APPRECIATING WINTER’S BOUNTY Winter is the best time to be alive; the nip in the air allows us to appreciate the warm sunshine, hot meals, blankets and colourful sweaters. The sun isn’t blazing down our backs and neither is the rain ruining our makeup and attire. Christmas is just around the corner and we are already building castles of sugary treats and gifts in air. We all have our preferences and winter rituals. A few of us would want to curl up in a blanket with a book and a cup of hot chocolate and a few would choose digging into a steaming hot bowl of soupy noodles while watching a favourite flick. Even the streets have something to offer; a whiff of boiled peanuts, steamed corn or that vendor in the corner of the street of selling piping hot Masala Puri or Chole Chaat. Ah! Just the smells alone are so blissful.

Anupama Shivacharya takes a sip Brand Beginnings When Bhuman Dani walked into the East India Company store in London one day, little did he know that it would change his life. With no background in the world of speciality teas, this experience opened his mind to brews and blends. This only fuelled his thirst for more knowledge in this space. In another corner of the world, Shariq Ashraf, a self-professed tea aficionado was inspired by another tea company – Tealosophy, during his travels through Argentina. The offerings are a fascinating melange between the traditional and the new. The extensive menu is designed using culinary nuggets chosen by chefs in the restaurant while traversing different countries of Asia.

First Impressions As we walk into restaurant, we first notice the

dark brown and black decor with a red signboard displaying the name of the restaurant which gives an oriental look to the place. The al-fresco seating is great considering the cool night and it made us anticipate soulful Asian flavours. We were greeted by the staff and they efficiently had us seated and comfortable within the first few minutes of arriving. We started with the Som Tam Grapefruit Malta for our first course which came with refreshing Asian flavours and a live show of the chef making the salad right in front of us. A combination of chillies, lime juice, grapefruit, cherry tomatoes and a myriad other ingredients teamed with the house sauce; the aroma of it being prepared had us craving for the dish before it reached to our plates. Next up was the Oriental Pot Roasted Chicken & Banana Blossom Salad, served to us in a banana flower petal. The first forkful had us appreciating how tender and melt-in-mouth the chicken was. This was complemented by the juicy bean sprouts and the crunchy peanut garnish, all tossed in a lemon chilli dressing.

Sweet Endings We were quite over-fed by the time we finished our sushi course and decided to head straight for a dessert. We chose the Sumatra Dark Chocolate Mousse which came with sinfully dark and silky mousse, coconut cream and crushed peanut tuile - a blissful end to a great meal.

Next came the assorted dumpling platter with vegetarian and non-vegetarian options aplenty. First up was the Wild Mushrooms Purple Dumpling. We loved how the velvety mushrooms and delicate wrapping came together in our mouth. The earthiness from the mushroom and the umami from the chilli soy sauce had us hooked enough to ask for second servings. We followed this up with Chinese Cabbage & Pakchoy Dumpling which came with a side of spiced lemongrass sauce. We liked the slight crunch that the greens brought. From the non-vegetarian section, the Char Siu Dumpling was another favourite on the table. The meaty, pork brought a hearty note to the dish. The second option - Roasted Duck & Plum Dumplings came with perfectly cooked duck teamed with a sweet and spicy pulm sauce; a classic combination which rarely goes wrong. We then decided to try some of the appetizers and started with the Coffee Rubbed Pork Riblets which were dusted with Japanese togarashi spice and came with a side of apple slaw. We were also served the Pandan-wrapped Cottage Cheese. The Pandan leaf bought an aromatic flavour similar to basmati rice which complemented the creaminess of the cottage cheese and coriander chilli soy dip A visit to an Asian restaurant is never complete without trying the sushi. The chef recommended the Dragon Roll which was Avocado and Cream Cheese Uramaki plated to look like a caterpillar. The taste of buttery avocados teamed with cream cheese was a treat to the palate. We also gave the Asparagus Tempura Roll a try and loved the crunch

Geist is the first beer brand to bring craft brews to the restaurants and pubs in Bangalore. Anupama Shivacharya talks to the founders

The Brew Story

Brand Beginnings A brand founded by two childhood friends and classmates Narayan Manepally and Paul Chowdhury, the project took off when they met at a high school reunion and decided to bring world class beers into the Indian market.

