Our Appellations at a Glance Located between 41° and 44° North, Ontario’s Wine Country is situated in the heart of the world’s fine wine zone. Stretching across 17,000 acres (6,900 hectares), our vineyards are made up of complex limestone-based soils created by glaciers thousands of years ago. Ontario’s appellations, geographically defined wine areas, benefit directly from their proximity to three of the five Great Lakes of North America, the largest freshwater system in the world. This unique combination of latitude, lakes and limestone is the foundation on which Ontario is making globally acclaimed wines.

Lake Erie North Shore Sunny days & Cool breezes • Ontario’s southernmost appellation benefits from warm temperatures and a long growing season • Long sunshine hours and the warm, shallow waters of Lake Erie afford excellent ripening conditions for full-bodied wines • This appellation includes Ontario’s newest sub-appellation, known as the South Islands, which includes well-known Pelee Island

Prince Edward County Lake winds & Stony soils • Ontario’s coolest appellation is a virtual island on the northeastern end of Lake Ontario with more than 800 kilometres of shoreline, including renowned Sandbanks Provincial Park • Stony calcareous limestone soils and a short growing season produce concentrated fruit resulting in wines with bright acidity and distinct mineral character

If there were to be a “most famous” soil type for producing fine wine, it would probably be limestone. Ontario’s soils in the Great Lakes basin vary from sand to clay to rock, with a high concentration of limestone from an ancient seabed that was exposed to over one million years of glacial activity. Ontario is one of the few wine regions in the world that is founded on limestone, similar to Burgundy and Champagne. Limestone nutrients and minerality produce a special lift and elegance in our wine.

Origin, Quality, Authenticity The Ontario Wine Appellation Authority (OWAA) sets and enforces the standards for the wine that’s made here. At OWAA, they’re appellation obsessed.

Origin Every VQA wine label shows where the grapes are grown – look for it between the VQA letters on the label. Ex: “VQA Twenty Mile Bench VQA.”

Quality The Ontario Wine Appellation Authority enforces winemaking standards and labelling integrity through a rigorous certification program that consumers can trust.

Our Signature Varieties Ontario produces most of the international varieties that you know and love. Our signature varieties, as well as examples of Sauvignon Blanc, Pinot Gris, Cabernet Sauvignon, Gewürztraminer, Merlot and Baco Noir, express Ontario’s distinctive terroir bringing the Ontario wine story to life. Sparkling – Bubbles on the Rise! Celebrate the everyday by popping open a bottle of VQA sparkling! Ontario’s cool climate and limestone soils produce some of the world’s best sparkling wines. Ontario VQA bubbly is incredibly versatile, so it’s easy to match with any cuisine.

TRADITIONAL METHOD • One of the most celebrated methods of crafting sparkling wine • Secondary fermentation takes place in the bottle > delicate bubbles, bright acidity • Aged on the lees (dead yeast cells) > bread-like or fine brioche aromas • Often aged in the bottle > complexity and depth

CHARMAT/CUVE CLOSE METHOD • Produces sparkling wines that are fresh, vibrant and fruit forward • Secondary fermentation takes place in large steel tanks • CO2 is produced from this reaction and released into the tank > crisp bubbles before the wines are bottled

ROSÉ WI NE S • Rosé can be crafted as fun & refreshing, soft & lush or crisp & structured • The pink hue comes from the short maceration (a.k.a. skin contact) before the grapes are pressed • Common varieties used are: Pinot Noir, Gamay Noir, Cabernet Franc and Merlot • Delicious to drink on its own and a great match with many foods

ORANGE WINES • Skin Fermented white wines, or orange wines, are made from white or pink grape varieties fermented on the grape skins for a minimum of 10 days • Orange wines have more tannin, in comparison to white wine, and often feature herbal notes and tea-like characteristics • Common varieties: Gewürztraminer, Vidal, Riesling and Chardonnay • Did you know? Ontario was one of the first regions in the world to establish a Skin Fermented White Wine category.

Icewine – Truly Canadian Luscious and luxurious, Ontario VQA Icewine has highly concentrated flavours made from grapes that have been left to freeze naturally on the vine. Ontario’s ideal climatic conditions set the stage for producing some of the finest Icewine in the world.

Internationally renowned, Ontario VQA Icewine is moderate in alcohol and has vibrant acidity that is in perfect harmony with complex rich flavours of apricot and passionfruit. • T he naturally dehydrated and frozen grapes are typically harvested between December and February • It must be -8°C or colder for both picking and pressing of Icewine grapes • The remaining juice, which is incredibly concentrated, sweet and rich, is then fermented to make Icewine

Ontario produces over 95% of Canada’s Icewine • V idal, Riesling and Cabernet Franc are the most common varieties • Gewürztraminer, Cabernet Sauvignon and Chardonnay are produced in small quantities • Ontario has been producing Icewine every year for over 35 years • Icewine is moderate in alcohol and medium to full-bodied, depending on the winery’s house style

Winemaking 101 Winemaking is an art – a delicious masterpiece in a bottle. Ontario VQA winemakers and vintners bring their passion and dedication to every bottle they craft. Visit your favourite winery and book a tour today to see the transformation from grapes to wine first-hand.

Journey of a Table Wine Starts Here Harvesting/Picking When the grapes are at optimal ripeness they are picked, often by hand, in order to choose the best clusters for the wine.

