Camelback Mountain
Drivers orient themselves by it, hikers test their stamina on it, and visitors take pictures from it. Camelback Mountain is the tallest (2,704 feet) and most easily identified (shape of reclining camel) landmark in central Phoenix. If you’re feeling sure-footed and well hydrated, greet the camel on a summit hike originating in Paradise Valley or Scottsdale. If you’re into epic sightseeing with a side of upscale cuisine, admire the mountain from a genteel resort patio on the north or south slope. Once a trendy catchphrase, “farm-to-table” is now a descriptor firmly ensconced in our culinary lexicon to define the way we source ingredients. With two growing seasons, Phoenix offers an agricultural abundance, allowing gardeners to pick tender lettuces in November and juicy tomatoes in April. Local chefs take advantage of this by bringing the farm even closer to the table, with just-harvested ingredients from their on-site or home gardens making their way to your plate. At Fellow Osteria, 10 sloped garden beds add both a decorative element as well as assure guests a commitment to freshness. “We want to provide the highest-quality ingredients as well as maximize each vegetable and herb’s fullest flavor potential,” says owner Nicholas Campisano. Vegetables shine in seasonal specials, herbs are added to Bolognese and house pesto, and edible flowers create colorful garnishes. Order a cocktail and you’ll find purple basil in the Erba, a begonia garnish on the Spritzer, and sage in the Bee’s Knees. “The quality and care that comes out of the garden is one-of-a-kind. year-round lettuces and seasonal vegetables such as kohlrabi, tomatoes, eggplant and peppers. “We want to have the best possible ingredients,” says Executive Chef Kyle Lipetzky. “Having the garden in our own backyard, we’re harvesting vegetables at their peak and they’re being used that very same day.” You’ll enjoy delicious dishes such as roasted beets with Arizona goat cheese and citrus at the Spa Café, or garden heirloom tomatoes with basil aioli and spicy greens at Palo Verde. “Having this resource makes my job even more worthwhile. Some visitors have a preconceived notion that Arizona is dry and just desert, but guests will wander into the garden and be pleasantly surprised.” The Boulders offers tours of the garden, which also serves as a space for private dinners and receptions. “We’re very lucky to have this resource, and I take advantage of it as much as I can.” Chase Field baseball park, home of the Arizona Diamondbacks, shows that farm-fresh is important here too. D-backs Greens is a 180-square-foot vertical urban garden, planted with more than 200 different herbs and greens. For Chase Field Executive Chef Stephen Tilder, it’s a selection of what can be best used with the volume of sports fans the stadium sees. “I suggested things that we would use most, such as herbs, green onions, bell peppers. We’ll incorporate cilantro or chives into aioli in concessions, and use rosemary and other herbs for roasted chicken and grilled steaks. You know that it’s good, fresh produce. When you buy produce that is shipped from all over the country, many times it’s picked before it’s ripe and it sits in a cold locker. But when you clip herbs or pick produce from a garden that’s going right to the table, it’s clean eating,” he says. Whether it’s a verdant sprawling garden or neat rows of plants making the best use of a small space, having the farm ever closer to the table is a movement being embraced.

For chef Marcellino Verzino of Marcellino Ristorante, his home garden is truly a labor of love. Hundreds of pounds of rocks were dug out of the ground and used to create the walls surrounding his garden, which now encompasses 25 raised beds. “I was born on a farm in Italy and my family had been farmers for generations,” he shares. “I worked as a young boy helping my father tend the fields, animals, vineyard and olive groves.” Today, his organic garden yields a variety of herbs; produce such as fava beans, broccoli rabe and radicchio; and fruit including figs, citrus and grapes. Fresh fruit is used in Verzino’s dressings, sauces and limoncello, and produce in seasonal specialties such as delicately fried squash blossoms stuffed with fresh mozzarella and anchovies. “Getting my hands in the soil and nurturing the growth of the seeds is like therapy for me,” Verzino says. “I consider utilizing the freshest organic vegetables and herbs from my garden as my gift to my guests.” “As a chef, it’s our duty to work with Mother Nature,” agrees Executive Sous Chef Joseph Lerner of the JW Marriott Desert Ridge Resort & Spa. “She’s the true artist in what we do, and we’re just humble cooks highlighting her bountiful harvest.” Thus, you’ll find an expansive on-site garden growing lettuces, strawberries, peppers, onions and tomatoes, along with herbs and edible flowers. Most of the items are used for site visits and special events such as a recent garden dinner, where every course featured farm-fresh ingredients, including a pesto made with aged Parmesan, smoked walnuts, olive oil and spicy nasturtium petals. “As a chef, you start with where your food comes from,” says Lerner. “Our garden showcases seasonality, and that we’re responsible chefs using what Mother Nature has to offer.” At the Boulders Resort & Spa, a 5,600-square-foot garden and 13 raised beds supplies the property with

