By STACY THOMAS oliday season is coming, and you know what that means. That's right, contention.

Holidays have always been a time of dragging family members together who don't get along at the best of times. But we come together and try to get along for just a few hours out of the year. But, as local clinical counsellor Julie Petrynko explains, this year could be even more tense than usual. Couples, families and friends are more stressed than ever this year. As we move through the fourth wave of the pandemic and deal with things like the impending doom of climate change, divisive opinions about vaccines, politics and myriad other topics are getting intense, causing cracks in families and communities. We're being bombarded from all sides with bad news near and far. Social media is giving us anxiety. And everything's expensive. So expensive. Understandably, we're all walking around with unusual levels of stress, ready to flip out at the smallest things. And for a lot of us, family is a safe space where we can let our anger, anxiety and stress fly. "We're going to be loved here anyways," says Patrynko. "The people who we feel the most loved by are the people we feel subconsciously more able to [unload] on, because

we're still going to be loved, we're still going to be accepted in this tribe, even if we behave in a way that we wouldn't behave with friends." People are seeing their loved ones taking different opinions on core, fundamental values, and with the holidays about to bring us together, we can feel like we're actually facing our enemies. "It's all rooted in fear, and the bigger the reactions, the bigger the need to be heard and the need to have others believe what we need, or try to convince them — that's an indicator of how afraid we are," Petrynko says. There's a spectrum of fear, and people who are very close, even couples, can be on opposite ends. For example, one person is afraid of getting sick. The other may be afraid of being controlled, of giving up their power over their own body and health. These opposing fears, when they exist within our close relationships, can cause significant conflict. "It's creating cracks in these relationships, because these fears are so strong, and it's our families, our partners, the people we feel close to, that we look to for soothing. But in some situations, it's also the people we look to for soothing whose fears are the opposite of our own fears. This is creating lots of conflict, and there is no solution. Rarely is anybody 8

going to convince anybody that their fear is the justified one." So, what does one do when they have a group of people with differing opinions headed to their home for a gathering that may turn explosive? Number one is compassion, Petrynko says. Everyone is doing their best, and if someone is angry or reactive, or even aggressive, it's coming from a common fear we're all sharing. "Everybody's just afraid. If we can recognize that, and practice compassion with ourselves and with other people, it won't change anybody's minds, but it might help us get back to a place of cooperation and a place of connection." Petrynko recommends mitigating conflict early. If conflict is anticipated, or an event is nearing and there is already tension rising around a certain topic, initiate healthy conversations and set boundaries around the desired tone and goal of the gathering. Setting boundaries around what topics are offlimits, and kindly inviting guests to not attend if they can not respect those boundaries, will help to ease pressure and expectations around differing opinions. "People who come to the table with big fears

and big reactions, that pre-conversation will help reassure them," Petrynko says. They can know ahead of time that they won't have to defend or debate their values, since those discussions will be off-limits for everyone. "We all need those expectations. They keep us safe, they help us know what to expect, how to behave. They give us some safety and some structure. We all need that."

And if things are just too complicated, create some other opportunities to connect, says Petrynko. Remove pressure from one event to bring everybody together. But above all: Connect. "We need each other. We're tribal. There are some fears and some big differences in beliefs and values coming up, but that doesn't mean we can't cooperate, that we can't connect as human beings."

Turkey brine: (10-12h) 4L Cold water 1 Cup brown sugar 1/2 Cup salt 1 Tbs pepper corns 3 Bay leaves 3 Garlic cloves 2 Branches (rosemary, thyme and sage) 1 Orange 1 Lemon 1 Onion

It may be a labour of love to take this extra step in making your turkey, but we promise you’ll never go back. The flavour is unbeatable! Prepare the brine: Bring the water to a boil. Add the orange peels, orange juice, squeezed oranges, lemon juice, and squeezed lemons. Add the rest of the brine ingredients, other than the ice, and boil until the sugar and salt have completely dissolved. Add the ice to the brine to cool it completely. Now you can add the turkey breast to a pot and cover it with a plastic wrap, or add the brine and turkey to a brining bag. Let it brine for at least 12 hours in the fridge. Roast the turkey: After it has brined for at least 12 hours, remove the turkey and pat it dry. Add onions and garlic to the pan, and place the turkey breast on the onions so that it’s 12

elevated and doesn’t touch the bottom of the pan. This will ensure even cooking. Brush the turkey with the melted butter and season with salt and pepper. Pour the chicken broth into the roasting pan and cover everything with foil. Sous vide turkey 140 for 3 hours or roast at 350F for 1 1/2 hours, remove the foil, then roast for a final hour, or until the breast registers 165F t the thickest part. Make the gravy: Strain the onion and garlic from the pan drippings and discard them. Add the drippings to saucepan and skim off some fat if you’d like. Pour in the broth and bring everything to a simmer. Mix the cornstarch with the water to create a slurry, and add a little bit at a time while whisking until you’ve reached you desired thickness. Keep in mind that as the gravy cools it will thicken up.

So you just enjoyed a few glasses of mulled wine that you made with your Fuse and Sip wine kit and have all this beautiful wine soaked garnish leftover. Don’t throw out the garnish! Why not cook it up for dinner. Here is an easy and delicious recipe that uses up all those delicious pieces of oranges, cranberries and spices.

