Catering to the needs of the local population, the Balestra family began distributing baked goods, olive oil and vinegar to meet the needs of the local population. Their goal was to deliver fresh products picked up from their fields just prior to arrival to their store straight to their customers. In french, piment d’espelette translates to “pepper of espelette.” Traditionally produced around the town of Espelette in the Basque region of southern France, the spice has gradually replaced black pepper in everyday Basque cooking.

The original business, founded in 1886 by Italian immigrant Anthony L. Bazzini, sold nuts by the pound to bakers, street vendors and individual customers during the Great Depression. In 1956 following the Korean War, two Cypriot cousins, once immigrants, now Veterans, returned to New York City and joined forces. The Veterans’ Butter and Egg Company was soon founded in a small warehouse on Greenwich Street. Peter Pappas, an original partner, found immediate success with the company that provided butter, eggs and cheese to many of New York City’s restaurants. Peter had two sons, Christopher & John, who grew up in the business, helping after school and during summer vacations. After college, Chris was recruited to play basketball in Europe professionally.