The Heard Museum opened its doors 90 years ago in December of 1929. Once the private collection of Phoenix residents Dwight and Maie Heard, today it is the largest private museum in the world dedicated to American Indian art. The museum, with its beautiful Spanish Colonial architecture, includes 130,000 square feet of galleries, performance spaces and sculpture gardens.
THE HEARD FAMILY HISTORY The Heards, who had moved to Phoenix from Chicago in 1895, had a passion for everything Southwest. Dwight was a successful real estate developer who also owned the BartlettHeard Land and Cattle Company and served as president of the Arizona Cotton Growers’ Association. He purchased the area’s newspaper, which later became the Valley’s “Arizona Republic,” in 1912. Maie was a philanthropist who gave much back to her community. In addition to donating the land for the Heard Museum, she helped open the first library in Phoenix in 1908, as well as donated the land where Phoenix Art Museum now sits. The Heards also purchased La Ciudad, a Native American ruin near Van Buren and 19th streets. The items uncovered WHERE GUEST B OOK

WHAT MAKES THE HEARD MUSEUM UNIQUE? In addition to great examples of Southwestern art, the Heard also contains creative works from other areas, particularly the Great Plains and California. The Heard is known for taking chances and presenting works by contemporary, groundbreaking artists. In the 1960s, the museum became renowned for exhibiting the works of Kiowa-Comanche artist Blackbear Bosin. In 1964, it presented the abstract paintings of dancers created by Yanktonai artist Oscar Howe. Just a few years
earlier, Howe’s work had been removed from the Philbrook Indian Art Annual exhibition in Tulsa because it did not “look Indian.” This trend continued into the 1980s, with one-person exhibitions for R.C. Gorman, Al Momaday, Allan Houser and Fritz Scholder. The Heard initiated a series of invitational sculpture exhibitions and added an arts invitational in the 1980s. Today, the museum’s Fine Arts Curator Erin Joyce continues to introduce contemporary art exhibitions.
WHAT NOT TO MISS AT THE HEARD MUSEUM The museum’s signature exhibit is “HOME: Native People in the Southwest,” highlighting the importance of land, community and family to natives of the region. According to Chief Curator Diana Pardue, “The exhibition features the museum’s permanent collection and was planned with the help of Indigenous consultants throughout the Southwest.”

during excavation of La Ciudad continue to be part of the museum’s collection today. While Dwight passed away in 1929, just before the opening of the museum, Maie went on to collect art and encourage the understanding of Native cultures until her death in 1951 at age 83.
The exhibit includes thousands of pieces of various kinds of jewelry, pottery, baskets, beadwork and more than 500 Hopi katsina dolls. Interactive displays offer videos from the Indigenous consultants take on life in the Southwest. The museum’s most visited and thematically powerful exhibition is “Away from Home: American Indian Boarding School Stories.” “It was the first major exhibition to explore the complex histories surrounding the United States’ government efforts during the 19th and 20th centuries to educate and assimilate American Indian students through the controversial and often tragic practice of removing children from their families and forcibly placing them in boarding schools,” says Purdue of the exhibit’s significance. This moving exhibit originally opened in 2000 as a fiveyear installation, with funding by the National Endowment for the Humanities. It recently underwent renovations, and continues to tell the cultural story.
WHAT IS HAPPENING TODAY The Heard Museum works closely with Indigenous peoples from throughout the U.S. and Canada to bring in new programs and exhibits. The Museum offers several annual events that, according to Director David M. Roche, “provide a great opportunity to meet artists and learn about their artistic inspirations. From small group lectures and intimate marketplaces to the acclaimed Guild Indian Fair & Market, there’s something for everyone.” Each February, more than 70 American Indian and Canadian First Nations hoop dancers compete at the Heard Museum World Championship Hoop Dance Contest. Guests can experience the work of more than 700 native artists from 116 tribal affiliations in the U.S. and Canada each March during the Heard Museum Guild Indian Fair and Market and Holidays at the Heard is a winter favorite, where families and friends enjoy live performances, artist demonstrations, hands-on activities and more.

