2017 SUMMER FUN GUIDE
EAT YOUR WATER! Keeping children hydrated in the summertime can be a battle but not with these fun, healthy, hydration-rich foods. DANIELLE HENDRIX STAFF WRITER
W
ith summer approaching and Harvard University studies showing that nearly 55% of children between ages 6 and 19 are chronically dehydrated, it’s time to start thinking about getting kids to eat their water. You read that right: We often think about drinking adequate amounts of water, but many people forget about hydration-rich foods. It can be hard enough to get a child to drink enough water, let alone eat healthy foods with high water contents. And with the majority of the most healthy, hydration-rich foods being
Frozen Yogurt Bark Make your own frozen yogurt bark and get the kids involved. Pick a yogurt type, add something sweet and top with your choice of toppings and berries.
“MONKEY CHUNKY” YOGURT BARK
INGREDIENTS 2 cups plain yogurt (low-fat, Greek yogurt is best) 3 tablespoons honey 4 tablespoons unsweetened cocoa powder 2 ripe bananas 1/3 cup chopped nuts (optional) Your choice of toppings (dried or crushed fruits, nuts, berries, chocolate chips, etc.) METHOD n Mix yogurt, honey and cocoa powder. n Spread yogurt in a big square on a sheet pan with parchment paper. n Slice two ripe bananas and arrange them on top of the square. You can also add 1/3 cup of chopped nuts. n Stick in the freezer for two to three hours. Break into pieces and serve cool.
vegetables, it can be even harder to get kids to eat their water. However, it doesn’t have to be a battle if the foods are fun to make and fun to eat. Tracy Mohr, owner of The Kids Cooking Connection cooking school in Horizon West, loves creating her own fun, healthy foods with her children. The latest project she’s been working on is developing a mix-and-match recipe sheet for frozen yogurt bark. “The bark is super easy to make,” she said. “They (the kids) freeze it, but instead of having ice cream or something like that, it’s a go-to snack. You can make breakfast versions, snacks and sweet versions. They always have them on hand and have something to reach for, but they’re not grabbing for the stuff that’s bad.” Parents and their children can choose
their favorite type of yogurt and mix it with jam, cocoa powder, peanut butter and more. Then, Mohr suggests adding healthy tidbits such as flax seeds, granola, almonds, nuts, dried fruits and berries into the mix for extra flavor. “The kids think they’re desserts, so when you’re handing them this for breakfast, they feel like they’re having ice cream or something,” she said. “Because the kids are so busy and have lots of activities, having things like that in the freezer and prepared are a great option.” For busy, on-the-go families, she also suggests taking fresh vegetables, slicing them and putting them in Ziploc bags in the refrigerator. Then, take your favorite sauces or dips and put them in small containers in the bags for a healthy, grab-and-go snack. Although eating hydration-rich foods is important, it doesn’t replace drinking enough water. To add some flavor to water, simply stick some cucumber, limes, berries or lemons into a cup or pitcher of water. Mohr suggests squeezing half a lemon into a cup and adding a couple pinches of Stevia — it’s a great substitute for sugary lemonade. And if they’re in the mood for carbonation, opt for a soda water.
