When a serious family illness meant Annette Crichton-Walsh needed to spend more time at home, the qualified Goldsmith started making jewellery in her spare time. When Annette had collected more exquisite pieces than she knew what to do with, it became clear that she needed to find a way to sell some of her items and the House of Coco Fine Jewellery stall at the local Handmade in the Hunter Markets was born. HVMAG: Hi, Annette! Can you tell us how you got into Jewellery design?

Annette: I am a Fine Manufacturing Jeweller by trade after studying for my qualification at the Enmore Design Centre in Sydney. I always wanted to be a jeweller right from when I was in my late teens, but circumstances prohibited it, so I went to Newcastle Uni and completed a Bachelor of Arts in Graphic Design instead.

How and when did House of Coco come about?

I started House of Coco in January 2014. I had many ideas for pieces I wanted to handmake, and I already had a home workshop setup. It soon became obvious that besides selling my pieces online, I needed to get out into the world to sell some things. So, I started doing markets.

What types of jewellery do you produce?

I make and sell anything and everything jewellery related! From rings, earrings, bangles, bracelets, necklaces, anklets, hat pins, brooches etc. I love when people say, “Oh, this is perfect; I’ve been looking for something just like this forever!”

My top-selling product is probably my freeform heart pendant. Each is uniquely different as I make them freehand; they are available in sterling silver, gold or platinum. They make amazing gifts and can be worn alone or layered with other necklaces.

What materials do you use to create your pieces?

I use precious metals - Platinum, 18ct and 9ct gold, and sterling silver. Sometimes I use a combination of two or more. All of my products are handmade (except for the fine chains), so even the bangles and heavy chains are handmade.

Perched on the corner of Wine Country Drive and Broke Road at Lovedale in the heart of the vineyards, is one of De Bortoli’s most successful cellar doors, home to the weekly Hunter Valley Wine Country Markets and a must-visit destination with one of the most extensive wine lists in the valley. This is one cellar door that you can’t and shouldn’t miss.

The De Bortoli story is steeped in tradition, history and family, beginning in 1924 with the journey from Castelcucco, Italy (just north of Venice), of Vittorio De Bortoli to the NSW country town of Griffith, where he worked hard and was eventually joined by his fiancée Giuseppina. In 1928 there was a glut of Shiraz grapes, with many farmers choosing to let the fruit rot. The enterprising Vittorio took the fruit and made wine, catapulting himself and his family on an extraordinary trajectory and winemaking family dynasty that is still going strong almost a century later.

Each generation of the family has added to the growth and success of the business, with De Bortoli now producing wines from extensive

vineyards in the Yarra Valley, King Valley, Heathcote, Rutherglen, the Riverina where it all began, and of course, our own Hunter Valley. De Bortoli made the move into the Hunter Valley in 2002 with the purchase of the former Wilderness Estate in Lovedale. At the time, second-generation patriarch Deen De Bortoli had big plans for the estate, to replicate the success of the Yarra Valley operation. Sadly, almost at the time of opening the Hunter Valley cellar door and just after the 75th birthday celebrations for De Bortoli Wines, Deen passed away suddenly without fully executing his vision for the Hunter Valley estate.

When all of this was happening, Robert Travers was working as a chef. Robert grew up in Sydney, spent some time in Bowral and then headed to the Hunter Valley, where the peaceful, easy-going lifestyle and wide-open green spaces made him happy. He spent ten years at Kirkton Park with five years as Head Chef before spending another five years running the café at Peterson’s Champagne House (now Peterson House).

“One day, I’d just had enough of cooking,” said Robert.

“I literally walked across the road with my resume and handed it in to do some cellar door work at De Bortoli’s. That was sixteen years ago, and now I’m running the place.”

It was around 2012 that De Bortoli’s decided to close the winery and lease it to Gundog Estate. The vineyards grow Chardonnay, Shiraz and Merlot (which is used to make Rosé), with local single vineyard release wines still being produced under the Regional Ultimate label, only available from the cellar door.

The Chardonnay is lightly oaked and quite unique. The Shiraz is a lighter style and reflects the vintage, whilst the Rosé is a tremendously dry style, pale in colour and reminiscent of Southern France Rosés. What fruit doesn’t get used is sold locally to First Creek and Gundog Estate. The main focus of the Hunter business has become the cellar door and the creation of it as a destination in its own right.

“When I started here, our liquor licence was restricted to what we produced here. Once we obtained a retail liquor licence, it was a game changer and opened up the opportunity to stock the full De Bortoli range. We now have at least 200 different wines representing around 50 labels.

