Worcester’s Whiskey Culture Sarah Connell

Keeper of the Quaich Ronnie Cox is an esteemed member of the most exclusive and influential Scotch Whiskey society in the world. On a recent trip to Central Massachusetts, he explained that whiskey can fit neatly into one of three categories: uplifting, conversational or relaxing.

Consequently, Worcester’s whiskey bars have followed suit. The mark of great whiskey for Cox, who hails from seven generations of distillers and proudly represents the Glenrothes distillery, is a delicate balance of heritage and craftsmanship. Worcester’s rejuvenation has hinged on these very same principles, so it comes as no surprise that the city has developed a unique whiskey culture of its own.

Here, you will find hobbyists, eager to share their Instagram photos of the white whales they unearthed on their last trips to San Francisco or better yet, Isla.

You’ll hear them say things like, “The Japanese are really raising the bar!” and “Are you getting green banana or Ecuadorian banana on the nose?” Perhaps they will go on to discuss the merits of unchillfiltered whiskies - the way they retain that sticky quality that lingers on the palate. Or, maybe they have poignant thoughts on the emerging market for spent bourbon barrels. These are students of the spirit and their curiosity reigns. It is not uncommon to find these selfproclaimed whiskey nerds educating their palates via side by side tastings. Worcester’s resident Grey Coat, Joy Flanagan, explains, “Millennials are the ones pushing the industry. Whiskey has Rihanna feeling pretty, and plenty of local bars want you to

feel pretty, too. Pop music continues to generate a fashionable aura around whiskey culture, particularly in regard to bourbon. If you’ve listened to country radio, you already know, “Rain makes corn, corn makes whiskey” and to qualify as bourbon, the mash must contain 51 percent corn. In addition, the resulting spirit must be stored in a new charred-oak barrel. Bartenders at Whiskey on Water start by asking

their customers if they prefer “Jack or Jameson” to help entry level aficionados find their niche among bourbon or Irish whiskey drinkers. Other whiskey bars (if only by nomenclature) have crept into Worcester’s college bar scene as well. Order whiskey at one of these locales and the bartender may waggle a highend bottle of Hennessy at you. Accept, because Drizzy Drake would want you to. Then, politely tell the bartender

‘RELAXING DRAMS’

Meet the old-timers. Members of the Loch and Ke(y) Society will tell you they were onto this whiskey craze long before Rihanna was even born. (Tbh, they probably aren’t familiar with RiRi’s work.) At any rate, they want you to join them for Whiskey Wednesdays at Julio’s to learn a thing or two. Owner Ryan Maloney is highly respected in international whiskey circles. “I used to pick my own barrels of Pappy Van Winkle. That’s how long I’ve been doing this,” he said. Don’t be surprised to see attendees rubbing dabs of whiskey on the back of their hands, taking pensive sniffs, and then belting out proclamations like, “If only they had given it six more weeks ...” These guys have the noses of perfumeries: pencil shavings, cigar boxes, Moroccan Bazaar’s - no scent gets by them. They understand whiskey must be consumed at the crux of the pendulum’s swing, where wood and spirit merge. They love adding judicious amounts of water to cask strength pours. RC: I would tell someone new to the industry to not underestimate the commitment that it takes to do what we do and to always stay humble. Keep your head down, work hard and always be willing to do whatever is asked of you. Being a chef is the hardest, and yet most

make sure you have the capital before you open the doors. WORCESTER MAGAZINE: What is your favorite thing to eat in Worcester? JZ: When I go out, it’s usually for a margarita at the 99. RC: My coworker Derrick Walter’s fried chicken. Outside of my deadhorse hill bias, I am very partial to the poutine at Armsby Abbey. I even ordered it for dessert once.

SD: I eat the beef shawarma plate at Shawarma Palace on Pleasant Street at least once a week. The beef is so tender and flavorful, and the full plate is the best value in Worcester. MA: I love sushi. I really love Baba. My two daughters just brought me there for my birthday. I want to learn how to make it. FM: I like to eat at the Sole Proprietor – shrimp, salmon, lobster. WORCESTER MAGAZINE: What would you prepare for your last meal on earth? JZ: Carne Asada. JZ: Asking a chef to pick their last meal is like asking a mother to pick her favorite child. I would never be able to decide. I would probably cook a beautiful ribeye steak and homemade ice cream for dessert. I’m a sucker for ice cream, especially homemade. My second choice would be pasta. I love making pasta by hand. There’s something therapeutic about the repetitive motions of pasta making. SD: Smoked brisket, pan fried mushrooms, braised greens, blue cheese

It’s usually made with a white fish like Haddock and topped with pine nuts or almonds. Hot or cold, it’s delicious. The days of “eat before you meet” have come and gone. Plenty of popular Worcester restaurants offer hearty vegetarian entrees on their regular menus. Experienced vegetarians know just about every restaurant can rustle up something to meet their dietary needs, but that far from guarantees a tasty and satisfying meal. It can be admittedly difficult to persuade carnivorous friends to give places like Belmont Vegetarian or Chickpea a first chance. Still, going out in a large group doesn’t mean vegetarians need to go hungry. There are plenty of local restaurants offering a variety of killer vegetarian dishes in addition to more traditional entrees. Here are some of them.
