Allie Philpin had the pleasure of talking to the charismatic Louis Mariette about his exciting life and fabulous luxury creations.

Louis was born in Malawi but grew up in Botswana and Swaziland - add to that his Mauritian origins. As a child he was fascinated by all flora and fauna. His love of nature and creative design became a childhood passion that has stood him in good stead, together with his flair for artistic imagination. His siblings went into the hotel industry, and Louis duly followed. But he was soon running an exclusive party planning business themed parties with fabulous table pieces and décor, all designed by Louis, and this is where he ‘dipped his toes’ into headpieces for guests using the colour palettes of the décor, flowers and trimmings. Louis says, “It was quite extraordinary; although my training is in hotels, the requests for headpieces just seemed to take over and next thing I knew, I’m being asked to design the headpieces for a fashion show!” The fashion show in question was in Milan, Italy and the man asking was Michael Dye, the Creative Director – 25 headpieces, all bespoke for each outfit. After months of work matching materials, threads and trimmings, the organisers requested a full dress rehearsal and presentation of the headpieces. “It was amazing,” says Louis, “all the models wore their outfits with their 44 | autumn/winter collection

headpieces and presented them to the organisers. They were all Italian, which I didn’t speak; they didn’t speak English and they showed no emotion or expression, so I had no idea what they thought… heart in the mouth time!” Michael Dye eventually put Louis’ mind at rest, they loved all his creations, except one, and his career as a milliner escalated. Not long after the fashion show, Louis received a telephone call from potential clients asking to meet at his studio. “I was so surprised, my first commission and the call came out of the blue. I didn’t even ask who they were!” said Louis. He soon found out… Harrods! They commissioned him to create all their window and shop floor displays, as well as providing helpful tips and advice to their clientele; and the rest, as they say, is history. And recently, his ‘Diffusion’ accessory range has been picked up by Net-a-Porter.com, the world’s premier luxury online retailer. Each and every headpiece or accessory that Louis creates is completely bespoke. His inspiration comes from his childhood homes and his many travels around the world, drawing on the amazing scenery he sees and different cultures he visits. “The

Bhutanese people in the Himalayas are inspirational,” says Louis. Louis works closely with the client, and says, “Hats are a very personal accessory and different creations look different on different people; it’s very individual.” In April this year, Louis was invited to be one of the judges on Living TV’s ‘Britain’s Next Top Model’. “Wonderful and so exciting!” says Louis. Working alongside Lisa Snowdon and Icelandic photographer, Huggy Rugnarsson, Louis was the ‘couture fashion’ element of the three. “Working with Lisa and Huggy has been just great,” says Louis. “I was encouraged to be just myself… we had different views on the models, but we worked well together. It’s hard for models today, they have to be so multi-functional which isn’t an easy task,” he says. Within the show, one of the tasks for the models was to present themselves to a selection of his clientele, which was challenging. Another task for the models was to re-create his stunning ‘Princess Neptune’ headpiece shoot (Photographer: Zena Holloway, Stylist: Heidi Taylor), which won the Best Hat of 2008 Award from Tatler Hong Kong. “It was such a hard thing to do,” says Louis. “The models had to immerse themselves in a tank of g

water, and we had all the safety divers and professional photographers ready to take the right shot… all very impressive!” The last show of the series is was ‘Alice in Wonderland’ theme and Louis created the headpieces for this finale. Would he do it again? “Oh, very definitely!” says Louis, “it has been such a fabulous and exciting project!” In 2005, Louis was catapulted into the highest echelons of bespoke hat couture with the creation of the world’s most expensive hat, the £1.5million Chapeau d’Amour (Photographer: Alice Wilby, Stylist: Michael Dye). The headpiece was commissioned by Harrods for the opening of their Hat and Evening Wear department. “The hat was inspired by my Mauritian roots,” recalls Louis, “and we were still finishing the little details just the day before! It is woven with platinum fabric (from the Platinum Guild) as well as diamonds and was modelled, of course, by the gorgeous Lisa Butcher.” And the accolades keep coming… in 2006 he was awarded the Celebration of Life Jewellery Design Award in Fashion Accessories by The Tanzanite Foundation, and in 2007 i-D name him one of the 250 most creative people. As recently as 2009, the Luxury Marketing Council Europe awarded Louis the Most Innovative Product Design-Range at their Luxuria Awards… not bad for an artistic and imaginative child with a passion for flora and fauna! Louis’ talent, flair, inspiration and ‘joie de vivre’ have certainly captured the imagination of many – photographers, designers and creative directors – and are worn by the famous and glamorous such as Joan Collins, Jodie Kidd, Paris Hilton, Pink (the singer), Erin O’Connor, Jerry Hall, Kate Moss, Olga Kurylenko, Princess Sabina von Stentel and Stephanie Seymour to name but a few, and he works with leading international companies like the Plantinum Guild, Swarovski, Harrods, Boucheron, Links, The Dorchester, the Royal Opera House and Cliveden House. And when he’s not working on his fabulous creations? Another passion is his love of the rainforests. “It is so important to protect these environments, such as in Brazil,” says Louis, “it’s so important because once they’re gone, they cannot be replaced!” he enthuses. Louis’ outlook is to live life to the full and enjoy yourself. “I was a judge at the Hat Show at Royal Ascot this year which was great fun, so exciting!” he laughs. “I’ve been blessed with a fantastic thirty six years so far and I hope to be blessed with many more! To be happy, adventurous and above all to have fun… who could ask for more?” And his ambition? “I love my work and want to go on creating new and inspiring headpieces, as well as expanding and developing my brand and designs into different areas, like the accessories,” Louis explains. “I also love Thailand, it’s my favourite country. With the reduction of the military presence on Gibraltar, the British Ministry of Defence transferred the site over to the Government of Gibraltar, which tendered it for private residential development.