“It’s a very competitive market here in the Hunter Valley, and it’s critical to stand out, offer something for everyone to enjoy, and become a destination that people seek. I believe we’ve done that here and although we may be the smallest component of the company, we’re the most profitable cellar door!

“The covid pandemic forced us to change how we thought about the business. Before the pandemic, people would jostle for positions at the counter. Suddenly we had to have social distancing. We extended the licencing boundaries so that people can enjoy a drink in the big courtyard and over the entire property.”

Tastings are available 10am to 5pm daily with tastings for just $5 per person, which is redeemable on the purchase of a bottle of wine (excluding special offers). Tastings take place surrounded by the barrel artworks of talented De Bortoli cellar door team member Chloe James who creates her colourful and quirky artwork in chalk with representations of everything the Hunter Valley has to offer.

Visitors can enjoy a selection of local and imported cheeses, a variety of olives and charcuterie items to compliment the De Bortoli wine-tasting experience from Roberto’s Gourmet Dispensa, which is open seven days per week. There’s also a fine selection of gourmet Mediterranean F

produce available for takeaway purchase for those looking at a night-in during their Hunter Valley stay or to take home with them.

“Robertos has only been open for six months,” said Robert.

“We thought the name sounded better than Bob’s Pantry! It’s a wonderful addition, and we find people stay longer, seated around their barrel with family and friends. There’s plenty of space, and we’re happy for people to stay as long as they want.

And if wine is not your thing, De Bortoli’s have you covered there, too, with a selection of beers from local brewer Maltnhops or one of their new range of cocktails in a can by luxury brand Curatif, offering everything from Espresso Martinis, Amaretto Sours, Negronis, Margaritas and more.

Robert and his team ensure that visitors always have something more to enjoy. Possibly the highest profile of these attractions is the Hunter Valley Wine Country Markets which have been on site for just over ten years, every Saturday, weather permitting, plus Sundays during school holidays and long weekends. There are between 35 and 50 stall holders from 9am to 2pm.

In keeping with Robert’s background as a chef and his passion for food, De Bortoli’s Hunter Valley has teamed up with BBQ Cooking School to offer BBQ cooking classes which have been running for four years on most Saturdays with a morning and afternoon class, usually with 10-20 people per class. It’s a hands-on cooking class where participants get to eat what they cook, ending the three-hour lesson with a visit to the cellar door to enjoy some wines. There are eight different themed classes from American Smoking BBQ, Middle Eastern, South American, Seafood BBQ and even a Christmas BBQ. The menus sound delicious with the American Smoking BBQ, for example featuring favourites such as Bacon Wrapped Jalapeno Poppers, Smoked Baby Rack Ribs with Apple Bourbon BBQ Sauce, Texas Style, Smoked Low and Slow, Bass Strait Brisket Smoked Corn with Jalapeno and more.

The latest attraction at De Bortoli’s Hunter Valley is the renowned Pinot and Picasso Paint & Sip art classes popular with groups. There is an array of wine and beer by the glass and cocktails for the artists to sip on whilst creating their masterpieces. Charcuterie items from Robertos are available for nibbling while learning how to create art.

Vittorio De Bortoli probably never could have imagined the success his family would reap from his hard work and vision all the way back in 1928 when he made his first wine. With so many activities to enjoy at the Hunter Valley estate as well as an extensively stocked cellar door, there truly is something for everyone to enjoy. Recently taking out three silver medals in the San Francisco World Spirits Competition, Small Mouth Vodka is proving that its signature shimmer is ready to take on the world. Their expanding range of spirits with edible glitter is proving popular with all ages, and the businessmen behind the brand are riding a tidal wave of demand.

The story of Small Mouth Vodka begins in 2014 when the previous owners of the brand, Chris Payton and Rohan Rivett, launched after being inspired by a visit to the distilleries of Scotland. On a mission to create a vodka with an Australian personality, they created a spirit with character and purity that enjoyed some success. Fast forward to 2019, and new owners, Peter Clarke and Paul Addis, with their savvy innovations, have turned the brand on its head.

Peter Clarke is no stranger to success. With a background in accounting, law and economics, he has enjoyed a diversified career in various business enterprises, including Hunter Distillery, Hunter Valley Chocolate Company and The Garden Cellars at Hunter Valley Gardens, which he still owns and runs today. The Small Mouth Vodka Cellar Door is located right next door to The Garden Cellars.

“The existing business of Small Mouth Vodka enjoyed a modest turnover,” said Peter.

“It wasn’t enough to continue with it, but when provided with the opportunity to take it on, I contacted Paul, and we bought it together.”

