Savigny-Les-Beaune, Burgundy For generations, the Domaine Jean-Marc et Hugues Pavelot based in Savigny-Les-Beaune, Burgundy was handed from father to son, thus ensuring the expertise that made its reputation for fine Burgundy wines with Savigny tradition. The property covered 12 hectares divided into different climates. Located in the CĂ´te de Beaune, this vineyard encompassed two hills and the valley between them. The grape varietals, Pinot Noir & Chardonnay, gave the wines different outcomes depending on the soil, exposure (south, southeast, northeast) and altitude, between 220 and 360 metres as the small plots were separate. This geographical diversity was reflected in each of the appellations. Below is the plot called Les Peuillets classified as Premier Cru.

Savigny-Les-Beaune 1er Cru "Les Peuillets" 2009 Domaine Pavelot – 100% Pinot Noir A truly Premier Cru Pinot Noir in the heart of Savigny-Les-Beaune. Les Peuillets plot is 0.45 ha, and each year only 2,700 bottles of Pinot Noir are produced. To ensure its Premier Cru quality, its vines are at least 55 years old. Located at the bottom of the hill, on a moderately deep soil, & consisting of pebbles in a red earth. Having colours of deep ruby, this classic Pinot Noir wine is velvety, expressive, & charming with its finesse & intense fruit notes and has long delicate finish. In the great tradition of Pinot Noir, this wine is very representative of Savigny. It can keep well, & yet enjoyed in its youth and freshness. With limited quantities, what you hold in your hand is something to savour and appreciate.

Chablis & Petit Chablis, Burgundy The Vilain family has been cultivating vineyards and making wine in Chablis for generations. The Domaine de Chaude Ecuelle (meaning "hot bowl") owes its name to the tradition of vineyard workers warming up their meals in terra-cotta bowls out in the vineyards, because many of the Estate's vineyard plots were located far from the Domaine itself, which is often the case in Burgundy. The soil of Chablis is made up of clayey limestone marls called kimmeridgian (dating 150 million years ago). Fossils were frequently found in the soil, among them small oysters, indicating the presence of salty waters long time ago. This probably explained the mineral and slightly salty characteristics of the wines of Chablis that so delicately suit fish and shellfish.

Chablis 1er Cru 2008 Domaine De Chaude Ecuelle – 100% Chardonnay This Premier Cru Chablis has subtle aromas, both mineral and floral. On the palate, the full flavours of citrus fruit hits you, followed by the smooth after-taste of acacia blossoms and honey. Its flavours are generous and linger in the mouth. It can be kept from 5 to 12 years. Best at 12° to 14°C, it is perfect when served with foie gras, fish sauces, white meat and poultry. A worthy Chablis Premier Cru.

Chablis AOC 2009 Domaine De Chaude Ecuelle – 100% Chardonnay This Chablis is golden coloured with soft green glints. The Chardonnay grape varietal expressed itself fully in the Chablis appellation. The mineral characteristics of the Chablis soil are found here, along with subtle delicacy and elegance. This wine can easily be kept for 5 years. Best at 10° to 12°C. It is great to serve it with starters, particularly with oysters, all types of fish and shellfish, charcuterie, gruyère and goat's cheese.

Petit Chablis AOC 2010 Domaine De Chaude Ecuelle – 100% Chardonnay A crisp, balanced wine, this Petit Chablis can be enjoyed young & fresh from 1 to 4 years. Minerals from its clayey limestone marls and hints of salt from kimmeridgian. Fresh citrus flavours. Best at 10° to 12°C. Just like its cousin Chablis, it is also great to serve it with starters particularly with oysters, all types of fish and shellfish, charcuterie, gruyère and goat's cheese.

Bourgogne & Hautes Côtes de Nuits, Burgundy Domaine Remoriquet which started in 1890 has been lovingly managed by four generations of Remoriquets. With 10 hectares of different appellations, they were Bourgogne Hautes Côtes de Nuits, Nuits St Georges, Nuits St Georges 1er Cru and Vosne Romanée 1er Cru. Henri is now retired and the son Gilles has taken over for more than 20 years already. His wines were huge & meaty examples & were all produced from vineyards bordering between Vosne Romanee and Nuits St. Georges. Like any fine Burgundian producers, Gilles believed in creating wines utilizing the non-interventionist techniques in harmony with its terroir. He did not fine or filter, and bottling were done by hand. He used as little sulphur as possible, and the wines were aged in 100% new barrels. And to create exquisite wines, the vines had an average age between 25 to 60 plus years.

