Tonight, we’re taking you 10,000km south as we explore the unique flavours and varietals of South American wines! People have been sipping cider for over 2000 years and this ancient beverage is once again gaining popularity as a glutenfree alternative to beer! At our Ciders for Fall class, we’ll be celebrating the autumnal harvest of the incredible fruits that make ciders so special. We guarantee that you’ll find the perfect fall beverage.

The phenomenal wines of Spain and Portugal have long been captivating wine enthusiasts. THURSDAY, OCTOBER 3 Bourbon Master Class 7-8:30pm $35 Style: Seated Tasting, Non-Reserved Seating Bourbon has its roots in 18th century Kentucky, though accurate details of its beginnings are a bit hazy! Join us on a journey back in time to discover the humble, if somewhat illegal, origins of ‘America’s Whisky’ by tasting a lineup of extraordinary top-shelf bourbons.

CHICKEN PAILLARDS WITH AVOCADO AND POMEGRANATE SALSA By Meiko Pennock For the Chicken • 4 4-6 oz. boneless, skinless chicken breast halves • 1/3 cup fresh lemon juice • 3 tbsp. extra virgin olive oil • 1 tbsp. pomegranate molasses • Kosher salt and freshly ground black pepper

For the Salsa • 1 large lemon • 1/2 medium pomegranate • 3 small scallions, white and light-green parts only, thinly sliced • 2 medium firm-ripe avocados (6 to 7 oz. each), pitted, peeled and cut into 1/4 inch dice • 2 tbsp. extra-virgin olive oil • 2 tsp. chopped fresh flat-leaf parsley • 1 tsp. finely diced seeded jalapeño • 1 tsp. pomegranate molasses • Kosher salt

Prepare the Chicken Pound each chicken breast between pieces of plastic wrap and wrap until about 3/8 inch thick. In a shallow bowl, stir the lemon juice, 2 tbsp. of the olive oil, pomegranate molasses, 3/4 tsp. salt, and 1/4 tsp. pepper. Add the chicken, turn to coat well, cover, and refrigerate for at least 20 minutes and up to 1 hour. Make the Salsa Finely grate the zest from the lemon and then squeeze 1 tbsp. juice. Pick the seeds out of the pomegranate, discarding any pith, and put them in a bowl. Add the lemon zest and juice, scallions, avocado, olive oil, parsley, jalapeño, pomegranate, molasses, and 1/2 tsp. salt. Cook the Chicken Heat 1/2 tbsp. of the olive oil in 12-inch skillet over medium heat. Add 2 of the chicken breasts and cook until lightly browned, about 3 minutes. Flip and cook until lightly browned on the other side and cooked through, about 3 minutes more. Transfer the chicken to a plate and cover to keep warm. Repeat with the remaining 1/2 tbsp. oil and 2 chicken breasts. Serve the chicken with the salsa spooned over the top. 3 | WILLOW PARK WINES & SPIRITS

Procedure 1. Toss washed tomatoes with chives and garlic and olive oil. 2. Mix cream with goats cheese and spread over tomatoes. 3. Sprinkle bread crumbs and Parmesan cheese on top. 4. Bake in 350 degree oven for 15 minutes.

Now that it’s Fall, we’re switching our t-shirts for sweaters, sunglasses for toques, and flip-flops for boots. We’re also trading our summer sips for some autumn friendly ales! At this class, we’ll be tasting brews from around the world that are perfect for the cooler days of Fall.

Choosing a menu for Thanksgiving is easy; you’ve got your classic turkey, stuffing, cranberry sauce, and pumpkin pie. Finding something to pair with these decadent foods should be just as simple! We’ll be serving up tips and tricks on how to pair beverages with every Thanksgiving course, guaranteeing your place as the host with the most!

WEDNESDAY, OCTOBER 9 Whisky & Chocolate 7-8:30pm $25 Style: Seated Tasting, Non-Reserved Seating We’re taking indulgent pairings to new heights at our Whisky & Chocolate pairing class! These two sumptuous treats have complex yet complementary flavour profiles, creating unexpected taste sensations when perfectly paired. THURSDAY, OCTOBER 17 Rum 101 7-8:30pm $20 Style: Seated Tasting, Non-Reserved Seating We’re whisking you to warmer climates as we explore the origin of rum! During this introductory class, you’ll learn about the spirits ancient origins, distilling process, and its importance in North America’s history. You will leave with a new appreciation for both the taste and traditions of this sugarcane based spirit.

Ingredients • ½ cup cream • 5 ounces soft goat cheese, plain or garlic and herb seasoned • ¼ teaspoon freshly ground black pepper, or to taste • 2 tablespoons extra-virgin olive oil • 1 pound mini-tomatoes, such as grape, teardrop, or cherry tomatoes • ¼ cup chives, chopped • ¼ cup fine dried bread crumbs, preferably garlic-herb seasoned • 2 tablespoons freshly grated Parmesan or Romano cheese • 1 clove garlic, minced • About ¼ teaspoon salt, or to taste • Freshly ground black pepper

This festival will be your opportunity to sample unique brews from iconic beermaking regions, and hopefully discover new favorites to add to your fridge! Whether you’re a beer beginner or a buff, there’s something for everyone at this festival!

THURSDAY, NOVEMBER 7 Exploring Italy 7-8:30pm $15 Style: Seated Tasting, Non-Reserved Seating

Revel in decadence with an evening of Port and pairings! Cynthia Opsal, Brand Ambassador of The Fladgate Partnership, will be our host as we taste our way through a diverse lineup of fortified wines with delicious complementary cheeses and chocolates. The evening’s reception will commence with the classic Portuguese aperitif White Port and Tonic, followed by six incredible Ports including the Fonseca Bin 27, the Taylor Fladgate 20 Year Tawny, and the 98pt Fonseca Vintage Port 2016.