Recently hailed as the Willy Wonka of vodka, Paul Addis has spent his career working in the alcohol industry – beer, wine and distilled spirits. He worked at Tyrrell’s for ten years, and when he went into business with Peter, it provided the perfect opportunity to work alongside his partner

and their children, to create something he truly loved, investing his energy into research and development and broadening the product offerings.

“It was my wife Mel who came up with the glitter idea,” said Paul.

“We were brainstorming ideas to drive the company forward, and she jokingly said that we should add glitter. We took the idea into research and development and have created a unique shimmering spirit that continues to shimmer even after carbonated mixers have been added – unlike our few competitors.”

In a very short space of time, the team behind the brand developed a range of 20 new products. The shimmer effect has no taste and no mouth feel and is a fiercely guarded trade secret. It adds a unique, fun, colourful element to the spirits that enjoy an exceptional degree of purity, being made from premium organic ingredients and pure Australian rainwater.

The process includes the use of traditional copper pot stills, with the spirit being distilled five times before undergoing the charcoal filtration process three times. The result is a consistently fresh and smooth finishing taste that is entirely sippable on its own, on the rocks, in all your favourite cocktails or with your preferred mixer. The flavours challenge preconceived notions of spirits with high alcohol volume.

With their range of gins, vodkas and liqueurs, there is something for every taste. Top sellers include the Shimmering Passionfruit Vodka, Shimmering Caramel Vodka, Shimmering Watermelon Liqueur, and Shimmering Espresso Liqueur (which is perfect for cold winter nights). Free tastings are available at the cellar door at the Hunter Valley Gardens, where you are likely to meet a member of the Addis family who will be only too happy to take you through the range. The recent win at the San Francisco World Spirits Competition saw the Passionfruit Vodka, the Habanero Storm and the Sambuca, all take out a silver medal.

Of course, Paul is continually working on new flavours to tempt our tastebuds. Flavours such as a chocolate cream liqueur and either a strawberry or vanilla cream liqueur, as well as a barrel-aged vodka, are the next products to hit the shelves, and the team of 20 are busy attending trade shows to raise awareness of the brand and keeping up with demand.

So far, sales are only available at the cellar door and online. The cellar door is open 7 days, 10am – 5pm. Growing distribution is the next area of development for the business, but in the meantime, a visit to the cellar door for a free tasting will prove even to the non-spirit drinkers that Small Mouth Vodka is different, that it is smoother and overall, a more enjoyable experience than anything that competes in this market.

If you’re visiting the Hunter Valley, chances are you're planning on enjoying some wine during your stay, and nothing is more complementary to wine than good cheese. Binnorie Dairy, conveniently located in Lovedale in the heart of wine country, serves up multi-awardwinning cheeses and is open seven days per week for complimentary tastings, cheese and charcuterie sales, platters, picnic essentials and light foods.

Binnorie Dairy was established by Simon and Sally Gough in April 2003. Originally located at Estate Tuscany on Hermitage Road until moving into purpose-built premises in 2018, it was the brainchild and passion of cheesemaker Simon, whose appetite for cheese began when he studied microbiology at Melbourne University. Simon fell into food and reinforced his skills by travelling overseas to cheese-making destinations like France and Syria, later spending some time working at Yarra Valley Dairy before realising that he could do it himself.

In October 2003, he met his life partner, Sally Gough, who had a background in hospitality in Sydney. Together they established the business of Binnorie Dairy.

“The Hunter Valley was the right place for our business,” said Sally.

“The tourism is robust and high-quality milk is easily accessible, and we’re not too far from major cities. We outgrew the space at Estate Tuscany within five years of setting up.

“Owning our own space with plenty of room for storage and manufacturing was essential for our growth. We’ve been able to develop, to broaden our range and our ability to supply.”

Sadly, Simon passed away in 2022, but his commitment to his staff and his vision for the future have ensured the business remains in good hands, with a dedicated and talented cheese-making team to continue his work. Binnorie Head Cheesemaker Joseph McVey has trained with Simon for over 13 years, working his way up from the packing room where he started. He is ably supported by fellow cheesemaker Alison Tinkler who has also been training for 12 years.

“We have an amazing crew,” said Sally.

“About 15 dedicated people work here, and we all share the passion for our product. Our customer service retail team is like a breath of fresh air, they love selling cheese, and we often get complimented on our service. I couldn’t be more thankful.”

Binnorie Dairy’s flagship, gold-medal, award-winning product is their marinated feta, closely followed by their swoon-worthy triple cream brie and creamy labna. For those who love goat’s cheese, there is the Buche de Chèvre, a vine-ash goat cheese log; a spreadable chèvre with dill; or plain, unadorned chèvre that works just as beautifully in baked tarts as it does in a salad. The future for Binnorie Dairy is bright, with Sally and the team looking to refresh the brand.