The South East of England isn’t short on places to stay, but if you’re looking for a chic spa retreat, cosy country inn or village-set designer den, there’s only one place to turn: boutique-hotel experts Mr & Mrs Smith tell Reside how they got started, and cherry-pick some of their most luxurious UK hotspots… Back in August 2001, courting couple James Lohan and Tamara Heber Percy, on the advice of a not-to-be-named travel guide, were staying at a not-to-be-named hotel in the Lake District, and not enjoying it in the slightest. ‘This had happened before – we couldn’t believe we were yet again staying in a sub-standard hotel.’ ‘We cut short the trip, and on the way home, we decided there was a need for a guide you could really trust,’ said Tam. And, with that, Mr & Mrs Smith was born. The now widely known irreverent title immediately caught people’s imagination; ‘It’s got the right level of naughtiness and fun, and it underlines that our selection is all about romance,’ says James. By January 2003, the pair had raised the necessary finance, recruited a team and begun compiling a collection of boutique hotels that offered an inspirational guide and the sort of inside information you would pass on to a friend. Eight months and 41 hotels later, the Mr & Mrs Smith Hotel Collection UK/Ireland was launched and, by Christmas, the couple were reeling as the predicted sales of 5,000 rolled into 20,000. ‘We just couldn’t believe it,’ says James. ‘All our hard work and reviewing had paid off. Although it’s great fun, we really are quite tough in terms of the criteria the hotels have to meet. Once a hotel is spotted we visit it for consideration and if it’s promising, we send a couple to do

an anonymous review and. If they love it, we invite the hotel to join the Smith collection. ‘If it’s a close call,’ adds Tam, ‘We tell the hotel why we haven’t been able to include them and if they choose to rectify the problem then we will revisit. It’s not about being elitist, we simply have a clear idea of what the collection is about and people have come to trust our judgement. We also do regular checks, and if we receive two complaints we make a visit; three and they’re out.’ Following the success of their first book, the couple have since published several other Mr & Mrs Smith boutique hotel guides under the Spy Publishing imprint: European Cities, European Coast & Country and an updated UK/ Ireland Volume 2. In 2008, they released The Global Shortlist in the States and are starting to see traffic increasing as the brand becomes more well known Stateside. ‘The books have been a phenomenal success, and continue to be popular even though our business has evolved from being a niche publisher to being a boutique property provider for styleconscious travellers,’ explains James. Recognising the need to keep reinventing their business, James, who previously owned an event company in London and started chic Clapham bar the White House, and Tam with her career in marketing, launched their website – which took the company to a new level and

meant that Smith fans could book boutique hotels through their trusted brand online. ‘We’ve now selected more than 550 properties to feature online, and the collection has got much broader, to include stylish safaris, sexy ski lodges, child-friendly getaways and our growing self-catering selection.’ James and Tam have also introduced a three-tiered membership club offering a travel booking and concierge service, which covers anything from watering your plants while you’re away to organising a romantic dinner on your trip. ‘We get an incredible 350,000 hits a month,’ beams James, ‘And 75,000 people have signed up to our various membership clubs, which gets them access to all sorts of discounts and benefits. Our entry level membership, BlackSmith, is just £15 per year, SilverSmith is £99 and GoldSmith £299.’ ‘But we didn’t stop there. We’ve introduced an innovative loyalty scheme to reward frequent bookers. Members who book trips with us will earn up to five per cent of the value of their booking back to a personal ‘Vault’, which can be viewed online. They can spend their earnings in our shop which carries all sorts of amazing high-quality brands or they can use it to book more boutique hotel stays.’ This year, much excitement has surrounded the launch of yet another guidebook: Australia & New Zealand (out in October ‘09), which has been published to celebrate the opening of Smith offices in Melbourne this May. ‘The offices in Australia mean that we can offer a 24-hour Travel Team, six days a week,’ says James. The Asia-Pacific arm of Mr & Mrs Smith (which includes Australia and New Zealand) is headed up by Simon Westcott, former global publisher of Lonely Planet and a boutique hotel connoisseur. ‘It’s all just part of our plans for worldwide domination,’ laughs Tam. Mrs Smith says… ‘Jump off the Tube at South Ken, amble for all of 100 yards, and you’ll find yourself at the Pelham. Our first impression was that we were entering a stylish Regency coach house. There’s an air of countryside freshness to the city sophistication here, no doubt the legacy of designer Kit Kemp’s deft touch. Bright floral prints, bold stripes and zingy colours – all signature Kemp. The decor has enough grownup grandeur to hint at opulence – antique grandfather clocks, wood panelling, sparkling chandeliers – but a considered and colourful application of playful modern pieces to keep things relaxed. Check-in feels like you are at a membersonly club; shoppers and sightseers scurry past this secret hidey-hole without even noticing a boutique hotel within. You might not believe this elegant white Georgian townhouse hides some 50 generously sized rooms. And if the discretion or the decor doesn’t steal your heart, the friendly welcome from one of London’s finest concierges, Jamie, should have you smitten. His seamless spiriting away of our luggage and insider advice in that soft New Zealand lilt was a class act. Strolling around this upmarket neighbourhood, we were soon rewarded with an eyeful of reasons why the Pelham is such a fantastic city-break base: grand historical

buildings nearby house the V&A and the Natural History museums, while other edifying distractions include the Royal Albert Hall and Hyde Park in all its café- and gallery-enhanced Serpentine splendour. With shopaholicism in our genes, we saved some attention for Harrods and Harvey Nichols too. An elegant Pelham Vintage tea in one of the pretty sitting rooms was the perfect refuel. Just-baked cakes, cucumber sandwiches, and a glass of champagne made it an extra-special upgrade from our usual afternoon cuppa. And another drawing-room opportunity to toast the Pelham? A late-night G&T fixed from the honesty bar, after supper at sister hotel, the Gore. Well, it would have been rude not to raise another glass to such a delightful host.’