Home to over 350 grape varieties, Italy has secured its place as the top wine producing country in the world. Tonight, we’ll be teaching you about the classic Italian wines that consistently inspire and wow connoisseurs around the globe!

THURSDAY ,OCTOBER 24 Halloween Pairings 7-8:30pm $15 Style: Seated Tasting, Non-Reserved Seating We already know that you’re planning on stealing some of your kids Halloween candy next week, so why not put an adult spin on your overindulgence! We’ll be pairing Rockets, mini chocolate bars and other classic candies with a variety of beers, wines, and cocktails. This class is no tricks, just treats!

THURSDAY, NOVEMBER 14 Beer and Cheese 7-8:30pm $20 Style: Seated Tasting, Non-Reserved Seating Funky, nutty, ripe, bitter, acidic, creamy; Are we describing beers or cheeses? These complex flavours are more complementary than you might think! At our Beer and Cheese class, we’ll teach you how to expertly pair these punchy treats. SATURDAY, NOVEMBER 16 Italian Wine Festival 7-9pm $25 Style: Walkabout Festival, Food and Tasting Stations, No Seating It’s time to experience la dolce vita as we toast to the delicious and diverse wines of Italy at our Italian Wine Festival! We’ll be taking the scenic route through the Italian countryside, tasting the best wines from each of Italy’s unique winemaking regions. From the bubbling Proseccos of Veneto to Sicily’s noble Nero d’Avalo grapes, it’s no wonder that the Italians are known for their love of wine! Cin cin!

CIDER BEER SANGRIA Enjoy this recipe with Scott’s tasty pairing recommendations!

Ingredients • 2 (12-ounce) cold bottles hard cider • (Flatlander Crossmount Gold Cider) • 1 (12-ounce) cold bottle wheat beer (Konig Ludwig Wheat Beer) • 1 1/2 cold cups apple cider • 1 cup cold ginger ale, or ginger beer if you want it to have more of a bite • 1/2 cup apricot brandy (Bols Apricot Brandy) • 2 apples, sliced • 2 pears, sliced • 2 oranges, sliced • A handful of cinnamon sticks • Cinnamon sugar for the rim, if desired Instructions Add all of the fruit and cinnamon sticks to the bottom of a large pitcher. Add the hard cider, beer, apple cider, ginger ale and brandy together and stir gently. If you’d like, rim the edge of a glass with an orange wedge and dip in the cinnamon sugar. To serve, pour the sangria over extra fruit and ice. Unlike regular sangria, I don’t let this sit overnight since we’re using the beer and it’s carbonated and fizzy. Also, as note, taste your sangria before serving. The sweetness level will depend on the beer you use along with the cider! If you need a touch of sweet, I’d go with some maple syrup stirred in.

WEDNESDAY, NOVEMBER 20 Guess the Expensive Spirit 7-8:30pm $20 Style: Seated Tasting, Non-Reserved Seating As the saying goes; ‘don’t judge a spirit by the price!’ We’ve taken one of our most popular classes and added a brand-new twist! This time, you’ll be led through a blind tasting of spirits, deciphering which is the most and least expensive in the flight. It’s up to you to decide whether the price is justified by the quality, and vice versa!

GRILLED RAINBOW PEPPERS

The peppers in this dish will dance with the complex and vibrant Gérard Bertrand Côte des Roses Rosé - one of Peggy’s favourites!

Ingredients • 1 garlic clove, minced • ½ lemon • ½ tsp (2 ml) salt • ¼ tsp (1 ml) ground black pepper • ¼ cup (50 ml) olive oil

Preparation: 15 minutes Grilling Time: 6 minutes Servings: 6 to 8 servings

• 1 cup (250 ml) fresh basil, coarsely chopped

• 3 each red and yellow peppers • 1 tbsp (15 ml) olive oil • ½ cup (125 ml) crumbled feta

Directions Place garlic in a blender. Squeeze in 1 tbsp (15 mL) juice from lemon. Add salt, pepper and ¼ cup (50 mL) oil. Blend until mixed. Add basil. Puree to a saucy consistency. Use right away, or cover and refrigerate up to 2 days. Bring to room temperature before using. Oil grill and heat barbecue to medium-high. Slice peppers into quarters. Place peppers in a large bowl. Drizzle with 1 tbsp (15 mL) oil. Toss to evenly coat, then place on grill. Depending on size of grill, you may need to barbecue in two batches. Barbecue with lid closed until peppers are lightly charred, turning often, 6 to 8 minutes. Remove peppers to bowl as they are done. Evenly drizzle basil sauce over top and toss peppers until well coated. Place on a platter, then scatter feta overtop. Delicious warm or cover and leave at room temperature up to 3 or 4 hours. WEDNESDAY, NOVEMBER 27 Fancy Cask Finishes 7-8:30pm $20 Style: Seated Tasting, Non-Reserved Seating Have you ever wondered how whiskies develop distinct, complex flavours? It’s all in the finishing, a process in which spirits spend time in one cask before being transferred into another for secondary maturation. These casks are typically infused with flavour from previous use, allowing unique flavours to diffuse into the whisky. If you think you’ve tried everything when it comes to whisky, we can’t wait for you to discover new and unique flavours of fancy cask finishes!