“We supply to local wineries and restaurants and distribute into Sydney restaurants and through Harris Farm. We must be doing something right. Our product is very high quality, and we want to ensure that our branding reflects that. We’re looking to evolve our label so that it matches the sophistication of our product.”

Sally is also keen to educate the market on the health benefits of cheese.

“So many people think it’s fattening or don’t understand what cheeses are. Lots of people who follow keto diets, for example, talk about Boursin, but it’s just a brand name for a herb fromage. Our cheeses are healthy and fresh. Labna is made from yoghurt, and our marinated feta is made the same way as Persian feta, so it can be used in the same recipes, but ours has a superior creamy flavour.”

Sweet Talking Dessert Wines

Liquid dessert? Yes, please! With winter in full swing, it’s time to stock up on your favourite fortified and dessert wines to finish off those cosy dinners and chilly evenings.

Dessert wines are sweet, luscious after-dinner drinks that linger on your palate more deliciously than any mousse, cake or tart. Affectionately known as ‘stickies,’ these sweet wines are a sensational accompaniment to fruit desserts and soft cheeses or as a replacement for dessert at the end of a meal.

Surprisingly, dessert wines are often overlooked and outside of the range of even the most experienced wine enthusiasts - leaving a missed opportunity to create a dynamic dish and dessert wine duo. While there is no industry definition of what constitutes a dessert wine, among winemakers and experts, these wines are broadly regarded as sweet wines that most commonly pair with a dessert.

Dessert wines comprise some of the world’s most lauded, famous, expensive, and delicious wines. Whether red, white, bubbly, still or fortified, a dessert wine is an ideal closer and will have characteristic sweetness and complexity. Fermented in the same manner as conventional white wines, dessert wines tend to be intensely flavoured, deeply gold in colour with bouquets of dried apricots, rich sweet flavours and a sharp acid finish.

In Australia, dessert wines fall broadly into two camps: wines made from grapes that have sweetened on the vine, and those made from wine that has been fortified during winemaking.

The first style is a rich sweet dessert wine often made from Semillon or Riesling grapes, producing light golden and super sweet wines. These wines are made with the highest quality grapes in an unfortified style and can age 50 years or more. This is because their sweetness and acidity preserve their fresh flavour. There are several ways to produce these richly sweet dessert wines:

Late Harvest: These wines are traditionally made from grapes left on the vines until the end of the harvest, so they ripen to their fullest before naturally dehydrating. The result is a wine with a higher residual

sugar (or alcohol, depending on how long it is left to ferment). Semillon is the favourite grape used in dessert wines because its thinner skin allows for a more effective state of botrytis and, therefore, sweeter juice. When it comes to food, Foie gras, blue cheese, and light chocolate desserts are excellent pairings for the late-harvest Semillon.

Noble Rot: While it may not sound very appealing, some of the most sought-after dessert wines in the world are made from grapes that are, well… rotten. The fruit is covered in a fungus called botrytis cinerea – also known as ‘noble rot,’ which causes it to shrivel up and dehydrate, leaving behind extra sweet pulp - which the winemakers then press for juice. Some of the world’s most exceptional sweet wines, such as Sauternes from Bordeaux, are made from Noble Rot. Readers may also be familiar with De Bortoli Noble One Botrytis Semillon - arguably Australia’s most famous dessert wine.

These wines are beautiful with desserts such as a fruit tart and perfect when accompanied by sharp washed-rind cheese and blues such as Roquefort.

The second style, the Fortified Wines, such as Sherry, Port, and Madeira, are made by adding alcohol (brandy spirits) during fermentation. This kills the yeasts that convert sugar to alcohol, leaving the wine very sweet and increasing the alcohol level to between 15 and 20%. The type of spirit used and the point in the process that the spirit is added has an enormous impact on the style of wine being made. Generally, the earlier the spirit is added, the sweeter the resulting wines.

After fortification, the wine is left to mature in oak barrels, sometimes for decades, developing into complex, aromatic wines, with immense depth and concentration of flavour and colour.

Dessert wines, of course, are most often enjoyed after dinner with a dessert pairing. However, with so many styles and flavours, they also make excellent aperitifs, fantastic cheese or savoury pairings, as well as stand-alone sippers. The happiest match is a not-too-sweet dessert and a modestly sweet wine. Consider poached fruit, citrus or nut tarts or even crème brûlée.

Remember that dessert wines are fantastic for aging – which means you can collect and treasure these wines for some time.
