BBQ Sauce Whether you’re serving up chicken, pork, brisket or ribs, picking a solid barbecue sauce helps put extra points on the board. VINEGAR Mop Sauce: More of a baste than a sauce, East Carolina’s mop sauce should be “mopped” onto the meat while it cooks – typically with an actual tiny mop head. Essentially just vinegar and hot sauce, mop sauce adds a peppery acidic punch to the meat – especially pulled pork and ribs. Tomato-Based Sauce: Also called Kansas City sauce, tomato-based sauce has a sweeter taste thanks to brown sugar or molasses. PRO TIP: When using tomato-based sauce, add to your meat just before serving. Add it too soon and the sugar will burn from the fire! Mustard Sauce: Hailing from South Carolina, mustard sauce is a killer combo of yellow mustard, brown sugar, apple cider vinegar and spices. Mustard sauce best pairs with pork and is usually added just before serving. Texas Style Sauce: Texas is serious about two things – football and barbecue. Texas sauce is tomato or ketchup based and uses spices like chili powder and paprika to make it more spicy than sweet. A good compliment to beef brisket, Texas sauce should be served on the side.

Use a telescoping flagpole with your team’s flag or colors to use as a landmark to help your tailgating team find your set-up!

If you’re grilling, bring a fire extinguisher. If you’re using charcoal, make sure the coals have cooled before disposing of them.

Make sure to have plenty of ice in your cooler to keep your meat cold before grilling. Extra point – Use the ice to keep the leftovers cool so you can enjoy after the game.

Drink responsibly! Have a designated driver and make sure to stay hydrated or you’ll end up on the sidelines before the game begins!

Pre-game your pre-game with these Make-ahead Sides! True to their name, these are some of our “best ever” recipes. They are easy to prepare and they taste great! “Best Ever” Potato Salad 3 pounds russet potatoes, chunked and cooked Salt and ground black pepper to taste 4 cup light or regular sour cream 4 cup regular, light or gluten-free mayonnaise 3 cup mixed chopped herbs such as parsley, basil and thyme 2 tablespoons lemon juice 2 ribs celery, chopped Gently toss potatoes with sour cream, mayonnaise, herbs, lemon juice, celery, onion, salt and pepper. Cover and chill before serving.

Pro Tip: For a healthier potato salad, toss in seasonal veggies like carrots, broccoli or spinach. “Best Ever” Pasta Salad 1 tablespoon extra virgin olive oil 2 yellow squash or zucchini, cut on the diagonal into 5-inch slices 2 red bell peppers, cored, seeded and quartered 12 ounces fusilli pasta, cooked, drained and cooled 2 cups baby spinach leaves 6 ounces fresh mozzarella, cut into bite-size chunks 1 cup grape tomatoes, halved 1 small red onion, thinly sliced 2 tablespoons chopped basil 5 cup balsamic vinaigrette 3 teaspoon sea salt 5 teaspoon ground black pepper Preheat grill to medium heat. Brush squash and peppers with olive oil and grill, flipping once, until just charred in parts and tender. Transfer to a plate as done and set aside to let cool. Cut into bite-size pieces. In a large bowl, toss grilled vegetables with pasta, spinach, mozzarella, tomatoes, basil, vinaigrette, salt and pepper.

Pro Tip: Mix everything but the grilled veggies at home, then on game day toss in your freshly-grilled veggies!

“Best Ever” Baked Beans 3 slices nitrate-free bacon, roughly chopped 1 tablespoon extra virgin olive oil 1 large yellow onion, chopped 1 tablespoon tomato paste 5 cup light brown sugar 2 tablespoons molasses 5 teaspoon chipotle chili powder, more to taste 1 teaspoon dry mustard 1 tablespoon apple cider vinegar 6 cups cooked white beans 1 cup low-sodium chicken broth, plus more Preheat oven to 325°F. Cook bacon in a large, oven-proof skillet over medium heat until it starts to release its fat. Add olive oil and onions and cook until translucent and soft, 5 to 7 minutes. Stir in tomato paste, sugar, molasses, chili powder, mustard and vinegar until well combined and cook for 1 minute. Add beans, broth, salt and pepper and stir gently to combine. Cover skillet tightly with a lid or foil and bake for 1 hour. Remove lid, add more broth if needed to moisten beans and continue to bake, uncovered, until top is browned and bubbly, about 30 minutes more.

Pro Tip: Prefer it hot? Use your

grill’s side burner to reheat quickly.
