Skid Road: An Informal Portrait of Seattle Murray Morgan

A humorously engaging narrative of Seattle history and the city’s first century.

Beecher’s famous Mac & Cheese at Home Ingredients: 6 ounces penne pasta 2 Tablespoons unsalted butter 2 Tablespoons + 2 teaspoons all-purpose flour 1-1/2 cups milk 1/4 teaspoon Kosher salt 1/2 teaspoon chipotle chili powder 1 pinch garlic powder 8 ounces Beecher’s Flagship cheese, grated (2 cups) divided 2 ounces Just Jack cheese, grated

Directions: 1. Preheat oven to 350°F. 2. Cook penne pasta 2 minutes less than package directions. Rinse in cold water, set aside. 3. Melt butter in a heavy-bottom saucepan over medium heat. Whisk in flour, then continue to whisk and cook for 2 minutes. Slowly add milk, continuing to whisk. Cook until sauce thickens, about 10 minutes. Stir frequently. Remove from heat. 4. Add 1-3/4 Flagship and 1/4 cup Just Jack cheeses, salt, 1/4 teaspoon chili powder, and garlic powder to the sauce. Stir until cheese is melted and all ingredients are combined, about 3 minutes. 5. Combine pasta and sauce in a large bowl. Mix carefully. Scrape into an 8-inch baking dish. Sprinkle with remaining cheese and chili powder. 6. Bake, uncovered, for 30 minutes. Let sit for 5 minutes before serving.

While exploring Pike Place Market, it’s common to see folks lining up at some iconic spots. Favorites include the original Starbucks for a cup of coffee, Pike Place Chowder for their legendary soup in bread bowls, or Beecher’s Handmade Cheese for a taste of cheesy goodness. Can't make it to the Market this month? Use the copycat recipe above to have a little taste of the Northwest at home!