FOOD FLIGHT! A foodie at the airport? Why that’s a good thing
As one of the busiest airports in the country, Phoenix Sky Harbor sees its share of travelers through its halls. For those who come hungry, it’s more than just an airport—it’s a foodie paradise. While many airports offer fast food and chain restaurants, Sky Harbor boasts a bevy of local restaurants that have opened airport locations. The trend toward local restaurant options began in Sky Harbor’s busiest terminal, Terminal 4. Today you can find something for every taste and every meal. One popular eatery began as an 800-squarefoot restaurant in Downtown Phoenix. Lines stretched down the block as diners flocked to what would become a Phoenix breakfast institution. Today, travelers can stop by the Matt’s Big Breakfast airport location any time of the day to feast on breakfast dishes made from ingredients from local purveyors like The Chop and Chick, an egg and pork chop dish. For travelers who want a taste of Southwest food and culture, one of the city’s most iconic Mexican eateries, Barrio Café, serves up those regional food specialties. Try the Cochinita Pibil or Chiles en Nogada, and don’t forget to sample some spirits in the restaurant’s tequila tasting room—the perfect antidote to a stressful travel day. If you prefer a bit of Texas while in Arizona, the family-owned and -operated Joe’s Real BBQ fits the bill. With brisket, pulled pork, chicken and ham all smoked over pecan wood, your taste buds will be flying high after a lunch or dinner here. Another must-try is the Mac n’ Cheese side dish. VS8 0

For a bite of Mediterranean fare, head to Olive & Ivy, one of the restaurants by Phoenix’s most prolific restaurateur, Sam Fox. Be transported to the French Riviera as you nosh on bruschetta, shareable plates and fresh seafood dishes. Meanwhile, Cheuvront Restaurant and Wine Bar is a perfect spot to wine and dine during a long layover. Oenophiles will delight in an extensive wine list featuring Old and New World wines and bubbles. Pair those with a classic cheese board and you have the makings for an ideal respite from travel stress. As Sky Harbor continues another year of work remodeling and modernizing Terminal 3, the success of local restaurants in Terminal 4 is driving a slew of new, local restaurants to form the backbone of the new dining options in Terminal 3. One of Phoenix’s top chefs, Mark Tarbell, brings his casual Tavern concept to the airport, with a menu of shareable plates, top wines and classic American fare. At Christopher’s Crush, James Beard Award-winning chef Christopher Gross introduces travelers to his cuisine with a menu focused on meats, cheeses, pizzas and salads. Another pizza option includes The Parlor, a trendy local favorite where wood-fired pizza reigns supreme. The Food Network even voted its pizza the best in Arizona. Today travel is about having local experiences and through the food at Sky Harbor, travelers are able to get a taste of the city without ever leaving the airport.

When people think of Arizona, they usually think “cactus.” A variety of cacti cover the Sonoran Desert, from the tiny fishhook cactus to the towering saguaros that can reach 30 to 40 feet tall. These cacti were important in early Native American cultures, and continue to be a vital part of modern Arizona. As owner Tamara Stanger of Tempe’s Cotton & Copper restaurant explains, “Cactus is the elusive sixth ‘C’ of Arizona: Copper, Cattle, Cotton, Citrus, Climate and Cactus.”
A PRICKLY TRADITION Early Native American tribes in the Saguaro Desert used cacti for food, tools and medicine. The towering saguaro
produces fruit each summer, which was used to make preserves and a syrup for a fermented wine. The seeds were ground to make flour. Even the internal frames of the saguaro—the ribs—were used for fences, musical instruments and arrows. Another popular Arizona cactus is the prickly pear or nopal cactus. It has large, flat pads covered in needles and produces a bright pink fruit at summer’s end. Native Americans harvested the fruit and created a syrup to make jellies and candy. The pads, or nopales, were cut into strips for eating. Additionally, the tribes used the gel inside the nopales as an ointment for injuries.

