Italian cuisine opens in Lake Macquarie

DUCK INTO WINE COUNTRY AND DELIGHT YOUR PALETTE Duck is a dish that rarely fails to delight the palate – it’s juicy, “gamey” and perhaps the most flavourful of all poultry meat. Although Duck meat is relatively high in fat and cholesterol (especially if you eat the skin), it's also an excellent source of protein, niacin, phosphorus, riboflavin, iron, zinc, vitamin B-6 and thiamine and smaller amounts of vitamin B-12, folate and magnesium. It’s also a dish that, for whatever reason, even the very best athome cooks are nervous about preparing. This is despite duck meat being more readily available at your local supermarket than ever before (check out the range of Luv-A-Duck products). Given that we don’t cook duck meat that much at home it can be a fabulous treat when eating out. So this month we trekked around the glorious Hunter Valley, taste-buds in hand to discover some ducky-delights that are on offer. Here are 5 of the best… RESTAURANT CUVEE. Entreé Duck – Tea-smoked sliced duck breast sprinkled with strawberry salsa, coriander and mint and drizzled with caramelised balsamic. Wine match – Peterson House Sparkling Chambourcin. THE VERANDAH RESTAURANT. Tapas Duck – Duck liver parfait with quince paste caramelised onions and charred sourdough. Wine Match: Adina Vineyard 2015 Pinot Gris. CIRCA 1876. (The description gives away little as to the ingredients but I think this just might be Oishii’s signature dish – it doesn’t matter how many times I order their duck curry – I always enjoy it better than the time before!) Wine Match: Pokolbin Estate 2011 Late Harvest Riesling. THE CELLAR RESTAURANT. Confit Duck – Free Range Duck Confit with beetroot and eschallot Tarte Tatin and Seville orange. (Confit – pronounced 'con-fee' – is the name given to a meat which has been cooked in its own fat and then covered and preserved in the same fat to prevent it from spoiling.) Wine Match: DenMar Estate 2009 Reserve Range Pinot Noir.
BEST WINE MATCHES FOR DUCK Duck meat invites a wine companion that is lighter bodied, slightly fruity, with good acidity and some earthiness to it. There’s one wine that’s invariably recommended as a pairing for duck and that is Pinot Noir but of course duck, like any other meat, can be cooked in different ways (as we’ve just seen). So choose a wine partner that combines well not just with the flavour of the meat itself but also with the method used to cook the meat. Other great matches include a late harvest Riesling, Gewurztraminer, Pinot Gris and Shiraz (for something different try a Sparkling Shiraz). Enjoy!

McLeish Estate is currently celebrating their dual Trophy win for their 2007 Cellar Reserve Semillon, which received the Best Named Vineyard Semillon at the prestigious Hunter Valley Wine Show and the 2009 Cellar Reserve Semillon, which received the Best Open Vintage Semillon at the Hunter Valley Boutique Wine Show. The McLeish Estate Semillon is produced in a single vineyard on the Estate. McLeish Estate’ 2013 Chardonnay received the coveted title for the Best Open Vintage Chardonnay, as this year’s trophy winner at the Hunter Valley Boutique Wine Show. The wine was judged against the Hunter Valley regions finest producers. The single vineyard wine expresses the elegance of the
variety while maintaining the Hunter Valley’s lingering persistence and intensity.