Sorting/Crushing Harvested grapes are then sorted to remove leaves or damaged berries. The sorted grapes are gently crushed to break the skins of the grapes or left whole, depending on the wine style.

Fermentation The fermentation process begins when yeast becomes active and starts to consume the natural sugars in the grape juice, and starts to convert them into alcohol. Depending on the wine style, this process may or may not include contact with grape skins.

Pressing Red Wines: After fermentation is complete and the desired colour and flavours are achieved the wine is gently pressed to remove the skins, seeds and pulp. White Wines: Immediately after the de-stemming/ crushing step the juice is gently pressed to remove the skins, seeds and pulp.

Bottling The wine is transferred into glass bottles, labelled and ready to enjoy!

Fining/Filtering The wine is sometimes fined and filtered to remove any unwanted particles. Some winemakers choose to skip this step, resulting in cloudier and oftentimes more “rustic”-style wines.

Aging

Some wines are aged in oak barrels to develop more complex and balanced flavours, others are aged in stainless steel tanks. This step will depend on the grapes used and how the winemaker wants the wine to taste. Aging can last from a couple of months to many years.

Sustainable Winegrowing Ontario Certified Wineries and vineyards committed to sustainability have taken their practice to the next level and are Sustainable Winegrowing Ontario (SWO) Certified. Wineries that produce Sustainable Winegrowing Ontario Certified wines are identified by the green leaf icon in the Wine Country Ontario Travel Guide. You will also find the green leaf icon on the back label of their certified sustainable wines.

ENVIRONMENT

Wineries that produce SWO Certified wines are audited annually on use and conservation of water, reduction in waste and wastewater and implementation of energy efficiency programs, including the use of sustainable power sources. They are also committed to preserving local vineyards for generations to come and being good stewards in land conservation.

W i n e Ta s t i n g 1 0 1 One of the best parts of visiting Wine Country is the tasting experience. Every winery is unique but here are a few guidelines to get the most of any tasting experience. And remember there are no “wrong” answers – tasting is subjective and a lot of fun!

SEE

Hold your glass up to the light and note the colour of the wine, for hints about the grape variety, age or vintage.

SWIRL

Gently swirl the wine to release the aromas, and see how it coats the glass.

SMELL

Stick your nose in the glass and take it all in. Think about the aromas you smell – from berries, to spice, to mineral notes.

SWISH

Let the wine contact every part of your tongue to maximize the experience. Is it sweet or dry? Light or full-bodied? What flavours can you identify?

SAVOUR

(or spit) – Take a few moments to reflect and enjoy. How does the wine “finish” – is it easily approachable or more complex? Remember that spitting isn’t considered rude, most wineries have spittoons for this purpose.

Wine Aromas: Fruity, Floral, Herbal, Spicy, Mineral, Sweet Tannin: The astringency or “chewiness” of the wine that comes from grape skins and/or oak barrels. Sweetness and Acidity: Natural to the grapes – acidity gives freshness and balances any sweetness.

Trending The world of winemaking is ever-changing and evolving. Here are a few terms you may have seen or heard but may not know what they mean. Have a question about a wine or wine style? Don’t be shy – ask one of our Wine Country Ontario VQA Ambassadors.

ORGANIC • Certified Organic uses 100% of grapes grown without chemical pesticides, herbicides or synthetic fertilizers • Compost, compost teas, green manure and cover crops are often used as fertilizer

BIODYNAMIC • Generally certified through Demeter Farm Standard • The guiding principle is that the farm is a living organism • Self-contained, self-sustaining, following the cycles of nature

VEGAN • Uses only vegetable-based alternatives (no animal products) for winemaking processes • Most wines are vegan-friendly but check with the winery • Several Ontario wineries are VegeCert certified

GLUTEN-FREE WINES • Most wines are gluten free, but check with the winery to confirm • Gluten can be used in the fining process, but this is rare

NATURAL WINES • “Natural” has no legally defined meaning or official certification or government regulations • Applies to wines made with the loose concept of “nothing added, nothing taken away”

HENRY OF PELHAM FAMILY ESTATE WINERY

Five generations of the Mowat family have farmed in Niagara; the last two are responsible for Harbour Estates, which has been growing grapes and making wine since 1999. Ken Mowat makes a wide range of affordable wines, with notable success for Riesling, Pinot Gris, a white blend called Sunrise and a red blend called Midnight. The winery backs onto the waterfront of Jordan Harbour. Lunch on the patio or picnics by the Harbour available late May to early October.

Brothers Paul, Matthew and Daniel Speck started planting vines in Niagara’s Short Hills Bench over 30 years ago. Nestled amongst the sprawling vineyards of the prestigious Four Mile Creek sub-appellation, Bella Terra Vineyards sits on a 50-acre grape farm that has been tended to by the Puglisi family since 1974. Our family-owned winery is headed by Luciano (Lou) Puglisi who draws on grape-growing knowledge and experience that has been handed down from one generation to the next. As you sip any one of Bella Terra’s wines, you are tasting three generations of grape-growing and winemaking experience.

Raised on their 50-acre family estate vineyard after immigrating from southwest Germany in 1998, Greg and Yannick Wertsch are farmers turned vintners. If travelling by car, it is best to secure the wine in a cooler or box and out of direct sunlight or extreme temperatures. If travelling by plane, ensure the wine is well secured in strong shipping packaging to avoid breakage.*