Smith Factor With parts of the building dating back to 1135, the Olde Bell has a whole heap of heritage hanging off it – still palpable today in the black-wooden beams, crooked oak floorboards, and the flickering fire in the inglenook. However, interior-design guru Ilse Crawford has sprinkled her style-sorcery throughout, and has managed to give the Olde Bell a cosy modern makeover that complements rather than clashes with the inn’s mediaeval history. Rooms, although smart, comfortable and soothingly decorated in Ilse’s now-signature natural tones aren’t the focus here, Ilse’s mission has always been to rediscover the communal pleasures of the inns and taverns of yesteryear. And, at the Olde Bell, she’s accomplished that mission with aplomb: it’s the cosy bar area, the relaxed restaurant, and, in summer, the rambling meadow-style gardens that give this new breed of boutique hotel a real sense of soul.

Mrs Smith says… ‘The Olde Bell’s exterior looks like any other Tudor pub – white, slightly wonky, with leadlight windows and orange roof tiles – and you’d be forgiven for walking right past. Don’t. Upon crossing the threshold, the first thing we noticed was the typical English-inn oak bar. The receptionist was efficient and friendly, and within minutes we were climbing the rushmatted stairs, ducking the low-hanging door frames (people were obviously built more compactly in Henry VIII’s day) and turning the key. Even with a king-size bed, flatscreen TV, several chairs, side table and whatnot, there’s enough space in the room to dance around, swing a cat and do the fandango. The bathroom is similarly vast and has dark oak floors and a walk-in shower with a monsoon showerhead the size of a dinner plate. The best feature, however, is the deep, claw-footed, roll-top bath. We sidled into the bar, grabbed a pew and proceeded to sample the local concoctions. We started with a Rebellion lager brewed nearby, and finished with a Rhubarb Fizz, made from a reduction of home-grown rhubarb topped with prosecco. Feeling peckish, we walked the few steps to the restaurant, where the most striking feature is a chandelier made from deer antlers, which gives it a slight hunting-lodge feel. After surprisingly moreish purple sprouting broccoli

with goat’s cheese, crispy calamari, divine lemon sole with caper butter, and a knockout cheeseboard, we retired to wingback chairs next to the roaring fire to enjoy a single malt or two. Only guests are allowed to stay in the bar after 11pm, so we pretty much had the place to ourselves. I decided to run a long, hot bath while Mr Smith fetched a bottle of bubbly and an ice bucket. The rest of the evening is a bit of a blur, but I can tell you the beds are extremely comfortable, and that perhaps you shouldn’t have a piping hot bath if you’ve been drinking whisky.’

The hotel makes an unbeatable base for exploring the coastline; the George’s Mediterranean kitchen (headed by an ex-Moro chef) can pack you a hamper of mouth-watering goodies to picnic upon – Camber Sands is our top pick for alfresco eating. But if picnics aren’t your thing, Rye has enough gastropubs and cake-toting teashops to ensure you’re never hungry for long.

Mr Smith says… ‘The first thing we noticed about this 18thcentury coaching inn was that the new owners seem to have achieved what few proprietors of these ancient public houses up and down the country have: a modern, redesigned interior that is still sympathetic to the original character of the building. It’s not just that the black tarencrusted beams have all been sand-blasted clean, or that the sticky red paisley carpets have given way to the original flagstone tiles. It’s that no detail, from the nickel-coated plug sockets to burnished copper radiators, has been overlooked. Tightly packed with long sofas, chairs and beams, the George rises above the seagull-echoing street in a warren of little floors. Our room is extremely light and well planned, rendering it utterly inviting, helped in no small way by soft-touch scented pillows and hot-water bottle cosies. The bathroom has a Victorian-style bath-cum-shower, and is Aveda-product equipped, while soft-blue wood panelling lends a gently nautical air. As soon as she opened the ‘G’-branded wooden box to find an incredibly varied selection of teas, Mrs Smith immediately set to work preparing that most British of refreshments in celebration. The owners, Katie and Alex Clarke, have links with set design and prop buying, making for a tasteful but vibrant and diverse decorative scheme: psychedelic Beatles prints sit alongside pockmarked beams and distressed leather.

Chef Rod Grossmann’s menus create bold but well balanced flavours. Local produce is at the fore, and starters such as dressed crab and smoked duck are quite something. The wine we chose was English: Sandhurst Sussex Pinot Noir – what an extraordinary revelation. Having tasted no better Gevrey-Chambertin from Burgundy itself, it instantly became an all-time favourite. Rye – you made converts of us. OK, this East Sussex spot may present more-than-ample kitsch bric-a-brac window-sniggering opportunities, and maybe its one-way system is a little annoying to first-time users, but the charm and romance of this ancient fishing town is undeniable. And, if it is trying to shrug off its unfair bucket-and-spade image, then the George in Rye will help its cause no end.’g

Mr Smith says… ‘Our room at Calcot Manor, the Woodchester, is simply lovely. Even though my eyes range over the room in search of style faux pas, I find none. There’s not a hint of chintz in sight, and they seem to have got that hard-topull-off blend of classic look, contemporary feel just right. There’s a plasma-screen TV, high thread-count sheets, stripped wooden floors – everything, in fact, screams luxury. This continues in the bathroom, where we admire twin sinks and a shower big enough to host a Sumo bout. When our little one finally drifts off to sleep, we drift down to the reassuringly grown-up Conservatory Restaurant. Much more formal than the hotel’s child-friendly Gumstool Inn, it offers fine, unpretentious dining in a space filled with high-backed chairs and tables swathed in white cloths. Head chef Michael Croft has been working at top hotels for years, and has garnered plenty of awards while at Calcot, so our expectations are high. Thankfully, they’re met – and then some. We devour Dorset crab salad, roasted pork belly with seared scallops and some of the best beef I’ve ever tasted. The wine list, too, is excellent, and we treat ourselves to a delicious bottle of Pomerol. Full and ridiculously content after the meal, we take what’s left of the wine through to the comfortable and stylish lounge, where, on suede

sofas beneath low-level lighting, we relax with a final glass before heading up to bed. The hotel is home to a fabulous spa, indoor and outdoor swimming pools, and a courtyard hot tub that just begs to be lazed in with a glass of champagne. There’s even an outdoor open fireplace that roars away just metres from the water. There are a lot of hotels out there that put style over substance. Calcot Manor isn’t one of them – it’s got plenty of substance and now there’s a healthy coating of style, too.’