Bourgogne Hautes-Côtes de Nuits AOC 2008 Domaine Remoriquet – 100% Pinot Noir A terrific Burgundian Pinot Noir that delivers loads of cherry fruit, bright acidity, and a juicy finish on a refreshing frame. This is just the kind of wine that goes surprisingly well with heavy food, leaving a pleasant after-taste. A wine that reflects the terroir of Hautes-Côtes de Nuits.

Bourgogne Hautes-Côtes de Nuits AOC 2008 Domaine Remoriquet – 100% Chardonnay In Burgundy, Chardonnay is the king of white wines. This HautesCôtes de Nuits Chardonnay is harvested from vines at least 25 years old and oaked for 12 months. It has a pale golden colour with white flowers on the nose and a hint of green lemon. The mouth is fleshy and soft with fresh aromas. Remoriquet only produces an average of 11,300 bottles in a year. Great with seafood, delicatessen, fish, chicken, blue cheese, comté cheese, & goat cheese.

Bourgogne AOC 2008 Domaine Remoriquet – 100% Pinot Noir This Burgundian Pinot Noir has a nice deep colour. 1/3 of the wine is aged in oak barrels to soften the tannins and the rest are put in stainless steel vats to retain fruit aromas and freshness. The nose is fine & aromas of red fruits and the palate has supple tannins. Only 4,000 bottles are produced. Great with grilled meats, game, and mild classic cheese. A thoroughly enjoyable Pinot Noir. Côtes du Rhône, Corbières, Minervois, Picpoul de Pinet, Coteaux d'Aix-en-Provence & Languedoc Founded in 1967, Les Vignobles Foncalieu today is a highly professional group of individual cellars with their own unique identities with respect to terroir spanning across Côtes du Rhône, Corbières, Minervois, Picpoul de Pinet, Coteaux d'Aix-en-Provence & Languedoc. As a group, the cellars optimise their quality control, share expertise and achieve economies of scale to bring quality wines to consumers at value-for-money prices. All these are done without losing their individual personalities of the land in which the vines are grown. You can be proud of these wine makers who are separate and yet are one.

Côtes du Rhône AOC 2010 Mazets De St Victor – Grenache Blanc, Clairette and Viognier This wine is produced in the medieval village of Saint-Victor la Coste. Colours is a shiny pale yellow. On the nose it has intense aromas of white flowers with a hint of hawthorn and acacia. On the palate, it has fresh fruit and an elegant and lingering finish. Excellent balance and aromatic taste. Ideal pairing with fish dishes (trout), dishes with sauce (sole, salmon fillets with morel mushrooms), fresh goat’s cheese or as an appetizer with Provencal anchovy toast. Serve 8 – 10 °C.

Côtes du Rhône AOC 2009 Mazets De St Victor – 60% Grenache, 30% Syrah, 10% Carignan This wine is produced in the medieval village of Saint-Victor la Coste. Aged for 12 months in the vat. It has ruby red colour, & on the nose, a very aromatic wine with predominantly red fruit (blackcurrant, strawberry, cherry, prune) and spice (pepper, cinnamon) notes. On the palate, it is dense & silky with mature, round tannins. Recommended with white meats, grilled stuffed vegetables or cheese. Serve between 15 °C - 17 °C.

Corbières AOC 2009 Chateau Montauriol-Rigaud Cuvee Les Crozes – Syrah, Grenache, Mourvèdre It has a brilliant garnet-red colour. On the nose, it has pleasant blueberry, & hints of thyme and pine nuts. In the mouth, it has a rounded & smooth structure and balanced tannins. Recommended with fatty meats like tripe, and even aubergine gratin. Serve at room temperature 18 °C.

Minervois AOC 2009 Chateau Agnel Cuvee Philippe – 80% Syrah –10% Grenache and 10% Carignan Ageing in oak barrels to bring about complex aromas & taste. Elegant garnet-red colour. Expressive nose of little black fruits, black cherry and blueberries, with hints of grilled almond and vanilla notes. The palate is elegant and powerful with silky tannins. The perfect accompaniment for game & wild hare and mushroom fricassee. Serve at room temperature of 16°-18 °C.

Cru Picpoul De Pinet 2010 Coteaux du Languedoc AOC Domaine Delsol – 100% Piquepoul Blanc Piquepoul Blanc was cited as one of the best white grapes in the mediterranean, & known since the 17th century. It has a unique golden colour with green glints. Nose has fresh fruits, flowers, acacia, hawthorn & lime tree fragrances. In the mouth, it is lively & rounded, and has excellent acidity / structure balance. Piquepoul wines produced from Pinet neutralize salt & iodine in shellfish & other crustaceans and grilled fish. They are surprisingly good with rich cheeses & charcuterie. Serve chilled between 8 to 10 °C.

