DEAN TOON, head chef/patron at The Hidden Chef Brasserie in Trowbridge, talks about the beginnings of the brasserie, his favourite dishes and his can't live without kitchen gadgets!

What was your first job in catering? I was a kitchen porter at The Bay Tree Hotel in Burford. I remember it being a hard job with little or no let up so I was pleased when I got to do some cooking!
How did the idea for The Hidden Chef come about? When restaurants closed their doors in March 2020, I had to think creatively about how I was going to stay doing what I loved. I created a 'heat at home' menu of haute cuisine and traditional classics, delivered to your door. The reaction was amazing! People have loved enjoying restaurant standard food at home. And so The Hidden Chef was born and the latest chapter is the opening of The Hidden Chef Brasserie in St Georges Works, Trowbridge.
Where do you source your produce? We are all about providing incredible food, made from the finest local ingredients. We get all our seafood from New Wave Seafood - their fish is the freshest and best quality around. Our veg we currently source from Heritage Fine Foods.
What's your favourite dish on the menu? Our fillet of beef. We serve it with a potato & thyme terrine, cauliflower and truffle purée,

What's your top selling dish at the moment?
Our hand dived
Cornish scallops, (pictured inset) they're delicious and just perfect for summer!
When you cook for friends, what is on your menu? Unfortunately since starting the restaurant I haven't had the time, we have been inundated with bookings Usually a simple BBQ and a few drinks with friends is all I need.
Your favourite kitchen gadget? It's my Vitamix, I just love it, I’d be lost without it, but running it very close is my Kitchen Aid.
