Pam’s Kitchen in Seattle’s Wallingford neighborhood began as Pam’s Snack Shack in owner and chef Pam Jacob’s native country of Trinidad. Pam moved to Seattle in 1994 and started booking catering gigs with her housecleaning clients and friends. After years of glowing reviews, she opened her first restaurant in 2006. To this day, Pam’s serves a full menu of uniquely Caribbean dishes and refreshments that will fill your senses with new flavors and aromas.
After visiting his wife’s family in Japan, Harold Fields fell in love with a particular type of Tokyo street food: yakitori. This grilled poultry dish became the inspiration for his restaurant Umami Kushi, tucked away in Seattle’s Rainier Beach neighborhood. Locals have fallen for the bold flavors found throughout Fields’ menu just as the yakitori in Japan grabbed hold of his palate. Order the okazu pan, the curry, and the salmon bacon and potato pan for a flavorful experience you won’t soon forget. Umami’s other can’t-miss dishes: jerk chicken, beef curry, and smoked salmon.
Chef Kristi Brown has had just about every job imaginable in the restaurant industry. After being a dishwasher and prep cook for years, she eventually ran her own catering business for a decade before stepping into leadership roles for multiple restaurants. Her restaurant Communion is the culmination of all her career experiences, offering a menu of soulful cuisine rooted in traditional American soul food with a flair for innovation. Must-try dishes include the gumbo, jambalaya, shrimp toast, and neck bone stew. Brown says that Communion is “a nod, an acknowledgement, an homage to where I come from.”

Did somebody say “catfish”? Since 1985, the Jackson family has been serving Seattle’s Central District neighborhood with fresh catfishinspired dishes you simply won’t find anywhere else in the city. Opened in 1985 by Woodrow and Rosemary Jackson, the original Catfish Corner served happy customers for decades before being sold in 2009. Fast forward to today, and Terrell Jackson (son of Woodrow and Rosemary) has the business up and running again, ensuring the Jackson family name will remain synonymous with delectable catfish fare for years to come.
The Mama Sambusa story began in Somalia in 1996, when founder Marian Ahmed left the country in hopes of starting her own restaurant. Since 2009, Ahmed has passionately served Seattle with delicious food representative of Somali culture. Her Sambusa, a fried East African treat, comes with beef, chicken, salmon, or lentils. All menu items are 100% Halal, bursting with flavors that make for a truly special meal. Next time you’re passing through Rainier Valley, don’t forget to make a pit stop for some Sambusa!
What does it take to start serving Southern barbecue cuisine? For Orlando’s Southern BBQ CEO Ms. Jackie, all it took was two cast iron pots and a tent. In 2013, that was all the equipment Ms. Jackie had to start serving barbecue to the fine folks of Oak Harbor at farmers markets and local events. Little by little, tell of Ms. Jackie’s brisket, ribs, and burgers spread, evolving into a food truck business in 2017, then a brick-andmortar restaurant in downtown Oak Harbor in 2018. Today, Orlando’s is a hub for authentic Southern barbecue and live entertainment.

History: In 1937, Bruce Kehr and Don Adams had an
idea for how to share their love of the mountains with the people of the Pacific Northwest: install a rope tow to help people navigate the slopes. Once their first rope tow was completed, it didn’t take long for the crowds to descend, hiking their way to Stevens from the west and riding by bus from the east. As time went on, Kehr and Adams expanded their operation by installing additional lifts up the mountain, helping to make the pass a preferred destination among Washingtonian skiers.

Before you hit the mountain, make sure you’re prepared. Here are a few essential safety tips for your day on the slopes:

Wherever you are on the ability scale, Stevens Pass has guides who can help you, broken down into three categories: beginner, intermediate, and family. Beginner guides give you an overview of how to prepare and what to expect when you arrive for a fun day on the mountain. Intermediate guides fit those who have experience skiing and/or snowboarding but would like more information about the pass. And family guides accommodate those with children ages 12 years and younger.
Prepare: Resort cameras are available online to view
the conditions of the pass, but it’s always wise to research the weather forecast while planning your trip. A lift ticket gives you access to recreational activities on the mountain and is required for entry, even if you don’t ride a chair lift. Rental equipment is available onsite and comes with a complimentary gear check service so you can stow your belongings. Have fun hitting the slopes!
