2.50), are popular with adults and children alike. The strawberry shake with milk had only a subtle taste of fruit. leche filling to flan or flan with dulce de leche for $3.75, are heavenly. Panqueque de dulce de leche, two crepes filled with creamy caramel, beautifully decorated with chocolate sauce and powdered sugar ($4.50), all topped with whipped cream, is to die for, tasting every bit as good as it sounds. Tartuffo ($4.50), chocolate covered vanilla and chocolate ice cream topped with swirled chocolate sauce and a cherry, is also yummy and anything but ordinary. Service was perfectly adequate but not exceptional. Because the menu explains everything so well, we didn’t need to ask any questions. Our check, which included four meals, sangria, a beer, a shake, a soda and two desserts, totaled $78.75.
Lunch and breakfast A variety of interesting sandwiches ($3.50 to $6.50) can be had for lunch or dinner. Choose from skirt steak with lettuce and tomato ($7), breaded beef or chicken ($5), stuffed rolled beef with egg, spinach and carrots with lettuce and mayonnaise ($5), sirloin steak with fried egg, ham, bacon, mozzarella, lettuce, tomato and mayo ($6.50), or Uruguayan style sausage with lettuce, tomato and mayo ($3.50), among others. Besides the sandwiches, there is a lunch special for $5.75, a choice among five entrées served with soup and a soda from 11 a.m. to 4 p.m. Among them are Cau-Cau (tripe stew), Aji de Gallina (shredded chicken with a creamy yellow sauce served with rice) and ¼ of a charbroiled chicken with homemade special spices, fries and house salad. At prices ranging from $3.75 to $14.75, you can also get several chicken, beef and seafood dishes and three soups for lunch during those hours. For the last three months, Inca & Gaucho has also served breakfast. The menu consists of sandwiches, fried eggs, bacon, ham, bagels, tamales, and black sausage and pork rind with fried sweet potatoes and onions in lemon sauce.
Background, hours and such Besides Campos and Fernandez, Campos’s mother, Ana Garcia, and Fernandez’s father, Walter Fernandez, both experienced restaurateurs, are partners in the restaurant and also the chefs. Mr. Fernandez takes care of the grilling while Garcia creates the Peruvian dishes. Fernandez now has a helper, Bebe Alva of Port Chester. Tricia and Eduardo are sharing the responsibilities of keeping the books and managing the restaurant. “She helps with everything,” said Campos. “We divide the work.” Eduardo has been doing the books and managing Machu Picchu Peruvian Restaurant on Grace Church Street with his sister, Janeth Campos, for the past 4 ½ years. Their mother owned restaurants in Peru and they grew up in the business. They came to Port Chester from Lima when Eduardo was 9 and his sister was 15. His mother opened La Sirena on Grace Church Street in the early 1990s. Eduardo now splits his time between his two South American eateries. Tricia’s father also owned a restaurant in Port Chester in the 1990s—Walter’s Parillada on North Main Street—where she waited tables. Eduardo went to Edison Elementary School, Port Chester Middle School and graduated from Port Chester High School. He is currently a senior at Mercy College where he is majoring in international business and finance “just in case,” he said. Now juggling two businesses, his education is temporarily on hold. However, he said, with only a year left to go, “I still want that piece of paper.” Tricia has just started school at the University of Connecticut Stamford Branch with the goal of eventually becoming a child psychologist. Eduardo is always thinking about new ideas to improve or promote his businesses. He is now training his 14-year-old brother, William, as a bus boy at Machu Picchu. “I want him to like it,” he said, referring to the restaurant business. Inca and Gaucho is open seven days a week from 10 a.m. to 11 p.m. Major credit cards are accepted and parking is on the street.