The name may be straightforward, but that’s all that is. Gloriously over-the-top touches such as PVC-backed chairs and chrome mannequins vie for attention with the hotel’s own Palladian backdrop, and the result is a space that’s luxurious and superstylish, and that has a cheeky sense of humour. We love the six Detmar rooms – named after the famous 20th-century architect – with their vivid red accent colours, playful atmosphere and giant lip prints on the wall.

Mrs Smith says… There’s little indication that anything eccentric lies behind the hotel’s classical grey Palladian façade: its neatly coiffed bushes and groomed lawn are all so far, so country house. As we gaze across the sheep-dotted hills in the distance, it’s all swoon-stirring Jane Austenevoking stuff. Yet it’s the interior we’re eager to see. Up a few small stone stairs and one foot into the hallway and we realise this is anything but a conventional Cotswolds retreat. This is the kind of establishment where your eyes dart excitedly from object to artwork. A cursory peek at the retro-rich bar and black-and-white-striped restaurant, and it’s up the steps to the reception with a quick crane of the neck to admire an original carved ribbed-and-bossed ceiling. The super-lovely receptionist is a platinumblonde bombshell in Vivienne Westwood choker. She shows us to our suite. A mishmash of imaginative old and new, with a backdrop of glorious leaded windows looking out onto green gardens, and across to that postcard-perfect hillside. Tea on the lawn below, relaxing on modern undulating loungers that resemble reclining Henry Moores is clearly a must. After a meander around pretty Painswick, we make it back in time for champagne cocktails. Supper selected over aperitifs, we decamp to the monochrome dining room where an enormous

oversized fabric bow dominating most of the back wall elicits a gasp from us both. Our restaurant critic hats on, we put the young server’s sommelier skills to the test. He confidently recommends the cheapest of three rosés. If he’s anything less than knowledgable we can’t tell, as his suggestions are delivered with reassuring conviction. It’s an unexpected treat when a celeriac soup arrives to amuse our geules. After a heavenly night’s sleep, a long lazy soak in our splendid bathroom, and breakfast in the dining room, we’ve barely enough time for a tramp around town. We’d love to stay longer, but the Big Smoke is calling us home. We trot back to Costswolds88 to airkiss it farewell.

Outside, you’ll find lush green gardens and a croquet lawn (occasionally ornamented by the hotel’s two cats). Inside is a harmonious old-meets-new medley of chunky furniture, smooth pastel walls, and fireside snugness. The six rooms feature hand-made wooden beds, roll-top claw-foot baths, and showers like a jungle downpour. Peek in the bathroom and you’ll find a collection of the hotel’s own line of hand-made toiletries. As for what to do while you’re here? Well, you’re in Chillington, and the clue is in the name…

Mr Smith says… ‘Whitehouse is the opposite of a big, soulless corporate hotel. Its owners are in fact three friends, each playing a hands-on role in hotel operations, and all happy to address guests’ requirements personally. One of them, Ally, is the gifted chef behind the restaurant’s fresh and hearty platters, and frequently opens the kitchen to show off her Aga, with special dinners and wine-tasting evenings frequently appearing on the event schedule. There are only six rooms, and I speak only for the one we stayed in, the Attic – ample space, comfortable pillow-laden beds, a showerhead comparable to the steering wheel of an articulated truck, and a colour scheme that echoes the name of the hotel. Make no mistake: this isn’t an escape aimed at hippy types who favour singsongs round open fires over a few modcons; the extras in our room included an espresso machine, flatscreen TV with all the Sky and DVD trimmings, a DAB radio and a well-stocked minibar. What grabbed me was the abundance of sofas and roaring fires that make every room a perfect place to kick back with a book or the Sunday papers after a coastal stroll. The headline act, however, is what they stick on my plate. From the just-baked scones, loaded with clotted cream and local jam, through to the delicately salty Salcombe smokie, the fresh,

mostly local ingredients were always excellent. Thank you, Ally and co. Rather than a common-or-garden fancy hotel, staying at the Whitehouse feels like spending the weekend with stylish, hospitable (and significantly better off) friends. Its appearance is the result of the owners’ good taste rather than the work of an interior designer, and it’s more a place to feel comfortable in than marvel at. We were looking for something quintessentially English, and we were lucky enough to find a homely hideaway in the middle of a splendid county. And don’t let its American-presidential-abode name distract: this hip hotel makes you feel truly patriotic. Rule Britannia, indeed.’g

Mr Smith says… ‘About as close to Manhattan as you’ll get in Suffolk, Tuddenham Mill is akin to a downtown NY hotel – set in 12 acres of gorgeous Brecks-borders land. The reception, with its generous glass double doors, welcomes you into a large lobby with cool greys and flagstone floors. Catching our eyes in the corner is a blazing fire; the ambience is relaxed and inviting and we are entirely ready to collapse onto the clean-lined furniture. We’re sleeping in the eaves of the mill, and it turns out to be a huge, double height, beamed barn of a bedroom, resplendent in sleek, Italian designed minimalism. We can’t help but wonder what the mill workers who used to toil their lives away here would make of our lazy-lubber weekend. Knowing that this hotel revolves around its restaurant, and wizard Scots chef Gordon McNeill, we’re thrilled it’s time for dinner. Centre stage, behind the bar, is the original waterwheel; it becomes a real showpiece by night when its full glory is illuminated by pulsating up-lights. Even patrons who take a table upstairs can peer down, through a glass floor-panel, at the mighty and beautiful machinery – lovingly restored, yet still resolutely functional. The kitchen team doesn’t disappoint, delivering inventive, courageous, witty and hearty fare – not suited to the squeamish, though: Gordon’s signature dish, ‘A Taste of the Highlands’, features haggis spring roll and shin of beef stovi.

