Making Matcha 1. Add between 1/2 and 1 teaspoon of Matcha powder into a bowl. 2. Add a few drops of cold water and use a fork or whisk to whisk the powder into a smooth paste. Don't add too much cold water here, just enough to make it into a paste. 3. Then add about 100ml of 80C water. To get 80C water, boil your kettle and wait for two minutes to add the water to the Matcha. 4. Then you need to whisk the tea. Whisking in a "W" shape, not too vigorously until a froth appears. This is where you will need to practice because the temptation is to whisk too hard. I've found tipping the bowl at a slight angle seems to help get better froth - but I'm still learning at this. 5. And then, enjoy. The best stage of making tea.

Matcha Lattes 1. Make the Matcha as before.

Eteaket now has two types of Matcha. the Mighty Matcha is very pleasant and subtle but has a lovely nutty aftertaste. Their new Matcha, Ceremonial Matcha, has a sweeter taste but still with that nutty taste.

2. Whisk up some heated milk (you can do this with cold milk as well). This should be about 2/3 of the cup, and I've found that Soya Milk tastes the best. But try and experiment with types of milk. Also, try sweetening the milk with either sugar or honey. 3. Add the milk to the Matcha Tea. You can even sprinkle some Matcha powder on the froth for aesthetic looks. 4. Drink. And repeat...

Right now in society, one of the big taboo areas is gender identity. Many people feel that you are either a man or a woman, and whilst we are getting further with acceptance of transgender with examples like Chelsea Manning, transphobia is still out there. And there is further questioning of gender identity with things like non­binary, where someone seems themselves as neither female or male. People are questioning gender.

But I think it strikes at the heart of why the show is so amazing. The Doctor never judges the human race or his companions based on gender, hair colour, looks, sexuality etc but on what they do. Doctor Who is a show that talks about loving everyone for who they are, and that acceptance of the character.

Look at Eteaket's website. They describe the tea as "Our Gyokuro is our favourite green tea here at eteaket HQ, deep, dark and mysterious". That's one hell of a tag to live up to. At Eteaket's tea shop, I ordered a pot of Gyokuro and once it had brewed, I began the tasting with the first stage, smelling the leaves. There was an interesting smell, something my wife described as "like seaweed"

The first sip is full bodied and enjoyable, but the aftertaste is where the key is. The tea has a fruity taste and the distinct taste that reminded me of grapes. There is also a floral tone. This is a smooth tea, one that I think everyone should be able to enjoy. The flavours are not strong or overpowering but are pleasant.

So, brew the tea, lie back and just sip the tea. It is not a strong tea, and if you drink large gulps, you won't fully appreciate it. Each sip is a sweet delight and it reminded me of warm spiced apple punch. Even when the tea started to cool down, the taste remained and was one that I still appreciated.

And the challenge for a tea of this nature is that the two main tastes are on different sides of the spectrum – lemon is bitter whilst ginger is spicy – and yet the combination is absolutely delightful.

Bill's entrance into the TARDIS is by far my favourite of all time – beating Amy Pond's in the Eleventh Hour. How the camera pulls back into the console room that is in darkness and then lights up is beautiful and her face when she realises where she is, brilliant. The use of 'The Sad/Madman in a Box' accompanying the Doctor when he describes the wonders of the TARDIS, how it falls silent when Bill thinks she's in an extension is a perfect example of how the show uses music cleverly.

What is astonishing re­watching the series now, was how wrong I was. The Pilot felt like a stripped­back opener. Yet, now, it is brimming full of ideas and plot points that would be explored throughout the series.

Capaldi has a fabulous speech at the end as he leaves his final word to the upcoming Doctor and like Tennant's and Smith's goodbyes, there is the case of breaking the fourth wall, in terms that it is almost Capaldi saying the final words, rather than Twelve. And it is also right that his goodbye features a conversation with the TARDIS, after all, it feels that under his time, the TARDIS has been more of a living creature than before.
