INTRO TO TEA

B

EGINNERS GUIDE TO LOOSE TEA

If you are used to tea bags, or just new to tea – is loose tea worth it? Regardless if you buy tea in bag or loose form, they both come from the same plant, known as Camellia Sinensis. Tea generally likes semi-tropical to tropical climates and can grow at high elevations, even along steep hillsides. China, India, Sri Lanka, Japan are among the top growing regions (check out our map on page 25). Tea plants are grown in all shapes and sizes. Like wine, the soil and growing conditions affects the characteristics of tea. But the real magic occurs after the tea is plucked. The manner in which the tea is handled determines if it becomes a particular style like black or green. Once plucked the leaves are withered to remove most of the moisture and then rolled to break up the cell walls and release all the “juices” gives the tea it’s flavor. If the goal is green tea, it is not allowed to oxidize but rather dried immediately to lock in all the flavor and make the tea shelf stable. On the other hand, black tea is allowed to oxidize and turn black before drying. Each tea section will explain more about each tea category in more detail.

What

makes loose tea better? The best teas and the best crops are always reserved for the loose tea market. During the processing and sorting of tea leaves, odd shapes, leftovers and small pieces known as dust or fannings are put aside to be used in bags. And generally, only the top 10% of tea grown winds up as loose tea. Not only does loose tea have higher quality than mass market bags, they stay fresher longer and retain more of the health benefits.

Herbal

teas There are some other teas, which we call ‘herbal’, but are technically called a ‘tisane’. These are infusions made from plants other than the tea plant. Think of peppermint, ginger, dried fruits and other herbs. Rooibos and Honeybush are popular, caffeine free herbal infusions rich in vitamins and minerals. Most of these herbs are caffeine free.

Is

loose tea easy to brew? Loose tea is ridiculously easy to make. Simply scoop the portion into a loose tea bag, filter basket or tea ball and let it steep in hot water according to the instructions. You use only the amount you need, and the cost per pound is often much lower than tea bags.

How

do I know what I like? We suggest starting with samples. Each sample makes 2-3 cups or 1 small pot. You’ll need something to heat water with and something to infuse the tea. Our tea ware pages have a wide variety of options. Some people prefer teas with flavors while others stick to pure teas. Try some from each category, and you’ll soon discover your favorites.

GREEN TEA

Green Tea All teas start out the same way, and what makes them different is how they are processed after harvest. Green tea is sometimes referred to as an unoxidized or ‘non-fermented’ tea. Oxidation is the natural chemical process that occurs after vegetable matter is picked. The leaves begin to oxidize immediately after harvesting and to stop the oxidation process, green tea leaves are steamed or baked. Steaming is usually used for Japanese green tea, while baking or pan heating is often used for Chinese green tea. Because it is not allowed to oxidize, the tea retains its green color. Green tea needs a little extra care when preparing - the main thing to keep in mind is NOT to use boiling water. Most green tea prefer water temperatures between 160-190 degrees. They also tend to steep for no more than 3 minutes. If your green tea ever tasted bitter, it was likely due to a combination of over steeping and/or excessive heat. Flavors of green tea can vary based on factors such as shade, altitude and soil. For example, prized Japanese Gyokuro teas are shaded thus enhancing their chlorophyll content, resulting in the desired grassy undertones sought out by connoisseurs. While some high grown Chinese teas may have floral undertones. Milder, flavor neutral green teas are often used in the base of flavored blends.

Health Benefits While there is no such thing as a miracle drink, green tea combined with a good diet and exercise can contribute to a healthier life. The amount of studies done on the health benefits of tea, especially green tea in particular are vast. While not all are conclusive, the majority of studies do show a POSITIVE correlation between green tea and better health. The health benefits of green tea are due to its high levels of flavonoids, polyphenols and catechins. These are nutritional compounds that are classified as anti-oxidants. They work by binding harmful oxygen-containing molecules in your body called free radicals and peroxides that otherwise could damage your DNA, cell membranes, and other cell components. This is why green tea has attracted wide interest in its ability to control inflammation, improve immune function, improve metabolism and prevent cancer. In fact, the FDA has approved the health claim that green tea will help reduce the risk of breast and prostate cancer. Green tea has also been linked with weight loss. A study highlighted in the American Journal of Clinical Nutrition showed that the catechins in green tea triggered specific

13

GREEN TEA

areas of the brain for weight loss. Specifically, it moved to the thermogenesis area of the brain. This particular area is one that communicates with the metabolism, telling it to produce more energy for the body. This particular effect from the study was then compared to just pure caffeine. It was shown that green tea is more effective than any type of caffeinated drink in helping the body to produce more energy. Green tea is also a great way to hydrate and get the maximum health benefits. We don’t recommend green tea extract because the source of the green tea is not disclosed, and its easy to consume excess dosage. Drinking green tea in liquid form is a sort of ‘safety mechanism’.

Quality Green Tea Our green teas are from reliable sources known for good land stewardship and farming practices. They are typically higher in anti-oxidants because of their premium growing areas. Larger mass produced brands may also have pesticide contaminants because they are grown in less desirable regions.