Opposite me, a seafood salad is being devoured – Cromer crab, crayfish tails, king scallops, peeled prawns – a reminder that we’re not far from fleets of fishing vessels. The wine list is not only excellent, but also reasonably priced. Even the glassware is fabulous; bulbous bowls that fill your palm, perfect for each slug of shiraz. Clearly, Tuddenham Mill is a place that’s perfectly suited to foodies who like proper portions and are happy to hole themselves up in this culinary fantasyland.’

Inside the Brew House, the minimalist decor is saved from coldness by clever flashes of colour and touches of texture: orange chandeliers warm up the hotel’s fantastic little cocktail bar, while a pink pillar or two provide focus in the elegant restaurant. Upstairs, the white-on-white theme continues in the bedrooms, with a calming palette of greys, taupes and creams used to add warmth via soft furnishings. Our favourite feature? The catch-me-if-you-can glass bathroom walls, which flick from frosty to clear at the touch of a button – hours of fun before you’ve even stepped outside…

Mrs Smith says… ‘Set in the heart of the town centre on Warwick Park, the Brew House Hotel is a beauty – even when compared to the other stunners in the vicinity. Think warm pink stone interspersed with pale cream and a peaked arch top, and two round semi-circular windows on the ground floor that reveal flashes of pristine white and a soft spotlight glow. Judging by the clean lines in the lobby, I’m steeling myself for something rather minimalist, but am pleasantly surprised, elated even, to see that the Brew House has managed to pull off that trickiest of tricks – contemporary design using stark colours, yet still managing to infuse the room with warmth. The black glass furniture might have made the room severe, but cleverly, they’ve added touches such as champagne, silver and white fabric blinds and a black silk bedspread with a gold underside. I don’t anticipate any major hurdles – until I

switch on the bathroom light, that is. The door is made of clear glass. A jumble of situations – most of them ghastly – present themselves in my head. While my voice gets increasingly highpitched, Mr Smith calmly flicks a switch next to the light and the door frosts into opaque. My hero. Before dinner, we hit the hotel bar, which has the same decor as the restaurant, barring a blue light-filled panel of glass, strange octopus neon chandeliers, plump white chairs and dark wood floors. The Number One restaurant is almost at full capacity; I believe it’s because the Brew House offers good food – minus stratospheric prices. Champagne, Chablis, pinot noir, two starters and mains all came in at less than £100. Back in the room, the distilled silence filtering though the sea of trees and quiet that surrounds Tunbridge Wells awaits us. Egyptian cotton sheets soothe our food-heavy bodies with a soft touch, and this spotlit bubble, high above the madding crowds, is the place that Mr Smith and I love best.’

Utilising traditional construction methods alongside contemporary technology and natural materials Woods End embodies the very best of both classic and modern design. Organic materials have also been throughout the house including majestic Douglas Firs grown and supplied from a

sustainable UK source at Longleat, which have been crafted to form the frame, whilst the exterior of the building has been enveloped in Redwood Cedar. Woods End enjoys exquisite views of the garden designed by Amanda which includes a Japanese style water feature, bridges, decks and terraces all designed to complement the location and provide space for relaxation. The stream that flows through the grounds brings a Zen like quality to the space and adds a sense of tranquility and calm. Having really studied the landscape and its intrinsic character Amanda had a very clear vision of how the house should be built. “I felt that the house needed to look and feel as if it had naturally evolved from the land. The building needed to be exceptional in order to do justice to its location and we have kept true to this vision without compromise. The house even changes naturally with the seasons, the sedums on the roof take on a lavender hue in the autumn and the cedar cladding becomes darker and more intense during the winter. In the summer months the roof enjoys a sprinkling of white flowers and the timber walls of the house become lighter”. The interior of the house is equally breathtaking with open plan living spaces and the temperature is ambient all year round thanks to the thoroughly efficient thermal and sound insulation together with state of the art windows which cut out harmful ultra violet rays whilst also ensuring against heat loss. With function and form being adhered to in each space the building has been thoughtfully designed to allow a natural flow from room to room. Floor to ceiling windows have been introduced in many


areas and high quality contemporary fittings add to the overall feeling of understated luxury. The four bedrooms all enjoy views across the gardens and bathrooms have limestone floors, walls and surfaces and are fitted with Boffi and Fantini sanitary ware. Private jets have long been associated with A-list celebrities, sport superstars, government dignitaries and the uber-rich. The post millennium arrival of business jets into Europe brought an almost immediate overnight success story; our American neighbours to the west had migrated into Europe and their timing could not have been more perfect for the industry. Following the catastrophic events of 9/11 Europe was ripe for an alternative to the lengthy queues, flight cancellations, baggage restrictions and heightened security measures that come with commercial air travel. World-weary business travellers, seeking ways to bypass the increasingly inconvenient and restrictive commercial travel system, realised that business jets were a highly efficient business tool and a vital asset for increasing a company’s operating efficiency and competitiveness – as much a productivity tool as laptop computers and smartphones.

Everything about private jet travel is a better experience. It allows you a streamlined door to door service, flying directly into small airports away from the mad frenzy of the major hubs. The pre-owned market is bubbling with very desirable ‘slightly used’ aircraft, with low hours and some pretty crazy prices. The thrill of a Caterham and the open road! Launched as the original ‘race car for the road’ in the late 1950s, declared ‘too fast to race’ by the authorities in the 1970s and banned from competition, overall victory in the 1992 Nelson Ledges 24 hour race, class victory at the 2002 Nurburgring 24-hour race… and now in its 52nd year of manufacture.


If you haven’t heard of, seen or driven a Caterham Seven then you are surely missing out on something special! Allie Philpin went to visit Caterham Cars in Caterham, Surrey to find out just what makes this impressive, lightest of sports car so special.

