How Is 42 Degrees South Chardonnay Wine Made? The Chardonnay grapes are crushed and de-juiced cautiously for a distinct flavour and structure extraction. Then they are cold-settled overnight and racked in the next morning. Next, the grapes are inoculated to ferment at a balanced temperature of 16ÂşC. Lastly, the grapes are racked once again after the fermentation, just before stabilizing, filtering and bottling.