FLAVORED GREEN TEA

LAVORING TEA

loose leaf teas have been scented and blended for centuries. The oldest, and most ancient method, is known as 'scenting' the tea leaves. Scenting consists of compressing layers of tea leaves interspersed with fragrant flowers or fruits and allowing the tea leaves to absorb the fragrances and essential oils through direct contact with the tea leaves. A second and more recent method of flavoring tea leaves is to use concentrated all natural essences (i.e. think of vanilla extract). These liquid flavors are mixed into the tea leaves, often with a blending machine. The flavored tea blend is then sealed in a tight container for a period of time, normally at least one full day, to allow full absorption of the flavoring. In ancient China, tea artisans developed many different methods for creating fruit and floral blends to tempt taste buds and delight the senses. Our flavored teas are an updated example of this continuing tradition. All natural flavors, premium fruit and flower pieces blend harmoniously with each tea. We use natural flavoring oils, not crystals. High quality tea tastes good and natural flavors do not mask the natural taste of tea. (The norm for many making flavored tea is to use over powering artificial flavors, which can be used to hide lower quality tea). Natural flavors do not leave an aftertaste giving the tea a clean and true character. It is especially important to keep flavored tea in separate air tight containers, as the flavor will literally disappear if left out in the open or in an unsealed container.

Buying and Storing TEA

A common question asked is ‘How much tea should I buy?’ In general, we recommend buying no more than what you can go through in six months. Tea can last longer in many cases, but keeping your inventory within reason will go a long way to keeping everything fresh and from going stale. Proper storage is a requirement if you are planning to keep your tea for more than a few weeks. Even the freshest and best teas on the market will lose their potency if not stored correctly. When exposed to air, delicate tea leaves rapidly lose flavor. Tea should be stored in an airtight container away from light, strong odors, moisture or big temperature swings. If you buy in bulk, keep a larger container stored a smaller one for everyday use. Some may think a glass jar is okay, since it is air tight. However, light will strip the leaves of their color and flavor over time. Because of humidity and the temperature swings, it is not recommended to store tea in a fridge or freezer.

W

hite Tea

White tea is made from the buds and young leaves of the tea plant. These leaves are withered and dried naturally under semicontrolled conditions. If mechanical drying is required the leaves are baked (not fired) at temperatures less than 40°C. Because of these special growing and harvesting procedures, white tea has higher concentrations of anti-oxidants known as catechins compared to other types of tea. A study at Kingston University in 2009 showed that white tea has high anti-inflammatory, anti-oxidant, anti-collagenase and anti-elastase properties which could potentially reduce the risks of developing rheumatoid arthritis, some cancers, heart disease and slow the enzymatic break-down of elastic and collagen, traits which accompany aging.

White Raspberry Spritzer Premium white tea infused with champagne and raspberries. Ingredients include: White tea, safflowers, champagne and red raspberry flavors. A truly unique taste!

Oolong tea comes from the same plant as green and black tea. While black tea is fully oxidized and green tea is un-oxidized, oolong tea is somewhere in between. Because each variety of oolong is processed differently, the flavors vary widely. Our oolong selection is made up exclusively of premium styles. These teas are all great additions to your reserve collection. Crafting quality oolong tea is an art form. Like regional variance in fine wines - soil integrity, humidity levels, genus and artisanal skill all leave their imprint on the leaf. Oolongs are grown in limited areas where the conditions are perfect and great care is taken to ensure the health of the surrounding environment. Producing a great oolong requires years of formal training to master. From nursing new seedlings, to planting, nourishing the bushes and properly selecting the best time to pluck the leaves, the intricacies are passed down from one generation to the next. The great masters believe that it is only through the transfer of carefully protected secrets that the finest specimens can be produced. Oolong teas must not be picked too early or at too tender a stage and are usually processed immediately. Oolong tea is wilted in the sun to remove most of the moisture, then typically shaken in bamboo baskets to bruise the leaf edges.

20

OOLONG TEA

You’ll also notice that most oolongs are whole leaf and not broken into little bits. Oxidation follows and this can vary greatly, typically from 30% (closer to a green tea) to 70% (closer to black). Once the desired oxidation levels are reached the tea is fired under high heat to capture the unique and highly intricate flavor profiles. It is interesting to note that a shorter firing produces teas with an almost peach-like character while a longer firing will produce a rich amber cup with more ‘woody’ notes. Oolong tea is mainly produced in China and Taiwan, but other countries like Vietnam and Sri Lanka also produce a small amount of oolong. Most oolong teas can be steeped multiple times, res ult ing in a c h ang ing fla vor profile. In fact, some drinkers prefer the taste of the 2nd or 3rd infusions.

Health Benefits Oolong tea, like all tea, contains powerful catechin antioxidants which can help boost the immune system. Because green tea is the least processed, it does hold a slight edge over Oolong in terms of the overall catechin content. Catechin content decreases as tea is oxidized. But it is over looked that the levels of theaflavins and thearubigins increase. These two substances are found in higher concentrations in oolong and black tea than green. They have anti-allergy, anti-inflammatory and anti-cancer properties. Some studies suggest they are as effective as the catechins in green and white tea. Both teas have similar effects and will provide equal health benefits overall.

