The Smokaccia Laboratory is a fine-dining restaurant founded by Brigitta Houkamp and Chef Luca Mascolo.
This restaurant delivers an exciting experience as Chef Luca crafts innovative flavors in his laboratory, transforming the finest organic local ingredients into pure, unique creations. His conceptual dishes combine artistic presentation with a personal touch in a stylish, atmospheric ambience. Chef Luca also focuses on a healthy, easy-to-digest menu without compromising flavor. Sustainability is central, with zero-waste creations showcased throughout the menu.
The drink pairings are equally inventive, featuring laboratory-inspired beverages. Non-alcoholic options include fresh creations like overnight-drip Phuket pineapple basil and house-made non-alcoholic gin. Wine and beer pairings are exceptional, highlighting naturally fermented beers that complement Chef Luca’s signature “Smokaccia”—a crispy, sourdough creation proofed for 50 hours with natural yeast (not to be confused with focaccia).
This is a sensational addition to Phuket’s culinary scene, offering exquisite flavors in an elegant yet cozy setting.
Guests can enjoy Chef Luca’s 9- or 18-course Culinary Scientist menu, with options accommodating almost all dietary restrictions. In addition to the main meat/fish menu, the restaurant offers a vegetarian menu and an innovative, delicious 18-course completely vegan option.

Her adventure began in the charming landscapes of Wales at Bridgend College, where Lara dove headfirst into the art of hospitality. It was here, while working at a Michelin-starred restaurant nestled in a grand converted palace, that she discovered her deep-seated love for high cuisine.
This formative experience ignited a fire within her, propelling her towards a future of culinary greatness.
Upon her return to Spain, Lara joined forces with the renowned two-star Michelin chef Nacho Manzano. This collaboration was a pivotal moment in her career, as she honed her skills and embraced the rich traditions of Asturian cuisine. Pabú is the personal project of chef Coco Montes, who trained mainly at L’Arpège, a three-Michelin-starred restaurant in Paris.
The focus is set on the vegetable world, although meat, poultry, fish and seafood are also included, when they are of extraordinary quality.
The menu changes every day. It is composed of nine dishes that can be ordered as a as a full tasting menu or as an “à la carte” selection and it does not have to be ordered for an entire table.
Ingredients are sourced daily, there are products they work with in their kitchen that exist for just a few weeks and others that last a few days. The goal is to seek the highest possible quality and share it with their guests.
At Pabú there is an extensive wine list with approximately two hundred references of still wine and forty within the AOC Champagne. They have a great passion for wines and for all those projects and winemakers who take care of their land.