Originally built as a lightweight sports car by Colin Chapman and launched as the Lotus 7 in 1957, the Caterham Seven has become the icon of motorsport. In 1973, Caterham purchased the rights to manufacture the car from Lotus and the car has gone from strength-to-strength since then, celebrating their 50th Anniversary in 2007. So what makes this car so special? Well, ask its many fans and you’ll get a variety of descriptions – control, agility, lightweight, utter excitement, impressive performance, its looks and racing lines, fun, thrilling… the list goes on. Ask Chris Rea, the musician, and he’ll say, “All my racing life, driving and spectating, there’s been that motorsport feeling with Ferraris and Sevens. Caterhams still do it for me…!” If you ask Caterham Cars, it’s Colin Chapman, a pretty clever chap by all accounts! To have designed a British sports car that is still being manufactured over 50 years later that is still based on his original blue prints, adding a little of our modern technology and techniques, is quite an achievement. Graham Nearn’s Caterham Car Services was appointed as a Lotus 7 dealer in 1959 and for over 10 years, continued to sell this magnificent range of sports cars which were growing in popularity. However, in 1972, Lotus decided to cease manufacture, so Caterham 108 | autumn/winter collection

purchased the rights to the Seven from Lotus in 1973 and production of the Series 4 re-started, with new models being introduced over the years such as the Roadsport, the Superlight and most influentially the CSR. The launch of the CSR model in 2005 coincided with the sale of Caterham Cars by the Nearn family after 40 years. But the new management team, led by Ansar Ali who is formerly of Lotus, are passionate about the Caterham Seven, its history, and its future. In 2007, Caterham offered the all-new range of Ford Sigma engines, replacing the muchloved K-series, together with an improved chassis which adds greater torsional stiffness. And there have been their special editions too. In 1981 they produced their Silver Jubilee model; in 1989 they brought out the Prisoner Special edition as a tribute to the Series 2 Lotus 7 that starred in ‘The Prisoner’ TV series in 1967! Then came the Silverstone Special edition in 1998, the Beaulieu Special edition in 2001, the Tracksport and SV30 Special editions in 2003 and, of course, their 50th Anniversary Special edition in 2007 – an R400 Mk2. So what’s the line up today? Well, it starts with the Classic which represents the very heart of the Seven. Housing a 1.4 litre K-series engine with a top speed of 110mph and

0-60mph in 6.5 seconds, that’s enough to give the average person a true racing thrill. But if you want more, and taking into account our British weather, how about the Roadsport? SURREY’S FINEST In the heart of the picturesque village of Ripley, near Guildford, you will find one of Surrey’s finest Michelin -starred restaurants, with an eclectic yet simple décor, and an imaginative, inspiring, delicate cuisine. Allie Philpin enjoyed lunch and a chat with chef proprietor, Steve Drake.

Drake’s Restaurant, within an elegant Georgian building set back from the road, which looks more like a home than a restaurant, offers light and spacious dining in a simple, tranquil décor with French influences, and paintings from local art galleries adorning the walls… and the very best of menus. Seating up to 32 diners with a small lounge where you can enjoy an aperitif or coffee and petit fours, there is a relaxed and friendly atmosphere. There is also a charming panelled private dining area, seating up to 12 diners, with its own lounge and, of course, a bespoke menu created by Steve himself. But where did it all start? Steve’s love of food and cooking was inspired by his Home Economics teacher at school, Mrs Banks, and as a teenager the idea of becoming a chef was born. “The very day I left school, I didn’t have a job,” says Steve, “so I opened the Yellow Pages and rang the restaurant with the largest advert. They gave me a part-time job, which became a full-time job, and it went from there really.” Encouraged by one of the lecturers at college, he left home on his 17th birthday to seek a job in a London. “I stayed at the PM Club, a hostel in London, and in 1990 started at The Ritz,”

Steve explains. “When I first walked in, it was exciting and I relished it,” says Steve. “I remember the head chef at the time, Keith Stanley, who was really tall and had his name embroidered on the bottom corner of his apron …” Steve is a big believer in ‘hands-on training’. “You learn a lot, it opens your eyes to a lot of different techniques and you get to see how a kitchen is structured,” says Steve. He would recommend, when starting out, going into a hotel environment where there are more outlets to feed, i.e. room service, afternoon teas, an a la carte menu, etc. “You learn things like how to hold a pan without burning yourself!” he says. “If you start in a small team, each plate has to go out perfectly every time and that’s a lot of pressure for a youngster just entering his first job in a professional kitchen.” Steve has worked for some of the country’s leading chefs, such as Nico Ladenis and Marco Pierre White, and in 2000, having worked as a sous chef at Aubergine for two years, Steve started as head chef at Drakes on the Pond in Abinger Hammer. “It was a fantastic experience,” says Steve. “I was in the autumn/winter collection | 115


kitchen on my own most of the time, and it was hard work both physically and mentally.” Steve continues, “It was very challenging because the restaurant was off the beaten track, so we were busy on Saturdays but quiet during the week, which meant we had to put a lot of technique into the menu and preparation of the food.” But the hard work paid off and in 2003, Drake’s on the Pond gained a coveted Michelin star. While working at Drakes on the Pond, Steve won the Roux Scholarship at the third attempt. “Funnily enough,” says Steve, “two of the lads who were in the finals this year were on their third attempt too. Before the final, one of them emailed me to ask for my advice!” The Roux Scholarship, the ultimate in British competition and started by the Roux brothers, is a tough competition. “It’s all about nerves,” explains Steve. “The first year I was a bit cocky and tried to do too much. You only have two and half hours, which goes so quickly.” So, would he enter more competitions? “Yes, I would like to. I was going to enter ‘Chef of the Year’ this year, but ran out of time!” Winning the Roux Scholarship meant a period in France with Marc Veyrat, who at the time had not one, but two restaurants, with three Michelin stars each, in Annecy. “It was an amazing experience,” enthuses Steve. “Marc was very much a ‘hands-on’ chef; he always had to be there. It was a huge operation with a full lunch and dinner every day, and the food was quite simple. He had a great style and he had a theme to his food which was such an inspiration. I try to emulate that and it’s my ambition to build a theme to the food at Drake’s which takes time.” The thought of opening his own restaurant in France has crossed Steve’s mind at times. “It’s a kind of romantic idea, but I can’t ever really see it coming off to be honest!” says Steve. In 2004, Steve and his wife Serina opened Drake’s at the Clock House in Ripley with great success and, just a year later, achieved his first Michelin star together with three AA Rosettes. He also won ‘Newcomer of the Year’ from the Good Food Guide – an absolutely fabulous achievement. Steve has worked on developing his own signature dishes and style at Drake’s. “I remember when I first started at Drake’s on the Pond, I tended to copy the dishes of chefs I had worked for, like Nico and Marco, but changing them a bit. However, over the past three to four years, I’ve really started to develop my own style and flavour combinations,” explains Steve. “It’s all about technique and it takes a while to understand that.” Gaining a Michelin star is all about your 116 | autumn/winter collection