Weight Loss Now while weight loss seems to be a more popular issue with some teas these days, it is important to maintain a healthy diet and exercise along with the consumption of tea. Tea by itself will not make you lose any noticeable weight. Be wary of those who are promising that a tea will dramatically make you lose weight. And always consult your doctor first before starting any "tea diet". Beware of merchants or products claiming you will lose weight with certain oolong tea blends (sometimes called wu-long). Not to say that you won’t benefit from drinking them, but please be wary of some that make claims, when they are just over-priced oolong teas with a fancy name. They will not do anything miraculous versus other oolong teas, and keep in mind that all oolong varieties will help you achieve the same results for much less. All Oolongs come from the same species of plant!

What is Matcha? Matcha is tea that has been ground with special granite wheels into a fine powder. Because it is powdered, the tea is not steeped like a normal tea, rather infused and consumed directly. Matcha traces its origins to Japan where the tea is used for drinking or in cooking. It is the tea that is used for the traditional Japanese tea ceremony. Because you are literally drinking the tea leaf, Matcha is a much richer cup than regular tea. How is Matcha made? Traditional Matcha is made using pure Gyokuro leaves, a Japanese tea variety that is shaded beneath special mats for 3 weeks before plucking. The shading forces the plants to produce a higher than normal chlorophyll content, which gives the leaves a rich green color. Once plucked, the leaves are steamed and dried. Tea at this stage of the process is known as Aracha. Next, the Aracha is stripped of all stems and veins resulting in a pure leaf known as Tencha. Tencha is then stone ground into its finely powdered form. What types of Matcha are there? Japanese style matcha is the traditional variety of matcha. However, there are varieties available from other regions like China and Kenya. Some types are well suited for cooking and smoothies, while the top Japanese style grades are recommended to be consumed directly. What does Matcha taste like? Matcha is a fuller bodied experience than its non powdered cousin. Japanese style matchas maintain the rich, vegetative flavor of their parent teas. Japanese style teas are the only ones shaded. Non-Japanese Matchas will have a somewhat lighter, less grassy, more astringent flavor. What are the health benefits of matcha? Like green tea, matcha is loaded with antioxidants. The matcha drinker consumes the entire leaf and not just the brew. As a result, 1 cup of Matcha contains higher levels of nutrients than regularly brewed tea, including fiber, calcium, iron, potassium, vitamin C, and protein. Green tea contains catechins, and the anti-oxidant. EGCG (epicgallocatechin gallate) is the catechin with broadest and most potent cancer-fighting properties.Sixty percent of the catechin content of matcha tea is EGCG.One gram of matcha contains 105 mg of total catechin content, or roughly 61% EGCG. Cleansing Japanese style matchas contain high levels of Chlorophyll which helps to remove heavy metals and toxins from the body. f

Mood enhancing, Energy Booster The amino acid L-Theanine combines with caffeine and causes our body to absorb it slowly for 3-6 hours of calm, sustainable alertness without the crash, side effects of sugary, overcaffeinated beverages found in stores. Diabetes EGCG has been shown to lower blood sugar levels. Research indicates that this blood sugar lowering quality was enhanced by ingesting it with dietary fiber, both of which are abundantly present in matcha. Weight Loss Consuming matcha green tea can increase thermogenesis (the body's own rate of burning calories) from a normal 8%-10% of daily energy expenditure, to between 35% and 43% of daily energy expenditure. Of critical importance is the fact that none of the research subjects reported any side effects and no significant differences in heart rates were noticed. d

INTRO TO BLACK TEA

B

LACK TEA

All tea starts out from the Camellia Sinensis plant. To make black tea, the leaves are first laid out for the withering process to remove moisture. The next step is rolling. Rolling breaks the cellular walls and releases the enzymes that give tea its flavor characteristics. Tea can be rolled by hand or with a machine. The more expensive varieties are usually hand rolled. The tea is allowed to fully oxidize which turns the leaves dark. Green tea skips this step. The oxidized leaves are passed through hot air tunnels or baked in ovens. This dries the leaves and stabilizes them, allowing them to be sorted and packaged.

Grading Black Tea A term you may have heard, ‘Orange Pekoe’ has nothing to do with flavor but indicates a particular leaf that was used for the tea. The code OP is sometimes used. BOP simply means Broken Orange Pekoe, indicating smaller pieces of the leaf. Black tea grading is not standard and uniform for each producing country. In general there are four major grades. Whole Leaves, Broken Leaves, Fannings and dust. Whole leaf grades are considered the most valuable, especially if they contain leaf tips. Broken grades are considered medium grades while fannings and dust (the leftovers) are considered the bottom grades and relegated to tea bags. For example, the designation for the top grade is FTGFOP. Finest Tippy Golden Flowery Orange Pekoe. This indicates that the youngest top portion of the plant was used and had many ‘tips’ or leaf buds and flowers that are golden in color. Black teas in particular can be produced in the orthodox fashion (rolled either by hand or by machine) or CTC (Crush, Tear, Curl) which is machine-processed in a way that chops the leaves into uniformly-sized bits that are rolled into small balls. The CTC is popular amongst African tea and gives them their bold, bright profiles.