I love using fruit when making stews or any stove top dishes especially in the winter. This one will not disappoint and it’s easy. The dish has a nice citrus flavour with earthy and beautiful winter spices - Star Anise, cloves and cinnamon round the dish out and gives it that slightly Moroccan flair but with a little winter edge.

1 Tbsp of tomato paste or 3-4 small fresh tomatoes chopped 3 lbs of Boneless chicken thighs 1 Onion chopped 4 Cloves of garlic 1 Cup of chicken broth ¾ Cup black or green olives Salt and pepper Deep frying pan or dish for stove top

Instructions

Dry the chicken thighs with a paper towel then in a pan with 2 tbsp of olive oil brown the thighs for 2-3 minutes each side. Turn heat down and add the chopped onion and garlic. Cook on medium heat for few minutes then rest of the ingredients and cook on medium to low heat for 25 minutes, stirring occasionally and check to ensure chicken is fully cooked. Serve with couscous or rice. Serves 4

f you’ve hosted any group meals lately, it’s possible you’ve navigated a sticky web of different dietary requirements, such as glutenfree, vegan, vegetarian, paleo, vegetarian-buteats-fish-and-cheese, vegan-and-can’t-even-lookat-cheese-except-if-it’s-on-gluten-free-pizza, keto or lactose intolerance. It can get hectic for a host trying to accommodate all of the different restrictions that people have these days. For local chef Clare Stenham-Brown of The Turmeric Trailer, who has been cooking exclusively vegan whole foods since 2018, cooking for many different requirements doesn’t need to be complicated. It can even be delicious. Thinking about dietary restrictions can seem like

taking all the fun out of a meal that’s supposed to be the highlight of the year. A host can feel like they’re just finding ways to make sure their guests get something, anything to eat. “For Christmas, that’s not what you’re looking to do. You’re looking to indulge and have something that you can enjoy, and that’s delicious. So, it can be challenging for sure,” Stenham-Brown says. Keeping it simple is the key. “First, I wouldn’t even try to accommodate all the different things. Look to create one meal for everyone to enjoy, rather than catering to many different requirements. You’re less stressed, you’re not going to be cooking 10 different things, and it feels more inclusive that way, too.” In order to help everyone feel included and to keep your recipe planning as simple as possible,

Clare Stenham-Brown’s Vegan Mashed Potato recipe (approx serving: two people — prep time: five mins; cook time: 20 mins)

Ingredients

Peel potatoes, cut into even-sized pieces and place in a large stockpot of cold water to cover.

600g Russet Potatoes 75g Margarine/Vegan Butter 1 Large clove garlic

Boil until soft for approx 10 to 12 minutes until a knife inserted into the middle of the potato will go in with no resistance.

1/2 cup of Oat Milk Pinch Salt Pinch Pepper Toppings (optional) - Sliced chives or green onion

Meanwhile, finely chop or mince garlic into a small pan and add the butter. Melt on a low heat to infuse the butter

Stenham-Brown recommends designing a complete meat- and dairy-free menu. “Straight away, take out all the dairy, all the animal products that people might be choosing not to or might not be able to eat,” she says. “A wholefood, plant-based diet seems to be achievable for most people, so just using fruit and vegetables whenever you can, there are not too many things can go wrong, I find.” Okay, how do I do that? You might be thinking. Get creative, get Googling, read reviews and use sites like Pinterest as resources for trying new recipes that might be out of your traditional wheelhouse. Letting go of the attachment to the traditional turkey-and-sides holiday dinner can open up all sorts of possibilities for new and interesting dishes on the table that are just as delicious, if not more so. “It just requires a bit more thought,” says StenhamBrown. “It doesn’t have to be challenging; it doesn’t have to be scary. It’s just learning to cook and think in a new way. When you open your eyes to the world of possibilities and all these different flavours, and ingredients you might not have used before, it’s actually quite exciting.” Instead of the usual turkey, she plans to prepare a stuffed-and-roasted butternut squash as the centrepiece of her holiday meal. “Stuff it with cranberries, quinoa, lentils, onions, garlic, herbs, spices, all of those gorgeous flavours that you would traditionally stuff a bird with;

with the garlic flavour; the longer the better & the butter shouldn’t bubble; just melt gently. Once the potatoes are drained, add them back to the stockpot and add in the melted garlic butter, milk and seasoning. Mash the potatoes until smooth, adding more milk or butter as needed until a creamy consistency. Taste and check for seasoning adjustments. Serve and enjoy!

I think that’s a really beautiful alternative. “The flavours that you can get into the stuffing mix is completely comparable, if not better, than what you would be doing with a traditional roast, and you’re not getting all that dry white meat that nobody really wants.” A nut or lentil loaf, with the herbs and spices found in traditional stuffing, can also be a great alternative to carving a turkey. Or, for those really wanting the experience of eating a meat roast, there are premade alternatives, like Tofurkey-type products you can buy in the grocery store, but those tend to be overprocessed and not very healthy, Stenham-Brown says. However, they do come closer to the texture and taste of a turkey roast. But that’s not the point, she says. “You’re never going to get close to the flavour and textures of what you’ve been used to, or what you’re expecting. So rather than trying to substitute, I would say think about it in a whole different way. My way would be to just say, ‘We’re not doing a traditional Christmas dinner; we’re doing something brand new.’ And to switch the mindset completely. You’re really missing nothing in terms of texture or flavour. It’s just the traditional idea of the meat and the two veg. I’m pretty sure everybody’s really in it for all the other good stuff.”