food, your chefs and your personality, Steve believes. “Michelin don’t tell you the parameters,” says Steve. “All they say is that it is about the food on the plate, and if you try to talk to them about the wine list or the décor, they aren’t interested!” But he believes that those aspects must have an influence on the decision. “The food is the first priority, but it has to be within your style and personality so everything has to ‘fit’ into the environment – service, décor – it all has to come together,” he says. Does he want a second Michelin star? “Yes, but I don’t like to say! I try to stay relaxed about the whole Michelin thing. If they like us, that’s great and if they give us another star, that’s great too. I like to keep everything natural and flowing, but it is certainly an aim now.” he adds. Steve describes his style of cooking at Drake’s as ‘Artisan’, a French expression. Steve explains: “From my point of view, I try to emphasise the fact that everything is ‘hand-crafted’, lots of technique. We don’t make big batches of things like stock or sauces, it is all very fresh, turned over quickly and is all about craftsmanship and skill,” he says, “the point we’re trying to get across is that we’re passionate about the food we produce.” He and his hand-picked team’s

inspiration usually stems from flavour combinations. “I like to use herbs and spices, and dishes are generally built from a flavour. You remember flavours of foods and wines that you have tasted before, then work at combining them together. It takes ages!” he explains. So will he be here in five years time? “Oh, definitely,” says Steve. “I’d like to have a bigger team and be busier so that I can spend more time developing dishes, and I’d like to achieve more in the guides. I’ve got a desire to open another restaurant too…” And if he could invite just four people to dinner? “Well, David Beckham, because he brings a bit of inspiration, Nico Ladenis because he gave me my first proper job,” he pauses, “Barack Obama because he’s the man of the moment and, of course, my dad!” This is a restaurant that is definitely going places. Steve and Serina have created a wonderful atmosphere in the most charming and serene of environments. Together with beautifully presented and exquisitely prepared dishes, Drake’s Restaurant is very definitely worthy of its Michelin star. Pumpkin soup with wild mushrooms

50ml olive oil 1/2 onion, finely chopped 500g pumpkin 500ml chicken stock 100ml single cream 50g grated parmesan 200g mixed wild mushrooms 25g butter Sherry vinegar Salt and pepper 1/2 lemon Serves 4

Cut the pumpkin into quarters and remove the skin and seeds. Chop roughly into 3cm dice. Heat the olive oil in a wide pan, add the onion and sweat for 5 minutes without colouring. Turn the heat to full, add the pumpkin and season with some salt and pepper. Allow the pumpkin to break down so it becomes almost a pulp. Still on the heat, keep stirring to dry out the pumpkin and add the parmesan, stock and single cream. Bring to the boil, then liquidise. Cook the mushrooms in the butter for a few minutes, season with salt and pepper and a few drops of lemon juice and sherry vinegar. To finish, place the mushrooms in four warm soup bowls and pour the hot soup over the mushrooms to fill the bowls. If the soup tastes a little sweet, add a couple of drops of lemon juice to balance the flavour. Serve with walnut and sultana bread or a good crusty brown bread.

Roasted Sea Bass, Pear and Saffron Chutney, Fennel, Sorrel and Red Wine Sauce

4 x 100g Sea bass portions (cut from a large fish) 6 tbsp Olive oil Salt and Pepper 1/2 Lemon 4 tbsp Pear and saffron chutney (see recipe below) 1 bulb Fennel 2 large Sorrel leaves 4 tbsp Red wine sauce (see recipe below)

Pear and Saffron Chutney 200g Peeled, cored and diced Granny Smith apple 200g Sultanas 1 tbsp Orange zest 2 Orange juice 1/2 Cinnamon Stick 11/4 Grated Nutmeg 1/2 tspn Cayenne 40g Ginger (peeled and grated) 250g White wine vinegar 160g Sliced onion

Red Wine Sauce 750ml Full bodied red wine 375ml Ruby port 750ml Brown chicken stock Star anise 1 sprig Thyme 1/2 tsp Cracked black pepper 1/2 tsp Coriander seeds Small piece Dried orange peel 1 Bay leaf

350g Caster sugar 1/2 tsp Saffron 1kg Conference pears

Boil the wine and port till reduced to 500ml, add brown stock and other ingredients and simmer until the volume has reduced to 500ml, pour through a fine sieve.

Place all the first ingredients in a pan and reduce to 2/3, then add the caster sugar, saffron (infused in 100ml cold water), cook for 5 minutes then add the pears (peeled, cored and diced), simmer for 2 hours, cool completely and then blitz in a blender. If it is too sweet, adjust taste with sherry vinegar Score the sea bass on the skin side with a very sharp knife. Shred the fennel using a mandolin, add 2 tbsp of olive oil and a squeeze of lemon, season with salt and pepper. Heat a non stick pan with 2 tbsp of olive oil, salt the fish on both sides and place in the pan with the skin side down. Leave on the hob for 1 minute and then place the pan in the oven gas 7 (190C) for a further 3 – 4 minutes, remove from the oven and turn fish over, push a cocktail stick through the thickest part of the fish, there should be no resistance, add a squeeze of lemon juice to the fish. Place a spoonful of the warmed chutney on the plate to one side (not too much as it can over power the fish), add a pile of raw fennel in the middle, sit the fish on top, shred the sorrel and sprinkle over and finally add a drizzle of red wine sauce.