Producing Regions The majority of the black tea produced comes from China, India, Sri Lanka and Africa (Kenya especially). The names of teas often refer to the particular estate or province the tea is grown in. Assam and Darjeeling are the better known Indian teas. Sri Lankan teas are known by their classic name, Ceylon. Many black teas from China come from the Yunnan or Fujian provinces, but their origins are not always revealed in the names themselves, Golden Monkey is such an example.

Health Benefits Many of the health benefits of green tea are the same as the health benefits of black tea. Although black tea has less epigallocatechin gallate (EGCG) than green tea, it is higher in both theoflavins and thearubigens—compounds that have their own set of health benefits. A study in the Netherlands

27

SPECIALTY BLACK TEA

found a connection between regular consumption of black tea and reduced risk of stroke. Researchers concluded that the health benefits of black tea include the reduction of LDL— the “bad” cholesterol that can lead to stroke and heart attacks. They also found that men who drank over four cups of black tea per day were at lower risk of stroke than men who drank only 2-3 cups per day. Another study in Saudi Arabia showed that regular consumption of black tea can reduce the risk of coronary heart disease by fifty percent. And in the United States, a four month study concluded that the health benefits of black tea include helping to reverse an abnormal functioning of the blood vessels that can contribute to stroke or heart attack. This improvement could be observed within two hours of drinking just one cup of black tea.

BREAKFAST TEA REAKFAST TEAS It’s what most of us need to get the day started, making every morning easier to take on! They are hardy, robust blends that take milk well.

The origins of the first breakfast tea, English breakfast, is a bit obscure. One story starts off in 1843 in New York City of all places. Richard Davies enveloped a blend of tea in a fancy foil exterior, and named it English Breakfast tea. It became so popular that other inquisitive retailers wrote to London asking where to get it, but no Englishman ever heard of it. Eventually the mixture was sent to China where it was duplicated. Poor Davis attempted to expand, but got swindled and died broke.

PU-ERH TEA

Pu-Erh

Pronounced ‘Pooair’, this type of tea undergoes a unique fermentation process unlike any other tea. Puerh originates in China’s Yunnan province. It is named after Pu-erh county where the tea was originally produced. The earliest reference to Pu-erh tea is in documents dating from the Tang Dynasty (618 AD–906 AD) and it has been an important trading item for centuries. A Pu-erh tea factory in China Pu-erh tea is produced from the broad, mature leaves of older tea trees. This is quite different from other types of tea such as green tea or black tea, which are produced from the tea buds and new leaves. Most tea is best fresh. Green, black, white and oolong tea will lose flavor, becoming stale as they get older. Pu-erh tea is quite different –it is meant to be aged and the older it is the better it gets. A variety of microbes flourish during Pu-erh fermentation such as Aspergillus Niger, Saccaromyces and Pinicillium. The chemical processes these microorganisms create give Pu-erh unique properties, especially for digestion. Many give this remarkable tea credit for restoring and maintaining good health. Generations of Chinese have drunk this tea after rich meals to “cut the grease”. Chinese tea drinkers have known of the health benefits of Pu-erh tea for centuries, and recent scientific research have bolstered many of these traditional claims. Some studies have shown Pu-erh to be effective in lowering blood cholesterol, reducing high blood pressure and preventing intestinal infection. Many report that drinking it after meals relieves any overstuffed feelings and aids digestion. Pu-erh tea is also high in antioxidants which are necessary to protect us from a whole range of diseases including cancer and heart disease. The method of production is: the tea leaves are rolled and pan fried or baked to remove most of the moisture. They are then steamed and compressed (without drying) into the cakes. In the course of time the tea takes on a musty and earthy character. Pu-erh that gets somewhat moldy before it naturally dries is considered the best. Pu-erh is unique in the fact that it is aged, as already mentioned, sometimes for many years. This aging process causes its flavor and color to change over time. Many pu-erh’s are later broken up out of the cakes into loose tea to make it easier to handle. Pu-erh may be steeped multiple times and with each infusion comes a different flavor profile. The picture to the left is of a ‘tea tree’ made of pressed Pu-erh tea. It sits at the Whistling Kettle in Ballston Spa today, given by one of the owners parents. The stack of tea is a symbol of a successful business and growing wealth. When given as a gift, it is a wish of prosperity and happiness.

Iced Tea: Same Health Benefits as Hot Tea A very prevalent rumor is that once tea is iced, it does not offer the same health benefits as tea when it is hot. However, recent studies are showing that iced tea carries the same anti-oxidant count as hot tea and the phyto-chemicals in tea are not depleted through icing. Which means, you will still receive the same boost to mental alertness and the known benefits that may help prevent heart conditions.