The Journey Narayan and Paul experimented with various recipes and beers and eventually decided that they would introduce a range of fresh wheat beers and ales in a wide variety of tastes and flavors through a microbrewery/brewpub. However, the laws to set up a microbrewery/brewpub did not exist at that time and so they then took their recipes abroad and got the beers made through a small brewery in Belgium - effectively doing a ‘reverse outsourcing’ of the beers. The beers introduced were: Whistling Wheat (India’s first wheat beer), Dark, Blonde, and Strong Blonde. The beers did very well after being sold in Gurgaon, Bangalore and Chennai through multiple retail outlets in these cities. Unfortunately, the vagaries of the exchange rate no longer 34

supported the business and the imported bottled beers were discontinued. It was clear that in order to reach scale, the beers needed to be manufactured in India. Fortunately, there was a change in excise laws and Narayan and Paul helped set up Brewsky and Big Brewsky, and the Geist team brewed beers at both these locations. Both these businesses were a roaring success and the beers were an instant hit with customers. Today, the Geist team continues to brew at Brewsky in JP Nagar. Mohan Alapatt, another childhood friend and classmate joined the company in 2013 as an investor and shareholder. Mohan, Paul and Narayan foresaw an opportunity to have every restaurant serve world class craft beer and essentially convert every restaurant into a microbrewery/brewpub without the investment. They acquired a brewery license, which allowed the company to distribute craft beer to restaurants across the city of Bangalore. This is Karnataka’s first distribution craft brewery. Geist beers are currently distributed in kegs and will be

packaged in bottles shortly. Geist was officially launched in August 2017 and is only a few months old. However, there’s been a lot of interest from the craft beer drinking community in Bangalore because Geist is a local brand and is available in multiple locations across the city.

The Clientele The loyal customers of Geist are discerning beer drinkers who care about taste, variety of flavors, what goes into the beer and how the beer is made. They care about how Geist handles the environment, where it sources its raw materials from and how it transports the beer to the restaurant partners. The customers appreciate the fact that Geist is intensely passionate about brewing craft beer with soul, and cares about the people within the company and in the community.

The USP Craft beer is made by craft brewers like Geist who run smaller, independent breweries. The founders are passionate about their craft, use top quality ingredients and are constantly innovating with different ingredients (both traditional and non-traditional) to add uniqueness to the end product. They experiment with fermentation techniques, yeast strains and other processes to produce a plethora of different styles and tastes. Like most global craft brewers, they try to find unique and interesting ways of connecting with their customers and the communities they work in.

While all three have received a great response, many people have been pleasantly surprised by Uncle Dunkel. This is mostly because people believe dark beers to be bitter or strong but that’s not the case with Dunkelweizen.

Anupama Shivacharya steps in for a chat First Impressions “A girl should be two things: classy and fabulous,” stated Coco Chanel and we couldn’t agree more. Jyoti Sachev Iyer’s designs are just that. With over a decade of experience in the industry, Jyoti has created a brand for herself and is reputed to create stunningly beautiful pieces with simplistic designs, clean lines and unique cuts which make her pieces fresh, vibrant and elegant. Jyoti recently opened shop in association with Anjum Azeez and Emerald Ventures. The store is situated in the quiet bylanes of Ulsoor and the WUG team was invited for a preview. As I step in, I notice that the décor is elegant and chosen to highlight Jyoti’s designs. The store is divided into a lounge area with a comfortable sofa and close by is the prêt line whereas the other end of the store is dedicated 36

to bridal wear. I was greeted by the attendant who led me into the lounge area to meet with Jyoti.

The Designer Jyoti is dressed in an off-shoulder beige piece (one of her own creations) and greets me with a smile. As we get talking, I am curious to know how she entered the field. She replies, “While studying fine arts at Chitrakala Parishath, the idea of fashion design appealed to me and I decided to head to NIFT Delhi to hone my artistic skills. Soon after, I started a boutique in Bangalore that catered to an exclusive clientele. We experimented with various textiles, embroidery forms and incorporated the essence of ‘less is more’ in our design sensibilities.” Jyoti Sachdev Iyer has since collaborated with renowned design houses like Fendi and La-Perla. What

started as a small boutique two decades ago is now a full-fledged fashion force in the Indian fashion industry. She has an incredible eye for detail and tries to highlight drapes, cuts and subtle embellishments that accentuate the beauty of a woman’s body.

The Clientele When queried about whom the brand caters to, Jyoti responds “For the woman who knows her mindset and isn’t hesitant to experiment with her look. We have personal consultations available in Bangalore, Kolkata and Delhi which can be booked based on the dates when I am available.” During a personal consultation, she takes the customer through her latest collections and offers personal style and shopping advice. If required, she also designs ensembles exclusively for the customer based on their comfort, personality and body type.

Tete-a-tete with Jyothi The USP It’s a difficult task to give time to each customer time. However, it is of the utmost importance to Jyoti that she gives her clients a personalised experience. When she isn’t in town, she has a team of experts that takes her customers through the process. “The concept of our stores is to give our customers an exclusive fashion experience. Shopping can be exhausting and we want to minimise the hectic process and give the customers a laid back experience,” she explains.

The Journey The journey of the brand has been an inspiring one. Jyoti and team have pushed themselves to be innovative and experimental with their collections and are constantly motivated to offer more. “The industry can be tough to tap into but we’ve created a place for ourselves and as we grow and expand,” she recounts.