USING CACTI TODAY The prickly pear is Arizona’s most popular cactus. The brightly colored fruit is high in antioxidants, vitamins, minerals and fiber. According to Kathleen Zeratsky of Mayo Clinic, initial studies show that prickly pear cactus can lower blood sugar levels for those with Type 2 diabetes. You can now find cacti, both prickly pear and others, used in spa treatments, food, drinks and even furniture. The popular cactus candy—readily available at airport shops—is a fun treat, but there are many other great ways to experience cacti around the Valley.
RELAX AND UNWIND Sheraton Grand at Wild Horse Pass is a Native Americanowned luxury hotel on the Gila River Indian Community in Chandler. The resort’s Aji Spa offers a variety of spa treatments that use indigenous ingredients. One of those, HO’ISHP, is the Sacred Prickly Pear Body Treatment. Developed with the tribe’s cultural leaders, this 110minute treatment begins with an application of clay that contains prickly pear. It continues with a prickly pear and aloe massage oil and a prickly pear gel to seal in moisture.
A TASTE OF ARIZONA CACTUS There are many restaurants in Arizona that utilize cacti on their menus. One of those is Chef Stanger’s Cotton VS8 4

& Copper. Stanger frequently incorporates cacti in her weekly specials. “Most wild cactus ingredients are not available yearround, so I use them as they become available,” she explains. “I like to forage within the seasons, especially cactus such as cholla for its cholla buds and barrel for its fruit. When possible, I dry the buds and fruit and use them throughout the winter.” Stanger also uses the nopales, which are available all year. You can try a variety of cacti in the O’odham Tepary Bean Spread on her menu. Served with house made chips, the spread includes saguaro seed, barrel cactus seed, native tepary beans and desert-foraged cactus fruit and berries. One of the best meals in Arizona is at Kai, the state’s only AAA 5-Diamond and Forbes 5-Star restaurant. Located at Sheraton Grand at Wild Horse Pass, Kai serves a creative menu inspired by traditional native ingredients. A popular item is grilled buffalo served with a saguaro blossom syrup and cholla buds. Finish the meal with an explosion of cactus by ordering the exquisitely plated native cactus. A frozen prickly pear parfait sits on a beautiful nopales consommé. The dish includes cholla, barrel fruit and saguaro. For a casual poolside meal featuring cacti, grab a table at Omni Scottsdale’s Taqueria Centro. Enjoy desert flavors with the squash blossom tacos or the protein bowl, both of which contain raw nopale.

A SPIRITED TASTE OF CACTUS Prickly pear syrup is popular in drinks, especially margaritas. The fruit adds a bright magenta color and a balance of sweet and citrus-like flavor. Stop by Joyride Taco House in Phoenix or Gilbert to sample a perfectly balanced prickly pear margarita. Prickly pear beer is also popular, especially in fall. The Phoenix Ale Brewery offers a seasonal Prickly Pear Blonde. Sample a prickly pear cider—the Lady “in pink” Liberty—at Cider Corps in downtown Mesa. Three Wells Distilling Company crafts three prickly pear spirits. Three Wells offers an un-aged Sonora Silver, a Sonora Copper aged in charred American White Oak, and a two-year aged Sonora Gold. Add the spirits to

This beautiful preserve gives visitors a chance to see thousands of cacti and learn about their uses and benefits. Walk the Plants & People of the Sonoran Desert Loop Trail at the garden to see the part cacti played in traditional cultures. On your way out, stop at the garden shop to pick up prickly pear products—jelly, salad dressing, syrup, tea, margarita mix and candy—to take home a bit of the Arizona desert.