EARL GREY TEA

L-theanine is a non-protein amino acid that is rare in nature, but found naturally in tea. Drinking tea has been shown to have positive effects on maintaining daytime alertness and has a unique and positive effect on mood!

Traditionally Earl Grey was a blend of Chinese and Indian teas scented with oil from the citrus bergamot fruit - a sort of orange - to mimic the floral and fruity taste of expensive Chinese teas. Stories about the origins of Earl Grey are numerous. One such tale tells how a British diplomat on a mission to China saved the life of a Mandarin. As a gift of gratitude, the diplomat was given the recipe for this flavored tea. Upon his return to Britain, the diplomat presented the tea to the Prime Minister of England (18301834), Earl Grey, who made this tea fashionable. Another story tells of a Chinese diplomat who may have offered the tea as a gift to the Prime Minister Charles Grey, who lifted the East India Trade Company monopoly that England held. Whatever event resulted in the development of Earl Grey tea, the idea caught on and was popularized by international tea companies in England. The result is what we see today‌ but not just Earl Grey. Different variety flavors of Earl Grey, such as Russian Earl Grey, Buckingham Palace Garden Party, Lavender Earl Grey and Earl Grey Cream have become popular. Regardless of the flavor Earl Grey you prefer, raise a cup to Prime Minister Charles Grey, as his influence has allowed this tea to remain a staple throughout the world.

CHAI TEA

HAI

Piping hot chai holds a warm place in the heart of India. It might sound odd that a scorching hot beverage be so widely enjoyed in one of the worlds w a r m e s t countries. However, hot chai actually cools the body. It does this by raising core body temperature above ambient air temperature. In many parts of India there is a saying that loosely translates as: “spiced chai… the tea that eats like a meal” - and in certain parts of India it is true. Traditional Indian chai is a heady mix of spice and tea. Chai recipes are handed down from generation to generation the way westerners pass on grandmas' apple pie recipe. The tea is traditionally brewed by boiling milk, adding good thick black tea, various spices and then boiling it again. The resulting mixture is thick, spicy and incredibly full-bodied. Indian chai-sellers, known as chai wallahs, sell their concoctions at roadside stalls, train stations, and anywhere you can think of. The tea is served in small clay cups known as challahs that are smashed on the ground once the tea is finished.

(You’re making a concentrate.) 2. Steep for 5-8 minutes then remove the tea leaves. 3. Add milk & sugar (or honey). Froth or shake in a martini shaker. Pour over ice & enjoy!

Bourbon Chai - 8 servings

1/3 cup honey or agave 6 cups boiling water 1 cup spice-forward bourbon 4 tbsp Chai tea (any Chai) 6 cups unsweetened almond milk, heated 1. Infuse loose tea in boiling water and almond milk for 10 mins. 2. Strain loose tea from liquid using a cheesecloth or fine mesh strainer, pressing down on solids to extract flavors. 3. Add agave & stir. Pour into 8 individual mugs & portion 1oz bourbon into each.

Green Tea Chai Ice Cream - (Makes 5 cups) 1. 2. 3. 4. 5. 6.

2 cups heavy cream 2 egg yolks 2 cups whole milk 8 tsp Green Tea Chai tea Combine cream & milk in medium sauce pan over medium heat. Heat until just before mixture boils (190º) & reduce flame to low. Add green tea leaves & steep for 3-5 min’s. Remove tea leaves immediately or else mixture will turn bitter. (Use cheese cloth or disposable bags… see pg. 60) Meanwhile beat yolks, sugar & vanilla for 1-2 min’s in a small bowl until smooth. Add 4 tbsp hot/cream mixture & stir until combined. Gradually add egg yolk mixture to warm cream, stirring continuously to prevent eggs from curdling. Cook over low heat until slightly thickened & mixture coats the back of a spoon, about 3-4 minutes. Cool completely. Then pour into freezer bowl of an ice cream maker and follow your machines instructions for chilling. You can also put in a Tupperware container & freeze.

ROOIBOS AND HONEYBUSH TEA

Rooibos & Honeybush Technically, Rooibos is not a true tea. It comes from the plant Aspalathus linearis. The name Rooibos comes from the Africans word for 'red bush'. The Rooibos plant is a small shrubby bush that only grows in South Africa. The bush grows anywhere from 2 to 3 feet in height, with very thin, needle-like leaves. The leaves are green, but turn the characteristic red after oxidation. The Rooibos seeds are precious, because the plants produce few of them. The seeds also pop out of the fruits as soon as they are ripe, making harvest difficult. Many farmers still raid anthills looking for Rooibos seeds. It is a rather delicate plant, and the cultivation has not changed much over the years. The plants thrive best when left alone in their natural soil. The farming of Rooibos has always been very close to nature and remains so today. The locals have known that Rooibos can be used to make a delicious beverage for a very long time, but it was only 'discovered' in 1904 by a Russian immigrant named Benjamin Ginsberg. He was a settler in the area and thought that the tea was so enjoyable that it should be available to people everywhere. He was the first to market Rooibos tea. Rooibos tea is a distinctive red color and its taste is also unique with a very sweet and slightly nutty flavor. Its delicious taste and numerous healthful qualities has helped Rooibos become a popular tea all over the world. It is still fairly 'new' but more and more people are coming to love this unique red tea. Rooibos has no caffeine and is low in tannin, so it can be enjoyed all day long without any unpleasant side effects. This also makes it a great tea for pregnant women and nursing mothers. Health Benefits Various studies have shown many health problems can be improved by drinking Rooibos tea: Eases irritability, headaches, nervous tension & insomnia. Can be used to treat hay fever, asthma and eczema Rooibos is also rich in minerals, and contains the following: Copper, Iron, Potassium, Calcium, Fluoride, Zinc, Sodium, Manganese, Magnesium

