Meanwhile, in the wineries of Europe, all is relatively calm. The wine made from the 2015 harvest lies in tanks and in barrels and a not unpleasant smell of smoke in the vineyards betrays the quiet pruning work that is being carried out. However, winemakers can expect at least one disturbance at this peaceful time as we set off on our sourcing trips for another year. We’re still sticking pins to maps as we plan who to visit, and we’re excited to discover a host of new wines for you. Domaine Luc Lapeyre Les Clots – Minervois A/C

Toulouse rugby supporter, master of cassoulet and unsung hero of Minervois wine – the order of these titles depends on which day you catch him. He may be waving the black and red of his beloved club or donning an apron in the kitchen, but more than likely you will find him at his tiny winery either, lumbering from one task to the next. As Luc would say, his wines are made in the vineyard but, being modest, this does not explain the mastery of his craft that he is known for.

His most formidable wine, ‘Les Clots’, is 60% Mourvèdre and 40% Grenache with the fruit coming from old vines and then aged and fermented in 500 litre barrels as was traditional in Languedoc. Despite this, there is no hint of overpowering oak because Luc waits for the opportune time to bottle. All this is done according to his palate only, no men in white coats testing with pipits, making this a truly intuitive, artisan wine made for these winter nights.

Tahbilk Cabernet Sauvignon – Yarra Valley

Winemaker Alister Purbrick of Tahbilk is still basking in the glow of the Australian Winery of The Year award received last summer. In presenting the award to Alister, James Halliday, Australia’s foremost wine expert, summed up the historic winery: “It is a winery steeped in tradition, which should be visited at least once by every wineconscious Australian, and which makes wines, particularly red wines, utterly in keeping with that tradition.” I am delighted to say that we have two of these reds and this stunning Cabernet is the latest to join our list. Founded in 1860 in northern Victoria, Tahbilk is one of Australia’s oldest wineries and, along with Penfolds in the Barossa Valley, is one of the country’s most influential. Alister has preserved the sense of heritage both in style and substance and the wooden, Colonial era winery is well worth the two hour drive from Melbourne. Conversely, this rich red is modern in style with wonderfully ripe, dark fruits notable in every sip. A touch of eucalypt on the nose betrays its origins and the structured tannins make it ideal with robust foods.

While Grenache (Garnacha in Spain) may not be the most recognisable of varieties, it forms the back bone of most of the wines in the Languedoc, Rhône Valley and vast swathes of Spanish wine territory. It is typically full bodied with lower acidity and most often appears in blends with its famous accomplice, Syrah. In ‘El Maximo’ by Guerinda, it forms a complex and hearty Spanish red that equals the winter-warming abilities of Irish Stew.

These long winter evenings tempt us towards comfort food, those rich, warming dishes that seem to nourish both body and soul. Problem is, they can often be complicated and time consuming to prepare. That’s why we turned to Chef JP McMahon for a onepot recipe that will both satiate and save time. JP is not just a chef. He’s a one-man food missionary, spreading the gospel of supporting local suppliers and changing his menus to reflect the seasonal availability of Irish ingredients. Based in Galway, his culinary projects include the authentic Spanish restaurant, Cava Bodega, and the Michelin-starred Aniar. We are proud to say that we supply wine to such a passionate and pioneering figure in the Irish food scene.

Gareth with JP in Cava Bodega Ingredients 4 Chorizo sausages, sliced into rounds, 250g white beans, cooked and drained, 300ml medium-dry sherry (or port), 600g ling, pin-boned and cut into 8 pieces and Sea salt

Method

1) Warm some oil in an oven-proof frying pan or cassoulet pot. Fry the sausage slices until they colour nicely. 2) Add the beans into the pot and fry for one minute more. 3) Add the sherry to the pot and bring to the boil 4) Place the 8 pieces of fish on top of the beans and sausage and place in a preheated oven at 180°C for 10 minutes or until the fish is just cooked (slightly transluscent in the middle) 5) Remove from oven and serve

And the match… Northern Spain in particular has a love affair with fish and chorizo and their wines make the perfect match. For a white, and as this is a robust dish with lots of flavour, we would choose the most luxurious of all Spanish whites, Albariño from Fillaboa. In terms of reds, the little known Galician speciality that is Mencia, with its earthy spice and intense fruit is just as soul-soothing as the food. 14 | Wines Direct