SEEING STYLE Man-around-town Oscar De las Salas on fashion, architecture and his favorite destinations
When it comes to fashion and style, Oscar De las salas has it in spades. He is one of the Phoenix Metro area’s most recognizable dapper dressers, an outspoken fashion critic and a design trends advisor. A skilled architect and interior designer, De las salas manages opportunity development for Gensler’s Phoenix office, and keeps the pulse on the community through his continued involvement with nonprofit organizations. As he says, “Design is what I do.” What drives you to be an advocate of the community in Metro Phoenix?
I landed here 20 years ago with four suitcases and knowing only one person. I discovered this desert was an evolving art, fashion and design community. Because of the city’s creative potential, I took a chance and continued to grow within a vibrant city. I realized that the city offered plenty

of creative outlets and design opportunities—both of which I was looking for to help me contribute to Phoenix’s urban progression. Why is fashion important to you?
At a young age, my father taught me the importance of always being presentable—this as one of the many other valuable lessons in life he taught me. My mother, a true fashionista, used fashion to speak for herself and fostered fashion to cultivate intellectuality and manners. Those two elements combined— discipline and aesthetics—helped create who I am today.

We will see more and more local businesses looking for branding through the design of their buildings and interiors, looking to have a singular image that is unique and unlike any other company. Businesses will keep pushing for a distinctive look, but will be largely influenced by local
Saturday evenings are a must at AZ/88, and Hanny’s after a night out in downtown. Farm & Craft wins for Sunday brunch, and any time is the right time at The Windsor for its towering Reuben sandwich. For coffee, there is nothing like Press Coffee in front of the Phoenix
Art Museum. Or, close by is Giant Coffee. Any restaurant by the hand of Chef Silvana Salcido-Esparza is golden, but my favorite is Barrio Gran Reserva. [I also love] Chef Justin Beckett’s restaurants, Beckett’s Table and Southern Rail. Now, if I am looking for spaghetti and meatballs, Mark Tarbell has it at Tarbell’s. But if it is French cuisine, I have to stop at the Wrigley Mansion to visit with my friend Christopher Gross from Christopher’s. Phoenix General offers the perfect local cotton tees and latest artist fashions. And if I really want to go shopping? The luxury wing at the Scottsdale Fashion Square has labels, labels and more labels. To shop local and vintage, head to Vintage by Misty. For a suit or a shirt and tie, I head to SuitSupply. And lastly, I must always stop at the Scottsdale Museum of Contemporary Art, or SMoCA, and view the best of contemporary art in the Valley of the Sun.

NORTH SCOTTSDALE Beyond downtown, Scottsdale segues into a suburban paradise of vigorously landscaped residences and golf courses. Suns and Diamondbacks games were nothing. In recent years, downtown Phoenix has taken on bigger challenges—an overhaul of convention facilities, the state’s first light rail transit system, the expansion of ASU from Tempe, urban infill development—to live up to its status as the nation’s sixth-largest city. There was plenty to build on already: Phoenix Art Museum, state theater, ballet, symphony and opera corps and the American Indian artifact collections of the Heard Museum. Lately, entrepreneurs have been transforming old houses and empty lots into galleries, cafes, boutiques and modern dwellings.
MESA Mesa is growing quickly, with new subdivisions and neighborhoods continually being constructed. At its heart, though, is an extremely walkable downtown: Mesa Towne Center is anchored by Mesa Arts Center—a complex of theaters, artist studios and a museum—and neighbored by shops, restaurants and other attractions. Spring training stadiums for MLB’s Chicago Cubs and Oakland Athletics are hubs of activity each March. And shopping at Village Square at Dana Park is always in season.
FOUNTAIN HILLS There’s little wonder where the town of Fountain Hills got its name once you’ve witnessed the inspirational fountain shoot water 560 feet into the air, which it does at the top of every daylight hour. All roads in this meandering, upscale suburb east of Scottsdale eventually lead to the lake and its enormous manmade geyser; along the way are palatial homes, velveteen golf courses, charming shops and welcoming restaurants. Keep on going through this ’burb to reach McDowell Mountain Park—the perfect escape for an easy in-town hike with spectacular out-of-town views.
TEMPE As the home of Arizona State University, Tempe basks in a cool college-town vibe. ASU’s campus welcomes visitors to Gammage Auditorium, designed by Frank Lloyd Wright, and ASU Art Museum. The well-used sidewalks of Mill Avenue are packed with storefronts, restaurants and bars. Tempe Town Lake and iconic Hayden Flour Mill anchor Mill Avenue’s north end, and Tempe Beach Park hosts frequent music, art and food festivals. And a little ways west along the south bank of the lake sits the 88,000-square-foot Tempe Center for the Arts.