Honeybush

is a cousin of Rooibos, cultivated in South Africa's Eastern Cape region. Its flowers smell of honey, which gives this plant it’s sweet name. The taste of honeybush tea is similar to that of rooibos, though slightly sweeter with a fully body. Like Rooibos, it is caffeine free. Add a little honey to honeybush to really bring out the natural sweetness. Honeybush has been used for treating coughs, because of its content of pinotol (found in Pine trees) which is an expectorant. Pinitol has also been shown to lower blood sugar in laboratory animal studies and is being considered as a drug for diabetes. Honeybush also contains flavones which can be used to reduce blood lipids and alleviate menopausal symptoms.

AYURVEDIC WELLNESS TEA YURVEDA is a component of the

ancient Ayurvedic medicinal system, which traces it’s origins to India over 5,000 years ago. It is officially recognized as a complementary and alternative medicine. While Ayurvedia is a complex medical system, it’s primary components are daily practices and lifestyle modifications that improve mental and physical health. Ayurveda can address and improve various conditions and diseases using safe, effective approaches without the harmful and sometimes toxic side effects of drugs. It is a system that looks at the causes, not the symptoms of mental and physical ailments. Ayurveda can provide you with the following insights: Causes of disease and how to avoid them How to bring your body and mind back to it’s natural state of peace and tranquility Ways to build your immune system and minimize the effects of aging Importance of a healthy diet and digestion Diseases you may be susceptible to

What are the “Doshas”? Ayurveda, as well as some of the teas listed in this section often refer to “Doshas”. The three Doshas are known as Vata, Pitta and Kapha. These Doshas reflect your mind/ body type. It is extremely rare for a person to be perfectly balanced between these three types. Most people are Dosha dominant, and the goal is to improve the balance between the Doshas. An imbalance due to the increase or depletion of the Doshas eventually leads to ill health of body and mind. Understanding your Dosha will not only help your health, but you can help tune yourself to improve relationships, parenting skills or choose the right career path.

How can I determine my “Dosha”? The easiest way to begin is to visit the webpage: www.whatsyourdosha.com. Besides the many informative articles, you can take a simple quiz that will determine your Dosha type. You may discover that a problem you’ve been having for years has been the direct result of a Dosha imbalance! Your local yoga studio may also provide you with a source of more information and can guide you to local ayurvedic practitioners. There are also many books available on the subject.

Ayurveda and Diet Diet and digestion are one of the major cornerstones of Ayurveda. There is no diet that is specific for every human body, therefore Ayurveda takes your body/mind type into account to help customize what works best for you. Some points that Ayurveda addresses: Nutritional benefits of the food The six tastes (For example, fast food contains only three tastes) The effects of combining food (both proper and improper) The quantity of a particular food that is healthy The effects of consuming food in a particular season The effects of the difference in time between consuming certain food items Beyond what you consume as food, Ayurveda considers what your mind consumes as well. What you see, hear, taste, smell, feel and think also impact your health and well being. Think of many of the issues that plague modern western society: insecurity, anxiety, emptiness. Often people will not have time to prepare good food and rely on processed meals. While the food, with it’s high sugar and fat content may temporarily help with these

problems and appear to make you “feel” better, it is only temporary and results in more imbalances that lead to mental dullness, obesity, lethargy, depression and greed. The body/ mind becomes dissatisfied, keeps craving things, and when left untreated leads to addiction.