Crème Renversee, Apple Tuile, Apple Sorbet

Crème Renversee (6 portions) 350g Double Cream 4 Egg yolks 1 Vanilla bean 60g Sugar Whisk sugar, yolks and vanilla bean together, add double cream, pass mixture through chinois/fine sieve into a metal jug, cover with cling film and place in fridge. Allow to sit for min 5 hours.Skim the foam off the top, distribute into 6 ramekins, and cook at 120ºc in a bain marie with a lid on for about 30 minutes, when cooked, chill immediately.

Apple Tuiles 180g Stock syrup 20g Lemon juice Slice apples very thinly, place into stock syrup/lemon juice and place a cling film directly onto the apples, allow to ‘macerate’ for 5 minutes, lay onto greaseproof paper and dry at 90ºc for 30-35 minutes, remove from the greaseproof paper whilst it is still warm. Allow to cool completely before storing to retain its crunchiness.

Apple Sorbet 400g Stock syrup 400g Peel of 8 Granny smith apples 1/2 Lemon juice Place 1/2 lemon juice in a big bowl. Into a blender weigh 400g stock syrup. Peel 8 granny smith apples into the lemon juice, ensuring they are well coated. Weigh the peel and make up the weight with the flesh of the apples. Blend for 11/2 minutes, strain it through a fine sieve and churn in an ice cream machine To Serve Place crème in middle of a bowl with a ball of sorbet on top and dried apple pieces around the sorbet.

Stock Syrup 240g Glucose Syrup 600g Sugar 1 litre Water Place all the ingredients in a pan and bring to the boil, then cool.

Well, after a period of reviewing their structure and practices, it looks like business is picking up again. There is no doubt that the ‘credit crunch’ and the subsequent, ongoing recession has severely affected a lot of developers, and it has made life extremely difficult in the house-building industry, as has been well-reported in the press. Overall, house-building has dropped off significantly over the past year as their hasn’t been a comparable level of buyers. However, activity is improving all the time and Consero have sales in the book for 2009, a great prospect. In terms of land buying, Steven admits that this activity is mow on the agenda again, with opportunities increasing.

In the commercial sector we have also successfully negotiated a multitude of fixed rate deals on bespoke terms that suit the portfolio and the borrowers other exposure. Competition appears to be slowly creeping back into property funding. For a period of more than 12 months, lenders were tripping over themselves to find reasons not to lend but now that they are confident asset prices are nearing their bottom, they are more comfortable with their security. This has already led to a change of approach whereby lenders are now looking to protect their market share which, for some, means aggressive lending for the coming months. As that competition increases, lending terms will become more favourable and criteria will become more flexible. As opposed to the traditional mortgage market, we are now introducing a lot of borrowers to private banks whose appetite has synergy with our clients requirements. We have relationships with the majority of well known private banks as well as some small, niche banks that are less recognisable. 2010 and the latter part of 2009 is a period of genuine opportunity. For those that have survived the vigorous shake-up in the property sector, they should be able to take advantage of the market conditions over the next 12-18 months and leave themselves in a stronger position than they were at the beginning of the economic turbulence in late 2007. When is the time right to enter the property market This is a dilemma for many individuals and companies alike at the moment.

There has been plenty of talk about the economic ‘green shoots’ appearing that will indicate the beginning of the end of the current turbulence. Whereas that was initially anecdotal, there is now a growing amount of statistical evidence to support this viewpoint and is reflected across both consumer and business analysis. Whilst most anticipate anything but a smooth ride out, there appears to be some room for cautious optimism. For those well positioned financially, the beginning of the now infamous credit crunch heralded a period of opportunity to build their property portfolio, be it residential or commercial. Prior to this period it had been near impossible to find a purchase that provided a satisfactory return as access to finance was so easy that a flood of amateur landlords had been created who had dreams of becoming overnight property millionaires! Indeed, some did find a fast track to wealth but many more have come unstuck as their reliance on constant capital growth and the ability to access their equity meant they couldn’t withstand the removal of those factors, despite the historically low interest rates. Many barriers to entry have returned property investment to a more exclusive business, with equity requirement being top

of the list. The shrinking of the Buy To Let mortgage market has meant that the availability of funding for the amateur landlord is limited and associated fees have hugely increased from recent years. If you are reading this article as the typical amateur landlord, then I’m probably rubbing salt in your wounds. If, however, you read this as an established landlord or someone with genuine substance and an appetite to enter the market, then this article should be greeted well. Many clients have added to their portfolio over the last 6 months as they have been able to find good yielding assets. We have regularly leant on our clients overall strength to remove the requirement for significant equity and to negotiate good pricing. Gary Hersham reports on the London Market London Market sees improvement Over the last few months the activity at the top end of the London residential market has increased exponentially compared to the period Nov 08 to April 09. This not to say that the level of transactions has dramatically increased so much but several top end flats and houses have been sold in excess of £20m. Indeed I am aware of a house that not only sold recently at £33m (achieving approx £2,250 per sq ft for effectively an unmodernised product), but the buyer gazumped an expectable lower bid of £31m and exchanged promptly. There is evidence that not only are higher prices per square foot being achieved but also the quantum of the purchase price is increasing. There are several properties in Belgravia asking circa £4,000 per sq ft and albeit in very rare instances the £5,000 per sq ft barrier has not only been exceeded in recent weeks, but the quantums have been at the higher end of the scale, to my first hand knowledge. The flow of buyers from such places as The Gulf, Kazakhstan and Ukraine is now regular and many top end properties are being viewed although with certain exceptions buyers still believe they can negotiate hard on price. The difficulty in these instances is that sellers are not prepared to accept low offers and getting a buyer through the finishing line can prove difficult. In summation activity in terms of viewings has greatly increased. Agents are very busy and it is my belief that deal flow over the next few months will increase considerably.