Coteaux D’Aix En Provence AOC 2010 Moulin De Rogne – Grenache Noir, Syrah, Cinsault & Cabernet Sauvignon The vines are located in the commune of Rogne, north of Aix en Provence. It has a pale rosé colour. On the nose, red fruits like raspberries and strawberries come out with more exotic fruits like guava in the background. In the mouth the palate is fresh and clean, emphasizing ripe strawberries and perfectly balanced acidity. Languedoc IGP 2009 Les Foncanelles – 100% Merlot Colour is dark garnet red. Nose is fruity, mixed with spicy notes (thyme and pepper) and vanilla hints. In the mouth, it is well balanced with silky tannins. Ideal with grilled meat and vegetables, as well as cheeses. Serve at room temperature of 14°-16°C.

Languedoc IGP 2009 Les Foncanelles – 100% Cabernet Sauvignon Garnet red colour with a few orange reflections. Has a strong and aromatic nose of red fruits, spices and liquorice. The palate is pleasant with a generous body and silky tannins. To be enjoyed with a beef fillet and a Roquefort sauce. Serve at room temperature of 16°C.

Languedoc IGP 2010 Les Foncanelles – 100% Chardonnay Golden color with light green glints. Characteristic nose of white flowers together with aromas of white fruits (peach, pear). In the mouth, the pleasure of the fruit combined with a buttery sensation stick to a nice lingering finish. Ideal with white meats and fishes. Serve chilled at 8°C.

Languedoc IGP 2010 Les Foncanelles – 100% Sauvignon Blanc A nice pale yellow colour with green glints. On the nose, this wine delivers intense aromas of citrus and exotic fruits. This wine shows crispy and fresh notes in mouth. Ideal with salads, fish and shellfish. Best served between 10°C and 12°C.

Languedoc VDF 2010 La Bastille – Carignan, Merlot Red garnet color. It has powerful red fruits combined with pepper and cinnamon. In the mouth, it has lingering spicy taste with fine tannins. Recommended with red meats and tasty cheeses. Serve at room temperature 16°C.

Languedoc VDF 2010 La Bastille – Ugni Blanc, Colombard Yellow color with green glints. Powerful aromatic nose of white fruits (peach, citrus, grapefruit) and a hint of peony. Fresh & appetizing in the mouth. Good as an aperitif or with salads, fishes and shellfishes. Served chilled at 8°C.

Coteaux Du Languedoc AOC Prestigi Oak 2005 Domaine Saint Du Noviciat – 80% Syrah, 12% Grenache & 8% Mourvèdre Dark robe with violet tints. First we get notes of berries before a light oak touch with some grilled notes. After a while, the wine focuses on dried fruit and caramel notes. The nose is complex and ample. In the mouth, the wine is powerful with very good balance between the richness and the liveliness. The grapes give full scope to the aromatic complexity of the varieties. Long in the mouth. It is really typical of the Côtes du Rhône with a lot of fruit and roundness backed by a sturdy full bodied structure. The aromas are quite complex with spicy undertones. Graves, Graves, Bordeaux Bordeaux Located in Arbanats, in the heart of the Graves region, the Château Lagrange elaborates very fine Red Graves and White Graves. The Château Lagrange vineyard extends for 15 hectares. The vines from this family business are planted on a gravelly soil, with the resulting solar heat absorption playing a vital role in grape maturation and creating wines which have a powerful length in the mouth. Half of the vines are more than 20 years old, and in total only 40,000 bottles are produced each year. That includes the white Graves wines. A very personal and boutique winery.

Graves AOC 2006 Château Lagrange – 60% Merlot, 18% Cabernet Franc, 22% Cabernet Sauvignon A wine of deep color, with cocoa notes on the nose, it offers a fine and elegant mouth. Has flavours of red berries mixed with a slight oak, its fine and polished tannins, its roundness, & freshness gives it a delicate side preserved by a well contained extraction. Limoux, Limoux, Languedoc It was believed that the first sparkling wine in the world was produced in Limoux in 1551 by the Benedictine monks at at the abbey in Saint Hilaire. Joseph SA Salasar which has a history since 1890, is well known in Limoux for producing elegant Crémant de Limoux.

Crémant de Limoux AOC NV Joseph SA Salasar Saint Florent Brut - Blanc de Blancs Chardonnay, Chenin, Pinot The fine bubble carries scents of bread & soft mineral notes from the terroir. In the mouth, there are flavours of pears. Beautiful dry finish. Serve this sparkling wine at 7°C. Crémant Saint Florent received the Gold Medal at the 19th national contest Crémant de Bordeaux (2009).