Why Ayurvedic Teas? Our ayurvedic blends are tuned to balance specific Doshas while others provide for general balance. Most allow you to experience the “6 tastes” - sweet, salty, sour, pungent, bitter and astringent. These teas will complement anyone using Ayurvedic principles. our custom blend designed by Master Herbalists especially for pregnancy health. Organic herbs provide trace nutrients and help with morning sickness and digestion. Best of all, it tastes great! Use up until week 34 and alternate with Raspberry Leaf Tea. This tea is also recommended for Chemotherapy patients. Ginger: To help kick morning sickness (or all day sickness for that matter), there’s nothing better than ginger. Our Ayurvedic Stimulating Blend is built around ginger and contains no caffeine. Also try our Decaffeinated Chai Black tea and Rooibos Chai. f Rooibos and Honeybush: all naturally caffeine free and are loaded with antioxidants, vitamin C and nutrients that are safe during pregnancy. It is great for reflux and digestive problems as well. See our large selection of Rooibos and Honeybush teas. (We do NOT recommend our Vanilla Berry Truffle Rooibos since it contains hibiscus. Some doctors say hibiscus should be avoided during pregnancy. However, consult with your doctor to find out if Hibiscus should be avoided during your pregnancy.) f Peppermint: great for relaxing your stomach muscles to help settle an upset stomach as well as the nausea and vomiting common in early pregnancy. Later in pregnancy, acid reflux may become an issue. If this is an issue during your pregnancy, peppermint should be avoided since it relaxes the esophagus opening and does not discourage acid reflux symptoms. f Chamomile: high in calcium as well as soothing and relaxing. Chamomile could be just the right cup of tea to help with sleeplessness and inflammation of the joints. Doctors recommend to avoid drinking excessive amounts of chamomile. Try Sleep Tight, Chamomile Bilberry Bliss and Banana Dulce. 5 Decaffeinated Teas: If you are craving a cup of green or black tea, but want to avoid caffeine, we have a variety of teas that are decaffeinated via the CO2 method, eliminating 98% of caffeine. English Breakfast, Earl Grey, Sencha Green, Pomegranate and Blueberry Mango are all available in decaffeinated form. The CO2 method does not use chemicals and retains the flavor of the tea. 5 f f f f

CAFFEINE CHART

There are several stories about how tea was discovered. One of the most famous concerns the Chinese emperor Shen Nong who lived about 5,000 years ago. Shen Nong was an herbalist who identified hundreds of medicinal and poisonous herbs by personally tasting them. According to tea history, Shen Nong, while traveling with his entourage, stopped for a rest. While boiling some drinking water, leaves from burning tea twigs blew upwards and landed in the water. Shen Nong insisted on trying the liquid and found it to be tasty and refreshing. The year was 2737 BC.

HOW TO MAKE TEA

Always use quality filtered water to remove trace odors and tastes. Select a good strainer. While cheap mesh balls might appeal to some just starting out, they greatly limit the ability of the tea leaves to expand and prevent water from properly circulating. A large infuser basket style is our recommended choice (see pg.60). Many of our teapots come with an infuser basket (see pages 58—69). You will need a kettle or electric water boiler. Never microwave your water, which will result in an improper temperature for your brew as well as a flat taste (see page 68). Since not all teas prefer boiling water, a thermometer will come in handy to measure the temperature before brewing. After a while you will be able to ‘feel’ out the temperature by listening to your kettle or watching the steam rise. All of our teas are labeled with brewing instructions: the recommended ratio of loose tea to water; temperature of heated water; and steeping time. Use that as your starting guide and adjust tea amounts to your preferred taste.

1. 2. Add loose tea into infuser (see steeping chart for quantity of tea.)

Heat 4 cups of water in kettle to specified temp. (See tea label for instructions or steeping chart). Fill pitcher halfway with hot water.

3.

Attach tea infuser into the lid. Lower it into the water. Twist the lid partially closed, allowing steam to vent. Reference chart for length of brewing time.

4.

Remove the tea infuser. To avoid drips, rest the tea infuser in the infuser stand. Add sweetener if desired.

5.

Fill the pitcher to the top with ice and seal lid airtight. Shake for about 30 seconds or until ice has melted.

6.

Twist the lid open, aligning the arrows with the pour spout. Pour over ice and ENJOY!

TEA & FOOD PAIRINGS

People have constantly sought out the right beverage to pair with their favorite foods. Whether a fine red wine paired with a steak, a craft beer with a burger or even a coke with pizza, this is something that is done all the time! As tea grows in popularity once again, there is a movement to expand the typical beverages to include tea.

Black Tea is generally the strongest taste out of all the teas and contains the most tannins. However, there are different black tea flavor notes that should be considered when pairing your meal, such as fruity, flowery, smoky and earthy. Fruity and flowery black teas are often best served with a light dessert. The fruit flavor prevents the tea from tasting too bitter after a bite of sweet dessert. The heavy presence of tannins in the black tea will cleanse the palate of the existing flavor, allowing each bite of dessert to taste as good as the first. Smoky black teas are incredibly strong flavored and some people even consider the taste to be acquired. Lapsang Souchong and Russian Caravan are both examples of heavy black teas smoked over pine needles. Since the flavor of this type of tea is so strong, it is normally recommended to serve it with equally strong foods such as heavily spiced meat, blackened chicken and BBQ. And, contrary to what one might assume, these teas also pair well with chocolate. Earthy black teas, such as Ancient Forrest and Nine Bend Black Dragon are similar to smoky black tea in several ways and also pair well with meat, BBQ and blackened foods.

Pu-erh teas also have earthy characteristics and pair well with the same foods as earthy black teas. But they also are delicious with fried foods and are known to help “cut the grease’ and aid in digestion after a heavy meal.

Green Tea is more subtle than black tea, due to its light flavor. It can easily be overpowered by stronger foods. Green tea flavors can vary from vegetative, smoky to fruity. Vegetative green teas are the characteristics of Japanese green teas, such as Sencha or Gyokuro. These teas are best paired with seafood or light vegetables. Fruity green tea is in many ways the exact opposite of fruity black tea. Fruity green teas should not be served with desserts; instead the subtle flavors combined with fruit make an ideal pairing with light chicken and vegetable dishes as well as light sandwiches, such as chicken salad. Smoky green teas include mainly Chinese green tea options, such as Pinhead Gunpowder. While these teas are still subtle in flavor, like all green teas, the light smokiness pairs well with fried foods. Frequently this type of tea is served with pan fried meat or stir fry.

Oolong Tea can vary between green and black tea profiles, green being a lighter tea. Light Oolongs often have floral notes and a rich flavor profile, similar to green tea without the grassy notes but without the tannins found in black tea. With a light oolong, rich or sweet seafood, such as crab, lobster or scallops make a nice pairing. These teas also go well with lightly salted items such as crackers. Try pairing with Iron Goddess of Mercy. Dark Oolongs, sometimes called “heavy oolongs”, are similar in chemical makeup to the light oolong, but due to the longer oxidation periods make these teas the perfect pairing to oily fish or grilled foods, such as trout, salmon and grilled meats.

Rooibos Tea is naturally sweet with a slight nutty finish that lingers in the mouth. Try with your favorite dessert, such as bread pudding, carrot cake, scones and cookies!

The choice is yours... While the recommendations made here are what we know to be good selections, the art of pairing tea with food is still being explored and can be an individual preference. Experiment with what you like and most of all, have fun with your taste selections!

TEA & CHEESE PAIRINGS

While people have enjoyed cheese and wine paired together for a significant number of years, there is new information that suggests selecting a tea to pair with cheese will offer the same flavor enhancement as wine pairing, but more often the right pairing will elicit what is called the elusive “third flavor” that is often sought from food and beverage pairings. The idea of pairing teas with cheeses makes sense for two key reasons; the first is that tea and wine share some very common elements. Both tea and wine are high in tannins, tea is naturally astringent, and there are even some teas that are aged in a specific way like fine wine. With the same flavor characteristics, is it any wonder that more and more people are finding cheese and tea just go together? The second reason is based off of what tea is commonly paired with; scones with clotted cream. Clotted cream is not much different than cheese, and if the majority of people believe that a heavy black tea with clotted cream covered scone is utter perfection, then it makes perfect sense that teas that are balanced to go with specific cheese would also be divine. Cheese and Tea Combinations Paring tea and cheese is a complicated endeavor due to the complex nature of both tea and cheese. However, once you sample a few, you may find such an excellent flavor combination akin to your favorite comfort foods. Bleu Cheese such as Gorgonzola, Maytag, Roquefort, Bleu, Brie or Stilton all share buttery qualities and are often saltier than most other cheeses. The firmness of the cheese adjusts the flavor of the cheese, with a firmer cheese offering a stronger flavor and a softer cheese offering a lighter taste. Whether the cheese is lighter or stronger, the creamy, fatty and salty flavor often pairs well with black teas. Frequently Lapsang Souchong is recommended for the stronger bleu cheeses as to not overpower the unique flavors, while teas in the Earl Grey family will often be recommended paired with the lighter, softer bleu cheeses. With either a mild or intense Bleu Cheese, you can’t go wrong with a cup of Darjeeling tea. Semi-Soft Cheese such as Muenster, Monterey Jack and Fontina do not necessarily have a specific flavor, with some being quite pungent and others mild in flavor. Regardless of the type, the combination of the texture and flavor undertones that all of the semi-soft cheeses have means that they all pair well with both sweet and vegetal flavors. Teas that are vegetal in nature will normally be green teas, such as Sencha and Gyokuro. To mix the vegetal flavor with the sweetness that will really pronounce the pungent flavor of semi-soft cheeses, pair with fruit flavored green teas. Soft Cheese mild, creamy and very light in color, these cheeses can be either fresh or ripened, which all alter their flavor profile a bit. However, in the end, the soft cheeses all share similar characteristics. True aficionados of soft cheese recognize its light flavor and seek to not overpower it. There are others who, in addition to not wanting to overpower the cheese, will want to enhance it with a fruit flavor. Because the flavor is so light, anything other than white tea is likely to be very overpowering. Aged Cheese while all cheese is aged, there are some that get a unique flavor that comes from aging longer than other cheeses. Frequently, the cheese must be aged longer than 6 months, and the aging must be done in a cellar or a cave to qualify as aged. Aged Cheddar, Parmesan and Romano are examples of hard aged cheeses. The best teas thought to be paired with aged cheese are Pu-erh teas. It makes sense as Pu-erh tea is the only type of tea that is aged and slightly fermented. More Choices… all of the tea and cheese pairings that are recommended are suggestions that others have found to be good choices for themselves. However, if you try these options and find they simply do not work for you, then feel free to experiment with various combinations. Host a party and serve up various teas and cheeses and see what combinations you and your guests like best! Try it once and we can guarantee you will start searching for more combinations of tea and cheese to entice your taste buds.
